Summer Locavore From Chef Derek with the Vital Food Program: From Seed to Table @ Foxhollow Farm Center This recipe has been used with great success in Vital Food cooking classes because it is simple, seasonal and sensational. Grow your own veggies or buy them fresh and organic at Foxhollow Farm Center Farm Store . Or get them free! Help in the garden one day a week at Foxhollow and go home with a basket of seed to table veggies. Info for garden help or cooking classes: vitalfoodsprogram@gmail.com or www.foxhollowfarmcenter.org Toasted Couscous with Fresh Garden Ratatouille Couscous makes 3 ½ cups 1 cup couscous 1 ½ cups water or vegetable stock 1 teaspoon salt ½ teaspoon fresh black pepper (1) Place salt, pepper and couscous in a dry sauce pan and toast on medium heat until fragrant and light brown about 5-6 minutes. (2) Add all liquid to couscous take pan of heat and put a lid on pan. (3) Let sit 15 minutes and then fluff with a fork. Fresh Garden Ratatouille 2 medium zucchini medium diced 3 tomatoes diced 1 medium onion small diced 2 cloves garlic 2 tablespoons fresh basil cut into ribbons 1 ½ tablespoons olive oil Salt and fresh black pepper to taste (1) In a medium sauté pan add oil until hot but not smoking. Add onions and sauté for 2-3 minutes until softened add garlic and sauté 2-3 minutes. (2) Add zucchini, salt and pepper and cook 4-5 minutes until zucchini has softened and released a little liquid. (3) Add tomatoes and turn down heat let simmer 8 minutes. (4) Take pan off heat let sit 2-3 minutes add basil a just seasoning and serve over couscous. 20 Tell them you found them in GreenList Louisville
