The <strong>Carrollton</strong>-<strong>Farmers</strong> <strong>Branch</strong> ISD Student<br />

Nutrition Department provides wholesome,<br />

nutritious meals for every student within<br />

the district.<br />

Our goal is to create an atmosphere of<br />

service and care for every student. We want<br />

to partner with parents and teachers to make<br />

sure that Student Nutrition is an integral component<br />

of the educational process. In addition,<br />

we want to provide students with the best<br />

nutritional value for their money, and allow the<br />

student to make sound nutritional choices.<br />

All campuses are equipped with computerized<br />

point-of-sale stations where students enter<br />

an assigned number in order to access their<br />

account. Meal payments can be made using<br />

cash, check or through our on-line credit card<br />

payment system. Parents are encouraged to<br />

prepay for their child’s meals. This speeds the<br />

checkout process and allows you to have more<br />

control over their spending habits. Please contact<br />

your child’s campus for more information<br />

about any of these payment options.<br />

Applications for the <strong>2010</strong>-<strong>2011</strong> school year<br />

may be picked up from each campus, from the<br />

Student Nutrition Office or completed electronically.<br />

Online applications can be access by<br />

visiting http://cfbisd.schoollunchapp.com.<br />

Paper applications must be submitted in its<br />

original form with an original signature. FAXES<br />

CANNOT BE PROCESSED.<br />

Students eligible for free or reduced price<br />

meals at the end of last school year are eligible<br />

to participate in the meal program at that<br />

eligibility until October 4, <strong>2010</strong>, or until a new<br />

meal application is received and processed, if<br />

prior to that date. Students without a meal application<br />

after October 4, <strong>2010</strong> will be designated<br />

as paying students.<br />

The C-FB schools offer a choice of healthy<br />

meals each day. Students who qualify under<br />

U.S. Department of Agriculture guidelines<br />

may be eligible to receive meals free, or at a<br />

reduced price. All meals served meet nutrition<br />

standards established by the U.S.D.A. If a child<br />

has a disability, as determined by a doctor,<br />

and the disability prevents the child from eating<br />

the regular school meal, the school will make<br />

substitutions prescribed by the doctor at no<br />

extra charge. Please note, however, that the<br />

school is not required to make a substitution for<br />

a food allergy, unless it meets the definition of<br />

“Disability”.<br />

Your child may get free meals if your household<br />

is receiving Supplemental Nutrition Assistance<br />

Program (SNAP) benefits (formerly the<br />

Food Stamp Program) or TANF. Your child may<br />

also be eligible depending on your income.<br />

Your eligibility may be checked at any<br />

time during the school year. School officials<br />

may ask you to send or fax, written evidence<br />

to verify any or all information to the Nutrition<br />

Department. Any deliberate misrepresentation<br />

of information<br />

may subject the<br />

signee to prosecution<br />

under<br />

applicable State<br />

and Federal<br />

laws.<br />

The Dietary Guidelines for Americans recommend that we choose a<br />

variety of fruits and vegetables each day. They encourage dark green,<br />

orange vegetables and legumes several times a week. Eating generous<br />

amounts of fruits and vegetables is likely to reduce your child’s risk for<br />

chronic diseases.<br />

DID YOU KNOW, we have incorporated into our menus<br />

several vitamin rich dark green or orange vegetables? Broccoli, spinach,<br />

carrots, sweet potatoes, and romaine lettuce are on the menu several<br />

times per week. Legumes such as pinto beans and navy beans are<br />

offered each week. In addition, there is a choice of fruit (often fresh) or<br />

