is approaching and festive lights are everywhere.<br />

landscape during the holiday season. The artistic<br />
atmosphere in Paris is at its best.<br />
Although mobile communication traffic reaches a<br />
peak at this time of the year, gathering friends and<br />
family is irreplaceable. Those warm memories<br />
of a bustling ambiance, offering presents to show<br />

the baccarat fountain<br />
The origin of the inspiration of "Délire de roses" was the<br />
will to create a “lightly fragrant rose." In this fragrance,<br />
the added notes of lotus, lychee and jasmine essence<br />
give people a feeling of freshness. It is a gentle and<br />
delicate aroma, with a light touch of ice cream and sweet<br />
macaroons.<br />
In 1950 the famous American film «Sunset Boulevard», the actress Gloria Swanson sprayed<br />
the Caron's «Narcisse Noir» perfume and said: "I Love « Narcisse Noir »!" This let the spark of<br />
the perfume bloom perfectly, but also the whole world to know Caron.<br />
Caron was born in Paris in 1903, it's a familyrun<br />
perfume brand, has a century-old<br />
history of handmade fragrance. It is now one<br />
of the few perfume family in <strong>France</strong> that still<br />
has an exclusive perfumer. The Founder Ernest<br />
Daltroff is an amazingly talented perfumer. His<br />
muse was Ms. Félicie Wanpouille, from 1906,<br />
she acted as artistic director of Caron, in charge<br />
of designing the packaging of the perfumes.<br />
Together, they created «Narcisse Noir», «N'Aimez<br />
que Moi», «Tabac Blond» and other famous classic<br />
fragrances.<br />
The creation of Caron perfumes always takes<br />
into consideration the historical background.<br />
The fragrance for women «N'aimez que Moi»<br />
(love only me) was launched in the 1916, a time<br />
related to the First World War, when soldiers on<br />
the battlefield gave this bottle of perfume to their<br />
wives or fiancee, which means "love only me, wait<br />

This year is the 80th birthday of the perfume «Pour<br />
un Homme» (For a Man), with the double meaning<br />
of "as a man" and "To a man". This perfume created<br />
by Daltroff in 1934 contains lavender, vanilla and<br />
amber, dignified and full of aroma, a feeling of being<br />
in a lavender field from the south of <strong>France</strong>. In<br />
fact, it is Mrs Wanpouille who asked him to create<br />
a perfume that reflects the Daltroff as she saw<br />
him: elegant, noble, masculine but not tough. Thus<br />
was born the first perfume specifically designed<br />
for men in the world, men no longer have only<br />
cologne to choose from. The fragrance is beloved to<br />
many French presidents, like Mitterrand, Chirac or<br />
Sarkozy.<br />
"Tabac Blond" (light tobacco) was created in 1919.<br />
It is the time when the American jazz music swept<br />
throughout Europe, the time when stylish and<br />
elegant women often dressed neutrally and smoked<br />
cigarettes in long motherofpearl holders. This world's<br />
first perfume including leather scent, "light tobacco",<br />
was designed to embody these ladies.<br />
There is a very interesting perfume called "Royal<br />
Bain de Caron" (Caron royal bath). In the beginning,<br />
an American tycoon found Daltroff and asked him to<br />
create a perfume with cool foam with fruity notes, to<br />
replace expensive champagne his wife used for bath.<br />
So in 1941, Mr. Daltroff created the "Royal Bain de<br />
Caron".<br />

Caron, he was born in a family of perfumers, his<br />
grandfather created Yardley's “English Lavander”<br />
in 1913 and his father created Lanvin's “Arpège”<br />
in 1927. Richard Fraysse often travels around the<br />
world, looking for inspiration in different spices.<br />
For instance the perfume "Yuzu" came from the<br />
experience he had while travelling to Japan with<br />
his wife. He had been inspired by the aroma<br />
of grapefruit the restaurants and hotels were<br />
often filled with. He traveled to four continents<br />
to find natural scents: Japanese grapefruit,<br />
Indian verbena, North African cedar, Australian<br />
sandalwood ... So this perfume suits a traveler<br />
who can wear it around the world.<br />
Inside Caron store, we can see giant Baccarat crystal<br />
perfume fountains of 50 cm. Around ten fountains<br />
contain classic Caron perfumes with original formula<br />
which have not been modified since their creation. To<br />
test a fragrance, the clerks would ask you to close your<br />
eyes so you are not distracted by sight, and can focus<br />
on the scent. 80 percent of Caron perfumes are natural<br />
essences, they change little on paper, but are only<br />
revealed once it touches the skin. However we should<br />
keep a certain distance when we spray it so as not to wet<br />
the skin.<br />
Beyond the original scented powders Caron created in<br />
the 30s are still the most delicate ones in the world. This<br />
traditional handmade manufacturing process is still a<br />
secret up to now. The powder includes natural Bulgarian<br />
Rose essential oil, 12 color shades are available to suit<br />
the needs of different complexion. It comes with a little<br />
case containing a pale pink powder puff, made with fine<br />
goose-fluff, incomparably light and soft.<br />
On every aspect of the products, Caron requires<br />
excellent quality; perfume bottles, crystal ware, ceramics<br />
gift boxes are all handmade by craftsmen who infuse an<br />
elegant breath of life in each item.<br />
Caron uses family business management, between the<br />
boss and the employees, everyone feels like they belong<br />
to the same family. This kind of atmosphere combined<br />
to the purely handmade craftsmanship transmitted<br />
through centuries and the original formulas, the pursuit<br />
of highest quality in perfume, all this make the 35<br />

