Dear Neil: We bought<br />

some land recently, and there<br />

is a huge bois d’arc tree on it.<br />

I wondered if it might be the<br />

largest in the state. Where<br />

can I find out<br />

The official list, the Texas<br />

Big Tree Registry, is on the<br />

Texas Forest Service Web<br />

site www.texasforestservice.<br />

tamu.edu. It’s a fascinating<br />

list of every species known<br />

to grow natively or naturalized<br />

in Texas. It shows the<br />

largest bois d’arc (you’ll find<br />

it listed as “osage orange”)<br />

to be in Northeast Texas in<br />

Bowie <strong>County</strong>. That tree’s<br />

trunk is 247 inches in circumference.<br />

That’s 78 inches<br />

in diameter. If yours is<br />

larger than that, there are<br />

instructions for entering it<br />

into the list. While you’re<br />

looking at the list, look at<br />

how many state champion<br />

trees there are in Brewster<br />

and Hidalgo counties. Those<br />

two counties both border<br />

the Rio Grande, and they<br />

have more champs than<br />

any other county in Texas.<br />

The reason For Hidalgo, it’s<br />

trees that sneak north from<br />

tropical climates. For Brewster,<br />

it’s mainly due to trees<br />

that have found their native<br />

homes in the Chisos Mountains<br />

of Big Bend National<br />

Dear Neil: I have roses<br />

that were purchased as a<br />

bouquet at a grocery several<br />

weeks ago. The water in their<br />

vase has remained clear all<br />

of the time. Now, they are<br />

sprouting new leaves. Can I<br />

grow plants from them<br />

Some growers root roses<br />

from cuttings, but they<br />

don’t start with long cutflower<br />

stems. If you want to<br />

try them, you’ll need to cut<br />

them into 5- or 6-inch pieces.<br />

Insert them into loose, welldrained<br />

potting soil, and<br />

give them greenhouse-like<br />

conditions with nearly 100<br />

percent humidity. Honestly,<br />

your odds are extremely<br />

slim of their rooting at all,<br />

and even if they did, you’d<br />

have to grow them to a sufficient<br />

size to plant in the<br />

yard. You’d be way ahead<br />

to shop at a nursery in the<br />

next few weeks. Their potted<br />

roses are looking terrific<br />

right now.<br />

Dear Neil: We have a 10-<br />

year-old Shumard red oak.<br />

It has grown well, and overall,<br />

it looks healthy. However,<br />

these past several years we’ve<br />

noticed that there are no new<br />

leaves coming out along the<br />

trunk. Is that a concern<br />

Absolutely not. Trees<br />

produce their new season’s<br />

leaves where those leaves<br />

can be exposed to good<br />

sunlight. You’ll notice that<br />

large shade trees of all species<br />

have few, if any, leaves<br />

along their trunks and major<br />

branches. Actually, quite<br />

to the contrary, when leaves<br />

do form along the trunk, it’s<br />

usually a very bad sign that<br />

there is some kind of problem<br />

with the tree’s canopy.<br />

Just continue to give your<br />

tree good care and attention.<br />

Dear Neil: A friend is<br />

asking me for help with a<br />

2-foot-wide space between<br />

their driveway and house.<br />

They want to plant redtip<br />

photinias, but I know it has<br />

serious disease issues. I’m<br />

concerned that it grows too<br />

large anyway. Would it be a<br />

mistake What other options<br />

might I suggest<br />

Even overlooking the fatal<br />

disease flaw that should<br />

prohibit our ever planting<br />

them, redtip photinias,<br />

when left to grow to their<br />

full genetic potential, are<br />

the largest shrubs we have<br />

in Texas landscapes. Their<br />

mature height, when left<br />

unpruned, will exceed 20<br />

feet. Their mature width<br />

can be 10 feet or greater.<br />

Their trunks grow to be 6 or<br />

8 inches in diameter. Those<br />

facts alone should scare anyone<br />

thinking about planting<br />

them along driveways and<br />

beneath windows. As for<br />

alternatives, dwarf burford<br />

hollies grow to a much more<br />

manageable mature size<br />

and could easily be pruned<br />

to stay in bounds. However,<br />

it would be a lot more interesting<br />

