In 1883 in Kutaisi, a 14-year old boy started working<br />
at a newly opened drugstore which was the only drugstore<br />
in Kutaisi at that time. He was helping the drugstore<br />
owners – Kokochashvili and Ivanovski – prepare and sell<br />
drugs and fruit teas. He was also working at a small lemonade<br />
factory owned by Ivanovski. As he liked working<br />
at the factory better, he was eagerly learning about the<br />
technology of making natural fruit juice. The boy’s name<br />
was Mitrophane Lagidze who headed the factory in 1887,<br />
when he was only 18 years old. The date is still featured<br />
on labels of Lagidze Lemonade, commemorating the time<br />
when production of natural, alcohol-free soft drinks was<br />
started in Georgia.<br />
Lagidze Lemonade turned 125 years old in 2012. This<br />
was an example of a successful business that was started<br />
in a pre-soviet Georgia. The business was spearheaded<br />
by a man named Mitrophane Lagidze. He loved his job<br />
so much that he was in a constant search for something<br />
new, conducting experiments. When he headed the Yanovsky<br />
Factory, he was already producing natural, alcohol-free<br />
soft drinks according to his own recipes. In 1902<br />
he left for Europe to pursue further education. He studied<br />
fruit processing technologies in France and Germany.<br />
He returned in Georgia in 1906 and opened his own<br />
factory in Tbilisi together with a small shop of natural<br />
juice. The shop café Lagidze Waters became one of the<br />
most colorful places on Rustaveli Avenue. Despite the<br />
fact that private businesses no longer existed in the Soviet<br />
