FOCUS
F
or nearly three decades, I have sought to capture the spiritual essence
of the Canadian landscape through the traditional photographic medium.
Beginning in my early twenties, I embarked on countless solo canoe
excursions into the Precambrian wilderness of Northern Ontario,
photographing the polished, lithic landscapes previously painted by the
famed Canadian Group of Seven artists.
In 1999 I set out on the first of many cross-country photo expeditions, on
a quest to forge my own distinct photographic style with the wild expanse of the
Canadian landscape as my canvas.
I have remained a photographic purist, choosing the slow workings of both
medium and large format cameras over contemporary instruments, to
transmit nature’s luminant expressions onto both colour transparency and
monochrome film.
All my work is optically printed in a conventional darkroom using the rare
1963 Cibachrome colour process or black and white silver gelatin. The threedimensional
realism of a hand-printed traditional photograph remains
unmatched by any modern-day photographic process; its tactile qualities must
be seen to fully appreciate its timeless beauty.
As I continue to view the natural world through the ground glass of my wood
field camera, my vision becomes ever more distilled. I find myself creating
fewer photographs with each passing year, seeking to translate only the most
quintessential moments of light and land onto film. Many of my favourite images
have taken days, weeks, or even years of returning to the same location until all
the essential compositional elements converged into one.
To experience these transitory moments of resplendent light through the
traditional photographic lens has been an inspiring journey with profound
spiritual wonderment. My work strives to go beyond the mere documentary
capture of a landscape by gazing towards the veiled; creating imagery where
the physical world touches the divine. ·
AFFINITY
FOR FORM AND
EARTHINESS
TRANSLATES INTO
CERAMICS
JAMES
BENNETT
holiday
L
andscape and ceramic artist James Bennett
has a strong instinct for what works, visually
and practically. For more than 20 years his
outdoor design has transformed spaces, from
meagre city lots to sprawling acreages, giving
his clients delightful, usable outdoor spaces.
James has lived on the Sunshine Coast for
18 years. Approaching his sunny studio, one
sees evidence of his outdoor design choices in the
carefully selected plants, hedges, and espaliered fruit.
He has nurtured a vast rosemary hedge and common
medlar, a member of the rose family. This thick shrub
was once widespread in Europe and the Middle East,
having been cultivated since Roman times. Medlar
fruit has large, showy white blossoms in spring and is
ready to harvest in late fall, when the soft fruit tastes
exquisitely of applesauce. It's not something one sees
in the average front yard.
James has a down-to-earth take on landscape design.
In his view: “Garden design is nothing more than hard
listening to the customer and damn hard work.”
His affinity for form and earthiness translates quite
seamlessly into ceramics. In his pottery, James
produces a wide array of pieces, from precious,
softly rounded dipping bowls to austere vessels.
His sources of inspiration are wide; sometimes it is
geopolitics, sometimes nature. He crafts vases with
earth-inspired decorative features such as thorns
and fungi, alongside sturdy and eminently usable
dishware finished with cottage colours like cobalt
blue and creamy white. You will see fascinating and
intricate objects with shapes one might see on a
diving expedition, of corals, spines, and mollusks. It's
all a little unusual, a feast for the eyes, and somehow
just right.
There is nothing whimsical in James' approach to his
pottery work, either. “Pottery,” he says, “is the same
hard, consistent work with the curated eye to smash
the things that are not (at least) really good.” Dryly,
he likes to quote an old potter: “You have to make 100
cups and throw out 99. Then you do it over again and
again. Soon you might know how to make a cup.”