Yacouba Galle 出 生 在 一 個 大 家 庭 , 兄 妹 六 人 , 爸 爸 是 研 究 非 洲<br />

“I could not help but want to design.”<br />
he was the director, but he was also the rider. The video quickly<br />
became a sensational advertising film.<br />
Yacouba Galle was born in a large family of six siblings, and his<br />
father was a specialist of African literature and was very sensitive<br />
to art.<br />
In Yacouba’s earlier memories, drawing was always part of him.<br />
In his own words, he was “born holding a pencil.” He observed<br />
everything carefully, and spent a lot of time copying images, the<br />
drawings he has kept are very nice works. He would draw a lot in<br />
black and white, so he understood what is the relationship between<br />
light and shadow, how to use a plan to create three-dimensional<br />
space. This desire to draw and copy everything became a<br />
cornerstone for his future designs of products.<br />
Despite being a designer of appearances, he has a complete understanding<br />
of motorcycle’s parameters, and by simply looking at<br />
the figures of a motorcycle he can tell the feeling one can have<br />
riding it.” His familiarity with the motorcycle greatly improves<br />
the design.<br />
The person in charge of Kawasaki’s French Quarter told him that<br />
he sent every issue of the magazine to Japan and told the other<br />
side of the production team: if you want to sell Kawazaki motorcycles<br />
in Europe, please make a motorcycle like the design in these<br />
drawings. Therefore, Kawasaki Company’s Japanese motorcycles<br />
have often been related to his works.<br />

Besides copying a lot, Yacouba has the absolute ability to show<br />
what he has in his mind. From jeans to backpacks of tools, from<br />
the seat to the motorcycle, he can personally design all the transformation.<br />
He says: “I am totally unable to control my desire to<br />
perfect anything I see.”<br />
A “Chameleon” designer<br />
In addition to graphic design, Yacouba has a hobby, which is motorcycle.<br />
Not only he is a true rider, participating in various competitions,<br />
but he also has an extraordinary reputation of designer<br />
in the motorcycle industry.<br />
Before the age of 20 years old, he saw a new French magazine’s issue,<br />
in which he found a whole section devoted to extreme sports.<br />
After looking at the works of Yacouba, the magazine quickly<br />
agreed to create a column showing his drawings, a monthly column<br />
of two pages, running for ten years in a row. The column was<br />
quickly seen by the manufacturers, and they paid great attention<br />
to it, especially the motorcycle giant KTM who was often calling<br />
him in order to hire him.<br />
Then he became a motorcycle tester journalist, and was able to<br />
test and ride a great amount of different motorcycles for the job,<br />
more than most professional riders. Yacouba did reports not only<br />
for fun, but he often pushed things to the limit and went further:<br />
he was the first reporter worldwide to touchdown with the elbow<br />
when riding a motorcycle. He worked a total of eight years for the<br />
magazine. Then, he made video clips for the KTM brand, including<br />
himself driving a motorcycle in an extreme way, so not only<br />
His design works often inspire manufacturers, he did some formal<br />
cooperation with KTM production, and also a Bestiale for an<br />
Italian manufacturer MV Agusta brands, equivalent of a Ferrari<br />
for motorcycles. There’s even a Solution F implemented in a car.<br />
In addition, he also teaches at the Higher School of Design, design<br />
chairs, participates in motorcycles tournament and launched its<br />
own brand of accessories and clothes... Saying that he was a “chameleon”<br />
designer is really not exagerated, it describes perfectly<br />
his “design everything” attitude.<br />
New Challenges<br />
Three years ago Yacouba started a new independent project,<br />
named “La Féline”. He wanted this new model to be, not just a<br />
motorcycle, but have a feline atmosphere, with all life related. He<br />
also created a logo for this brand.<br />
The new motor has already been made into a 3D model, with its<br />
whole technical support validated. It will be manufactured in<br />
Switzerland and <strong>France</strong>. As the world’s most luxurious and expensive<br />
motorcycle, it will have the most technical content. It is a<br />
limited edition; the rider’s equipment will be taylored by a special<br />
designer. “Taste Of Life” readers are the first to see the product<br />
(photo on the left).<br />
Always see the world as if seen the first time, with no less feeling<br />
of novelty, passion, to create everything we like. This is a beginning<br />
and a testimony, we will be watching Yacouba walk briskly<br />
toward his goal.<br />

