PLS 284 COMPUTERS IN THE LAW OFFICE<br />
(4 CREDITS)<br />
This course provides a practical introduction to: 1) the use of<br />
computers in the legal environment, with concentration on<br />
various computer applications for the legal professional and<br />
2) legal research utilizing the Internet and the Westlaw® and<br />
Lexis/Nexis® computer research systems. This course emphasizes<br />
the development of basic skills and knowledge needed by the<br />
paralegal to utilize computer hardware and software in the law<br />
office. Prerequisites: PLS 114, WPR 101<br />
PLS 302 APPLIED LEGAL ETHICS (2 CREDITS)<br />
This course gives the student the opportunity to apply ethical<br />
standards and other requirements of professional responsibility<br />
in scenarios based on real life situations that can occur in the<br />
legal environment. (Must be enrolled in the BSPS Program).<br />
Prerequisite: None<br />
PLS 304 ADMINISTRATIVE LAW (4 CREDITS)<br />
This course covers Administrative Law with a focus on public<br />
benefits and those areas of practice in which non-lawyer, direct<br />
representation of clients is possible - such as Social Security<br />
Disability and Unemployment Compensation. (Must be<br />
enrolled in the BSPS Program). Prerequisite: None<br />
PLS 314 ADVANCED LEGAL WRITING WITH<br />
COMPUTER APPLICATIONS (4 CREDITS)<br />
In this course, the student’s legal writing skills are refined<br />
through intensive writing assignments requiring accurate<br />
identification, analysis, and communication of legal theories<br />
and concepts. The preparation and completion of these<br />
assignments, utilizing computer applications, provides an<br />
added dimension to this course. (Must be enrolled in the BSPS<br />
Program). Prerequisite: None<br />
PLS 404 ADVANCED LITIGATION AND APPELLATE<br />
PRACTICE (4 CREDITS)<br />
An advanced study of civil trial and appellate practice, this<br />
course enhances the student’s ability, through document<br />
production exercises, to assist in the litigation process from trial<br />
preparation through appellate proceedings. (Must be enrolled in<br />
the BSPS Program). Prerequisite: None<br />
PLS 414 ADVANCED REAL ESTATE LAW<br />
(4 CREDITS)<br />
The student in this course is exposed to some of the more<br />
complex dimensions of Real Estate Law and learns through<br />
practical document drafting assignments and projects the<br />
detailed approach to handling such matters as commercial<br />
property transactions and the impact of environmental issues<br />
in the real estate field. (Must be enrolled in the BSPS Program)<br />

PLS 434 CONTEMPORARY LEGAL TOPICS<br />
(4 CREDITS)<br />
This course is designed to introduce the student to various areas<br />
of law not covered by the other legal specialty courses. Topics<br />
may include but are not limited to the following; Alternative<br />
Dispute Resolution/ Mediation, Bankruptcy, Workers’<br />
Compensation, Income Tax, Employee Benefits, Constitutional<br />
Law, and Law Office Management. The topic selected is based<br />
on the perceived need in the local legal community and interest<br />
expressed by students. (Must be enrolled in the BSPS Program).<br />

PLA 301 PRIOR LEARNING ASSESSMENT<br />
(4 CREDITS)<br />
This course is designed to allow students to engage in selfreflection<br />
and to learn techniques to identify and document<br />
college-level prior learning experiences. Students will define<br />
learning and career goals and provide evidence of both applied<br />
and theoretical knowledge of college-level content which may be<br />
assessed for possible award of credit.<br />
PROFESSIONAL CATERING<br />
CAT 144 CATERING (4 CREDITS)<br />
The purpose of this class is to provide the student with an<br />
in-depth knowledge of Professional Catering, both on and<br />
off-premise. The course is designed to acquaint the student with<br />
general marketing principles, as well as catering management.<br />
The student will be exposed to legalities and contracts, menu<br />
planning, beverage service, staff scheduling and dealing with<br />
sub-contractors. Prerequisite: BFS 106<br />
CAT 154 ADVANCED CATERING BUSINESS<br />
TECHNIQUES (4 CREDITS)<br />
This course is a study of the challenges involved in starting and<br />
operating a successful catering business. Subjects discussed<br />
include business plans, securing funds, budgeting, purchasing,<br />
cost controls, marketing plan, and menu costing.<br />

CAT 172 CATERING INTERNSHIP I<br />
(3 CREDITS)<br />
This class places the student in an actual catering experience<br />
while working for Julep’s Catering--<strong>Sullivan</strong> <strong>University</strong>’s own<br />
off-premise catering company. The student has opportunities<br />
to apply what has been learned in the classroom. Prerequisite:<br />
CAT 144<br />
CAT 244 SPECIAL EVENTS PLANNING AND STAFF<br />
MANAGEMENT (4 CREDITS)<br />
The purpose of this course is to provide the student with an<br />
overview and working knowledge of the event industry. The<br />
course is designed to acquaint the student with the new and<br />
emerging career opportunities within the event industry and<br />
to become familiar with the roles and responsibilities of the<br />
position of an event planner. Students are exposed to proposal<br />
development, professional presentations, strategic and tactical<br />
event planning, subcontractors within the industry, staff<br />
development and fiscal responsibility. Prerequisite: None<br />
CAT 264 CATERING PRODUCTION AND<br />
SPECIALTY DESSERTS (6 CREDITS)<br />
This kitchen course allows students to spend “hands-on” time<br />
working with and understanding dishes and bakery products<br />
that work well in off-premise catering. Students are also taught<br />
cooking techniques used in off-premise catering. Prerequisite:<br />
BFS 106<br />
CAT 294 CATERING INTERNSHIP II<br />
(3 CREDITS)<br />
This second internship again places students in actual<br />
experiences with Julep’s Catering. Students perform actual<br />
management duties at the catering site and sales office<br />
management. Prerequisite: CAT 172<br />
