Ingredients:<br />

1 pound boneless, skinless chicken breasts, cut into bite-sized<br />

pieces<br />

1 onion, chopped<br />

2 cloves garlic, minced<br />

1 thumb-sized ginger, grated<br />

1 red bell pepper, sliced<br />

1 green bell pepper, sliced<br />

1 can (13.5 oz) coconut milk<br />

2 tablespoons curry powder<br />

1 teaspoon ground turmeric<br />

1/2 teaspoon ground cumin<br />

1/2 teaspoon ground coriander<br />

2 tablespoons cooking oil<br />

Salt and pepper to taste<br />

Chopped cilantro for garnish<br />

Instructions:<br />

Heat the cooking oil in a pan over medium heat.<br />

Sauté the onion, garlic, and ginger until the onion becomes translucent.<br />

Add the chicken to the pan and cook until browned on all sides.<br />

Add the sliced red and green bell peppers and stir for a few minutes.<br />

In a small bowl, mix together the curry powder, turmeric, cumin, and<br />

coriander.<br />

Add the spice mixture to the pan and stir to combine.<br />

Pour in the coconut milk and stir until everything is well mixed.<br />

Lower the heat to a simmer and let the chicken curry cook for 15-20 minutes<br />

or until the chicken is cooked through.<br />

Taste and adjust the seasoning with salt and pepper.<br />

Serve hot, garnished with chopped cilantro.