if your friend used a<br />

simple groundcover to fill<br />

the space, and then planted<br />

a clinging vine such as Boston<br />

ivy to cover the wall (if<br />

it’s masonry). They could<br />

also use a decorative trellis<br />

placed a couple of inches out<br />

from the wall to support a<br />

flowering vine. I’ve used 3-<br />

inch river rock as a complement<br />

to the groundcover. I’d<br />

probably have a small pocket<br />

of the rocks, say 3 or 4<br />

feet long, with groundcover<br />

going both ways from it. Encourage<br />

them to take photos<br />

in, and let an independent<br />

retail nurseryman draw up<br />

a plan.<br />

Thanks to the recent outbreak<br />

of illness caused by<br />

peanut-based foods, Salmonella<br />

is the “It” bacterium<br />

of the moment.<br />

For all its current media<br />

hype, it’s an old-school bug<br />

with many forms, not all of<br />

which cause intestinal illness.<br />

Public health officials<br />

have targeted it for more<br />

than a century, and they<br />

expect the battle to continue<br />

long after the latest<br />

flare-up.<br />

Salmonella bacteria have<br />

been with us for thousands<br />

of years, and are prime<br />

suspects in the gastrointestinal<br />

illnesses that<br />

killed Alexander the Great<br />

and Prince Albert. Typhoid,<br />

caused by another strain of<br />

salmonella, is even deadlier.<br />

It often has killed thousands<br />

in short periods of<br />

time, including major outbreaks<br />

at the Jamestown<br />

colony and among American<br />

soldiers in the Spanish-American<br />

War.<br />

There are two main<br />

kinds of salmonella afflicting<br />

modern humans: the<br />

non-typhoidal varieties<br />

that cause gastroenteritis<br />

(often erroneously called<br />

“food poisoning”) and the<br />

typhoidal forms that cause<br />

enteric fever (typhoid and<br />

paratyphoid).<br />

Gastroenteritis caused<br />

by salmonella is what we’re<br />

seeing in the infected-peanut<br />

outbreak. It’s the second<br />

most common foodborne<br />

illness in the United<br />

States, right behind the<br />

less well-known but similarly<br />

unpleasant campylobacter<br />

infection.<br />

More than 30,000 cases<br />

of salmonella illness are<br />

confirmed annually, but officials<br />

believe we’re making<br />

headway in the battle.<br />

The 36,000 cases confirmed<br />

in 2005 represented a 12<br />

percent decrease over the<br />

previous decade. Unfortunately,<br />

the low rates at<br />

which salmonella cases are<br />

reported (an estimated 3<br />

percent of all cases) make<br />

it hard to pin down exactly<br />

how much progress we’ve<br />

made.<br />

One statistic is all too<br />

easy to validate. That’s the<br />

600 or so deaths that salmonella<br />

causes each year<br />

– roughly a third of all<br />

food-related deaths.<br />

You can avoid salmonellarelated<br />

illness by following<br />

this advice from the Centers<br />

for Disease Control:<br />

Thoroughly cook meat,<br />

poultry and eggs. Use a<br />

meat thermometer to ensure<br />

that it’s hot enough<br />

to kill bacteria. For example,<br />

ground beef should be<br />

cooked to an internal temperature<br />

of 160 degrees.<br />

TEXAS HEALTH MATTERS<br />

Eggs should be cooked until<br />

the yolks are firm.<br />

Separate foods during<br />

preparation to avoid crosscontamination.<br />

Also, avoid<br />

cross-contaminating foods<br />

by washing your hands,<br />

utensils and cutting boards<br />

after they’ve touched raw<br />

meat or poultry, and before<br />

they touch another food.<br />

Put cooked meat on a clean<br />

plate, not the one that held<br />

the raw meat.<br />

Refrigerate leftovers<br />

promptly. Bacteria grow<br />

fast at room temperature,<br />

so refrigerate leftover<br />

foods if they’re not going to<br />

be eaten within four hours.<br />

Large amounts of food will<br />

cool faster if they’re divided<br />

into several shallow containers<br />

for refrigeration.<br />

Wash produce. Rinse<br />

fresh fruits and vegetables<br />

in running tap water<br />

to remove visible dirt and<br />

grime. Remove and discard<br />

the outer leaves of a head<br />

