What makes The Pavilion at Legacy’s Rose & Crown
special? Its beautiful view of the cathedral, good-quality food made
with ingredients as locally sourced as possible at value-for-money
prices, and the lovely gardens by the river.
What is the most popular dish on the menu at The
Pavilion at Legacy’s Rose & Crown? Braised blade of beef
with a red-wine jus, lemon-baked sea-bass with smoked salmon and
caper butter, white pudding with caramelised apples with an apricot
and brandy sauce or hot chocolate fondant with pistachio ice-cream.
What is your favourite ingredient of the moment?
All fresh herbs. These can really make a meal into something special
by enhancing the flavours of meat or fish.
Which celebrity would you most like to welcome to
your restaurant – and why? Gordon Ramsay would be an
interesting customer. We could show him that we are just as good
as he is.
Who has had the biggest influence on you in your
work? The Roux brothers.
What would you do with a million pounds?
I would give some to charity, some to family and I’d buy a share in
the Rose & Crown.
You must work very long hours so what do you do to
relax? I spend time with my granddaughter Maisie, have nights away
at other Legacy hotels, and I enjoy a pint or two of Guinness in my
locals, The Malmesbury Arms and The Horse & Groom.
What would you choose to have as your last meal on
earth? Scallops, oysters and sea-bass, washed down with a good
pint of Guinness.
