The Sables asparagus<br />
is kept out of the light to<br />
obtain its beautiful white<br />
colour and is a traditional<br />
Lan<strong>des</strong> product. It enjoys<br />
the sandy soil and oceanic<br />
climate and has benefi -<br />
ted from an IGP (Indice<br />
Géographique protégé -<br />
Protected Geographic Indication)<br />
since 2005. The<br />
vegetables are harvested<br />
and packed in the departément,<br />
which is the leading<br />
French producer, and in a<br />
region called Lan<strong>des</strong> de<br />
Gascogne. Asparagus is<br />
rich in vitamins and minerals<br />
and has few calories.<br />
It can be stored wrapped<br />
in a humid tea towel in<br />
the vegetable tray in a<br />
refrigerator. The simplest<br />
way to savour it is to put<br />
it in boiling water for a few<br />
minutes then cool it with<br />
cold water before serving it<br />
with a vinaigrette or mousseline<br />
sauce. It makes a<br />
perfect light starter before<br />
attacking another select<br />
product, the famous duck.<br />

in mono-unsaturated fatty<br />

ist ein traditionelles<br />
Produkt aus den französischen<br />
Lan<strong>des</strong>. Er gedeiht<br />
am besten auf sandigem<br />
Boden in ozeanischem<br />
Klima und unterliegt seit<br />
2005 dem IGP-Gütesiegel<br />
Das Gemüse wird im Departement<br />
selbst und im<br />
Heidegebiet der französischen<br />
Lan<strong>des</strong> als führendem<br />
französischen Produzenten<br />
geerntet und abgepackt.<br />
Der kalorienarme Spargel<br />
ist reich an Vitaminen und<br />
Mineralstoffen und hält am<br />
besten, wenn man ihn in<br />

El espárrago de <strong>la</strong>s arenas,<br />
privado de luz para obtener<br />
su bonito color b<strong>la</strong>nco, es<br />
un producto tradicional de<br />
Las Landas. Se cultiva en<br />
un suelo arenoso, bajo un<br />
clima oceánico y disfruta<br />
<strong>des</strong>de 2005 de <strong>la</strong> etiqueta<br />
IGP (Indicación Geográfi<br />
ca Protegida). La verdura<br />
se recolecta y envasa en<br />
este departamento, primer<br />
productor francés, y en <strong>la</strong><br />
zona l<strong>la</strong>mada Landas de<br />
Gascuña. Rico en vitaminas<br />
y minerales, pobre en<br />
calorías, el espárrago se<br />
conserva envuelto en un<br />
paño húmedo y se pone<br />
en <strong>la</strong> bandeja de verduras<br />
del frigorífi co. Para degustarlo,<br />
hay que ponerlo<br />
algunos minutos en agua<br />
a punto de hervir, <strong>des</strong>pués<br />
refrescarlo con agua fría<br />
y servirlo acompañado de<br />
una salsa vinagreta o muselina.<br />

Wok de magret de canard &<br />
d’asperges <strong>des</strong> sables <strong>des</strong> Lan<strong>des</strong><br />
Ingrédients<br />
- 2 magrets de canard fermier <strong>des</strong> Lan<strong>des</strong><br />
- 1 botte d’asperge <strong>des</strong> sables <strong>des</strong> Lan<strong>des</strong><br />
- 2 cuillères à soupe de persil haché<br />
- 2 gousses d’ail<br />
- 50 gr de beurre<br />
Préparation<br />
Après avoir pelé les asperges avec un économe, coupez-les en trois<br />
et plongez-les 6 à 8 mn dans l’eau bouil<strong>la</strong>nte salée.<br />
Rafraîchissez-les aussitôt sous l’eau froide.<br />
Taillez les magrets de canard en tranches de 1 cm<br />
d’épaisseur. Saisissez-les 2 mn sur feu vif dans un wok.<br />
Retirez les tranches de magret du wok ainsi que<br />
<strong>la</strong> graisse. Ajoutez le beurre. Une fois fondu, ajoutez<br />
les asperges cuites puis le persil et les gousses d’ail hachées.<br />
Salez, poivrez et remettez les tranches de magret avec les asperges,<br />
faites sauter le tout 2 minutes sur feu vif. Servez aussitôt.<br />
GB Duck breast<br />
and Lan<strong>des</strong> asparagus<br />
stir-fry<br />
Ingredients<br />
- 2 Lan<strong>des</strong> farm reared<br />
duck breasts<br />
- 1 bunch of Lan<strong>des</strong><br />
asparagus<br />
- 2 soup spoons<br />
of chopped parsley<br />
- 2 garlic cloves<br />
- 50 g butter<br />
Preparation<br />
Peel the asparagus with a<br />
vegetable peeler, cut them<br />
into three and p<strong>la</strong>ce them in<br />
boiling salted water for 6 - 8<br />
minutes.<br />
Cool them with cold water.<br />
Cut the duck breast into 1<br />
cm thick slices. Seize it for 2<br />
minutes in a wok on a high<br />
heat. Remove the breast<br />
strips and the fat from the<br />
wok. Add the butter. Once the<br />
butter has melted, add the<br />
cooked asparagus followed<br />
by the parsley then the<br />
chopped garlic. Season with<br />
salt and pepper and return<br />
the breast strips to the wok.<br />
Sauté for 2 minutes on a high<br />
heat. Serve straight away.<br />