of lettuce or cabbage. Because<br />

bacteria can grow<br />

well on the cut surface of<br />

fruits or vegetables, be<br />

careful not to contaminate<br />

these foods while slicing<br />

them on the cutting board<br />

— and don’t leave cut produce<br />

at room temperature<br />

for long periods. And use<br />

common sense: Don’t prepare<br />

food for others if you<br />

have a diarrheal illness.<br />

Report suspected foodborne<br />

illnesses to your local<br />

health department. Calls<br />

from concerned citizens often<br />

are the way outbreaks<br />

are first detected. If a public<br />

health official contacts<br />

you to find our more about<br />

an illness you had, your<br />

cooperation is important.<br />

(In public health investigations,<br />

it can be as important<br />

to talk to healthy people as<br />

to ill people, and your cooperation<br />

may be needed<br />

even if you’re not sick.)<br />

More than half of the population<br />

of Texas lives in the urban centers of<br />

El Paso, Austin, San Antonio,<br />

Houston, Fort Worth and Dallas,<br />

yet many Texans yearn<br />

to return to a more rural lifestyle.<br />

<strong>Wise</strong> and surrounding counties<br />

are quickly being cut into<br />

a multitude of small tracts of<br />

land (five to 50 acres) owned<br />

by individuals who work in<br />

the city but use the land as<br />

their principal or weekend<br />

residences. Collectively, these<br />

small acreage landowners own thousands<br />

of acres of productive land in<br />

<strong>Wise</strong> <strong>County</strong>. Unfortunately, small<br />

acreage tracts can easily be abused if<br />

not managed properly.<br />

A sense of “I own it; I’ll do what I<br />

want on it” may contribute to land<br />

abuse. Lack of knowledge of the basic<br />

principals of natural resource<br />

management is probably the<br />

major factor contributing to<br />

land abuse on small acreage.<br />

To assist small landowners<br />

in answering key questions<br />

about weed and brush<br />

control, forage management,<br />

livestock, wildlife and being<br />

a good neighbor, the Extension<br />

Livestock and Forage<br />

CLAYTON Committee has planned a<br />

four-part series of educational<br />

programs designed with you in mind.<br />

The series will be limited to 20 people.<br />

There is a $20 registration fee that includes<br />

refreshments at meetings and a<br />

notebook made up of agriculture publications<br />

from Texas AgriLife Extension<br />

Service and the Noble Foundation.<br />

Dates for the meetings are May 11,<br />

May 18, June 1 and June 8. All meetings<br />

will start at 6:30 p.m. at the Extension<br />

office, 206 S. State Street, in<br />

Decatur and should conclude no later<br />

than 8 p.m. The meetings will focus on<br />

basic animal health, weed and brush<br />

control, calibrating a sprayer and establishing<br />

pastures. There will be a<br />

live animal working demonstration to<br />

teach methods of castrating, dehorning<br />

and vaccinating livestock.<br />

Interested individuals should call<br />

the Extension office at (940) 627-3341<br />

by Friday, April 25, to register. The first<br />

20 to pay the $20 registration fee will<br />

be accepted in the class.<br />

It should serve as a warning that the latest available data shows<br />

that cases of chlamydia and syphilis have risen for the third year<br />

in a row, according to a report released by the Centers for Disease<br />

Control and Prevention. The all-time-high record 1.1 million cases<br />

of chlamydia represent about a seven percent increase from the<br />

previous year. The two most commonly reported infectious diseases<br />

in this country, chlamydia and gonorrhea account for nearly 1.5<br />

million reported cases of sexually transmitted disease (STD) in 1997,<br />

the year for which data is most recently available. The encouraging<br />

news to report is the belief that the increasing number of chlamydia<br />

cases is a reflection of improved screening.<br />

If you think you may have been exposed to an STD, visit your<br />

doctor right away. Proper treatment may prevent other serous<br />