James' work can be viewed and purchased at Fresh
from the Coast, on Trail Avenue in Sechelt. It’s the
perfect stop for curated giftware by talented local
artists and crafters. How is it that we have such a
wealth of craft and creativity here? Our inspiring
setting? Maybe. But James says, for himself at least,
it's more simple: “This is what happens when you
don't watch TV.” ·
INSPIRED BY
THE VASTNESS
AND BEAUTY OF
CANADIAN VISTAS
MARGOT
HALLMAN
16
the sunshine coast magazine
M
argot was born in Ontario and chose to pursue a
career in law and family mediation. She initially
took lessons in pastel and watercolour as a way of
reducing the stress of conflict in her professional
life. However, she soon found that the demands
of her career actually nurtured her artistic
pursuits. Just as a mediator must deeply listen
to the underlying narrative in the room, attuned to those
things that perhaps aren’t said, so also can the artist focus
her attention on the quiet moments that are sometimes
camouflaged in the landscape.
Over the years, Margot has continually taken art workshops
and lessons. She has shown a number of her pastel pieces
in juried exhibitions with the Pastel Artists of Canada and is
a signature member of that organization. Margot has also
exhibited a number of her paintings at the Federation of
Canadian Artists’ gallery on Granville Island. She has been
juried in as an active member of that organization. She has
also participated in the Art of Healing events at the Sechelt
hospital on three occasions and been part of the Sunshine
Coast Art Crawl since 2016. This December, she is showing
a painting in the “Water Exhibit” at the Federation gallery
and another painting at the members show at the Gibsons
Public Art Gallery.
Margot is an avid supporter of ongoing quality art education
for all ages. She is on the board of the Gibson’s School of
the Arts, and she liaises with the artists who come annually
to teach at the school.
In Margot’s words, "I work with pastel, acrylic, and oil. I am
drawn to the subtle changes in spatial expanse, texture,
colour, and temperature that manifest themselves in the
landscape. There are the quiet moments of contrast of
a dark reflection in a silver lake, the expanse of distant
islands in the ocean, the textures on a stone beach, or the
difference between the cool grey rock and the warm green
moss that covers it.
The making of a painting allows me to create a blending
of all those different moments, the perspectives, textures,
colours, and values into a single story. I hope that the
stories I tell through my paintings will transport the viewer
to a place of tranquil focus, away from the distraction of the
busy world, in touch with what is essential and universal in
the landscape." ·
The only constant
is change and the Coast is
changing, just like everywhere.
New issues arise, new people
come to live, even more people
come to visit. What continues to
be true is that we're outnumbered.
We overthinking humans are
outnumbered, by trees and
waterways and wildlife, by berries,
rocks and raindrops. We're less
important than migrations and
seasons and tides. If there is a
Coast Spirit, it is one of gratitude
and obeisance to these aspects
of living here that matter and that
are increasingly rare in the human
experience of the world.
ART
the sunshine coast magazine
S
andy Kay's artful and sparing use of colour brings her
nature-inspired, abstract works to life.
Born in California, Kay calls Halfmoon Bay home now.
Her frequent walks in nature, particularly the trails,
bog, and foreshore near Smuggler Cove, inspire her
work.
This new series is entitled “Soave.” It's an Italian word
often used in music, directing the performer to proceed
in a gentle, soft, and engaging manner. Kay chooses her
words and her marks carefully because that is how she
communicates:
“Painting is my language: how I say to people what I am
feeling and seeing.”
For this series, Kay works with oils and a cold wax medium.
To apply or remove the paint she uses tools such as knives,
squeegees, or anything at hand. This requires a firm surface,
either board or thick paper affixed to board. No canvas is
used.
Viewers will notice Kay's scant and arresting use of colour.
For these works, she lays down the colour first, then applies
layers of texture and black/white over top. It then becomes a
process of rediscovering the colour as she goes.
“I use a limited palette of three colours and black/white,” the
artist explains. “Paintings start with bold application of colour
and multiple layers. Marks are added or removed using tools
to scrape through to layers underneath, or to add texture.”
There is a lot going on in these works and viewers will notice
wonderful energies and harmonies in her compositions, the
result of horizontal and vertical lines at play.
“I am especially drawn to the feelings that can result when
these are used together: strong horizontal design can
evoke feelings of calmness and peacefulness in the viewer,
while vertical design can evoke feelings of strength and
groundedness. These two can be used in harmony and
peace or dissonance and conflict. In this series, I strive for
the former.”
