technology part of our on-go<strong>in</strong>g effort to reduce the<br />

consumption of utilities <strong>in</strong> <strong>ice</strong> mak<strong>in</strong>g! <strong>The</strong> Prodigy technology,<br />

made available <strong>in</strong> <strong>Scotsman</strong> Vertical Evaporator Cubers L<strong>in</strong>e <strong>in</strong> 2008,<br />

is based upon three key assumptions:<br />

Energy Sav<strong>in</strong>g: the automation of the “harvest” system for<br />

the detachment of the <strong>ice</strong>-cubes from the evaporator plate<br />

“waffle”, us<strong>in</strong>g the dual action of thermal and mechanical<br />

effects. Reduc<strong>in</strong>g the last phase of the production cycle - the<br />

actual defrost – to a matter of just 30 seconds, i.e. one-sixth of<br />

Gourmet <strong>ice</strong>, D<strong>ice</strong> and Half D<strong>ice</strong> <strong>ice</strong>, Nugget <strong>ice</strong>,<br />

Scale <strong>ice</strong>… Each of these different types of <strong>ice</strong> is meant<br />

to meet and fulfil a specific requirement. <strong>The</strong>y are<br />

produced by <strong>in</strong>herently different <strong>ice</strong> mak<strong>in</strong>g mach<strong>in</strong>es.<br />

Other than by type of <strong>ice</strong>, differences may also be found <strong>in</strong><br />

daily output capacity. More importantly, <strong>in</strong> the storage b<strong>in</strong><br />

capacity, directly related to the footpr<strong>in</strong>t and the production<br />

volume of the units.<br />

<strong>The</strong> true parameter that should be followed when<br />

choos<strong>in</strong>g an <strong>ice</strong> mach<strong>in</strong>e is the quantity of <strong>ice</strong> that the<br />

mach<strong>in</strong>e can hold <strong>in</strong> its storage b<strong>in</strong>, which equates to the<br />

actual quantity of <strong>ice</strong> that is available to the operator "here<br />

and now" as well as for the rema<strong>in</strong>der of the even<strong>in</strong>g<br />

hours.<br />

<strong>The</strong> refill capacity of <strong>ice</strong><br />

mach<strong>in</strong>es dur<strong>in</strong>g serv<strong>ice</strong> hours<br />

is <strong>in</strong> fact relatively limited.<br />

Consider that the hourly<br />

output of a medium- small <strong>ice</strong><br />

mach<strong>in</strong>e ranges from 2 kg per<br />

hour for medium-size models,<br />

go<strong>in</strong>g down to 0.8 kg per hour for the smallest units. It is<br />

strongly advisable to verify that the storage b<strong>in</strong> capacity is<br />

such that it will susta<strong>in</strong> your <strong>ice</strong> requirements from the<br />

early-on aperitives through to after-d<strong>in</strong>ner digestives. Some<br />

of the smallest <strong>ice</strong> mach<strong>in</strong>es with<strong>in</strong> the 20 kg of daily<br />

production capacity, <strong>in</strong> fact, feature a storage b<strong>in</strong> capacity<br />

of only 4 kg!<br />

<strong>The</strong> first rule-of-the-thumb is that the storage b<strong>in</strong><br />

capacity should ideally reflect 50% of the mach<strong>in</strong>es<br />

daily production. Keep <strong>in</strong> m<strong>in</strong>d that once the storage b<strong>in</strong><br />

is full, the <strong>ice</strong> mach<strong>in</strong>e produc<strong>in</strong>g <strong>ice</strong>. It will only restart<br />

when <strong>ice</strong> is removed from the storage b<strong>in</strong>. A storage b<strong>in</strong><br />

that is unable to store the "clos<strong>in</strong>g hours production capacity"<br />

of the mach<strong>in</strong>e will therefore limit the daily actual<br />

capacity of the unit, whilst deliver<strong>in</strong>g only a limited amount<br />