juice everyday and once a month we feature a fresh seasonal fruit.<br />

Milk products consumption has been associated with overall diet quality<br />

and the adequate intake of many nutrients. Milk products (fluid milk,<br />

cheese, yogurt, etc) are especially important to developing good bone<br />

health during childhood and adolescence.<br />

DID YOU KNOW, a choice of low fat milk is offered<br />

everyday as a beverage for all meals in the cafeteria? In addition,<br />

four times a week one of the main courses on the menu for lunch is a<br />

vegetarian option that is made from a reduced fat and reduced sodium<br />

cheese. Also, Wednesday you will find a Yogurt Parfait for breakfast that<br />

is one of the student favorites.<br />

While protein is an important macronutrient in your diet, most Americans<br />

are already currently consuming enough and do not need to increase their<br />

intake. However, it would be advisable to choose lean meat whenever<br />

possible.<br />

DID YOU KNOW, that the chicken patties and nuggets<br />

served in the cafeteria are lower in fat and earned USDA’s label of “All<br />

Natural” meaning they are minimally processed with no artificial flavor or<br />

ingredients?. Our 100% beef patties and other ground beef products are<br />

made from beef with no more than 20% fat. Our turkey ham and turkey<br />

breast is low fat. Even the items we would normally think of as higher in<br />

fat such as chili and taco meat are made from turkey as well and are very<br />

lean meats.<br />

It is estimated that every year about 76 million people in the US become ill<br />

from pathogens in food. Everyone can take simple measures to reduce their<br />

risk of food borne illness, especially in the home. Always wash your hands,<br />

and teach your children to wash their hands before eating. Keep surfaces<br />

that come in contact with food clean and wash all fruits and vegetables.<br />

Keep raw, cooked and ready-to-eat foods separated while shopping,<br />

preparing or storing foods. Always cook foods to a safe temperature and<br />

chill perishable food promptly.<br />

DID YOU KNOW, that the school cafeteria has a food safety<br />

program (HACCP) patterned after the food safety program used by NASA<br />

and food manufacturers? Our products are inspected and temperatures are<br />

taken several times during receiving, storing, cooking, holding and serving<br />

before an item is ever consumed by a student. This process is recorded on<br />

daily logs and when a product is not hot enough or not cold enough it does<br />

not get served until the issue has been corrected.<br />

Fats and oils are part of a healthful diet, but the type of fat makes a<br />

difference to heart health, and the total amount of fat consumed is also<br />

important. A low intake of fats and oils, less than 20 percent of calories,<br />

increases the risk of inadequate intakes of vitamin E and essential fatty<br />

acids. It is recommended that children and adolescents 4 to 18 years of<br />

age should consume between 25 to 35 percent of calories from fat.<br />

DID YOU KNOW, all the cafeteria menus average less than<br />

30 percent of their calories from fat and less than 10 percent of the<br />

calories from saturated fats? We have almost eliminated all trans-fats in<br />

our foods. All of our items are cooked by oven or steamed; we have not<br />

used frying as a method of cooking for several years. In addition, many<br />

of our salad dressings, cheese, milk and main dishes are low fat products.<br />

Carbohydrates are part of a healthful diet. Dietary fiber is composed of<br />

non-digestible carbohydrates. Diets rich in dietary fiber have been shown<br />

to have a number of beneficial effects. Digestible carbohydrates consist<br />

of sugars and starches, which supply energy to the body in the form of<br />

glucose. Glucose is the only energy source for red blood cells and is the<br />

preferred energy source for the brain and central nervous system.<br />

Children need 60 minutes of active and vigorous play every day to<br />

maintain a healthy weight. If this sounds like a lot, consider that 8-18<br />

year-olds devote an average of 7 ½ hours to using entertainment media<br />

including TV, computers, video games, cell phones and movies in a typical<br />

day, and only a third of high school students get the recommended levels<br />

of physical activity.<br />

DID YOU KNOW, that children pattern the behaviors that the<br />

adults in their life model? It is critical that our children see us participate in<br />

physical activities and exercise. To increase physical activity, plan outings<br />

to parks, playgrounds and community centers where they can play and be<br />

active after school. Get them engaged in sports, dance or fitness programs<br />

that are exciting and challenging.<br />

Earth Day began way back on April 22, 1970, but few would argue we need it<br />

now more than ever. It started in response to the growing problem of air pollution<br />

