HELPFUL HINT<br />

Wood cutting boards need to be<br />

seasoned. When first received, the<br />

board should be covered with a<br />

good grade of vegetable oil and<br />

repeated once a month for the<br />

first six months. Once properly<br />

seasoned, this need only be<br />

repeated once a year to maintain<br />

the product in perfect condition. To<br />

clean, simply wipe down with a<br />

well wrung out soapy dish cloth.<br />

GRIDDLE SEASONING<br />

Griddle surfaces must be seasoned<br />

before first use.<br />

1. Wash griddle with a hot detergent<br />

or soap solution, rinse and dry<br />

thoroughly. Set griddle heat to<br />

lowest temperature for 30<br />

minutes. Apply a thin film of<br />

cooking oil and allow to remain for<br />

5 minutes then wipe off.<br />

2. Set heat to medium temperature<br />

and apply a second film of oil.<br />

Wipe off excess after 5 minutes.<br />

3. Reset heat to cooking temperature<br />

and apply a final film of oil wiping<br />

off surplus after 3 minutes.<br />

The griddle is now ready for use. It<br />

may be re-seasoned at any time by<br />

cleaning thoroughly and repeating<br />

the above procedure.<br />

Cleaning. Griddle plates should be<br />

wiped daily while still warm. Remove<br />

carbonized grease or food with a spatula.<br />

When necessary, clean griddle surface<br />

thoroughly using a griddle brick or liquid<br />

griddle cleaner. Polish the surface to a<br />

bright finish, wash, rinse and dry thoroughly.<br />

Re-season griddle.<br />

Operation. Avoid overheating griddle as<br />

this causes sticking and grease carbonizing<br />

which results in a hard to clean surface.<br />

Do not hit spatula on griddle plate as<br />

Burnt <strong>Food</strong>: Sprinkle with baking soda<br />

and moisten with water. Allow to stand<br />

cut a potato in half and rub the surface.<br />

Sprinkle salt on half a lemon and rub in<br />

a circular motion. This will work on<br />

stainless steel too. Scrub with a nonabrasive<br />

to soak the product in a mild detergent<br />

tote boxes to separate the<br />

HELPFUL HINT<br />

Freezing Baked Goods<br />

Most baked goods will keep very<br />

well in the freezer. Breads tend to<br />

stale very quickly in a refrigerator,<br />

but they will stay fresh for several<br />

weeks in the freezer. Unless a recipe<br />

specifically tells you otherwise,<br />

defrost all baked goods in their<br />

wrappers at room temperature. If<br />

you unwrap the baked item before<br />

thawing, moisture will condense on<br />

the outer surface and make it<br />

soggy. A microwave oven can be<br />

used for the defrosting if you are<br />

in a hurry; however, it needs to be<br />

done very slowly with frequent<br />

turning of the baked goods. Do not<br />

overheat baked goods in the microwave<br />

oven, or they may become<br />

'petrified', i.e. very hard. Baked<br />

goods wrapped in foil may be gently<br />

reheated in a conventional oven.