Just a short distance away from the Arc de Triomphe, in n°6, Balzac<br />
Street on one side of the Champs-Elysées, sits the five-star Hotel Balzac,<br />

It was built in 1853 for the director of the Opera de Paris. Later, the<br />
great writer Balzac bought it and spent his last days here, hence the<br />
hotel was named after him. Nowadays, the hotel displays a collections<br />
of books and artworks depicting scenes from “The human comedy”.<br />
The hall is decorated with thick golden hangings and dark red velvet<br />
chairs, the colors and patterns of the walls answer elegantly to the<br />
large carpets, with a few classical-style decorations. The hotel uses<br />
neo-classical style, not without a trendy romance.<br />
Since 1996, the hotel restaurant is managed by the Michelin threestar<br />
chef Pierre Gagnaire.<br />
The 70 air-conditioned rooms offer minibars, DVD players, safes,<br />

坐 雄 鷹 翱 翔 一 樣 了 。 等 到 了 梅 傑 夫 , 落 住 在 城 裡 的 M de Megève 酒 店 。 走 進 這 座 五 星 級 的 木 屋 建 築 , 淡 淡 的 馬 鞭 草<br />

受 。 這 裡 有 一 家 叫 Aallard 的 滑 雪 服 裝 店 ,70 幾 年 前 就 是 這 家 裁 縫 店 的 老 闆<br />
把 現 在 稱 作 健 美 褲 的 那 種 形 狀 的 褲 子 設 計 成 了 滑 雪 服 。<br />
在 山 坡 上 有 一 家 Joséphe 農 場 , 他 們 自 己 製 作 奶 酪 和 酸 奶 , 餐 廳 自 然 也<br />
準 備 著 當 地 最 有 名 的 薩 瓦 奶 酪 火 鍋 。<br />
下 雪 的 日 子 , 大 家 圍 坐 在 一 起 吃 一 頓 奶 酪 火 鍋 , 就 像 中 國 人 吃 麻 辣<br />
火 鍋 一 樣 熱 氣 騰 騰 。 先 用 蒜 擦 一 下 鍋 , 倒 入 白 葡 萄 酒 , 將 切 成 小 片 的 奶 酪<br />

每 年 的 一 月 份 是 遊 客 最 多 的 季 節 , 會 有 梅 傑 夫 雪 上 馬 球 大 師 賽 , 還 有<br />
世 界 上 幾 乎 獨 一 無 二 的 阿 爾 布 瓦 峰 雪 地 高 爾 夫 比 賽 。<br />

Sitting in the car heading to Megève, the road slythered<br />
through hills and plains, snowy summits played hide<br />
and seek with clouds, the wooden cabins in the mountains<br />
breathed cooking smokes, our hearts were already soaring<br />
like eagles.<br />
Arriving at Megève, we stopped at Hotel “M de Megève”.<br />
Entering this 5 star wooden building, a light scent of<br />
verbena put our mind at ease, the blaze in the fireplace<br />
warmed our body, white maple ornaments responded to the<br />
immaculate landscape outside the bay windows , the chairs<br />
and sofas covered in Arpin cashmere weavings. The service<br />
was as warm, caring and relaxing as the environment.<br />
Megève is situated in Sallanches, department of<br />
Savoie, at the border of <strong>France</strong> and Switzerland; it is an<br />
internationally famous place for skiing and vacation. In<br />
<strong>France</strong> if someone went to Megève for a snow holiday, it<br />
would be considered a tasteful choice, for it has always<br />
been favoured by elegant, low lying people.<br />
At Megève, you can obviously not miss skiing. The<br />
exciting forest slopes are especially recommended for<br />
experienced skiers. At Rochebrune and Côte 2000 stations,<br />
you can find world championship level skiing tracks.<br />
Some of the unattended tracks below Mont Joly are<br />
even more suited to challenge professional and freestyle<br />
skiers. Instructors would guide the beginners on<br />
appropriately easier tracks.<br />
Apart from skiing, you can also ride dog sleighs, iceskate,<br />
hike with raquett shoes, try snow golf, watch<br />
exciting snow polo games, or sail out in a hot air<br />
balloon or helicopter to admire the view high above<br />
Mont Blanc.<br />
After skiing, you can go relax in an outdoor hot<br />
spring and spa, taking in the perfect skin care<br />
services. In the 5 star hotel “la Ferme de Marie” ,<br />
sitting in the natural stone built spa pool, looking<br />
around outside the windows, there is nothing but<br />
bright blue sky and dazzling snow-capped mountain.<br />
The days you take a break from skiing, you can skim<br />
the town in a horse carriage, with a blanket in your<br />
lap. Following the rippling rhythm of the horse, its<br />
neck bells would tinkle, along with hooves beating<br />
the stone pavement lined with wooden houses, far<br />
from the tumult, feeling a simplicity long forgotten.<br />
despite it being a small mountain town, Megève has<br />
all the biggest brands, all set in ancient and modest<br />
wood houses, shopping take another dimension. A<br />
shop there is called Aallard, inventor of the stretch ski<br />
pants 70 years ago.<br />