After a couple of years of relative isolation and solitude in
which to immerse herself in her work, Kay thinks that feeling
harmony, gratitude, and peace is an emerging trend for
many. In her words:
“Many people I know here on the Coast have felt the same,
happy in a quieter way, more appreciative of our beautiful
environment and each other, aware of how fortunate we are
to be here on the Sunshine Coast and all we have here.” ·
stage of the Raven’s Cry Theatre in October, as Frances Heinsheimer
Wainwright marked her twentieth season as artistic director of The Coast
Recital Society.
Leading the playbill at the October 15 CRS concert with the Cheng2 Duo
was the premiere of La Bella Strega di Sechelt. This composition for
piano and cello was a gift from the distinguished composer, musician,
conductor, and teacher Yehudi Wyner, a dear friend, fan, and loving
correspondent of Wainwright.
“I first met him backstage after his performance with the Bach Aria Group, when
I was a student at Antioch College in Yellow Springs, Ohio,” Wainwright recalls.
“We shared a love of music, Italy and all things Italian, and a strong connection
through my father, a long-time executive with the New York City music publishers,
G. Schirmer.”
Her relationship with Wyner continued, mostly via letters, exchange of classical
music gossip, CDs, and occasional visits. Their friendship spanned careers – hers
as a music producer with CBC Radio in Montreal; his as a composer, performer,
teacher, and much-honoured ambassador for classical music. The letters continued
after Wainwright left Montreal, retired to Sechelt, and brought her musical talents,
impeccable taste, and considerable knowledge to The Coast Recital Society.
Wyner’s letters to Wainwright, often handwritten on scraps of musical notation
paper, always begin with a humourous variation on La Strega, his nickname for
her: “Dearest Strega,” “Dear Streghina,” “Nonna Streghissima Francesca,” or
“Dear Streghanoff.” Letters to Wainwright and her husband Barry begin, “Dearest
Stregone & Barushka” or “Dearest Strega & Strego.”
In the notes accompanying his composition, Wyner explains that the title of the
piece, La Bella Strega di Sechelt, “might suggest menace or spiteful derision, but
for us it reveals a playful affection. We would often exchange pleasantries in Italian,
with Frances assuming the role of La Strega, the witch . . . a benign spirit of fun and
beneficence, the opposite of wicked.”
At 94, Wyner’s own benign spirits continue to buoy an active, much celebrated
career. Though born in Canada, he grew up in New York City, studied at The Juilliard
School, Yale, and Harvard. His teaching, composer-in-residencies, fellowships,
grants, and glittering prizes have made him a musical citizen of the world. And
a prized one, too; Wyner received a Pulitzer Prize in 2006 for his piano concerto
Chiavi in mano. He has served as President of the American Academy of Arts and
Letters, receiving its Gold Medal for Music in 2020. He is a member of the American
Academy of Arts and Sciences.
Here on the Coast, Wyner’s musical magic bewitched the audience at the Raven’s
Cry Theatre, too. As La Bella Strega di Sechelt celebrated Frances Heinsheimer
Wainwright’s twenty year tenure with the Coast Recital Society, Wyner offered this
heartfelt dedication:
“This lyrical love-offering for Frances, is conveyed con dolcezza infinita (infinite
sweetness). My wish is that this modest composition be heard as a love letter.”
An appropriate closing to his letter: “Love, Yehudi.” ·
MUSIC
THE PENDER
HARBOUR CHOIR
50 YEARS
OF RESILIENCE,
VISION, AND SONG
WORDS | NANCY PINCOMBE
F
rom humble, grass-roots beginnings to an executive-run group
committed to excellence and giving back to the community, the
Pender Harbour Choir has a long history of resilience, vision, and
making music.
