What makes The Pavilion at Legacy’s Rose & Crown<br />

special? Its beautiful view of the cathedral, good-quality food made<br />

with ingredients as locally sourced as possible at value-for-money<br />

prices, and the lovely gardens by the river.<br />

What is the most popular dish on the menu at The<br />

Pavilion at Legacy’s Rose & Crown? Braised blade of beef<br />

with a red-wine jus, lemon-baked sea-bass with smoked salmon and<br />

caper butter, white pudding with caramelised apples with an apricot<br />

and brandy sauce or hot chocolate fondant with pistachio ice-cream.<br />

What is your favourite ingredient of the moment?<br />

All fresh herbs. These can really make a meal into something special<br />

by enhancing the flavours of meat or fish.<br />

Which celebrity would you most like to welcome to<br />

your restaurant – and why? Gordon Ramsay would be an<br />

interesting customer. We could show him that we are just as good<br />

as he is.<br />

Who has had the biggest influence on you in your<br />

work? The Roux brothers.<br />

What would you do with a million pounds?<br />

I would give some to charity, some to family and I’d buy a share in<br />

the Rose & Crown.<br />

You must work very long hours so what do you do to<br />

relax? I spend time with my granddaughter Maisie, have nights away<br />

at other Legacy hotels, and I enjoy a pint or two of Guinness in my<br />

locals, The Malmesbury Arms and The Horse & Groom.<br />

What would you choose to have as your last meal on<br />

earth? Scallops, oysters and sea-bass, washed down with a good<br />

pint of Guinness.<br />
