Our amalgamation with Birrong Bowling & Sports<br />

Club was completed on the 28th April 2011. The new<br />

entity will be referred to as Birrong Sports Club from<br />

now on. We believe the club holds great promise and<br />

we welcome this venue and all <strong>of</strong> its members into the<br />

Bankstown Sports family.<br />

You will see new signage for the club and in the next<br />

few weeks we will complete renovations on the kitchen<br />

and dining facility. We have asked Mario Libertini, <strong>of</strong> La<br />

Piazza fame, to take over the restaurant and very soon<br />

you will see it reopen as “The Italian Bistro”. Mario will<br />

serve both an Italian and modern Australian cuisine.<br />

We believe there is a wonderful community in and<br />

around Birrong and we have no doubt that they will<br />

embrace the club and the bistro. Mario will produce<br />

a variety <strong>of</strong> quality dishes, to eat in or take away, at an<br />

affordable price, all available on the doorstep <strong>of</strong> the<br />

local community.<br />

In our Baulkham Hills club, the builders are busy<br />

finishing an extension to the outdoor area and<br />

children’s play area, complete with special equipment.<br />

This facility has been made possible by a generous<br />

donation from the Baulkham Hills Junior Sports and<br />

Social Club. This gesture bears testimony to the fact<br />

that the local community have adopted Baulkham<br />

Hills Sports and feel a sense <strong>of</strong> ownership. We intend<br />

on doing a small opening to acknowledge the Junior<br />

Sports and Social Club, in June. We hope this addition<br />

will bring even more people to this boutique club<br />

which is still a hidden treasure in the Hills.<br />

Shortly, we hope to have final approval on the<br />

expansion <strong>of</strong> the Travelodge hotel that will double the<br />

number <strong>of</strong> existing rooms. When this happens, you will<br />

be interested to know that the foyer, porte-cochére<br />

and the entrance to the car park from Mona Street will<br />

come in for a major facelift. We intend making it easier<br />

and more comfortable for you to enter the club, with<br />

two staircases and a larger lift. We will also improve our<br />

reception desk facility, for your convenience.<br />

Serious concern hangs over all <strong>of</strong> us who are part <strong>of</strong><br />