The early 70s brought a wave of free-thinking people to the Sunshine
Coast. They came with skills, energy, and idealism. One of these
was the charismatic and exceptionally able Les Fowler. In Pender
Harbour, he put down roots, raised a family, and stirred things up a
little. He eventually became a successful commercial fisherman. He also
spearheaded organized music in the community. It was Fowler who brought
the first choir members together under his direction, at a private home in
1973. He continued to be involved with the Pender Harbour Choir, the Music
Society, the Harbour Lights Band, and the Jazz Festival over the decades
until he passed in 2013.
After Fowler stepped down as director, the choir carried on under different
volunteer directors and accompanists. Les was always nearby and supportive,
stepping in again from time to time. It takes an incredible amount of energy
and ability to stand up and direct a group of people through the process of
learning a challenging choral piece in four voice parts. The choir wishes to
acknowledge and thank its early volunteer directors, who took over for varying
lengths of time, and often more than once, so that the singing never stopped.
In 1993, the choir's twentieth year, Capilano College (now Capilano University)
sponsored choral singing in Pender Harbour for two years as a non-credit
course. In 1994, the choir put out a special call for men! Pender Harbour
values music, and the choir's fundraising and community outreach efforts
have always been successful. The choir initiated bake sales which continue
to this day. Pat Larson became the first paid director, with Gwen Hawkins
assisting, in 1996.
By 1999 the choir was operating under the umbrella of the Pender Harbour
Music Society, with an executive board, paid director and accompanist, and
men and women singers. In the ensuing years, special and memorable musical
events were organized, such as visits by the Vancouver Welsh Men’s Chorus,
Gospel Week, Messiah performances, and workshops with visiting clinicians.
For eight years, starting in 2008, Joy McLeod directed the choir, with Paula
Seward as accompanist. This marked an era of stability and growth for
the choir, which often featured 30 or more singers in all voice parts. Joy’s
wonderful anecdotes punctuated concerts, and the choir developed a loyal
following. Having moved to Nova Scotia, McLeod still keeps in touch with her
many friends here and says that directing the choir all those years was a
particularly memorable era. In her words:
“It didn't seem like so many years. Now it seems like too few years! I have
memories that come back to me all the time – the people, funny things that
happened, memorable musical moments . . . The first thing that comes to
mind when the choir is mentioned is the people that I got to know and the
friendships that meant and mean so much to me.”
The Pender Harbour Community is proud of its choir. In a large area of far-flung
micro-communities, separated by waterways, rock, and dark winding roads,
there are few better ways to dispel isolation than gathering one evening each
week in a comfortable building dedicated to music, to sing in a welcoming and
well-directed choir.
Kenneth Johnson took over the direction of the choir in 2016 and is at the
helm still. His many years of experience in the music industry as an educator,
director, composer, and performer bring wisdom, confidence, and delight
to the choir. Johnson says that the connections fostered by choral singing
cannot be overstated:
“For singers, it feels both safe and exciting to be working with others and
contributing towards a beautiful, shared goal. It's the ultimate teamwork,
and less experienced singers learn from our stronger singers. We have an
amazing accompanist in David Poon, who elevates our performances. In my
music selections, I work very hard to challenge the choir a little and provide
a memorable concert experience for our audiences. It's a wonderful evening.
And the community is always supportive because it is their choir.” ·
THE
DREAM
TEAM
G
ood sleep can make or break your day. This may be a “blanket" statement, but it’s
one that science is proving over and over. Humans need sleep to be able to function
effectively each day. Darren and Kim Rennie, owners of Dreamland Sleep Shop in
Upper Gibsons since 2000, have become sleep experts and are passionate about
everything sleep.
Their number one goal has been to support clients in improving their sleep, so that
they can get a great night’s sleep, which translates to a great day.
Why do they think sleep is so important? They believe “good sleep is good health.”
Leading experts now recognize
sleep as a pillar of health. Poor
sleep doesn’t just make you
cranky the next day. Studies have
shown that chronic sleep issues
can lead to weight gain, impaired
brain function, decreased memory
and problem solving, increased
inflammation, insulin resistance,
reduced ability to regulate
emotions, depression, and other
chronic conditions.
