• 1 lb (LFD’s slow) roasted chicken,<br />
deboned, skinned, and sliced into 1/2”<br />
cubes<br />
• 1/2 cup small diced celery<br />
• 1/4 cup chopped green onions<br />
• 1 1/2 cups peeled and small diced<br />
apples (until ready to mix, keep these in<br />
lemon water submerged if possible)<br />
• 1 cup larger pieces or halved walnuts<br />
• 2 oz mayonnaise<br />
• 1 oz lemon juice fresh squeezed (one<br />
large lemon = 1 – 1 oz)<br />
• 1 Tb maple sugar (table sugar can be<br />
substituted)<br />
• 1 Tb Dijon mustard<br />
• 1/2 tsp tarragon minced fresh<br />
• 1/8 tsp cracked black pepper or more to<br />
taste<br />
• Sea salt to taste (*1/8 tsp recommended<br />
to start)<br />

Combine the above ingredients and serve immediately over mixed greens, on baguette,<br />
or try them on our Parkerhouse rolls as sliders. To make a day ahead: Only prepare and<br />
mix the apples and walnuts just before you serve, as the apples will oxidize and discolor<br />
even with an acid bath, and the walnuts will lose their crunch very quickly.<br />