of <strong>ice</strong> when the need is at its peak.<br />

In order to serve your customers with the “perfect<br />

dr<strong>in</strong>k” you need crystal-clear, pure, transparent and full<br />

cubes, to avoid “water<strong>in</strong>g down” the dr<strong>in</strong>ks. In detail:<br />

a hollow cube, a "cube with the hole" will offer a larger<br />

heat exchange surface than a massive cube, which <strong>in</strong> turn<br />

will cause the cube to melt quicker. Hollow cubes usually<br />

melt prior to the average consumption time of the dr<strong>in</strong>k.<br />

Very quick cool<strong>in</strong>g of the dr<strong>in</strong>k will therefore occur, as well<br />

as its (premature) warm<strong>in</strong>g up once the <strong>ice</strong> cubes have<br />

melted.<br />

A full cube, on the contrary, will chill the dr<strong>in</strong>k reflect<strong>in</strong>g<br />

the consumption pattern: promptly, but not abruptly,<br />

durably and not prematurely, preserv<strong>in</strong>g the dr<strong>in</strong>k quality<br />

rather than dilut<strong>in</strong>g it.<br />

enjoyment of those who love chew<strong>in</strong>g on the residual <strong>ice</strong><br />

cubes…<br />

requirements<br />

A traditional bar, an “American Bar” that serves a limited<br />

volume of classic cocktails, may decide to work with a s<strong>in</strong>gle,<br />

self-conta<strong>in</strong>ed, Gourmet cube produc<strong>in</strong>g <strong>ice</strong> mach<strong>in</strong>e. In this<br />

case, special care should be paid <strong>in</strong> select<strong>in</strong>g the correct<br />

capacity of the storage b<strong>in</strong>: the best sellers <strong>in</strong> this segment are<br />

<strong>ice</strong> mach<strong>in</strong>es whose b<strong>in</strong>s range between 8 and 15 kg, i.e.<br />

<strong>ice</strong> mach<strong>in</strong>es produc<strong>in</strong>g 20 to 30 kg of <strong>ice</strong> per day. Part of<br />

this production might be crushed for the preparation of<br />

tropical cocktails, unless a dedicated nugget <strong>ice</strong> mach<strong>in</strong>e is<br />

also available <strong>in</strong> the bar.<br />

Beverage consumption <strong>in</strong> Disco’s<br />

is typically higher, hence the<br />

requirement for larger capacity <strong>ice</strong><br />

mach<strong>in</strong>es, for a generous <strong>ice</strong><br />

supply. In this situation, we recommend<br />

the use of modular <strong>ice</strong><br />

mach<strong>in</strong>es, where the production<br />

unit is matched with the<br />

storage b<strong>in</strong>, chosen accord<strong>in</strong>g to<br />

the specific consumption patterns.<br />

A larger storage b<strong>in</strong> will accumulate<br />

and keep <strong>ice</strong> cubes dur<strong>in</strong>g low<br />

volume week-days, and that higher<br />

quantity will come handy on<br />

high-volume week-end days. As the<br />

purchase cost of the <strong>ice</strong> mach<strong>in</strong>e is significantly higher than<br />

that of the b<strong>in</strong>, this simple trick may translate <strong>in</strong>to significant<br />

sav<strong>in</strong>gs. In other words, when <strong>ice</strong> consumption tends to<br />

concentrate <strong>in</strong> peaks dur<strong>in</strong>g the week, a smaller <strong>ice</strong> mach<strong>in</strong>e<br />

may be purchased, and placed on the top of a larger than<br />

usual storage b<strong>in</strong>.<br />

For “round the week”, high volume Disco’s, we suggest<br />

that you consider more than just one large <strong>ice</strong> mach<strong>in</strong>e:<br />

several medium-size mach<strong>in</strong>es may be strategically positioned<br />

near the po<strong>in</strong>t-of-consumption of <strong>ice</strong>, thus reduc<strong>in</strong>g <strong>ice</strong><br />

transportation and all related issues of potential contam<strong>in</strong>ation<br />

and extra labour.<br />

How do we handle space restra<strong>in</strong>t <strong>in</strong> under-counter<br />