How can Dreamland help you get
your best night’s sleep? Whether
it is Darren, Kim or one of their
well-educated staff, they start with
listening to your struggles. Each
person is unique in their “why” –
the reasons they are not getting the sleep they desire. These could include over-heating,
back pain, insufficient support, stress, allergies, or other causes. Dreamland staff ask
questions to discover “your why,” and then provide solutions to improve your sleep the
very first time.
From mattresses to eye masks, you can rely on Dreamland to put you to sleep. They carry
natural bedding products including wool, for those who struggle with over-heating, and
bamboo, for those who like a soft, silky feel to their sheets.
HUMANS NEED SLEEP TO BE ABLE TO
FUNCTION EFFECTIVELY EACH DAY. DARREN
AND KIM RENNIE, OWNERS OF DREAMLAND
SLEEP SHOP IN UPPER GIBSONS SINCE 2000,
There’s no better gift
than a good night’s sleep
This holiday season, pamper your loved ones with
high quality organic cotton, microfibre, bamboo, or silk
beddings, fluffy down duvets, and latex or wool pillows.
We carry top brands and products made in Canada: Daniadown,
Natura, Snugsleep, Kouchini, Snowbird, and more. See also our
selection of mattresses, bases, and bedroom furniture.
Gibsons Park Plaza #110, 1100 Sunshine Coast Hwy | 604.886.0102 | dreamlandsleepshop.com
Mattresses are available for every unique challenge. Do you
and your partner each like a different mattress firmness? They
can resolve that. Need to elevate your head or feet? They carry
mattresses that adjust. Newer on the market are healing
mattresses (supported by science) which can help
you fall asleep faster, increase blood circulation,
and regulate body temperature. Sounds
dreamy, doesn’t it?
Another important aspect of getting a great
night’s sleep is your pillow. Dreamland
carries a large selection of pillows to suit
your sleep style. Whether you are a side
sleeper or a back sleeper, they can help you
find the right pillow to support you throughout
the night.
Organic cotton, bamboo, flannel, and linen sheet sets are
available to satisfy your sleep comfort needs. These come in an
array of colours to give your bedroom your desired look.
Darren and Kim don’t just take the word of the product rep as to the value
of each item; they do their own research. They’ll try out mattresses and
sheets to experience what it’s like to sleep on the products they carry.
They want first-hand knowledge of how to best support their clients’
needs. This knowledge is always shared with their staff, so
everyone has the information to educate customers on
the best sleep options.
Twenty-three years ago, Darren and Kim recall, they
were discouraged from opening Dreamland. Both are
glad they didn’t take that advice. They are grateful to
be in Gibsons, where the community has supported
their business from day one. There is nowhere to
hide in a small town; reputation is key. The Rennies are
committed to honesty, great value, and supporting your
best night sleep.
As F. Scott Fitzgerald once said, “The worst thing in the world is
to try to sleep and not to.” With the help of Dreamland Sleep Shop, you
won’t ever have to worry about not having a good night’s sleep again. ·
the sunshine coast magazine
At ZOOM we love to celebrate the creators and businesses that make
life on the Sunshine Coast beautiful. We acknowledge that there are
many factors to success, including a fair dose of luck and timing. Here
we'd like to mention just a few of the businesses that are adapting and
growing, despite these challenging times.
Many of the elements for success come together at BASTED BAKER:
A central, walkable village location, small size, flexible outdoor space,
and a small but consistent menu of high-quality, delicious options.
Customers wait cheerfully for tables during busy weekend brunch
times. Basted Baker's goal has always been to become THE breakfast
and brunch destination on the Sunshine Coast. Try the Huevos Rancheros and
you'll think they've knocked it out of the park.
