Earth Day began way back on April 22, 1970, but few would argue we need it<br />

now more than ever. It started in response to the growing problem of air pollution<br />

created by cars and factories, which was just beginning to be linked to disease and<br />

death. So although every day should be Earth Day for each of us, it’s also good to<br />

have a day when everyone collectively puts their focus on Mother Earth. How will<br />

you celebrate Earth Day, April 22, <strong>2011</strong>? Some suggestions are: Reduce water<br />

and/or electricity consumption or carpool, walk, bike or ride the bus. Be creative,<br />

find ways to reduce, reuse and recycle.<br />

DID YOU KNOW, that the Student Nutrition Department has a Kitchen<br />

Watcher program in which we work to reduce our carbon footprint as much as<br />

possible? <strong>Staff</strong> is encouraged to identify any ways that we can save energy and<br />

reduce our carbon footprint. Kitchens use low water usage faucets and all new<br />

equipment is the most energy efficient available. The kitchens use certified green<br />

cleaning products. The staff only pre-heats equipment for the minimum amount of<br />

time needed, and turns off lights in storerooms, bathrooms, offices and other areas<br />

when not working in those areas. This year, to further reduce our carbon footprint,<br />

we have planned a day each month in which the cooking and heating equipment<br />

in the kitchen will not be used. You will find these days signified with<br />

this symbol:<br />

El Día de la Tierra se celebró por primera vez el 22 de abril de 1970,<br />

y todo mundo está de acuerdo en que lo necesitamos ahora más que nunca.<br />

Esta celebración se inició como respuesta al creciente problema de la polución<br />

ambiental creado por vehículos y fábricas, y en esos años apenas empezábamos<br />

a comprender que esta polución estaba ligada a enfermedades y aún a la muerte.<br />

Aún cuando cada día debería ser un Día de la Tierra para todos nosotros, es bueno<br />

que haya un día en el cual todos colectivamente nos enfoquemos en nuestra madre<br />

la Tierra. ¿Cómo piensa celebrar el Día de la Tierra el 22 de abril del <strong>2011</strong>? He<br />

aquí algunas sugerencias: Reducir el consumo de agua y/o electricidad, organice<br />

a varios compañeros de trabajo que vivan cerca para que se utilice un solo vehículo<br />

de ida y de vuelta al trabajo, o camine, use su bicicleta o utilice transporte público.<br />

Sea creativo y encuentre formas de reducir, volver a usar y reciclar.<br />

¿SABÍA USTED QUE el Departamento de Nutrición tiene un<br />

programa de Vigilancia de cocina en el cual procuramos reducir nuestra huella de<br />

carbono al máximo? Se anima al personal a identificar formas de ahorrar energía<br />

y de reducir nuestro consumo. Las cocinas utilizan grifos de baja presión, y todo<br />

el equipo nuevo de las cocinas es el más eficiente posible en cuestión de energía.<br />

Todas las cocinas usan productos de limpieza que no produzcan polución. El<br />

personal solo pre calienta los hornos lo absolutamente necesario, y se apagan todas<br />

las luces en almacenes, baños, oficinas y otras áreas cuando no se estén utilizando.<br />

Este año, para mayor reducción de uso de energía, hemos programado un día al<br />

mes en el cual no se utilizarán los hornos ni las hornillas. En estos días verá usted<br />

este símbolo.
