Polenta offre una cucina semplice e genuina, ispirata alla tradizione<br />

e a chilometro zero. Come proposte estive consigliano le insalate<br />
di cereali biologici, la caponatina, i friciulin di erbette e i flan<br />
di ortiche con crema di ricotta. Nel menù anche piatti a base di<br />
pesce, come gli scampi alla busara, il baccalà cod 1000/Up<br />
con pomodorini datterino e bagnetto verde, e il salmone marinato<br />

Le novità per l’estate sono chitarre nere con calamaretti,<br />
pomodorini confit, capperi e olive, il polpo del mediterraneo in<br />
doppia cottura, tenera e croccante, su crema di fave con caffè<br />
e pomodorini ferrisi e ancora, una julienne di calamaretti con<br />
pesto, patate e fagiolini. Per concludere il pasto in dolcezza, la<br />

Deux ingrédients très simples composent les recettes de ce<br />
restaurant, tradition et créativité. Elisabetta, une des propriétaires<br />
nous dit ‘nous partons d’une recette traditionelle et nous<br />
introduisons des tecniques innovatives et différents types de<br />
cuisson. Pour l’été on conseille: ‘chitarre nere’ aux soupions,<br />
tomates confites, câpres et olives. Le poulpe de la<br />
Méditérannée en double cuisson tendre et croquante sur<br />
crème de fèves, café, petites tomates ‘ferrisi’ et juliennes de<br />
soupions au pistou, pommes de terre et haricots verts. En dessert:<br />

propria con burro e miele, il risotto con le fragole, gamberetti e<br />
cozze, e gli straccetti di sotto filetto alle noci. «Nel menù anche<br />
piatti a sorpresa – racconta Giorgio Cambursano – ricette<br />
inventate al momento, in linea con le richieste e le necessità del<br />
cliente». Come dessert, la cucina consiglia le pesche golose.<br />
