WASTE DISPOSAL and 

parking issues are under review 

following New Brighton’s 

annual Kite Day, with Coastal 

Ward councillor Celeste 

Donovan demanding 

a smoother running of 

the next edition. 

While weather conditions 

were optimum 

– a peak wind gust of 

46km/h and a maximum 

temperature of 

25.6 deg C – for last 

Saturday, it wasn’t all 

smooth sailing for the 

popular event. 

An estimated 8000 converged 

on Marine Pde, the foreshore 

and the pier, so rubbish bins 

were soon overflowing. Car 

space was also at premium, 

prompting some motorists to 

Celeste 

Donovan 

park illegally. 

Donovan was at the beach 

and sought answers from 

council staff on Monday after 

receiving adverse feedback during, 

and after the event. 

Pegasus Post was told 12 

extra rubbish bins were 

placed at the event area 

by city council events and 

arts manager Lucy Blackmore, 

but Donovan was 

undeterred. 

“I still think there’s 

more than needs to be 

done in terms of the waste 

management strategy in 

general,” she said. 

Blackmore said there was 

no waste overflow or excess 

rubbish when the temporary 

bins were removed about 90 

minutes after Kite Day. But 

Donovan said that was because 

local business owners tidied up 

the area. 

“It shouldn’t fall on other 

groups to clean it up. I saw them 

picking up rubbish and doing 

some of that work themselves. 

They packed some of the excess 

rubbish themselves.” 

Blackmore said the council 

had not received any public 

feedback regarding illegal parking 

and a lack of enforcement. 

Concerns were evident about 

parking – and rubbish – on the 

New Brighton Residents Association 

Facebook page. 

“Extra rubbish bins needed 

and extra parking enforcement 

needed as visitors were parking 

anywhere and everywhere, and 

not always legally either . . .

Organic college 

puts down roots 

at old school site 

GROWING: Climate Action Campus Ōtautahi is spread 

across the former Avonside Girls’ High School site and an 

adjoining 1.8ha. 

THE FORMER Avonside Girls’ 

High School site is the new base 

for the Biological Husbandry 

Organic College. 

The college, first established on 

Lincoln University farmland in 

1976, will move to Climate Action 

Campus Ōtautahi and offer its 

tertiary courses from late February. 

College trust chair Penny 

Platt said the move will make it 

easier for more people to access its 

hands-on training and classroom 

education. 

It will be supervised by the 

Southland Institute of Technology 

and deliver level 3 and 4 

programmes in organic primary 

production. 

Platt said joining the Avonside 

Drive campus opens up a new 

era for the college, which over the 

decades has trained hundreds of 

leaders in New Zealand’s burgeoning 

organics sector. 

“We will be more central and 

accessible for everyone who seeks 

knowledge and skills to grow food 

in the most natural and sustainable 

ways, whether they’re working 

in local food systems or bigger 

organics industries,” said Platt, 

who is co-founder of Canterbury’s 

Untamed Earth Organic Farm. 

“We provide a solid grounding 

in the practice and theory of organic 

growing, delivered by tutors 

with a wealth of knowledge and 

experience and all in a friendly, 

supportive environment.” 

Former mayor Vicki Buck, who 

founded the campus, said the college 

provides innovation opportunities 

for the city. 

“Food security 

is one of our top 

priorities. The 

more knowledge 

and skill people 

gain on growing, 

soil, composting 

and all other 

Vicki Buck aspects of local 

food production and supply, the 

more we will be able to withstand 

the shocks that come more 

frequently and severely with 

climate change,” she said. 

“Christchurch now has a 

vibrant local food culture with 

its many community gardens, 

bigger organic growers nearby 

and farmers’ markets . . . it has a 

tradition of growing and sharing 

food.” 

The campus, which sits on 

the former school site and an 

adjoining 1.8ha, is designated as 

a state school for primary and 

secondary students. It is managed 

as a satellite school of Ao Tawhiti 

Unlimited Discovery and is used 

by a growing number of other 

schools. 

