16 lmtimes.ca • Last Mountain Times • Monday, December 19, 2022 Classic chocolate truffles Satisfy everyone’s sweet tooth with this creamy chocolate dessert. Servings: 24 INGREDIENTS • 1/2 cup whipping cream • 225 grams semi-sweet chocolate • 1 tablespoon butter • 2 tablespoons cocoa powder • 2 tablespoons powdered sugar DIRECTIONS 1. In a medium saucepan, bring the cream to a boil. Meanwhile, chop the chocolate into small, uniform pieces. 2. Once the cream starts to bubble, turn off the heat and stir in the chocolate and butter. Whisk in the chocolate un til it’s completely melted and smooth. In a large bowl, pour the mixture and cover it with plastic wrap. Refrigerate for 12 to 24 hours. 3. Using a melon baller, shape 24 small chocolate balls and carefully put them on a plate. Place them in the refrigerator for about 15 minutes. 4. In a small bowl, sift together the cocoa powder and powdered sugar. Coat each truffle in the mixture. You can easily modify this recipe to your liking. For example, you could add a small amount of almond extract, orange zest or your favourite liqueur. Alternatively, you may want to coat your truffles with slivered nuts, chopped coconut or even crushed candy canes. Feel free to be creative. Cranberry-rosemary cocktail The colour, flavour and fragrance of this pretty cocktail makes it an ideal drink to serve at Christmas. Servings: 2 INGREDIENTS • 12 ice cubes • 1/4 cup whole cranberries, frozen • 3/4 cup cranberry juice • 1/4 cup simple syrup • 1/3 cup vodka • 3/4 cup soda or tonic water • 2 sprigs fresh rosemary DIRECTIONS 1. In each of 2 cocktail glas ses, place half the ice cu bes and half the cranberries. 2. In each glass, pour half the cranberry juice, then slowly add half the simple syrup, vodka and soda or tonic water. 3. Garnish each glass with a sprig of rosemary. Candy cane martini This minty martini is a throwback to child hood Christmases of yore. Serve it at a holiday celebration, or enjoy it with a loved one by a crackling fire. Servings: 2 INGREDIENTS • 6 ice cubes • 1/4 cup vodka • 2 tablespoons white vermouth • 2 tablespoons crème de menthe • 1-1/2 teaspoons spearmint cream • 2 candy canes • 4 red maraschino cherries • 2 green maraschino cherries DIRECTIONS 1. In a cocktail shaker, combine the ice cubes vodka, vermouth, simple syrup and crème de menthe. Shake for about 30 seconds or until well blended. 2. In 2 martini glasses, strain the candy cane martini mixture (without the ice cubes). 3. Garnish each glass with a candy cane pierced with 2 red and 1 green maraschino cherry.
lmtimes.ca • Last Mountain Times • Monday, December 19, 2022 2nd Annual Nokomis Winter Festival 17 Bonfires, hot dogs, Santa, hot chocolate and sleigh rides - BY JENNIFER ARGUE, Local Journalism Initiative Reporter December 8th, 2022 Family and friends, some old and new, came together to celebrate the season in the Town of Nokomis. Attendees kept warm with one of the many activities at the popular event. This was the second year for the popular event that started with an idea by Nokomis Principal Kaylie Hendry. She envisioned a way for the community to come together in a fun and safe way during COVID after people sought ways to gather again. It also gave the teachers a bit of a break as the event replaced the school Christmas concert. The Town of Nokomis was happy to jump on board, collaborating with the school. Pre-kindergarten to grade two children sang carols, and four bonfires kept people toasty. To warm up, there was a hot dog roast and grades 3-4 were in charge of hot chocolate. The grades 5-6 kids set up a fun photo booth area. And for the hockey enthusiast, the grades 7-8s set up shinny games. Horse-drawn sleigh rides ran all evening, and the Legion Bus took people on a sparkle tour of the town. “Other than the wind that picked up, it was really good.” said Hendry. The event occurred a little earlier than last year, between 5-7 pm. Hendry said the horse-drawn sleigh rides were very popular. The wood for the fires, sleigh rides, twinkle tours, hot chocolate, hot dogs and buns were all donated. “Always thanks for all of the support, it makes it amazing. For the new people in the community I think it was a really good non-threatening way for everybody to come out and meet each other. I was happy with it again.” Dennis Simpson, who contributed all the photos, said, “I thought it was really good. It was a little cold that night. Everybody was bundled up really good. Everybody stood around, visited Santa and also at the same time have a hot dog and a hot chocolate if they wanted to.” Simpson thought the change in time was an improvement and liked that people could have a hot dog. Mayor David Mark said the event was great despite the -10 temperature with a wind making it a little nippy. The additional fire rings helped keep participants warm. “This was a truly Canadian type of event, everyone standing out there. It was just fun.” Mark recognized Principal Hendry and the school for creating the event.
