M’Hamsa Hand-rolled Whole Wheat Couscous
In Tunisia, M’Hamsa stands for sun-dried wheat grains with origins dating back
thousands of years. A dietary staple of the nomadic Berbers who descended into
the valleys to gather and conserve wheat. Over generations, they developed a
method for grinding and preserving it in the form of couscous, which protected
them from seasonal hazards such as drought. Today, Les Moulins Mahjoub
produces their M’Hamsa Hand-Rolled Couscous in the original large grain
method, now available in whole wheat. 50g glass jar.
OPINION
Africa is the kind of place you fall in love
with. Year after year, I continue to experience
different countries, peoples and
cultures on this magnificent continent,
and the romance grows stronger. African
specialty foods, a category that has grown
by leaps and bounds in the past several
years, is finally being recognized for its
diverse flavors, production quality and social
significance. Behind the scenes, there are
thousands of people who have made these
programs a success. From the farmers to
the manufacturers, importers, distributors,
retail outlets and government organizations,
a sincere “thank you” for making this dream
a reality. African specialty food has indeed
arrived in the United States. The work these
people do in Africa is a labor of love, and
they do it 100 percent every single day.
The category of African specialty foods
is as complex as the continent itself. From
jams to spices, cooking sauces to tea, each
product is a unique experience for the consumer.
Many of the products found within
the “Taste of Africa” feature unique flavor
profiles, including peri peri, rooibos, baobab
and other delicious offerings unique to the
African continent. Many more products
bring various culinary traditions from Africa
to the tables of America, including cape
malay, choma, braai, jollof, ugali and many
other native African words the culinary
community is becoming excitedly aware
of. Though the profile of each of these
companies may vary, there is one constant
that cannot be ignored, and that is the social
impact this work is having. In Africa, where
over 60 percent of the population works in
agriculture, the specialty food industry is
a logical and sensible approach to linking
the poorest of farmers with the outside,
commercial world. Across Africa, thousands
FOODS FROM AFRICA
upon thousands of rural farmers can now
make a livable wage thanks to the success
of the African specialty food programs.
As we read through this buyer’s guide, we
see some of the greatest examples of African
specialty foods available. Fruitales is a womenowned
cooperative in Western Senegal who
create fabulous, all-natural jams while focusing
on economic development in their region. We
also have Madecasse, one of the only companies
who produce 100% of their chocolates
in Africa—keeping the value addition exactly
where it needs to be. These are just a few
examples of companies that are truly bringing
Africa to the center stage of the specialty food
industry. My sincere congratulations to all the
companies represented here.
I hope that you enjoy learning more about
the exciting category of African specialty foods,
and hope you can consider these products
for inclusion into your stores. Most of these
products compete quite well in category, and a
dedicated African section works extremely well
in stores that do well with the British category.
In short, African specialty foods generate sales,
and there are ample promotional programs to
support the category.
Thank you for your support.