Said Buck: “Students come with 

their teachers to take action on 

climate change. There’s a range of 

options we can provide, or they 

can think themselves of anything 

which they want to do related to 

climate change.” 

The campus will provide a 

former sports field for food 

growing and plans to use the 

adjacent red zone land to create 

an enlarged urban organics farm.

Scrabble master stays sharp at 99 

AT 99, Grace Hartley still plays 

her favourite board game, 

Scrabble, every night – and she 

hardly ever loses a game. 

Like clockwork in the early 

evening and after reading her 

newspaper, the Arvida St Albans 

wordsmith sets up the board 

to play against nurse Natasha 

Patterson. 

Grace said they help each other 

when they get stuck finding a 

word but are still competitive. 

“I’m not afraid to use a few 

risqué words to try and win a 

game and make Tash laugh at the 

same time. I do the big words and 

Tash does the small words.” 

Grace took up playing Scrabble 

about 10 years ago when she 

moved into the retirement village. 

Patterson became her playing 

partner when Grace’s daughter 

could no longer take part due to 

the Covid restrictions. 

She played so much the letters 

wore off her original Scrabble set 

due to overuse. 

But Grace has now received a 

new set to make sure she is always 

game-ready and thinking of the 

next big word for the win.

Review of event management plan urged

shocking dangerous parking. 

Needs enforcement.” 

Donovan urged a review of 

the event management plan with 

the aim of avoiding a repeat in 

2025. 

“I’d like to know what was in 

place so we don’t have these issues 

in the future, we don’t want 

anything to detract from what 

is a showcase event for the area,” 

she said. 

“We want to make sure the 

focus is on the positive side of it, 

those things are quite avoidable. 

You need to take into account 

you’ve thousands and thousands 

or more people coming through. 

“During the summer we have 

these big spikes (in visitors to 

New Brighton) for events and 

I’m not sure we’re responding to 

some of the issues as quickly as 

we could be. Having said that, 

95 per cent of the event was 

really smooth.” 

Meanwhile, Kite Day was a 

resounding success for the Youth 

Alive Trust, which sold out their 

500 kites for the first time ever as 

a fundraising venture.

On the table in under 20 minutes, this easy vegetarian halloumi salad is 

perfect when time is short 

Super Easy Halloumi 

Salad 

Ingredients 

250g pearl couscous 

500g halloumi, sliced 

1 Tbsp Moroccan spice mix 

2 zucchini, sliced 

Directions 

Cook couscous in a saucepan of boiling 

water following packet directions. Drain. 

Meanwhile, pat halloumi dry with 

paper towel. Sprinkle with spice mix. 

Spray a non-stick frying pan with oil. 

Heat pan over medium heat. Cook 

halloumi 1-2min each side or until 

golden. Set aside. Spray pan with oil

250g cherry tomato medley, halved 

½ cup fresh parsley leaves 

½ cup fresh mint leaves, torn 

1 Tbsp tahini 

2 Tbsp Greek yoghurt 

1 small garlic clove, crushed 

1 lemon, rind finely grated, juiced 

2 Tbsp pomegranate seeds 

2 pita breads, toasted, torn 

again. Cook zucchini 1-2min until just 

coloured. 

Combine couscous, zucchini, tomatoes, 

parsley and mint in a large bowl. Season 

well. Combine tahini, yoghurt, garlic and 

lemon rind in a small bowl. Season. Add 

lemon juice to taste. 

Divide salad among serving bowls or 

arrange on a platter. Top with halloumi 

and pomegranate. Drizzle with dressing. 

Serve with pita.

A taste of the Med

It’s never too 

late for music 

British chef Jamie Oliver’s latest 

book is all about providing a 

whole rainbow of simple meal 

solutions and "deliciousness", 

and getting it to people’s 

tables with minimal fuss. With 

summer just heating up, now 

is the perfect time to dip into a 

bit of the Mediterranean way of 

life . . . and eating. 

