new culinary program <strong>is</strong> providing<br />

wonderful <strong>career</strong> opportunities<br />

for its students.<br />

Both Rick Abel and Kevin<br />

Woodson were excited when they<br />

heard that <strong>Sullivan</strong>’s main campus<br />

award-winning Culinary Arts program<br />

was now being offered in<br />

Lexington. Rick has always loved<br />

to cook, but as a<br />

busy father of three,<br />

he didn't have time<br />

to commute to<br />

Lou<strong>is</strong>ville. The new<br />

Lexington program<br />

made it possible for<br />

him to pursue h<strong>is</strong><br />

dream and he's enjoying every<br />

minute of it. Kevin Woodson had<br />

also closed the door on pursuing<br />

a culinary <strong>career</strong> until he heard<br />

about the new program. “I love<br />

the school and the interesting<br />

people. Now I think I would like<br />

to open a bakery,” he stated.<br />

Many of the students have<br />

cooked professionally for years,<br />

but wanted to know more.<br />

Lauryn Baker, who <strong>is</strong><br />

currently a part-time<br />

professional caterer,<br />

said, “I hope to open<br />

my own restaurant<br />

after I complete<br />

th<strong>is</strong> program.” Another student,<br />

Paul Eades, has worked in food<br />

service for ten years - first as a cook<br />

in the Marine Corps, and then as a<br />

corporate<br />

trainer<br />

for Chili's<br />

Restaurant<br />

chain. He<br />

plans to<br />

work as a<br />

chef when<br />

he graduates<br />

from<br />

<strong>Sullivan</strong>.<br />

No experience necessary!<br />

You don't need professional<br />

cooking experience to attend<br />

<strong><strong>Sullivan</strong>'s</strong> program. Donald<br />

Catlett has been cooking<br />

since he was fourteen for<br />

family and friends. “I love<br />

the classes! I hope to be<br />

a chef for my cousin's<br />

new restaurant,” he said.<br />

Jonathan Martin, currently<br />

in manufacturing, now wants to<br />

open a bakery.<br />

<strong><strong>Sullivan</strong>'s</strong> Lexington campus<br />

recently hosted the sixth annual<br />

Central Kentucky Career Competition<br />

(CKCC). Juniors and seniors<br />

from high schools across Kentucky<br />

participated in competitions to<br />

win scholarships and awards. The<br />

<strong>University</strong> offered 12 different<br />

competitions, allowing students to<br />

participate in events that matched<br />

their skill levels. First place in the<br />

team competition went to Lafayette<br />

High School; Harr<strong>is</strong>on County<br />

ATC placed second and Scott<br />

County High School placed third.<br />

Food for thought<br />

A group of Early Childhood<br />

Education students traveled to<br />

Lou<strong>is</strong>ville to join their counterparts<br />

on <strong>Sullivan</strong>’s main campus to<br />

attend an etiquette luncheon at<br />

Winston’s, an award-winning<br />

gourmet restaurant staffed by<br />

Tracey Holder saw th<strong>is</strong> as an ideal<br />

opportunity. “The students gained<br />

the benefit of working on an actual<br />

business case scenario learning<br />

how to apply new skills, while the<br />

co-op partner was challenged to<br />

re-evaluate long standing beliefs<br />

and business practices. Both the<br />

students and myself as a partner,<br />

took away from the experience<br />

new knowledge that we both could<br />

readily apply.”<br />

At the end of the quarter, both<br />

teams presented the project results<br />

via a final presentation during<br />

which the project partners were<br />

present to evaluate. Both students<br />

and business partners were very<br />

sat<strong>is</strong>fied <strong>with</strong> the experience and<br />

results of the project.<br />

Anna Mangold found the GES advice especially helpful. “I always<br />

