Kitchen Operations 1
Heathfield High School
Murray Bridge High School
These semester courses offer a very practical approach to developing
knowledge, skills and appreciation of food preparation to industry
standards. Students put what they learn into practice through the
preparation of food for a number of different functions (some out of
normal school hours) ranging from finger food for cocktail parties to
a full sit down luncheon or dinner. Industry knowledge is broadened
through an industry focus day where students visit at least one
commercial kitchen, as well as work experience in a commercial
kitchen. Students will complete Certificate 1 in Kitchen Operations.
Kitchen Operations 2
Heathfield High School
Those students who have successfully completed Certificate 1
Kitchen Operations and wish to further develop their culinary skills can
gain the full Certificate 2 Kitchen Operations in the following year.
Students will complete compulsory and elective units of competency
from the Hospitality training package, which will equip them further if
seeking an apprenticeship or wishing to enter a commercial cookery
course. Having acquired basic skills in Certificate l, students become
more involved in preparing and serving a range of menu items.
Students have the opportunity to work with front of house in providing
for different functions (some out of school hours), developing an
appreciation of what is involved in successful hospitality enterprises.
Front of House Operations
of sale equipment. There is also a strong focus on the importance
of communication skills and customer service. The full Certificate
2 can be completed through the undertaking of compulsory and
elective units of competency from the Hospitality training package.
Students work with the Kitchen Operation students to provide front of
