Unit 4:<br />
In this unit, students examine pollution and its relationship<br />
to the health of humans and the environment.<br />
This unit includes applying principles of ecologically<br />
sustainable development and environmental<br />
management to evaluate a selected environmental<br />
science project<br />
Entry<br />
There are no prerequisites for entry to Units 1, 2 and<br />
3. Students must undertake Unit 3 prior to undertaking<br />
Unit 4.<br />
Food and<br />
Technology<br />
This study is designed to give students a greater understanding<br />
of food as a commodity and knowledge<br />
of food preparation and production from a smallscale<br />
perspective to mass production in industry.<br />
Students will develop skills in planning, preparation<br />
and evaluation of food products.<br />
Structure<br />
The study is made up of four units.<br />
Unit 1<br />
Principles of food hygiene and the safe use of tools<br />
and equipment are studied. This unit will enable<br />
students to study the physical and chemical properties<br />
of food, and the way these properties influence<br />
food preparation, storage and presentation.<br />
Unit 2<br />
This unit will enable students to study the preparation<br />
of food for small-scale operations, including<br />
planning considerations, implementation and evaluation<br />
of outcomes and product changes to suit specific<br />
requirements. They will also study the impact of<br />
technological developments on all phases of food<br />
production.<br />
Units 3 and 4<br />
In these units students study food preparation and<br />
production on an industrial scale, exploring the development,<br />
analysis and marketing of food products.<br />
This includes the development of new and modified<br />
food products, and different methods of preparing<br />
and processing food. It will also study controls on<br />
food supply that influence the type of food available<br />
in Australia. There is a focus on the development of<br />
a design plan folio to meet a specific design brief.<br />
Entry<br />
There are no prerequisites for entry to Units 1, 2 and<br />
3. Students must undertake Unit 3 prior to undertaking<br />
Unit 4.<br />
Cost:<br />
A condition of acceptance into this course is payment<br />
of a materials charge Units 1& 2—$150.00;<br />
Units 3 & 4: $90.00 due by Course Confirmation<br />
Day. Students provide own ingredients for SAT<br />
production.(Enrolment in this subject is not confirmed<br />
unless payment is received by this date. A<br />
receipt will need to be produced at the time of<br />
course confirmation.<br />
