Red JacketPotato and TastyCheddar SoupRecipe courtesy of AS Wilcox1RECIPEMelt butter in a large pot.Add onion, garlic andcayenne pepper and sweaton low heat for 5 minutes.Add potatoes, water andstock, turn up heat andbring to the boil.2345Turn down and simmerfor 25 minutes untilpotatoes are soft whenpierced with knife.Stir in the cheese, salt andcream and bring back to asimmer. Remove from heat.Blend in food processoruntil smooth.To serve, reheat, stirringcontinually in a heavybased pot.TRYTHISTop with seared garlic prawns,chopped chives and asprinkle of paprika.