complications from occurring. Regular Pap smears and pelvic exams<br />

are also important and should be a part of a woman routine healthcare.<br />

That’s a great question. There’s<br />

ctually a little-known veterans’<br />

enefit that helps wartime veterns<br />

and their surviving spouses<br />

ay for a variety of medical and<br />

ong-term care costs. Here’s what<br />

ou should know.<br />

VA aid<br />

The VA benefit that may help<br />

your dad is called “Aid and Attendance,”<br />

a special pension benefit<br />

established in 1952 that provides<br />

a tax-free monthly income up to<br />

$1,644 for a veteran; $1,056 for a<br />

surviving spouse; or $1,949 for a<br />

veteran and one dependent. The<br />

money can be used to pay for inhome<br />

care, assisted living and<br />

nursing home care as well as medical<br />

expenses, prescription drugs<br />

and more.<br />

Today, around 150,000 veterans<br />

and surviving spouses receive this<br />

benefit, but hundreds of thousands<br />

more are eligible and either don’t<br />

know about it, or don’t think they<br />

can qualify for it.<br />

To qualify, your dad must have<br />

served at least 90 days of active<br />

military service with at least one<br />

day of service during a period of<br />

war (stateside or overseas), and<br />

was not dishonorably discharged.<br />

(Single surviving spouses of war<br />

time vets are also eligible if their<br />

marriage ended due to death.)<br />

Your dad will also have to meet<br />

certain physical and financial requirements<br />

to be eligible.<br />

To qualify physically, he must be<br />

at least age 65 and need help with<br />

basic everyday living tasks such as<br />

eating, dressing and undressing,<br />

bathing or going to the bathroom.<br />

Being blind or in a nursing home<br />

or assisted living facility for mental<br />

incapacity also qualifies. Or<br />

– 1st with her prairie dress and bonnet<br />

in the handmade garments and accessories<br />

category; and Marilyn Clemmer<br />

– 1st with her pencil drawing in the<br />

painting/drawing category.<br />

wall hanging; Marilynn Collins with<br />

her appliqué machine quilt smaller<br />

Think you’ve got a lot of stress in your life Well,<br />

welcome to the club. In today’s hectic world and troubled<br />

economy, stress is a part of everyone’s life.<br />

And while it’s true that stress that comes with certain<br />

events, such as buying a house, changing jobs<br />

or the loss of a loved one, can affect your health and<br />

even your life span, the reality is that not all stress<br />

has to be damaging.<br />

Stress, even so-called bad stress, has the potential<br />

to motivate us, to help us focus and to provide important<br />

information about ourselves. The key is to learn<br />

how to respond to stress and to make the most of it.<br />

One starting point is to analyze how stress affects<br />

you. When you feel stressed, monitor how you’re reacting.<br />

Do you get irritated with others, feel physically<br />

tense or develop a headache Perhaps you get<br />

jumpy or talkative, or maybe become quiet and listless<br />

Once you see what stress does to you, look for ways<br />

to better handle your reaction. If your stress seems<br />

to give you energy, try to channel it in appropriate<br />

directions. Step away from the stress-inducing event<br />

and use your energy productively. Take a walk, do<br />

some gardening or find another physical activity that<br />

will redirect some of that stress-induced energy.<br />

If stress, however, seems to sap your energy, then<br />

take time to rest and get back on track. Try a few<br />

minutes of meditation or something relaxing like<br />

reading or listening to music. Try finding a pleasant<br />

activity rather than just facing the unpleasant reactions<br />

stress can bring.<br />

As you learn to handle your stress, you also want<br />

to reflect upon why you’re feeling stressed to begin<br />

with. Start writing down situations and activities<br />

that prompt stressful feelings for you.<br />

As you develop such lists, try to analyze the fears<br />

that lie beneath these stressful situations. In identifying<br />

such situations, you may find the fears are unfounded,<br />