Another farm sits on the mountain side, La ferme de<br />
Joseph, they make their own cheese and yogurt, and the most<br />
well known Savoie fondue is also on the menu.<br />
On days of snow, everyone would gather around a fondue<br />
pot, just like Chinese eating hot fondue. First rub the pot<br />
with garlic, pour in white wine, add small cheese cubes, keep<br />
stirring with a wooden spoon, once it boils, dip in a piece of<br />
bread or potato with a special metal fork, blow slightly on<br />
it before enjoying. In such ambiance, even perfect strangers<br />
would start talking to each other. If someone drops the bread<br />
in the pot, he’ll have to complete a challenge, like singing a<br />
song for everyone.<br />
At last, we tasted the creamy yogurts and cheeses, and<br />
couldn’t refrain from buying local products before leaving,<br />
smoked ham, pâté, cheese, dry sausages, and stew sealed in a<br />
glass jar. Because after working in the mountains, one needs<br />
to regain energy, food in Savoie is really nutritious.<br />
January is the busiest month for Megève, that’s when the<br />
Polo Master takes place, as well as the unique in the world Snow<br />
Golf Cup of Mont d’Arbois.<br />
In summer, this place also harbours rich activities. In july<br />
there is the jazz and classical music festival, an over 50 years<br />
old horse and sleigh festival, and the International jumping<br />

唐 名 將 李 靖 戎 馬 一 生 , 就 是 這 樣 一 位 以 用 奇 兵 著 稱 , 擅 長 把 握 戰 局 時 機 的 傑 出 軍 事 家 。<br />

In 629 AD, the Tang emperor dispatched a force of over 100,000 soldiers<br />
to eliminate the northern threat posed by the Eastern Tujue, a<br />
clan of Turks led by Jiali Khan. Li Jing led a surprise contingent of<br />
3,000 cavalry, capturing cities and paralyzing their armies.<br />
懷 才 不 遇<br />
可 惜 此 時 的 隋 朝 , 在 昏 庸 無 道 的 隋 煬 帝 的 統 治 下 , 正 迅 速 走<br />

