CHRISTMAS TREE GINGERBREAD<br />

From “Take Joy” by Tasha Tudor<br />

1 cup shortening<br />

1 cup light brown sugar<br />

3 eggs, well beaten<br />

1 1\2 cups molasses<br />

6 cups bread flour<br />

1 1\2 tablespoons ground ginger<br />

2 1\4 teaspoons salt<br />

1 1\2 teaspoons baking soda<br />

1 teaspoon cinnamon<br />

Cream shortening and add sugar, eggs, and<br />

molasses. Sift dry ingredients and add them<br />

to the first mixture. Chill and roll out, not<br />

too thinly. Cut into shapes for hanging.<br />

Bake at 350 degrees until dry but not crisp,<br />

about 15 minutes. Add a frosting if desired.<br />