Mary C. Noble was the featured<br />

speaker at <strong>Sullivan</strong>’s annual Legal<br />

Studies Honors Reception. Former<br />

Kentucky Supreme Court Justice<br />

James Keller, also attended. In her<br />

speech, Judge Noble called paralegals<br />

"ambassadors of the legal<br />

profession," stating that paralegals<br />

play an important<br />

role communicating<br />

<strong>with</strong> citizens.<br />

Kyle Thompson presented the<br />

Looseleaf Paralegal Award to<br />

Mihaela Valeanu. Mihaela earned<br />

her bachelor's degree in 1997<br />

from Bucharest <strong>University</strong> before<br />

emigrating to the U.S.<br />

Citadel, Duke, Davidson, Emory,<br />

Western Kentucky <strong>University</strong>,<br />

Furman, and Tennessee.<br />

Fayette County Circuit Court<br />

Judge Gary C. Payne <strong>is</strong> the<br />

latest addition to <strong>Sullivan</strong>’s<br />

evening legal adjunct faculty.<br />

Judge Payne brings a wealth<br />

of real world experience to h<strong>is</strong><br />

classes at <strong>Sullivan</strong>. Sitting on the<br />

bench as a Circuit Judge for the<br />

Fayette Circuit Court since 1994,<br />

Judge Payne has presided over<br />

many high profile cases in<br />

Lexington. In addition, he has<br />

worked as an attorney for the<br />

Kentucky Revenue Cabinet, as<br />

a clerk for a Kentucky Supreme<br />

Court Chief Justice, as estate<br />

and gift tax attorney for the<br />

Internal Revenue Service,<br />

Ass<strong>is</strong>tant County Attorney, as<br />

attorney for the Corrections<br />

Cabinet and as a private<br />

attorney <strong>with</strong> a civil and<br />

criminal practice!<br />

Judge Payne also has extensive<br />

teaching experience as<br />

an adjunct professor at the<br />

<strong>University</strong> of Kentucky College<br />

of Business and Economics<br />

from 1981-2003. A man of many<br />

Recognizing the importance of<br />

the legal trend towards utilizing<br />

mediation to resolve d<strong>is</strong>putes,<br />

<strong>Sullivan</strong> formed a mediation team<br />

to prepare students for th<strong>is</strong> growing<br />

profession. Paralegal instructor<br />

Helen Bongard, Esq., highlighted<br />

the benefits of th<strong>is</strong> approach:<br />

“Many in the legal profession are<br />

learning that mediation <strong>is</strong> a faster<br />

and cheaper way to resolve d<strong>is</strong>putes<br />

rather than litigating.”<br />

Education outside the classroom<br />

<strong>Sullivan</strong> students interested in attending law school recently v<strong>is</strong>ited<br />

Chase College of Law. Director of Adm<strong>is</strong>sions Ashley Gray spoke <strong>with</strong><br />

students about types of undergraduate classes they should take, sitting<br />

for the Law School Adm<strong>is</strong>sion Test, and information to include in their<br />

personal statement. Students then attended a Family Law class. They<br />

and had an opportunity to participate when the professor presented<br />

them <strong>with</strong> a case and asked their opinion about whether or not a postmarriage<br />

agreement should be upheld. They also attended a presentation<br />

at the <strong>University</strong> of Kentucky College of Law where Professors<br />

Carolyn Bratt and All<strong>is</strong>on Connelly d<strong>is</strong>cussed recent and upcoming U.S.<br />

Supreme Court cases. Students heard the pros and cons of incarceration<br />

and the state of Kentucky pr<strong>is</strong>ons at a public lecture by <strong>University</strong> of<br />

Kentucky College of Law Professor Robert Lawson and Public Advocate<br />

Ernie Lew<strong>is</strong> about the overcrowding in Kentucky's pr<strong>is</strong>ons. Students also<br />

heard an opposing view from Fayette Commonwealth Attorney Ray<br />

Larson, who urged tougher pun<strong>is</strong>hment for criminals.