Feta filo turnovers 

Serves 4 

Ingredients 

4 sheets of filo pastry 

200g feta cheese 

½ a bunch of marjoram (10g) 

25g shelled unsalted pistachios 

runny honey, to serve 

Directions 

Lay a sheet of filo on a damp tea towel 

and brush lightly with olive oil. 

Crumble a quarter of the feta across 

one side of the pastry, leaving a 3cm gap 

around the edges, and pick over a quarter 

of the marjoram leaves. 

Carefully fold over the filo, press the 

edges to seal, then fold in half again, 

pressing down gently to secure. Brush 

lightly with olive oil. 

Place a large non-stick frying pan on 

a medium heat with a splash of olive oil, 

add the filo parcel and cook for 2 minutes 

on each side, or until golden and crisp, 

then transfer to a serving plate. 

Meanwhile, bash or roughly chop the 

pistachios. Drizzle the parcel with honey 

and scatter over a quarter of the pistachios. 

Repeat with the rest of the ingredients, 

serving each parcel as soon as it’s 

ready.

Serves 4 

Ingredients 

700g frozen chargrilled Mediterranean veg 

300g risotto rice 

1.2 litres chicken or vegetable stock 

1 bunch of basil (30g) 

100g goat’s cheese 

Directions 

Tip the frozen veg into a large, deep 

pan on a medium-high heat with 2 tablespoons 

of olive oil. Cook for 10 minutes, 

or until soft, stirring regularly, then 

remove half to a bowl. 

Add the rice to the pan and stir for 2 

minutes. Add a good splash of hot stock 

and wait until it’s been fully absorbed

perfectly cooked, adding extra splashes of 

water, if needed. 

Pick and finely slice most of the basil 

leaves and stir into the pan with the reserved 

veg, most of the goat’s cheese and 

1 tablespoon of extra virgin olive oil, and 

season to perfection. 

Adjust the consistency so it’s nice and 

oozy with a splash of boiling kettle water, 

if needed. 

Divide between plates, then scatter 

over the remaining basil leaves and goat’s 

cheese, to finish.

If you prefer weekends celebrate Seaweek 

by learning how to carve a stamp from 

an old eraser with Anthea Ibell of Remix 

Plastics on Sunday 10 March. There are two 

options morning or afternoon. Or avoid the 

nasties in commercial skincare products 

and eliminate packaging waste with Jo Day 

of Mcginns Made Fresh. She will teach 

you how to make natural alternatives.

Make your mark with new art 

courses at Risingholme 

For almost 80 years Risingholme Learning has been 

delivering adult and community courses that help people 

expand their skills and explore their creative side. 2024 

is no different with a lineup of new creative art courses 

including printmaking, collage, and bookmaking. Taking 

the humble art materials of paper and ink, each course 

dives into the creative potential of each of these materials 

and the various techniques that can be applied to turn a 

blank piece of paper into a truly unique work of art. 

In Printmaking for Beginners, learners will try a 

range of printmaking techniques including stamping, 

monotype, and intaglio prints. Course tutor Meg Nicoll 

says that “with an emphasis on experimentation and fun, 

this course will be a friendly introduction to printmaking 

that will celebrate both the making and sharing of prints 

without needing lots of specialist equipment”. 

Also in keeping with the spirit of resourcefulness, 

those enrolled in Collage for Beginners will be guided 

through different techniques used to create textured and 

painted papers that can then be cut, pasted, swapped, and 

arranged into collages which emphasise each person’s 

creative flair. For those interested in a more collaborative 

approach, there will also be the chance to contribute to a 

group collage throughout the 8-week course. 

Rounding off the new course offerings is a weekend 

workshop, also run by Meg, on Bookmaking for 

Beginners. Having previously worked at the Eric Carle 

Museum of Picture Book Art in the USA, Meg is very 

familiar with the book format and will lead participants 

through how to create colourful bindings out of folded 

and sewn paper with lots of room for personalization. 

All of these courses are deigned to be accessible 

with no previous art-making experience required, so