“It is unprecedented. Li Jing has avenged the insult I suffered.”<br />
— Emperor Taizong of the Tang Dynasty<br />
Li Jing, a celebrated Tang Dynasty military leader, was almost<br />
executed by the emperor whom he went on to loyally serve<br />
for the next 8 years. “You, general, rose to rid tyranny for the people.<br />
If you want to achieve great things, how can you kill a courageous<br />
man because of a personal grudge” Li yelled out as he was<br />
dragged away to be killed.<br />
Li Yuan, at the time merely a rebel, but one who toppled the Sui<br />
Dynasty and established the Tang Dynasty, was struck between<br />
the eyes by Li Jing’s courageous words, and spared his life. Indeed,<br />
Li Yuan made Li Jing his trusted lieutenant, even after Li Jing almost<br />
blocked his rise by telling the old Sui rulers of his plans to<br />
rebel.<br />
Beginning in his 40s, a time when many men of war are beginning<br />
to slow down, Li began climbing toward his prime, conquering<br />
vast swathes of land for the mighty Tang Dynasty, suppressing<br />
rebellions, and laying down the Tang’s borders.<br />
All this was exactly what Li had hoped for but could never have<br />
expected when, as a young man toward the end of the Sui Dynasty,<br />
he practiced swordcraft in the yard of his courtier family. Li<br />
once told his father: “A man should earn wealth and social position<br />
through exploits in a turbulent age, in the service of great<br />
emperors.”<br />
Turbulence is exactly what Li walked into. The tyrannical Sui<br />
emperor Yang (569 - 618 AD) was eventually overthrown by a<br />
Sui general who decided that it was time for China to turn a new<br />
leaf.<br />
In May 618 AD, that general, Li Yuan, established the Tang<br />
Dynasty, becoming Emperor Gaozu. Li Jing was made his top<br />
general and charged with pacifying the realm.<br />
Li built his statuesque reputation by quelling the rebels over<br />
the next 30 years.<br />
His first victories came through acting on his own judgement,<br />
against other commanders’ advice. Li Jing raided the Liang state,<br />
a part of China that the Tang Dynasty sought to bring into its<br />
territory. Rather than wait for the raging Yangtze River to slow<br />
its flow after the rainy season, as other generals cautioned, Li<br />
Jing seized the moment and crossed, launching a surprise attack<br />
on the holdouts and capturing several cities within a month.<br />
In an opposite case, a fellow general was itching for action and,<br />
against Li Jing’s advice, decided to launch an attack. The general<br />
was seriously defeated. But Li Jing swooped in with a fell counterattack<br />
that resulted in the seizure of 400 ships.<br />
Outstanding military victories like this showed supreme<br />
judgement, unclouded by ego. He was brave in battle, yet<br />
known by all for his composure and steadfastness; and when<br />
his opinions differed from other Tang leaders, Li Jing was<br />
unfailingly humble and respectful, sometimes so much so<br />
that in conference he seemed unable to speak.<br />
This was recognized again during his sallies in the northern<br />
part of the empire. There, he secured territory from the<br />
nomads who positioned themselves on the plains before<br />
they swept through China looting and plundering. Indeed,<br />
at one point the nomads almost destroyed the fledgling<br />
Tang dynasty, forcing Emperor Taizong into a humiliating<br />
alliance with one of their leaders.<br />
At the age of 58, Li was appointed by the Emperor himself<br />
to head a massive army of 100,000 soldiers, meant to crush<br />
the invaders and remove the threat once and for all.<br />
But in the end, Li didn’t need the army: he defeated the<br />
Eastern Tujue intruders with just 3,000 cavalry in a series of<br />
masterful surprise attacks. Jiali Khan, their leader, exclaimed<br />
“If the Tang did not come north with all its military forces,<br />
how could Li Jing dare to come so far with just a few soldiers!”<br />
The Tujue had by that time lost several key city centers and<br />
were psychologically defeated.<br />
“It is unprecedented,” Emperor Taizong remarked after<br />
hearing the news. He sighed with relief: “Li Jing has avenged<br />
the insult I suffered.”<br />
Following those battles, Li Jing was made the prime minister<br />
of the Tang Dynasty and was bestowed the honourary<br />
title Duke of Wei. But by then he was in his 60s, and, four<br />
years later, requested permission to retire. Emperor Taizong<br />
accepted and made Li a role model for other generals to follow.<br />
Like all great odysseys, this one has a sequel. Li Jing was<br />
soon recalled, to rescue the country from another catastrophe:<br />
raiding Mongols. Li met with the chancellor and accepted<br />
the appointment. He immediately set out and engaged<br />
the enemy, defeating them in the first battle and then driving<br />
them deep into the north, nearly 1,000 kilometers away.<br />
Grueling, protracted warfare occupied a year of Li’s energies.<br />
Defeating the Mongols was Li Jing’s last major expedition.<br />
He died in July 649 AD, 78-years-old, and was accorded the<br />
highest honors of a servant of the Emperor — to be buried<br />
near Taizong’s own tomb. Li Jing’s military foresight and wisdom,<br />
and his humbleness in resigning from his post as prime<br />
minister after just four years, were praised for generations.<br />
Su Xun, a gentleman of letters who lived 400 years later,<br />
summed up Li Jing simply and accurately. He called him “a<br />
virtuous general.”<br />

北 抗 突 厥<br />

由 辭 任 。 瞭 解 李 靖 的 唐 太 宗 明 白 他 的 心 意 , 也 更 加 欣<br />

樂 天 知 命<br />
Mr. Ma Zikai, is a famous contemporary Chinese<br />
artist excelling in many domains: poetry, calligraphy,<br />
painting, and art appreciation in Chinese culture. He<br />
was the disciple of Linlu Xu, who was himself disciple<br />
of the very famous painter Qi Baishi. Therefore we can<br />
say that Ma Zikai was also the disciple of Qi Baishi.<br />
He was the director of various academic Institutes of<br />
Chinese calligraphy, such as Shu Yu Club for instance.<br />
His solo exhibitions held at home and abroad have<br />
repeatedly received commentaries from the public<br />
media such as "the best appreciation potential, best<br />
painting collection value" or "one of the most popular<br />
painters". His calligraphy works allow him to be the<br />
highest auction record holder in the field of calligraphy.<br />
Mr. Ma Zaikai was invited in <strong>France</strong> for the events the<br />
"Louvre Eastern and Western Art Exhibition" and the<br />
"Ma Kai ancient seal Art Exhibition" at the Louvre. The<br />
"Ma Kai ancient seal Art Exhibition" has started a world<br />
tour and is planned in more than a dozen international<br />
organizations: this time he has brought fine pieces,<br />
including Chinese "Taihe Baoxi" (Imperial seal) and "Han<br />
Feng, Wadang serie" stamped directly from the original<br />
huge rubbings of stone tablets.<br />
In the exhibition we talk with Mr. Ma Zikai, he said<br />
that to be a successful artist, you need three essential<br />
factors, which are talent from the heavens, skill and<br />
virtuosity, also being able to see uncontrollable external<br />
opportunities.<br />
In the future, we hope to see more Chinese artists in<br />
Paris, the profound traditional Chinese culture needs to<br />
be shown and share its benefits to the rest of the world.<br />