AT YOUR SERVICE<br />

In today's marketplace, when most products<br />

and services are of equal quality, extra attention<br />

to customer service <strong>is</strong> what gives a business the competitive edge. Instructor<br />

Mary Johnikin took several members of her Customer Service class, MKT 201, to<br />

breakfast at the Crowne Plaza's Campbell House Inn to highlight the importance of<br />

good customer service and gather data for a collaborative learning project. Students<br />

found the trip very revealing. “We got the chance to actually experience and analyze<br />

the customer service of an organization in person,” commented Julie Buchanan. She<br />

continued, “It’s one thing to read about effective customer service, but it <strong>is</strong> much<br />

more practical to experience it in real life . . . I think that field trips are a great<br />

aspect that <strong>Sullivan</strong> <strong>University</strong> provides; they show you real situations in the work<br />

field that truly aid the learning experience.” The class had an enjoyable, as well as,<br />

educational experience learning about the elements that create a service culture.<br />

Reynold Hall <strong>is</strong> a hardworking<br />

friends call him, just won the first<br />

New! Student of the Month Award<br />

The Student of the Month Award <strong>is</strong> given to a <strong>Sullivan</strong> student that<br />

exhibits leadership in their studies, excels in the classroom and <strong>is</strong> not<br />

afraid to help their classmates learn the course material. Student<br />

Nichole Talbert was recommended for the first Student of the Month<br />

Award in February by Engl<strong>is</strong>h instructor Nancy Fuller.<br />

Nichole said, “I was so surpr<strong>is</strong>ed to win the award.<br />

Th<strong>is</strong> has been an inspiration for my four teenagers<br />

at home.” Nichole received a plaque, a certificate,<br />

a recommendation letter written in her honor and<br />

reserved parking for a month presented to her by<br />

Associate Dean of Students Rebecca Rocca! She<br />

will graduate in March of th<strong>is</strong> year <strong>with</strong> a Bachelor<br />

of Science Degree in Paralegal Studies.


