William A.Henry, Dean of the department, is a recognized authorityon agriculture.Hiram Smith Hall, the dairy building, is a few hundredfeet west of Agricultural Hall.It receives its namefrom a former well known dairyman and member of theBoard of Regents. Cost $40,000; opened in 1893, andsince enlaro'ed and cold storac^e rooms added. An interestingsight may be witnessed here in the morning.Farmers are unloading their milk wagons and reloadingwith the milk from which the cream has been separated.Inside the separators are at work, and the visitor maybe initiated into the latest processes of butter and cheesemaking. <strong>The</strong> Babcock milk test for determining thequantity of cream in milk has been adopted all over theworld. It was invented and freely given to the world<strong>by</strong> Prof. Stephen M. Babcock, chief chemist of the AgriculturalExperiment Station of the University of <strong>Wisconsin</strong>.Its value to the farmers of this state alone hasbeen placed at millions of dollars.In 1903 the <strong>Wisconsin</strong>Legislature presented Prof. Babcock with a valuablebronze medal inrecognition of his service.Horticultural Hall is a few steps north of theDairy building; $43,000 were expended in its constructionin 1896. This group of buildings has its own heatingplant.