珠 玉 二 寶 粥<br />

Between fall and winter, the air is cold and dry — time for<br />
nourishing Yin. This mouthwatering “pearl and jade” porridge<br />
warms your loved ones and prepares their hearts for winter.<br />
「 一 點 禪 燈 半 輪 月 , 今 宵 寒 較 昨 宵 多 。」 秋 冬<br />
時 節 , 寒 意 來 襲 、 空 氣 乾 燥 , 正 是 滋 陰 進 補 的<br />
時 機 。 一 款 養 身 祛 病 的 藥 膳 , 給 關 愛 的 人 精 心<br />
烹 製 , 美 食 入 口 , 暖 意 入 心 。<br />
代 名 醫 張 錫 純 在 《 醫 學 衷 中 參 西 錄 》 中 錄 有 一 食 療<br />
近 方 , 名 為 珠 玉 二 寶 粥 , 甘 甜 可 口 , 久 服 無 弊 。 張 錫 純<br />
認 為 此 方 有 清 肺 補 脾 、 滋 陰 益 氣 之 效 , 若 因 氣 陰 虧 損 而 引 起<br />
的 沒 有 食 慾 , 每 日 午 後 發 熱 , 更 有 甚 者 感 覺 有 熱 感 從 骨 內 向<br />
外 透 發 , 夜 晚 咳 嗽 嚴 重 的 情 況 , 可 食 此 粥 。<br />
這 款 傳 統 的 漢 族 藥 膳 , 以 薏 苡 仁 、 山 藥 與 柿 霜 餅 為 主 要 食<br />
材 。 因 生 薏 米 形 如 珍 珠 , 山 藥 、 柿 霜 餅 狀 如 玉 石 而 得 名 。 若<br />
查 閱 古 書 典 籍 , 會 發 現 這 些 食 材 均 有 妙 用 趣 事 , 讀 之 心 怡 。<br />
據 東 漢 史 書 《 吳 越 春 秋 》 記 載 , 大 禹 的 母 親 女 嬉 , 便 是 在 砥<br />
山 吞 食 了 薏 苡 , 心 中 彷 彿 有 了 特 殊 的 感 應 , 之 後 便 懷 孕 生 下<br />
了 大 禹 。 由 此 可 見 薏 苡 的 食 用 歷 史 非 常 之 久 了 。 早 在 《 神 農<br />
本 草 經 》 中 也 有 記 載 , 並 將 它 列 為 「 上 品 」。 宋 代 文 豪 蘇 東<br />
坡 曾 有 詩 讚 之 :「 不 謂 蓬 荻 姿 , 中 有 藥 與 糧 , 春 為 芡 珠 圓 ,<br />
炊 作 菰 米 香 。」<br />
薏 苡 因 形 如 珍 珠 , 還 曾 引 來 一 段 公 案 。 據 《 後 漢 書 》 記 載 ,<br />
有 一 位 將 軍 馬 援 , 在 南 方 濕 熱 山 林 征 戰 時 , 發 現 當 地 人 們 因<br />
經 常 食 用 薏 米 , 能 消 除 瘴 氣 , 輕 身 省 慾 。 他 想 把 果 實 飽 滿 的<br />
南 方 薏 米 帶 回 國 做 為 種 子 , 於 是 在 回 師 途 中 載 了 一 車 。 沒 想<br />
到 在 他 去 世 之 後 , 有 人 竟 挾 怨 誣 告 他 從 南 方 私 帶 明 珠 珍 寶 。<br />
之 後 有 大 臣 上 書 六 次 , 才 將 這 起 冤 案 平 反 。 之 後 , 人 們 就 把<br />
清 白 之 人 徒 遭 冤 屈 的 事 , 稱 為 「 薏 苡 明 珠 謗 」。<br />
山 藥 的 保 健 價 值 , 在 古 代 醫 學 典 籍 上 處 處 可 見 , 被 視 作 草 藥<br />
中 的 上 品 。 山 藥 主 要 有 補 脾 養 胃 、 生 津 益 肺 、 滋 腎 益 精 三 大<br />
功 效 。《 紅 樓 夢 》 裏 , 秦 可 卿 吃 過 的 山 藥 紅 棗 糕 就 是 很 好 的<br />
滋 補 佳 品 。<br />
柿 餅 外 面 的 白 色 粉 霜 , 即 柿 霜 , 收 集 後 入 鍋 熔 化 成 餅 狀 , 晾<br />
乾 後 即 為 柿 霜 餅 , 可 以 在 華 人 的 藥 材 店 買 到 。 也 有 不 壓 成 餅<br />
狀 , 直 接 粉 狀 出 售 的 。 根 據 《 本 草 綱 目 》 中 的 記 載 , 柿 霜 性<br />
涼 , 可 止 咳 、 化 痰 、 潤 肺 。<br />
材 料 :(1 人 份 )<br />
山 藥 60 克 , 薏 苡 仁 杯 (60 克 ), 柿 霜 粉 ¼ 杯 (24 克 ), 水 1<br />
杯 (400ml)。<br />
做 法 :<br />
將 山 藥 、 薏 苡 仁 搗 碎 。 薏 苡 仁 先 放 入 鍋 中 , 加 水 , 用 大 火 燒<br />
沸 , 文 火 熬 煮 10 分 鐘 , 再 放 入 山 藥 敖 煮 4 分 鐘 即 成 。 將 切 碎<br />
的 柿 霜 餅 ( 粉 ) 倒 入 粥 鍋 內 拌 勻 , 即 可 服 食 。 每 日 1~2 次 ,<br />
每 次 1 小 碗 。<br />
小 貼 士 :<br />
因 此 粥 含 柿 霜 , 不 要 和 蟹 類 同 食 。 山 藥 有 收 斂 作 用 , 所 以 大<br />
便 燥 結 者 不 宜 食 用 此 粥 。 乾 燥 的 薏 苡 仁 需 先 泡 水 三 小 時 以<br />
上 , 熬 煮 時 需 注 意 攪 拌 避 免 黏 鍋 。<br />
This dish gets its name from the shape and pearly<br />
color of Job’s Tears (Chinese pearl barley), while<br />
mountain yam and compressed persimmon powder resemble<br />
jade.<br />
Congee, Asian porridge, is apparently so wholesome<br />
that the Buddha said, in the Book of Discipline, that congee<br />
bestows life, beauty and strength, dispels hunger,<br />
thirst, and wind, purifies the bladder, and aids digestion.*<br />
Chinese people have enjoyed congee for eons. The earliest<br />
record dates back to the Spring and Autumn Period<br />
and Warring States Era (770 – 221 BC). During the Tang<br />
and Song Dynasties, congee became a popular remedy<br />
for clearing lungs, easing coughs and strengthening the<br />
spleen.<br />
Yin in nature, persimmon powder — the white residue<br />
on persimmon fruit — mitigates coughs, reduces<br />
phlegm, and nourishes lungs. Job’s Tears are to thank<br />
for better lungs, kidneys, and spleen functions while<br />
mountain yam enhances saliva production and nourishes<br />
those same organs.<br />
Ingredients:<br />
2 ounces (60g) mountain yam<br />
⅓ cup (60g) Job’s Tears or Chinese pearl barley<br />
¼ cup (24g) persimmon powder, loose or compressed<br />
1⅔ cups (400ml) water<br />
Directions:<br />
1. Soak Job’s tears in water for 3 hours.<br />
2. Pestle mountain yam and Job’s Tears separately.<br />
3. Cook mountain yam in water on high heat. Simmer on<br />
low heat for 10 minutes.<br />
4. Add Job’s Tears and cook for 4 minutes. Turn off heat.<br />
5. Remove from stove; then stir in chopped compressed<br />
persimmon powder.<br />
6. Eat a small bowl once or twice a day.<br />
Note: Do not eat persimmon powder with crabs. Mountain<br />
yam is unsuitable for those prone to constipation.<br />