or that the situations can often be avoided<br />

or minimized.<br />

Responding to and managing stress takes work,<br />

but your goal is understanding what stress is telling<br />

you in order to make changes for a more positive and<br />

less stressful you.<br />

However, if you find that stress is overwhelming<br />

you and that your efforts aren’t minimizing its affects,<br />

then look for professional help. A counseling<br />

professional can offer stress management tools to<br />

help reduce stress levels and allow you to use your<br />

stress for more positive outcomes.<br />

ABOUT SIDS<br />

Sudden Infant Death Syndrome, or<br />

SIDS, is the leading cause of death for<br />

infants between one month old and one<br />

year. Though a definitive cause for SIDS<br />

hasn’t yet been discovered, it’s believed<br />

that sleeping infants re-breathe the air<br />

they or family members sleeping in<br />

the same bed have exhaled, resulting<br />

in an inadequate supply of oxygen. In<br />

the early 1990s, a study showed that<br />

babies who slept on their stomachs<br />

were at a higher risk for SIDS. Since<br />

then, pediatricians have recommended<br />

putting babies to sleep on their backs,<br />

and the death rate has dropped by half.<br />

New studies indicate that the movement<br />

of air caused by a fan in the room may<br />

also lower the risk of SIDS.<br />

BIRDS AND BEYOND<br />

Recently my mom, our<br />

friend Kathy, and I went<br />

for an afternoon hike on<br />

the LBJ National Grasslands.<br />

We were in search of<br />

a specific target: Blue Funnel-Lilies<br />

(Androstephium<br />

coeruleum).<br />

It was a gorgeous day for<br />

our hike: about 75 degrees<br />

and sunny with a light<br />

breeze. We started heading<br />

down the trail through<br />

clumps of live oaks interspersed<br />

with open areas<br />

filled with little bluestem<br />

grass. Many gorgeous redbuds<br />

were blooming. Since it<br />

was the middle of the afternoon,<br />

there weren’t a lot of<br />

birds singing, but I did hear<br />

several cardinals.<br />

The warm weather encouraged<br />

a variety of butterflies.<br />

First, we noted a<br />

Black Swallowtail floating<br />

around. Multiple yellow<br />

sulphur butterflies were flyng.<br />

Most of the ones I could<br />

dentify (few landed and<br />

any seemed to be in quite<br />

hurry) were Southern<br />

ogfaces, so named for the<br />

attern of black and yellow<br />

n their wings that supposdly<br />

looks like a silhouette<br />

f a dog’s head.<br />

I saw one Falcate Oranetip<br />

fluttering about. This<br />

s a really frustrating buterfly<br />

for me. These tiny<br />

ritters fly only in the spring<br />

nd are striking with snowy<br />

hite wings tipped with a<br />

eon orange patch on each<br />

orewing. However, it seems<br />

ike they never land for<br />

ore than a few seconds so<br />

always have a ridiculously<br />

ard time getting a photo.<br />

Well, they actually do land<br />

A few Goatweed Leafings<br />

were out, too. This<br />

shape and camouflaged<br />

blaze of color. In the open<br />

live oak woodlands where<br />

we saw the Leafwings, we<br />

also heard a Blue Jay, chickadees,<br />

Ruby-crowned Kinglets<br />

(which are winter residents<br />

but were preparing<br />

for spring anyway with enthusiastic<br />

song), a titmouse<br />

and Red-shouldered Hawks.<br />

Mom and Kathy eventually<br />

saw the two hawks flying<br />

over.<br />

I wandered down deeper<br />

into the woods in search of<br />

the titmouse I heard singing,<br />

but then I heard the<br />

high-pitched “seepy seepy<br />

seepy seepy seepy” song of<br />

a Black-and-white Warbler.<br />

I got an up-close look at the<br />

beautiful songbird’s crisp<br />

black-and-white streaking.<br />

This species is unique<br />

among warblers for its regular<br />

habit of foraging head<br />

first down trees like a nuthatch.<br />

After about an hour we<br />

reached an open mesa with<br />

only scattered clumps of<br />

trees. Along the trail Mom<br />

and Kathy spotted a clump<br />

of Blue Star flowers that<br />

were about to bloom. Savannah<br />

Sparrows and a Song<br />

Sparrow flew up from the<br />