created by cars and factories, which was just beginning to be linked to disease and<br />

death. So although every day should be Earth Day for each of us, it’s also good to<br />

have a day when everyone collectively puts their focus on Mother Earth. How will<br />

you celebrate Earth Day, April 22, <strong>2011</strong>? Some suggestions are: Reduce water<br />

and/or electricity consumption or carpool, walk, bike or ride the bus. Be creative,<br />

find ways to reduce, reuse and recycle.<br />

DID YOU KNOW, that the Student Nutrition Department has a Kitchen<br />

Watcher program in which we work to reduce our carbon footprint as much as<br />

possible? <strong>Staff</strong> is encouraged to identify any ways that we can save energy and<br />

reduce our carbon footprint. Kitchens use low water usage faucets and all new<br />

equipment is the most energy efficient available. The kitchens use certified green<br />

cleaning products. The staff only pre-heats equipment for the minimum amount of<br />

time needed, and turns off lights in storerooms, bathrooms, offices and other areas<br />

when not working in those areas. This year, to further reduce our carbon footprint,<br />

we have planned a day each month in which the cooking and heating equipment<br />

in the kitchen will not be used. You will find these days signified with<br />

this symbol:<br />

¿SABÍA USTED QUE el Departamento de Nutrición tiene un<br />

programa de Vigilancia de cocina en el cual procuramos reducir nuestra huella de<br />

carbono al máximo? Se anima al personal a identificar formas de ahorrar energía<br />

y de reducir nuestro consumo. Las cocinas utilizan grifos de baja presión, y todo<br />

el equipo nuevo de las cocinas es el más eficiente posible en cuestión de energía.<br />

Todas las cocinas usan productos de limpieza que no produzcan polución. El<br />

personal solo pre calienta los hornos lo absolutamente necesario, y se apagan todas<br />

las luces en almacenes, baños, oficinas y otras áreas cuando no se estén utilizando.<br />

Este año, para mayor reducción de uso de energía, hemos programado un día al<br />

mes en el cual no se utilizarán los hornos ni las hornillas. En estos días verá usted<br />

este símbolo.

Now that we are approaching the end of the school year, you may<br />

be wondering how to handle the remaining money on your student’s<br />

account. There are a couple of options available. You may leave the<br />

money on account and it will be available for use next year. Even if<br />

your student changes schools within C-FB ISD the money will follow<br />

them to the new school. Another option is to request a<br />

refund. You can obtain a written request form from<br />

you cafeteria manager. Once the completed form<br />

is submitted you will receive a check for the<br />

remaining amount in approximately 10 days<br />

from the district’s business office. Cafeteria<br />

managers are not allowed to refund at the<br />

school location.<br />

DID YOU KNOW that over 3.5<br />

million meals are served in the C-FB ISD school<br />

cafeteria each year by a team of 250 employees?<br />

As this year comes to a close we want to wish you a great<br />

summer and thank you for your business this year. We hope to see your<br />

students in our cafeteria next year.<br />

Ahora que nos acercamos al final del ciclo escolar es bueno saber cómo<br />

manejar el saldo que puede haber en la cuenta de su estudiante. Hay<br />

un par de opciones: puede dejar el saldo en la cuenta, y se le abonará<br />

para el próximo ciclo escolar. Aún cuando su estudiante se mude de<br />

escuela dentro del distrito escolar de C-FB ISD, su saldo se le abonará<br />

en su nuevo plantel escolar. Otra opción es solicitar un reembolso. La<br />

administradora de su comedor escolar le puede facilitar una solicitud de<br />

reembolso. Una vez que presente usted su solicitud por escrito, recibirá<br />

un cheque de parte de la oficina administrativa del distrito por su saldo<br />

en aproximadamente 10 días. Las administradoras de comedor en las<br />

escuelas no pueden reembolsarle su saldo en la escuela.<br />

empleados sirve más de 3.5 millones de comidas en los comedores<br />