TRAVEL, TOURISM& EVENT MANAGEMENT<br />

California Cru<strong>is</strong>in'<br />

<strong>Sullivan</strong>’s Travel & Tour<strong>is</strong>m<br />

Program's Fall Trip took students<br />

to the fun and exotic sights of<br />

California and Mexico on the<br />

Carnival Cru<strong>is</strong>e Line. “Parad<strong>is</strong>e”<br />

was not only the name of the<br />

students' cru<strong>is</strong>e ship, but was also<br />

a fitting description of their trip<br />

exploring the sights and sounds<br />

from California's Catalina Island to<br />

Ensenada, Mexico.<br />

A “first-class” experience<br />

The trip got off to an exciting<br />

start as the airline overbooked the<br />

flight. A few students were bumped<br />

up to the first-class cabin, and<br />

found themselves sitting<br />

next to Scott Hamilton,<br />

the famous Olympic<br />

figure skater! When<br />

they landed in<br />

California, these<br />

students had<br />

h<strong>is</strong> autograph on<br />

their “Travel Bear,”<br />

as well as photos<br />

and fond memories<br />

of their flight.<br />

Hurray for Hollywood<br />

In Los Angeles, students<br />

received a taste of big city life<br />

from expressway gridlock to street<br />

performers to shopping to dining<br />

at ethnic restaurants. The highlight<br />

was the Backlot Studios Tour where<br />

they saw several famous movie and<br />

TV sets, such as the new War of the<br />

Worlds film and the Desperate<br />

Housewives neighborhood.<br />

During the tour, students<br />

learned how “Hollywood magic”<br />

<strong>is</strong> created, as the tour guide<br />

explained how almost everything<br />

on the sets <strong>is</strong> made of foam rubber,<br />

styrofoam and plastic - even the<br />

rocks, trees and the shrubbery!<br />

Next stop: “Parad<strong>is</strong>e”<br />

The students embarked on the<br />

next leg of their trip <strong>with</strong> a drive to<br />

Long Beach, California and their<br />

first stop was the Queen<br />

Mary, now permanently<br />

anchored in the harbor as<br />

a hotel. After exploring<br />

the famous ship, rumored<br />

to be haunted, <strong>Sullivan</strong><br />

students continued on to<br />

the Carnival cru<strong>is</strong>e ship<br />

“Parad<strong>is</strong>e” where they<br />

experienced first-hand how<br />

a cru<strong>is</strong>e begins, including:<br />

how guests are processed<br />

onto the ship, how charge<br />

accounts are establ<strong>is</strong>hed, how<br />

purchases are set up <strong>with</strong> a “Sign<br />

and Sail” card, and how a lifeboat<br />

drill <strong>is</strong> conducted.<br />

opportunities, an assortment<br />

of entertainment choices, poolside<br />

fun and on-deck activities.<br />

Charming Catalina Island<br />

The first port-of-call was<br />

Catalina Island, a quaint, upscale<br />

community just off the California<br />

coast. Students enjoyed experiencing<br />

the unique lifestyle on the<br />

<strong>is</strong>land where people travel by golf<br />

carts and seeing a car <strong>is</strong> a novel<br />

sight. They also experienced how<br />

a large cru<strong>is</strong>e ship “tenders” or<br />

moves their guests to shore when<br />

docked remotely at a port of call.<br />

Bargain hunting in Mexico<br />

The next stop was Ensenada,<br />

a mid-size Mexican city on the<br />

Pacific coast. Students v<strong>is</strong>ited an<br />

but Peggy Thomas <strong>is</strong> not your average person.<br />

She <strong>is</strong> now a full time student working towards<br />

an Associate of Science Degree in Travel, Tour<strong>is</strong>m,<br />

Peggy Thomas & Event Management.<br />

While working as an admin<strong>is</strong>trative ass<strong>is</strong>tant at the <strong>University</strong> of<br />

Kentucky and ra<strong>is</strong>ing her family, Peggy always dreamed of a life filled<br />

<strong>with</strong> exciting destinations. Both her parents worked in the travel<br />

industry: her father as an American Airlines pilot for 42 years and her<br />

mother as an airline stewardess. They instilled in her a love of travel<br />

from an early age. Now retired, Peggy's set out to fulfill her dream by<br />

pursuing a second <strong>career</strong> as a travel agent.<br />

“It's exciting to be a student again. I think you appreciate the<br />

opportunity to pursue your education even more once you've been in<br />

the workforce for a while,” Peggy observes. “I love taking classes and<br />

learning from other students.” She <strong>is</strong> currently developing a travel<br />

brochure for the Cayman Islands as part of her studies.<br />

to pay the asking price, but to<br />

and dancing at the local<br />

hotspots. Some of the students<br />

took an exciting excursion to the<br />

world's second largest blowhole<br />

by way of upscale Mexican transportation<br />

- an old school bus <strong>with</strong>out<br />

air-conditioning!<br />

Homeward bound<br />

The trip concluded <strong>with</strong> a<br />

relaxing day at sea playing board<br />

games. On d<strong>is</strong>embarkation day,<br />

students learned how cru<strong>is</strong>e<br />

ships settle their guests' shipboard<br />

accounts, unload luggage in an<br />

orderly fashion, and clear United<br />

States’ customs.<br />

Everyone had a wonderful<br />

time touring California and Mexico.<br />

Students said they not only learned<br />

a lot about the travel industry, but<br />

also enjoyed learning to tango!<br />

BEHIND THE SCENES <strong>Sullivan</strong> <strong>University</strong>'s Medical<br />

Ass<strong>is</strong>ting students recently went behind the scenes at the Kentucky State<br />

Medical Examiner's Office and the Kentucky State Police Forensic Crime Lab<br />

in Frankfort. Instructor Violet Sylvia escorted students from her Anatomy &<br />

Physiology III class to tour the facility and participate in a Health Fair. Mike<br />

Ward, the forensic laboratory superv<strong>is</strong>or and an adjunct faculty member at<br />

<strong>Sullivan</strong>, gave students an insider's view of daily operations and autopsy<br />