grass to the brush. Different<br />

butterflies were in this area:<br />

Common Buckeyes, Dainty<br />

Sulphurs, Painted Lady and<br />

Sleepy Orange.<br />

Several wildflowers were<br />

starting to bloom. We saw<br />

Indian Paintbrushes, bladderpod<br />

(a small yellow<br />

flower with silvery-green<br />

foliage), verbena, anemone<br />

and four-nerve daisy. Then,<br />

we all started to see funnellilies<br />

hiding at the edge of<br />

grass clumps. Hooray! Mom<br />

had been to this spot in a<br />

previous year when even<br />

more were blooming, so we<br />

walked further. Finally, we<br />

found several big clumps<br />

of them. Several plants<br />

had three to five flowers on<br />

them, while others sported<br />

solitary blooms.<br />

Funnel-lilies have a delicate<br />

color varying from light<br />

blue to whitish. The petals<br />

seem translucent, yet fleshy,<br />

and I find them very difficult<br />

to photograph. In the shade,<br />

you can’t get the color, but in<br />

the sunlight they wash out.<br />

They bloom only in early<br />

spring, which is why they<br />

are such a treat to find. The<br />

species is a perennial, which<br />

means that it lives more<br />

than one year. So, if you find<br />

lilies one year, you can usually<br />

come back to the same<br />

spot and then again. Other<br />

plants in the lily family include<br />

onion, garlic, trout-lilies,<br />

hyacinths and asparagus.<br />

Satisfied with our find<br />

and getting a bit warm<br />

and hungry, we started to<br />

walk back to the cars. Even<br />

when we try to hurry back,<br />

there is always something<br />

to see. We spotted a tiny<br />

dark Lepidoptera flying<br />

about. It landed briefly and<br />

we discovered that it was a<br />

Common Roadside-Skipper,<br />

which, contrary to its name,<br />

seems uncommon to me and<br />

is not particularly tied to<br />

roads. Whether you’re taking<br />

a slow walk out or a<br />

quick one back home, keep<br />

your eyes peeled. You never<br />

know what surprises you<br />

will find!<br />

I prepared ten pounds of<br />

venison bacon earlier this<br />

week and found it easy to<br />

make.<br />

The finished product was<br />

the tastiest bacon I’ve eaten,<br />

and about 80 percent<br />

lean. Chances are good you<br />

have some ground venison<br />

in your freezer from the<br />

past hunting season. Here’s<br />

how to turn it into some<br />

very tasty bacon: Mix 5<br />

pounds ground venison with<br />

5 pounds ground pork jowl<br />

with the packet of cure/seasonings.<br />

Mix by hand at least 6<br />

minutes, making sure to<br />

blend the seasonings well.<br />

Refrigerate overnight and<br />

form into 5 two-pound loaves<br />

about two inches thick (like<br />

a slab of bacon). Make sure<br />

to tightly pack the meat<br />

by hand when forming the<br />

loaves.<br />

Place in your smoker and<br />

smoke 1 1/2 hours at 120 degrees,<br />

crank the thermostat<br />

up to 130 and smoke another<br />

hour, then smoke an hour<br />

at 140 degrees and another<br />

hour at 150 degrees. Then<br />

turn up your smoker to 160<br />

degrees and raise internal<br />

temperature to 140.<br />

Do not overcook. Refrigerate<br />

overnight before slicing<br />

into bacon-sized strips.<br />

Fry or microwave until<br />

crunchy like bacon. I do almost<br />

all my outdoor cooking<br />

on my electric smoker, but<br />

any smoker that permits<br />

slow smoking that is controlled<br />

with a thermostat<br />

will work.<br />

an excellent season for<br />

hunting eastern turkey.<br />

“We’ve heard several gobblers<br />

sounding off, but I expect<br />

the gobbling to intensify<br />

in the next week. Gobblers<br />

have broken up from the<br />

bachelor groups and many<br />

now are with hens.<br />

says he’s been hearing gobblers<br />

sound off for several<br />

days and he’s expecting a<br />

banner season.<br />

“We have lots of birds<br />

and a good number of jakes.<br />

last spring and in many areas<br />

of the state the hatch was<br />

below average but things<br />

are looking good here, both<br />

for young birds and mature<br />

gobblers,” Winget said.<br />