<strong>in</strong>stallations? And how do we possibly by-pass the lack of<br />

Wonder<strong>in</strong>g if you knew...<br />

Ice makes economic sense, …too!<br />

As previously expla<strong>in</strong>ed, us<strong>in</strong>g the right quantity of <strong>ice</strong><br />

cubes (and <strong>in</strong> this case we mean its use <strong>in</strong> beverages, as the<br />

base of a good dr<strong>in</strong>k) chills down and ma<strong>in</strong>ta<strong>in</strong>s the spirit at<br />

the correct temperature, enhanc<strong>in</strong>g the quality of the<br />

product, respect<strong>in</strong>g the highest professional standards,<br />

and br<strong>in</strong>g<strong>in</strong>g the overall Customer Experience to its peak.<br />

We are left with the explanation of the impact that <strong>ice</strong> has on<br />

the profitability of the enterprise. <strong>The</strong> old say<strong>in</strong>g: ”In the<br />

world there are two categories of people that are able to build<br />

their home with <strong>ice</strong>: <strong>The</strong> Eskimos and the Bartenders!” is here<br />

to stay … let's see why…! Ice cubes, once <strong>in</strong> a glass, take up<br />

space, volume. If we were to keep the size of the glass<br />

unchanged, as the quantity of <strong>ice</strong> <strong>in</strong>creases, the quantity of<br />

the liquid poured <strong>in</strong> the glass drops. Ice therefore replaces the<br />

liquid. <strong>The</strong> quantity of liquid "displaced" will also depend on<br />

the shape of the <strong>ice</strong> used.<br />

Let us analyse the displacement factor modifications accord<strong>in</strong>g<br />

to the various types of <strong>ice</strong> used, <strong>in</strong> decreas<strong>in</strong>g <strong>in</strong>crements.<br />

In first place we f<strong>in</strong>d Nugget and Cubelet Ice: these two types<br />

are those that by far (with the obvious exception of a s<strong>in</strong>gle<br />

<strong>ice</strong> cube, as tall and wide as the entire volume occupied by<br />

<strong>ice</strong>!) take up the most volume <strong>in</strong> the glass. In second place we<br />

f<strong>in</strong>d <strong>ice</strong> cubes from small size to large. Medium to large size<br />

cubes will occupy less volume than small size, nugget type, <strong>ice</strong><br />

cubes. <strong>The</strong> volume of displaced liquid may have a different<br />

value accord<strong>in</strong>g to the dr<strong>in</strong>k served. In any case, the displaced<br />

beverage will represent a lesser value for the bar manager and<br />

therefore, leav<strong>in</strong>g the sell<strong>in</strong>g pr<strong>ice</strong> of the dr<strong>in</strong>k unchanged, a<br />

higher profit.<br />

<strong>The</strong> best way to comb<strong>in</strong>e product quality, perceived value<br />

and profit marg<strong>in</strong> for the bartender is the follow<strong>in</strong>g:<br />

<strong>in</strong>crease the size of the glass;<br />

pour generous quantities of <strong>ice</strong>;<br />

pour the correct quantity of spirit (same as previously<br />

served);<br />

if not a touch more;<br />

serve the dr<strong>in</strong>k <strong>in</strong> its best conditions, chilled, refresh<strong>in</strong>g and<br />

able to ma<strong>in</strong>ta<strong>in</strong> such temperature;<br />

cont<strong>in</strong>ue to charge the same amount serv<strong>in</strong>g a better<br />

product, or, at this po<strong>in</strong>t, <strong>in</strong>crease the sell<strong>in</strong>g pr<strong>ice</strong> without<br />

the doubt of upsett<strong>in</strong>g any of he patrons!<br />

Scientific Background about <strong>ice</strong> cubes<br />

When an <strong>ice</strong> cube is poured <strong>in</strong>to an ambient temperature<br />

dr<strong>in</strong>k, the temperature of the dr<strong>in</strong>k drops s<strong>in</strong>ce the dr<strong>in</strong>k is<br />

supply<strong>in</strong>g heat to the <strong>ice</strong> cube. In turn, the cube warms-up.<br />