In her book C’est si bon Paris by night! she stages<br />
the Parisian spirit. Preferring brasseries and<br />
bistros whose the chefs have experience in famous<br />
restaurants, she recommends restaurants where<br />
they cook regional products while thinking of<br />
reducing the price. As a result, their bookings are<br />
often full.<br />
The typical brasseries at the heart of Paris are<br />
recognizable by their local atmosphere, the large<br />
choice of traditional dishes (roast chicken, coq au<br />
vin, veal blanquette etc…) and really good wines<br />
are listed on chalk boards. What distinguishes<br />
these bistros from other restaurants is that the<br />
dishes are not only authentic, delicious and freshly<br />
made, but are also very delicately presented. For<br />

Le Comptoir has a strong cultural atmosphere<br />
in Paris's Latin Quarter at Odéon (9 Carrefour<br />
d'Odéon), the owner Yves Camdeborde opened the<br />
restaurant 25 years ago. He is at the origin of the term<br />
Bistronomie, namely "gourmet in pubs" concept. For<br />
several years he was jury in the MasterChef television<br />
program, which made him quite well known in <strong>France</strong>.<br />
He used to have a two-star Michelin restaurant, now<br />
he loves his bistro, calling it “his own equation of<br />
happiness”.<br />
At a bustling crossroads, people come and go, those<br />
who sit and those who walk consider each other<br />
a scenery to watch. People like sitting at the table<br />
outside, bathing in the sun. In wintertime the<br />
restaurant also provides blankets with small round<br />
tables. If you are seated, you are sure to trouble others<br />
when you get up, so the mutual exchange becomes a<br />
very natural thing.<br />
The customers seen from the outside are quite<br />
diversified, we can see people wearing suits and ties,<br />
tourists, locals people coming to do their business,<br />
family reunion... Just as the owner had hoped, it is a<br />
lively little community.<br />
The pork feet were very impressive there, very gentle,<br />
no bones, with a sweet and sour sauce served with<br />
crunchy vegetables.<br />
When you come to Le Comptoir, after the end of<br />
service in the afternoon, you can still see people in<br />
the queue under the parasol. However, for Dinner,<br />
you must book a reservation otherwise no seat will be<br />
available even if you are in the queue.<br />