BEACHCOMBER COFFEE has two convenient locations in Gibsons and
supplies the coffee program at Basted Baker. Business was great over the
summer, and everybody's talking about their incredible vegan, baked, housemade
donuts. Founder/CEO Martin DesRosiers says they're happy to work with
regular customers' changing tastes. He notes that “in the last six months, we've
converted a lot of Dark Roast Drip customers into Americano drinkers . . . We're
finding customers wanting to explore a bit more and expand their coffee palate.”
Beachcomber Coffee also has a terrific online store that offers coffees and
teas and an array of cool merchandise like shirts, hats and mugs. Do they have
thoughts of expanding? “Always! We have a few things in the works! We're also
looking for a part-time baker to spin off our Deadly Donuts company.” Donuts and
coffee . . . a match made in heaven!
Restaurants have had to do a lot of adapting these past few years. Some places
make it look easy, even though there’s a lot of hard work behind the scenes. All you
will see are smiles when you drive by JOE'S ON THE BEACH in Davis Bay. They
have managed to be responsive to changing conditions and to keep it cheerful.
Founders Josh King and Mariano de Barba say the secret is teamwork and fun:
“If it isn’t fun we won’t do it. We actually developed Joe’s from the inside out. We
both knew that all businesses thrive from a happy team and that translates to
the guest.”
Bright, beachy decor, drink specials, delicious food, and a spectacular location
have made Joe's extremely popular. Joe's social media presence has allowed our
community to be aware of initiatives at the restaurant and see that honesty works.
Coasters are happy to support hard work and savvy decisions. Transparency
within the organization is similarly effective. King and de Barba are convinced
that happy, trusting staff makes all the difference: “Right from the beginning we
involved our team. We run an open book company, and when we started, we put
everything we had into the restaurant. We needed to trust the team and this
approach helped create the Joe's that everyone knows today.”
And they're expanding! Watch for JOE'S CABIN in Lower Gibsons, where they
are sure to make their mark with a fun, casual vibe and great food. It's a big step,
and they thought long and hard about the opportunity: “We knew that we could
do something special in Gibsons, but if we took it, we would need to forge our own
path just like we did in Davis Bay. A modern tavern, serving seriously unfussy food
and drink.” We can't wait.
PERSEPHONE BREWING COMPANY in Gibsons has a unique, multifaceted
approach to growth. This includes amazing products, a diverse
and growing body of shareholders, a commitment to generative agriculture
and to local food security, and community events such as film screenings,
harvest dinners, and a popular speaker series. It's about being embedded
and fostering community involvement. David Schneider, Sales and Marketing
Director, says their unique ownership model “gives us strength and security.
We are currently in the middle of another shareholder fundraising campaign,
selling share packages starting at just $100.”
Persephone has seized an opportunity to expand and deepen their presence
on the Sunshine Coast. They have recently acquired and taken over operations
at WESTVIEW BILLIARDS & BOWLING and STRIKERS BAR & GRILL
in Powell River/qathet. It's a bold and exciting move, but Schneider says they
are sensitive to the community and will take things slowly: “While we have
lots of ideas, we aren’t making any big changes too quickly. These businesses
have been a part of Powell River for generations, and we want to hear from
the community before going beyond minor upgrades. More craft beverages,
an improved menu, and live music are in the works.”
The WEST COAST WILDERNESS LODGE has been knocking the socks
off visitors from its semi-remote location in stunning Egmont for many years.
WCWL offers an array of accommodation, fabulous dining, and a thrilling list
of adventure activities, all in an oceanside setting with incredible views. With
kayak, Zodiak, and float plane tours, jet skiing, hiking, and biking, plus trips
to local lakes and an award-winning restaurant, WCWL is a one stop shop
for both luxury and adventure. Packages include overnight stays, activities,
and a guaranteed reservation for a sumptuous dinner at Inlets restaurant.
Summers at WCWL are always busy with weddings. Winters are for staff to
get some rest, and for planning and expanding. Owner/operator Paul Hansen
knows that staff are the key to the warm welcome and safe adventuring that
guests come for: “We have always worked to provide our staff with what we
believe is a great environment to work in, and we prioritize them as much as
we can.”
