Statistical Design Five treatments of sorghum flour tortillas were evaluated for all tests except the consumer study where two treatments were studied. Three replications were treated as blocks in a randomized block design. Triplicate readings of each physical, chemical, and textural test were performed with exception of water activity and pH in which case duplicate readings were taken. Sensory analysis was performed only once for both descriptive analysis and consumer study. All physical, chemical, textural, and sensory data were analyzed using SAS, Software Release 9.1 (SAS, Institute Inc., 2003). When treatment effects were found significantly different, the least square means with Tukey-Kramer groupings were used to differentiate treatment means. A level of significance was observed at α = 0.05. Physical and Chemical Measurements Weight, Diameter, and Thickness: Results and Discussion: Table 2 shows the averages for weight, diameter, and thickness of the five sorghum flour samples. Tortilla weight range was from 20.9g (5040C) to 21.5g (F-625). Diameter range was from 13.8cm (TVM) to 14.3cm (NE#20). Thickness range was from 1.3mm (TVM) to 1.4mm (F-625). 91