令 人 印 象 深 刻 的 是 在 這 裡 吃 到 的 豬 腳 , 很 溫 柔 , 沒 有 骨<br />
頭 , 配 著 酸 酸 甜 甜 的 醬 汁 和 脆 脆 的 蔬 菜 。<br />

Les cocottes means "casserole dishes”, it is a<br />
brasserie owned by Mr Christian Constant,<br />
who has been the chef at the Crillon and The Ritz,<br />
and has trained numerous renowned disciples.<br />
The restaurant is located in the 7th district of<br />
Paris, Saint-Dominique street No. 135. Dishes<br />
are served in a small iron pot, customers can<br />
dine at the bar, or sit at a table, but they sit on a<br />
high stool, which makes it easy to relax. Behind<br />
every chair there is a ring, like a drawer handle.<br />
No idea what it is for. The owner was very honest<br />
and said: “at first we wanted to design something<br />
to hang bags, but considering the owner cannot<br />
see them, the hook is now set under the table to<br />
hang bags."<br />
On the menu, you can choose from "authentic<br />
salad of Ritz Hotel"; "Pâté with the recipe of the<br />
time I was an apprentice "; "the egg pudding of<br />
the old days" ... We can see that the owner is a<br />
man of simplicity.<br />
There, the seafood chowder has a pure taste;<br />
other seafood dishes are also very authentic and<br />
fresh. Packed in multiple small cast iron pots, the<br />
color and taste greatly inspire a growing appetite.<br />
Many Japanese and Taiwanese tourists especially<br />

這 裡 的 菜 名 有 「 真 正 Ritz 酒 店 的 沙 拉 」;「 按 我 學<br />
徒 時 的 配 方 製 作 的 鄉 村 肉 醬 」;「 古 早 雞 蛋 布 丁 」......<br />
可 以 看 出 主 人 是 個 實 在 的 人 。<br />
在 這 裡 吃 到 的 海 鮮 濃 湯 , 味 道 純 正 ; 其 它 的 海 鮮 類<br />
的 菜 也 非 常 地 道 、 新 鮮 。 裝 在 一 個 個 小 鐵 鍋 裡 的 菜 , 色<br />
彩 和 味 道 都 令 人 胃 口 大 開 。 很 多 日 本 人 、 臺 灣 遊 客 慕 名<br />

Le Brasserie Thoumieux<br />
Brasserie Thoumieux is located in the 7th arrondissement of<br />
Paris, n°79 Saint-Dominique street, for unaware people, they<br />
may not know there is a bistro there. Indeed, from the outside, one<br />
can only see the lace curtains. After walking into the restaurant, we<br />
see shiny mirrors, red velvet seats, tables with green lampshades,<br />
a typical decor of Paris in the 1910s. People are whispering while<br />
dining, compared to the other restaurants, it has a more intimate<br />
atmosphere. The owner is a two-star Michelin chef, Jean-François<br />
Piège.<br />

Le Terroir Parisien is located next to the Bourse in Paris and means<br />
"Paris local flavor". Here the vegetables on the dishes come from<br />
growers in Paris, butter and dairy products come from farms on the<br />
outskirts of Paris. Inside the restaurant, as decoration, the menu is<br />
written on chalk boards and the origin of the products is indicated for<br />
each dish.<br />

The freely bred hen stew associated with foie gras and truffle is<br />
quite tasty and tender. The food here not only tastes amazing, but<br />
also looks surprising. The famous pizza soufflé is garnished with<br />
dried soubressade and others classical pizza toppings, only it looks<br />
like an inflated ball, both tall and quite mini. The Spanish dessert<br />
Churros'n'rolls is very impressive, served in three silver containers,<br />
one with hot chocolate, another with vanilla ice-cream, and finally<br />
the churros. A bite topped with hot chocolate makes the peta zeta<br />
sparkling sugar crackle in your mouth…<br />

Yannick Alléno is a Parisian chef with 3 stars to his name. As a native<br />
Parisian, he felt a responsibility to develop Parisian gastronomy, he<br />
opened two "Terroirs Parisiens”.<br />
Here, the space design is modern, but the dishes are traditional, there<br />
is even a dedicated counter for authentic Parisian cooked meats,<br />
products are labelled with<br />
Paris street signs design.<br />