When the temperature of the <strong>ice</strong> reaches the melt<strong>in</strong>g po<strong>in</strong>t,<br />

0ºC (32ºF), it changes its state from solid to liquid.<br />

So, <strong>in</strong> order to melt, the <strong>ice</strong> surface must receive enough<br />

heat to br<strong>in</strong>g its temperature up to 0ºC. In a glass filled<br />

with any liquid, the <strong>ice</strong> cubes are <strong>in</strong> contact both with the<br />

liquid and with the glass, and both these elements have a<br />

higher temperature than the <strong>ice</strong>. Heat is therefore transferred<br />

to the <strong>ice</strong> from both of them.<br />

As the process cont<strong>in</strong>ues, <strong>ice</strong> receives additional heat, the heat<br />

of fusion, so as to provide sufficient energy to the water<br />

molecules to separate from the <strong>ice</strong> structure and dissolve <strong>in</strong>to<br />

a liquid state. <strong>The</strong> temperature of the water rema<strong>in</strong>s at<br />

0ºC until all of the <strong>ice</strong> is melted. Once all of the <strong>ice</strong> has<br />

melted, the temperature of the water (or dr<strong>in</strong>k) will beg<strong>in</strong> to<br />

rise as the ambient temperature, or body heat, transfer<br />

additional heat to it. In terms of heat transfer, some of the<br />

heat is applied by conduction: if an <strong>ice</strong> cube is held <strong>in</strong> the<br />

palm of a hand, body heat is transferred by conduction to the<br />

<strong>ice</strong> cube until the <strong>ice</strong> cube has completely melted. Result<strong>in</strong>g<br />

water will have the same temperature as the hand, which <strong>in</strong><br />

turn will send a signal of coldness to our bra<strong>in</strong> as heat is<br />

transferred to the <strong>ice</strong> cube.<br />

As the human body has much more heat energy <strong>in</strong> it than is<br />

required to melt a small piece of <strong>ice</strong>, the temperature of the<br />

body will only change slightly. <strong>The</strong> temperature of the <strong>ice</strong> cube,<br />

on the contrary, will change dramatically, lead<strong>in</strong>g to it melt<strong>in</strong>g.<br />

Heat may also transfer by convection. This effect takes<br />

place when heat is transferred with<strong>in</strong> a liquid that is flow<strong>in</strong>g<br />

freely.<strong>The</strong> liquid that is <strong>in</strong> contact with the <strong>ice</strong> cube transfers its<br />

heat to the <strong>ice</strong> (by conduction, due to the direct contact), and<br />

the temperature of the liquid drops. This causes the local<br />

density of the liquid to <strong>in</strong>crease, hence it s<strong>in</strong>ks due to gravity.<br />

<strong>The</strong> s<strong>in</strong>k<strong>in</strong>g liquid is replaced by warmer liquid, which surfaces<br />

from other levels of the glass and allows for more heat<br />

exchange to the take place with the <strong>ice</strong> cube. <strong>The</strong> liquid<br />

circulation orig<strong>in</strong>at<strong>in</strong>g from such change <strong>in</strong> density with<strong>in</strong> the<br />

fluid or dr<strong>in</strong>k is called a convection current.<br />

By <strong>in</strong>creas<strong>in</strong>g the free circulation of your dr<strong>in</strong>k near the<br />

