<strong>Scotsman</strong>’s range of flake <strong>ice</strong> makers offers mach<strong>in</strong>es of different<br />

capacities, both as self-conta<strong>in</strong>ed (AF range, where the <strong>ice</strong> storage<br />

b<strong>in</strong> is <strong>in</strong>-built <strong>in</strong>to the chassis of the unit) and modular version (MF<br />

range where the <strong>ice</strong> mach<strong>in</strong>e head needs pair<strong>in</strong>g with an external<br />

storage b<strong>in</strong>).<br />

<strong>The</strong> ma<strong>in</strong> factor <strong>in</strong> the siz<strong>in</strong>g of a flake <strong>ice</strong> mach<strong>in</strong>e is as always the<br />

pattern of <strong>ice</strong> demand throughout the day - particular attention<br />

should be paid to the selection of the external <strong>ice</strong> b<strong>in</strong> for modular<br />

units. <strong>The</strong> storage b<strong>in</strong> should be sized to meet peak requirements<br />

<strong>in</strong> terms of capacity, and the <strong>ice</strong> mach<strong>in</strong>e output should be<br />

enough to refill the b<strong>in</strong> before the next <strong>ice</strong>-demand peak starts.<br />

Flake <strong>ice</strong> is available <strong>in</strong> two different options, standard “Flake”<br />

with a higher water content, the best <strong>cho<strong>ice</strong></strong> <strong>in</strong> terms of heat<br />

exchange, and “Supeflake” <strong>ice</strong>, dryer and with a more def<strong>in</strong>ed<br />

shape. Superflake <strong>ice</strong> melts more slowly than traditional flakes.<br />
