(OPERATIONS)-<br />

- CERTIFICATE 11<br />

Units 1-4 sequence. A study score is available<br />

for this program.<br />

The qualification is designed to reflect the role of<br />

employees who perform a range of tasks in hospitality<br />

establishments. Students who complete the<br />

full VCE/VET program will receive Certificate II in<br />

Hospitality (Operations) and a Statement of Attainment<br />

for additional units of competence providing<br />

credit towards other Hospitality qualifications.<br />

There is an external examination at the end of the<br />

second year<br />

Special Requirements<br />

Students are required to undertake 40 hours of<br />

SWL per year.<br />

Students will be issued with uniforms and equipment.<br />

This is included in the cost.<br />

Training and Employment Outcomes<br />

Food and Beverage stream: Students completing all<br />

Units can complete the Certificate IV in Hospitality<br />

and the Diploma of Hospitality (Management) in<br />

reduced time.<br />

Apprenticeship/Traineeship in Hospitality or Hospitality<br />

Management, working in Hotels, Restaurants,<br />

Cafes, Hospitals<br />

Program<br />

The first year revolves around preparation of food<br />

and beverages; the second year involves serving of<br />

food and beverages. Students need to appreciate<br />

that there is a substantial amount of theory in both<br />

years of the program.<br />

Organise and prepare food<br />

Clean and maintain kitchen premises<br />

Use basic methods of cookery<br />

Responsible service of alcohol<br />

Provide food and beverage service<br />

Develop and update hospitality industry knowledge<br />