DE Entenbrust-Wok und<br />
weißer Spargel aus den<br />
französischen Lan<strong>des</strong><br />
Zutaten<br />
- Zwei Entenbrüste nach<br />
Bauernart aus den Lan<strong>des</strong><br />
- Bündel weißer Spargel aus<br />
den Lan<strong>des</strong><br />
- 2 Suppenlöffel gehackter<br />
Petersilie<br />
- 2 Knob<strong>la</strong>uchzehen<br />
- 50 Gramm Butter<br />
Zubereitung<br />
Spargel schälen, dritteln und<br />
6 bis 8 Minuten in sieden<strong>des</strong><br />
Salzwasser tauchen.<br />
Sofort danach in kaltem<br />
Wasser abschrecken. Die<br />
Entenbrüste in 1 cm dicke<br />
Scheiben schneiden. 2 min<br />
in einem Wok stark erhitzen.<br />
Fett und Entenbrustscheiben<br />
aus dem Wok nehmen. Butter<br />
hinzu geben. Den gekochten<br />
Spargel zur geschmolzenen<br />
Butter geben, Petersilie und<br />
Knob<strong>la</strong>uchzehen hinzufügen.<br />
Salzen, pfeffern und die Entenbrustscheiben<br />
unter den<br />
Spargel mischen, 2 Minuten<br />
auf starker F<strong>la</strong>mme erhitzen.<br />
Sofort servieren.<br />

SP Wok de magret<br />
de pato y espárragos de<br />
<strong>la</strong>s arenas de Las Landas<br />
Ingredientes<br />
- 2 magrets de pato<br />
de granja de Las Landas<br />
- 1 manojo de espárragos<br />
de <strong>la</strong>s arenas de Las Landas<br />
- 2 cucharas soperas<br />
de perejil picado<br />
- 2 dientes de ajo<br />
- 50 gr de mantequil<strong>la</strong><br />
Preparación<br />
Después de pe<strong>la</strong>r los espárragos<br />
con un pe<strong>la</strong>dor, cortarlos<br />
en tres y ponerlos entre 6 a 8<br />
min. en agua hirviendo sa<strong>la</strong>da,<br />
refrescarlos enseguida bajo<br />
agua fría. Cortar los magrets<br />
de pato en rodajas de 1 cm<br />
de grosor. Soasarlos 2 min. a<br />
fuego vivo en una sartén. Retirar<br />
<strong>la</strong>s rodajas de magret de<br />
<strong>la</strong> sartén, así como <strong>la</strong> grasa.<br />
Añadir <strong>la</strong> mantequil<strong>la</strong>. Una vez<br />
fundida, añadir los espárragos<br />
cocidos, <strong>des</strong>pués el perejil y<br />
los dientes de ajo picados.<br />
Echar sal, pimienta y juntar <strong>la</strong>s<br />
rodajas de magret con los espárragos,<br />
saltear todo durante<br />
2 minutos a fuego vivo. Servir<br />
de inmediato.<br />