WCWL sees more opportunity in the area, and there are big plans to make
the most of it.
The lodge is converting the old Egmont Fish Plant into a brand-new
ADVENTURE CENTRE that will offer excursions such as boat tours. This is
in addition to Bioluminescence and Day-Long Kayak tours, and a small fleet
of Seadoos. The Adventure Centre will have a large event space for weddings
and corporate retreats. WCWL is also building 20 new ocean-view units on the
bluff above. These will be fully appointed, condo-like, for guests who prefer
to self-cater, or for winter months when dining options are limited. Hanson
believes this will boost the entire region: “We plan to utilize the natural beauty
of Egmont to bring more tourists to our area, which will not only help us
grow but also help many of the businesses around us, with whom we share
common goals, to expand.”
More adventure, more luxury, more accommodation choices, and an
expanded season. It all contributes to making the Sunshine Coast experience
more beautiful. ·
FLAVOURS
AVOID THE
HOLIDAY RUSH
WORDS | NATALIE FINDLAY
JUST LIKE THAT; IT’S THE HOLIDAY SEASON.
ANOTHER YEAR HAS ALMOST GONE BY. WITH
JUST WEEKS LEFT IN 2023, OUR HOLIDAY-IMPOSED
DEADLINES ARE FAST APPROACHING.
H
ave you started your holiday shopping yet? Sent out cards? Decided on who’s
hosting whom, and decorated the house??? Instead of checking things off
our lists, there often seem to be more piling on.
One of the best ways to stay calm through the busy holiday season is to have
a few dinners that have been made ahead and frozen, so you can just reheat
them at the last minute. Less stress but all the flavour, and much better for
you than devouring those holiday cookies.
Stews, chili, shepherd’s pie, and soups. All of these are easy to make in large batches,
and they will freeze beautifully until you need something quick and hands off.
At this time of year we have many pumpkin varieties available, and they make
delicious soups. Carrot-ginger pumpkin soup is comforting and satisfying for a
hectic weeknight dinner, and with a few embellishments can be fancied up to serve
for guests.
CARROT-GINGER PUMPKIN SOUP RECIPE
Preheat oven to 375 Fahrenheit. On a large, parchment-lined baking sheet, arrange
the following:
1 butternut squash (ends trimmed, cut in half lengthwise and seeds removed)
5 carrots (peeled and roughly cut into 3 cm chunks)
1 onion (peeled and cut into chunks)
10 sprigs of thyme
5 garlic cloves (peeled)
1 piece of ginger (4 cm, peeled and sliced).
Drizzle these ingredients with olive oil, then sprinkle with sea salt. Tuck the ginger
and garlic underneath the holes in the butternut squash, where the seeds once
lived. Pierce the skin of the squash numerous times with a fork or knife. Bake for
40 - 50 minutes or until everything is fork tender. Remove from the oven and let
cool slightly.
Scoop out the flesh from the squash skin. Put all the roasted ingredients, plus 1 tsp
cumin and 6 cups stock (or water) into a high-powered blender and process until
very smooth. You may have to do this in more than one batch. Add more liquid to
achieve the desired consistency. Taste and season with salt and pepper as desired.
Portion out servings to fit your needs, and freeze. Then just reheat and serve with
a sandwich or salad.
For the fancy version, try topping the soup with a dollop of crème fraîche, a drizzle
of Greek thyme olive oil, and some toasted pumpkin seeds.
An equally quick way to get dinner on the table is to roast everything in the oven on
a sheet pan. You could try pork chops with wedges of cabbage, carrots, and apples
drizzled with olive oil and herbs. Or chicken thighs with sweet potato, onion, and
broccoli topped with pesto.
This holiday season, create space for enjoying time with your friends and family,
reduce your stress, and enjoy well-deserved, delicious, home-cooked meals. Make
it easy. Make it ahead of the rush. ·
