3.1. Abstract<br />
Increasing <strong>chitosan</strong> (Chi) effectiveness for recovering soluble proteins from<br />
surimi <strong>wash</strong> <strong>water</strong> (SWW) is feasible <strong>by</strong> complexation with <strong>alginate</strong> (Aig) and<br />
adjusting <strong>chitosan</strong> concentration and <strong>treatment</strong> time. Chitosan with a degree of<br />
deacetylation of 84% was purified using published procedures. Flocculation at<br />
20°C with Chi-Aig at a 0.2 mixing ratio and added as 20, 40, 100 and 150 mg/L<br />
SWW was aided <strong>by</strong> 5 mm agitation at 130 rpm and held at the same temperature<br />
for 30 mm, lh and 24 h. Turbidity measurements, protein determinations and<br />
qualitative FTIR analysis confirmed SWW protein adsorption which depended on<br />
Chi-Aig concentration and reaction time while turbidity reduction was affected <strong>by</strong><br />
