<strong>Ginseng</strong> Saponin is the main medicinal property in ginseng, otherwise known as ginsenoside.<br />

This saponin is different from saponins in other plants in terms of chemical structure as well<br />

as efficacy. Saponins from <strong>Korea</strong>n Insam so far include, by chemical structure, 19 types of<br />

Protopanaxadiol (PD), 10 types of Protopanaxatriol (PT), and 1 type of Oleanane, 30 in<br />

The origin and development of <strong>Korea</strong>n Insam<br />

It has been reported that <strong>Korea</strong>n Insam started to be produced about 1000 years ago.<br />

However, according to historical literature, <strong>Korea</strong>n Insam was first produced during the<br />

Chosun dynasty (AD 1567~1608). At first, it was cultivated by seeding or planting early<br />

ginseng seeds in the forest. It was then gradually moved to flat farmland, which is today’s<br />

method of cultivation with sun blockage as a necessary step.<br />

The process of producing <strong>Korea</strong>n Insam<br />

To produce the purest and best quality ginseng, special care must be devoted to cultivation,<br />

from planting to harvesting. First, the field must be carefully selected in order to simulate the<br />

growing conditions of wild ginseng as closely as possible. After that, using broad-leaved trees<br />

found deep in the mountains, the proper soil is located and fertilized with compost for one or<br />

two years. This method enables the land to be suitable for the natural cultivation of ginseng.<br />

The next step is selecting the best seeds from a superior crop of ginseng and then<br />

transplanting the best seedlings. This is a prerequisite in producing premiere ginseng. Via this<br />

process, superior ginseng is produced and the result 4-6 years later is the best pure ginseng,<br />

Dried fresh ginseng after gelatinizing some of the body from the skin by immersing fresh ginseng<br />

Q. What makes <strong>Korea</strong>n Insam the best ginseng?<br />

A. KOREAN INSAM is grown in an optimal geographical environment and in climatic<br />

conditions suitable for the growth of superior quality ginseng. The growing period (180 days) is<br />

longer than in other growing areas (120 to 130 days). This increased growing period improves<br />

internal ginseng structure by producing harder and denser internal tissues which guards innate<br />

flavor. <strong>Korea</strong>n Insam has 34 kinds of saponin (Ginsenoside), which is much more than any other<br />

ginseng, such as American (14) or Sanchi (15). <strong>Korea</strong>n Insam also contains unique compounds,<br />

including Rh2 (restraining cancerous cells proliferation), Rg3 (protecting brain cells), and Rf, (an<br />

ingredient only can found in <strong>Korea</strong>n Insam). Finally, <strong>Korea</strong>n Insam exhibits more<br />

pharmacological activity than any other type of ginseng.<br />

Q. What is saponin in ginseng?<br />

A. Saponin is a widely found glycoside in plants. However, the chemical structure of ginseng<br />

saponin is completely different from those found in other herbs. Thus, for the purpose of<br />

differentiating ginseng saponin from those of other vegetables, it is called “ginsenoside,” which<br />

refers to “ginseng glycoside”.<br />

100g ginseng, 1/2 chicken, 1 green<br />

onion, 1 Spanish onion, 8 cups water,<br />

1/2 tablespoon soy sauce, 1 tablespoon<br />

sesame oil, 1/3 teaspoon salt, 1/4<br />

teaspoon black pepper, 2 celery sticks<br />

Trim and wash ginseng with soft brush, then slice into round shapes and remove roots from the<br />

ginseng body. Set roots aside.<br />

Remove fat from chicken and put chicken in pot with roots of ginseng, green onion, Spanish onion,<br />

and water. Boil for 30 mins until soup is milky then take chicken out of soup and cool.<br />

Strain the stock with chinacap/strainer.<br />

Tear the cooled chicken into pieces following its texture. Lightly mix chicken with sesame oil, salt<br />

and pepper.<br />

Boil chicken stock in the pot, then add ginseng and seasoned chicken flesh from step 3.<br />

Simmer for a while then add celery (cut in 2 cm length) for flavor and add soy sauce for seasoning<br />

and pepper for taste.<br />

100g ginseng, 200g beef, Small portion<br />

salt, 3~4 sticks rosemary, 2 tablespoon<br />

olive oil<br />

Sauce<br />

4 TBS steak sauce, 1 TBS barbeque<br />

sauce, 3 TBS water, 1 TSP sugar, Small<br />

portion rosemary<br />

Garnish<br />

1/4 red onion, 1/4 yellow paprika, Small<br />

portion coriander<br />

Scrub ginseng with a toothbrush under running water and trim small roots. Then slice into thick<br />

pieces. Beat slightly to soften.<br />

Prepare beef (AA grade (marbling) or above), and slice into palm sized pieces.<br />

Beat to thinness. Add salt for taste.<br />

Put ginseng in the beef and roll. Add stalks of rosemary and olive oil for marinade.<br />

Boil sauce materials and put beef in the pot. Pour sauce on top of beef during simmering.<br />

Cut onion and paprika into ring shaped pieces and place on serving plate.<br />

Place ginseng beef roll on top and garnish with coriander.<br />

Broth<br />

1/2 chicken, 1 onion, 5 garlic, 7 cups<br />

water<br />

Scrub remaining dirt off ginseng with a toothbrush under running water and slice into round<br />

shaped pieces. Slice mushrooms.<br />

Clean rice with water, soak in water for about 30mins to be moisturized and drain.<br />

Put drained rice in preheated pan with butter and fry.<br />

Boil chicken with onion and garlic and get 5 cups of broth from filtering with china-cap.<br />

Heat rice in broth with low heat until boil with continuously stirring.<br />

Add ginseng and mushroom to boiling pot and add salt for taste.<br />

At this time, save some slices of ginseng. Place risotto on serving plate and garnish with small<br />

pieces of parsley and saved slices of ginseng for more flavor.<br />

100g ginseng, 1 piece Tofu , 2 tablespoon<br />

cooking oil, 1/3 teaspoon salt, 10 stalks<br />

asparagus, 1/5 red pimento, 15g butter.<br />

Cream sauce<br />

15g butter, 2 teaspoon flour, 1/2 cup<br />

milk, 1/4 cup 35% cream, 1/3 teaspoon<br />

salt, 2 teaspoon white whole pepper<br />

Remove small roots of ginseng and slice into thick pieces length-wise. Beat to soften.<br />

Cut tofu to 1.5 cm thickness then cut again into square-shaped pieces approximately 3°ø8cm.<br />

Fry each side of tofu in preheated pan until cooked golden brown.<br />

Add small amount of salt for taste.<br />

Prepare asparagus with peel off slightly and sliced pimento. Fry slightly in pan with butter.<br />

Fry butter and flour in a pan and add milk, 35% cream, salt, and white whole pepper to make<br />

cream sauce. Put fried tofu, asparagus, and ginseng on serving plate. Pour cream sauce on<br />

Buyeo <strong>Ginseng</strong> Museum<br />

The largest facility to act as a ginseng museum. Operates permanent exhibitions with five<br />

themes focusing on <strong>Korea</strong>n ginseng: history, cultivation, experience, manufacture, and<br />

industry. The museum provides visitors with an opportunity to check their body fat and to<br />

get a physical examination based on traditional “four type” physical constitution metrics.<br />
