med rødbede og kastanjer<br />

Ingredienser til 4 personer<br />

300 g kaninmørbrad, urter, 1 hvidløgsfed, 1 skalotteløg, 40 g ekstra<br />

jomfruolie, 150 g rødbede, modnet rødvinseddike, 60 g dampede<br />

kastanjer, maldon-salt<br />

Tilberedning<br />

Puds kaninmørbraden og vakuumkog den med urter, hvidløg, skalotteløg<br />

og olie i 6 minutter ved 65 °C. Brun herefter i en pande i yderligere<br />

4 minutter. Skær rødbeden i meget tynde skiver og lad den trække<br />

i 3 minutter i olie, salt og modnet rødvinseddike. Skær kaninmørbraden<br />

i skiver og servér med rødbeden og de dampede kastanjer.