Chili Cook-Off <strong><strong>Sullivan</strong>'s</strong> student lounge<br />

was packed <strong>with</strong> hungry people and crock-pots of chili<br />

for the 2nd Annual Chili Cook-off sponsored by the<br />

Computer Club. Students, faculty, and staff brought<br />

in their favorite recipes to compete for prizes and<br />

receive recognition for the best chili on campus.<br />

The Computer Club donated most of the proceeds<br />

to the Secret Santa Project for children in need. The<br />

Cook-off gets more elaborate and scrumptious each<br />

year; so keep your eyes open for that winning chili<br />

recipe for next year's big event!<br />

Computer Club members ra<strong>is</strong>ed $185.75<br />

for Hurricane Relief. When Executive<br />

Director Mr. McGuire heard about their<br />

efforts, he matched the contributions,<br />

ra<strong>is</strong>ing the total to $371.50! <strong>Sullivan</strong> also<br />

participated in the Bluegrass Culinary<br />

Association's Silent Auction, donating a<br />

dinner for eight, prepared and served in<br />

the lucky bidder's home. Estimated value:<br />

$1,200. The <strong>University</strong> salutes those<br />

involved in these humanitarian efforts.<br />

Poetry, sweet treats, and great<br />

conversation were the highlights<br />

of th<strong>is</strong> year's Valentine's<br />

Extravaganza. Students<br />

enjoyed the cookie decorating<br />

and poetry contests. The<br />

highlight of the day came<br />

when singles paired off<br />

to share information about<br />

each other <strong>with</strong> a time limit<br />

of eight minutes. At the<br />

end of the “date,” male<br />

participants switched and the<br />

process started all over again.<br />

Mentors for foster children<br />

Phi Beta Lambda (PBL) members recently volunteered<br />

as mentors for SAFY (Specialized Alternatives for<br />

Families & Youth) for their annual parenting seminar.<br />

SAFY <strong>is</strong> a not-for-profit agency that provides treatment,<br />

foster care, adoption programs, and services to youth<br />

and their families in need throughout America. While<br />

parents were attending seminars, club members<br />

accompanied children to the Double Stink Hog Farm<br />

in Georgetown, where they v<strong>is</strong>ited the petting zoo,<br />

which included kangaroos, zebras, and camels and got<br />

their choice of pumpkins! After lunch, it was off to the<br />

Georgetown Pavilion, where they had the option of<br />

swimming in the indoor water park, playing basketball,<br />

or running around the track. The children were not<br />

the only ones who had a wonderful day. PBL member<br />

Natasha Lawson's excitement was contagious. “Th<strong>is</strong><br />

was an amazing experience,” she said. “I thoroughly<br />

enjoyed helping SAFY. Th<strong>is</strong> <strong>is</strong> a great organization<br />

and I believe what they are doing for these kids <strong>is</strong><br />

wonderful. I will definitely be attending the next<br />

SAFY event.”<br />

More than 4,000 people were<br />

in attendance at the beautiful Southeast<br />

Chr<strong>is</strong>tian Church to honor the<br />

accompl<strong>is</strong>hments realized by each<br />

and every graduate. Cameras<br />

flashed as families and friends<br />

watched <strong>with</strong> pride as graduates<br />

from <strong>Sullivan</strong> <strong>University</strong>’s Lou<strong>is</strong>ville,<br />

Lexington, and Fort Knox campuses<br />

were awarded certificates, diplomas,<br />

associate, bachelor’s, and master's<br />

degrees from Kentucky's largest<br />

independent <strong>University</strong>.<br />

quarter schedule produces graduates<br />

in March, June, September,<br />

and December, and recognizes<br />

their achievements <strong>with</strong> two formal<br />

<strong>Sullivan</strong> <strong>University</strong>'s Master’s in<br />

Business Admin<strong>is</strong>tration (MBA)<br />

degree program in 2002, her coworkers<br />

said they did not think it<br />

would improve her <strong>career</strong> opportunities.<br />

Boy, were they wrong!<br />

At the time, she didn't<br />

know for certain if all<br />

of her hard work<br />

would pay off,<br />

but she's been<br />

amazed by the<br />

number of doors<br />

since starting<br />

In September 2004, Angela<br />

landed an accounting position <strong>with</strong><br />

Wintech, a major automotive parts<br />

provider for N<strong>is</strong>san, GM, Honda,<br />

and Subaru. A mere eight months<br />

later, she was offered a promotion<br />

to Accountant II. In addition to the<br />

title change, she received more<br />

responsibility and a huge salary<br />

increase, but what really excited<br />