<strong>ice</strong> cube (e.g., by stirr<strong>in</strong>g), the time it will take for the <strong>ice</strong> cube<br />

to melt and for your dr<strong>in</strong>k to get cold will be reduced.<br />

<strong>The</strong> different configurations<br />

and technologies <strong>in</strong> <strong>ice</strong> mach<strong>in</strong>es<br />

An <strong>ice</strong> maker is an mach<strong>in</strong>e that uses the refrigeration technology<br />

to freeze water and turn it <strong>in</strong>to <strong>ice</strong>, with different sizes,<br />

shapes and humidity percentages. <strong>The</strong> refrigeration system of an<br />

<strong>ice</strong> mach<strong>in</strong>e is designed to absorb heat from water and transfer it<br />

to the surround<strong>in</strong>g environment, by means of a gas that is <strong>in</strong>itially<br />

compressed, then cooled-down until it condensates Into a liquid<br />

state (this heat exchange process takes place <strong>in</strong> the condenser),<br />

then allowed to boil, or evaporate, <strong>in</strong> a controlled way, return<strong>in</strong>g<br />

to its orig<strong>in</strong>al state by absorb<strong>in</strong>g the needed heat from the water<br />

that is brought <strong>in</strong> contact with it <strong>in</strong> the “evaporator”.<br />

<strong>The</strong> system consists of these ma<strong>in</strong> components:<br />

the Compressor: pumps-<strong>in</strong>, compresses and pushes-out the<br />

refrigerant gas, at a high temperature and pressure, therefore rich<br />

<strong>in</strong> energy, send<strong>in</strong>g it <strong>in</strong>to a closed circuit.<br />

Condenser: the place where the refrigerant gas condenses <strong>in</strong>to<br />

a liquid state as heat is removed and released to the surround<strong>in</strong>g<br />

environment. An <strong>in</strong>sufficient heat exchange <strong>in</strong> the condenser will<br />

result <strong>in</strong>to an <strong>in</strong>complete gas condensation, hence <strong>in</strong>to a less<br />

efficient <strong>ice</strong> mak<strong>in</strong>g process.<br />

Expansion valve: divides the first, high-pressure section of the<br />

circuit from the second, low-pressure one, and regulates the flow<br />

of liquid refrigerant that enters the evaporator to proceed and<br />

absorb heat from the water.<br />

Evaporator: here, the liquid refrigerant, due to the pressure<br />

drop, can go back (evaporate) to its orig<strong>in</strong>al state of gas. In order<br />

to complete this process, it needs heat– hence its subtraction<br />

from the water, which <strong>in</strong> turn starts freez<strong>in</strong>g and form<strong>in</strong>g <strong>ice</strong>.<br />

Once the <strong>ice</strong> is formed <strong>in</strong> whichever way we need it (cubes, flakes,<br />

etc) the freez<strong>in</strong>g cycle comes to a completion, and <strong>ice</strong> is detached<br />

from the evaporator. This may be achieved <strong>in</strong> different ways:<br />

mechanically (forced <strong>ice</strong> harvest), or by revers<strong>in</strong>g the refrigerant<br />

flow <strong>in</strong> the system by send<strong>in</strong>g it directly to the evaporator rather<br />

than to the condenser. Hot gas will start melt<strong>in</strong>g the <strong>ice</strong>, which<br />

will then fall-off by gravity. A comb<strong>in</strong>ation of the mechanical and<br />

thermal actions may be adopted to speed up the harvest<strong>in</strong>g<br />

process.<br />

Now, it should now be easier to understand that:<br />

• <strong>The</strong> refrigerant at high temperature can be cooled down <strong>in</strong> the<br />

condenser by the means of air circulation (forced air) or water<br />

circulation.<br />

• <strong>The</strong> two ma<strong>in</strong> parameters that may affect the production<br />

