Ensalada de Nochebuena<br />
Christmas Eve Salad<br />
Ensalada, guarnición o postre que se sirve la noche del 24 de diciembre y en Navidad. Una exquisita combinación de<br />
frutas picadas de la estación en un jugo dulce de jamaica y betabel.<br />
Salad, garnish, or dessert served the night of December 24th and on Christmas Day. An exquisite combination of seasonal<br />
chopped fruits in a sweet hibiscus and beet juice.<br />
Ingredientes (20 porciones)<br />
*1 betabel mediano<br />
*Aprox 1/2 libra de flor de jamaica seca<br />
*1.5 taza de azúcar dividida<br />
*8 guayabas<br />
*2 manzanas<br />
*25 tejocotes<br />
*1/2 jícama mediana<br />
*2 naranjas<br />
*2 mandarinas<br />
*2 lima<br />
*0.5 kg cacahuates pelados<br />
Ingredients (20 servings)<br />
* 1 medium beet<br />
* Approx 1/2 pound dried<br />
hibiscus flower<br />
* 1.5 cup sugar divided<br />
* 8 guavas<br />
*2 apples<br />
* 25 tejocotes<br />
* 1/2 medium jicama<br />
* 2 oranges<br />
* 2 tangerines<br />
* 2 lime<br />
* 0.5 kg peanuts, peeled<br />
Preparación<br />
1. Recuerda que es recomendable hacer esta ensalada con anticipación para que todos los sabores se combinen bien.<br />
2. Pela los betabeles y ponlos a cocer en un hervidor con aprox litro y medio a dos litros de agua, agrega una taza de<br />
azúcar y ponlos a cocer hasta que estén suaves, aprox 30 minutos.<br />
3. En una olla grande pon la jamaica, aprox 4 litros de agua y 1 1/2 a dos tazas de azúcar. Coloca sobre fuego alto y<br />
revuelve hasta que el azúcar se haya disuelto. Cuando suelte el hervor, baja el fuego y deja cocinar por unos 10 min.<br />
4. Deja que los betabeles y la jamaica se enfríen. Si los estás haciendo un día antes, ponlos en el refrigerador. Al día<br />
siguiente en la mañana, saca los betabeles del jugo (reserva el jugo), pícalos en cuadritos pequeños y ponlos en una<br />
ensaladera grande.<br />
5. Pica las guayabas en piezas pequeñas. Pela y corta en pequeños cuadros las manzanas, los tejocotes, y la jícama.<br />
6. Pela las naranjas, las mandarinas y las limas, remueve las membranas y divide cada gajo en dos y agrégalos a la<br />
ensaladera con el resto de las frutas.<br />
7. Cuela el jugo de betabel encima de la fruta y luego cuidadosamente cuela el jugo de la jamaica sobre ellas. Prueba<br />
de azúcar, debe estar dulce.<br />
8. Finalmente añade los cacahuates (deben estar pelados completamente sin ninguna cáscara o membrana). Mezcla<br />
todo y déjalo reposar por al menos 8 horas antes de servir.<br />
Preparation<br />
1. Remember that it is advisable to make this salad in advance so that all the flavors combine well.<br />
2. Peel the beets and put them to cook in a kettle with about a liter and a half to two liters of water, add a cup of sugar and cook<br />
until soft, about 30 minutes.<br />
3. In a large pot add the hibiscus, about 4 liters of water and 1 1/2 to two cups of sugar. Place over high heat and stir until the<br />
sugar has dissolved. When it boils, lower the heat and cook for about 10 min.<br />
4. Let the beets and hibiscus cool. If you're making them the day before, put them in the fridge. The next day in the morning,<br />
remove the beets from the juice (reserve the juice), chop them into small squares and put them in a large<br />
salad bowl.<br />
5. Chop the guavas into small pieces. Peel and dice the apples, the hawthorn, and the jicama.<br />
6. Peel the oranges, tangerines and limes, remove the membranes and divide each segment in two and add them to the salad<br />
bowl with the rest of the fruits.<br />
7. Strain the beet juice over the fruit and then carefully strain the hibiscus juice over them. Sugar proof, it must be sweet.<br />
8. Finally add the peanuts (they must be completely peeled without any shell or membrane). Mix everything together and<br />
let it rest for at least 8 hours before serving.<br />