capacity of an <strong>ice</strong> mach<strong>in</strong>e are:<br />

• Room temperature (for units with air-cooled condenser)<br />

• Water Temperature (affects both condensation and <strong>ice</strong><br />

production capacity)<br />

As these parameters vary, so does the production capacity of an<br />

<strong>ice</strong> mach<strong>in</strong>e vs. the normal conditions. Also, <strong>in</strong>stall<strong>in</strong>g and<br />

commission<strong>in</strong>g the <strong>ice</strong> mach<strong>in</strong>e correctly, and a regular mach<strong>in</strong>e<br />

clean<strong>in</strong>g rout<strong>in</strong>e will ensure peak performance rather than a<br />

sluggish one.<br />

• <strong>The</strong> Air-Cooled Condenser (AS) looks like a car radiator,<br />

cooled down by the action of a fan which forces air through it.<br />

Both the griddle of the condenser and/or the air-filter that protects<br />

it, must be kept clean from the accumulation of clogg<strong>in</strong>g agents,<br />

such as dust and grease to ma<strong>in</strong>ta<strong>in</strong> their function. Designed to<br />

work best at a + 40° C ambient temperature, it will be adversely<br />

affected by an <strong>in</strong>crease of the ambient temperature and/or<br />

by a decrease <strong>in</strong> the air flow (which may also occur <strong>in</strong> case of<br />

poor built-<strong>in</strong> <strong>in</strong>stallations), with the consequent result of a<br />

decrease <strong>in</strong> the <strong>ice</strong> mach<strong>in</strong>e production capacity.<br />

A water condenser consists of a coil made of two pipes welded<br />

together, where respectively water and refrigerant gas flow<br />

through. This system is less demand<strong>in</strong>g <strong>in</strong> terms of clean<strong>in</strong>g and<br />

ma<strong>in</strong>tenance and it is recommended <strong>in</strong> temperature-critical<br />

<strong>in</strong>stallations. Typically, water-cooled <strong>ice</strong> mach<strong>in</strong>es are used where<br />

the heat exchange is <strong>in</strong>sufficient, or where it may cause overheat<strong>in</strong>g,<br />

and best where the <strong>in</strong>let water-temperature is consistently<br />

around 18°-20°C. Examples of such situations, where water<br />

condens<strong>in</strong>g is highly recommended, are built-<strong>in</strong> <strong>in</strong>stallations<br />

with reduced air flow, or dusty environments, or where the<br />

noise factor must be kept to a m<strong>in</strong>imum (the water cooled<br />

condenser is virtually noiseless). <strong>The</strong> many advantages offered<br />

by the water cooled condensers must be weighed aga<strong>in</strong>st<br />

the <strong>in</strong>creased water consumption, with all the relevant issues <strong>in</strong><br />

terms of cost, availability and recycl<strong>in</strong>g of this precious element. In<br />

areas where water is rich <strong>in</strong> m<strong>in</strong>erals, the use of a correctly sized<br />

water-soften<strong>in</strong>g system is highly recommended.<br />

When specific local circumstances do not allow for the use of a<br />

water condensed unit, we may resort to variations on the standard<br />

air-condens<strong>in</strong>g system, such as:<br />

• Remote Condenser (ASR): allows for a remote <strong>in</strong>stallation of<br />

Large units will also allow for SPLIT <strong>in</strong>stallations: here, not<br />

only the compressor is remotely <strong>in</strong>stalled, but also the<br />

refrigeration/ condens<strong>in</strong>g system (the compressor and so on),<br />

typically placed altogether outside of the <strong>ice</strong> production site. Both<br />

these systems grant an improved operation of <strong>ice</strong> mach<strong>in</strong>es that<br />

use air condensers <strong>in</strong> high-ambient conditions.<br />

General rule: a clean condenser will grant better energy<br />

efficiency and a longer work<strong>in</strong>g life of the refrigeration<br />

system components. Smaller <strong>ice</strong> mach<strong>in</strong>es, particularly affected<br />

by the opposite condition, are now equipped <strong>in</strong> the <strong>Scotsman</strong> 6<br />