the community clubs industry. The independent MP,<br />

Andrew Wilkie, has unveiled his pokie reform plan. This<br />

will require every recreational player who uses a poker<br />

machine to register for a “Smartcard”. It will involve the<br />

installation <strong>of</strong> technology linking each and every poker<br />

machine in the country, a task that is estimated to cost<br />

the industry $3 billion.<br />

Community clubs have always taken a responsible<br />

approach to gaming and have been supportive <strong>of</strong><br />

voluntary pre-commitment implemented locally at<br />

each venue, rather than networked across the country.<br />

On March 23, we attended a talk at the National Press<br />

Club in Canberra. Peter Newell, OAM, President, Clubs<br />

Australia presented our case in the presence <strong>of</strong> Federal<br />

politicians and industry leaders. I would encourage you<br />

to go to our website to listen to what Peter had to say<br />

or read the story starting on page 6.<br />

The following day, we paid our respects to people<br />

who had served Australia or lost their lives in past<br />

world wars, overseas engagements and international<br />

peace efforts. As we moved through the exhibits and<br />

dioramas at the War Memorial in Canberra, it was an<br />

emotional experience to think <strong>of</strong> the conditions in<br />

which our young men and women fought and worked<br />

for freedom and the immense sacrifices they made.<br />

We were overwhelmed with the sight <strong>of</strong> the 460<br />

Squadron RAAF Avro Lancaster Bomber “G for George”.<br />

The audio visual presentation that complemented the<br />

exhibit gave a first-hand account <strong>of</strong> what it was like<br />

on a bombing run, with fierce artillery fire. It was both<br />

informative and thought-provoking, given the fact that<br />

one <strong>of</strong> our former board directors, Pat Sullivan, was<br />

a Lancaster Bomber pilot who actually flew sorties.<br />

The War Memorial in Canberra is a must for any family<br />

visiting the capital.<br />

Kids play safe in<br />

A new outdoor play area for children at<br />

Baulkham Hills Sports was on the verge <strong>of</strong><br />

completion as InTouch went to press.<br />

The area enables people to dine outdoors<br />

while their children play safely in a new<br />

enclosed playground.<br />

The latest renovations have been made<br />

possible by a $90,000 donation from Baulkham<br />

Hills Junior Sports and Social Club which is a<br />

tribute to the local community’s support <strong>of</strong> the<br />

club. A plaque acknowledging the generous<br />

donation will be unveiled at the site.<br />

The executive <strong>of</strong> the Junior Sports and Social<br />

Club, Ross and Lynne Baker, Deseline and John<br />

Binning and Bill and Dorothy Scott, have been<br />

associated with Baulkham Hills Sports since the<br />

club opened its doors in 1974.<br />

“The original idea <strong>of</strong> our division was to<br />

raise enough money to build a small separate<br />

clubhouse for junior members – the children <strong>of</strong><br />

our members,” John Binning says.<br />

The fundraising began in 1975, when a raffle<br />

was held every Friday for five years. There were<br />

other fundraisers too to build the pot to about<br />

$100,000. The canny committee invested the<br />

money and started to earn interest.<br />

“As the years went by, particularly with the<br />

periods <strong>of</strong> high interest rates – sometimes up<br />

to 17 per cent – the lump sum grew,” John says.<br />

“With the interest being earned we would<br />

use it to treat the juniors to various monthly<br />

activities, such as sailing, a trip to the movies<br />

or AMF Bowling. In more recent times we have<br />

thrown our annual Christmas party with prizes<br />

and amusements which everyone, including<br />

the grandparents, is invited to,” Deseline says.<br />

With the committee ageing and the idea <strong>of</strong><br />

a separate clubhouse well behind them, the<br />

committee decided to commit the funds to the<br />

playground. “To keep faith with the members<br />

as we always said the money would be for the<br />

children,” Deseline says. “This is about the best<br />

thing we can do with the money. When the<br />

club started it was a real family club and we<br />

want it to remain a family club.”<br />

“Bankstown Sports’ Board and Management<br />

are very grateful for the generous donation,”<br />

says Assistant Secretary/Manager Mark Condi.<br />

“It’s three years since the first major<br />

renovations were completed in April 2008,<br />

costing $8.5 million. The developments<br />

have made a massive transformation to the<br />

club’s aesthetics and character and, in turn,<br />

the members have really adopted the club,<br />

growing from 3000 then to 10,000 today.”<br />

The transformation has been so marked<br />

some members even think the developments<br />

have been the saviour <strong>of</strong> the club. Coupled<br />

with its long history with sporting teams, the<br />

club now <strong>of</strong>fers a relaxed and family-friendly<br />

environment with exciting new dinner and<br />

entertainment options as well as pr<strong>of</strong>essional<br />

corporate and function facilities.<br />

Coincidentally, both Bankstown Sports and<br />

Baulkham Hills Sports had their beginnings<br />

due to alignment with junior cricket clubs so<br />

when the two amalgamated in 1999 there was<br />

already a great synergy in place.<br />

Baulkham Hills Sports began as one <strong>of</strong> the<br />

oldest junior cricket clubs in NSW. Then called<br />

the Baulkham Hills Cricket Club, it had its<br />

beginnings in 1918.<br />

Rosemary McLellan says she once feared<br />

Baulkham Hills Sports wouldn’t survive in a<br />

changing world. “Left to its own devices I think<br />

it wouldn’t have lasted,” she says. “Other small<br />

clubs were hit hard by changes in legislation<br />

and I think we would have been on that list if it<br />

hadn’t been for the support (from Bankstown<br />

Sports) and the renovations.”<br />

Mandatory Pre-Commitment<br />

A MISGUIDED PLAN<br />

The management and staff at Bankstown Sports<br />

family <strong>of</strong> clubs are very concerned about the campaign<br />

for mandatory pre-commitment being driven by<br />

Federal MP Andrew Wilkie. As a vital member <strong>of</strong> both<br />

ClubsAustralia and ClubsNSW, Bankstown Sports is part<br />

<strong>of</strong> the campaign to try to bring some sense to the table.<br />

In March, ClubsAustralia launched a<br />

campaign at the National Press Club in<br />

Canberra in response to the mandatory precommitment<br />

plan for a national card system<br />

which will force people to register themselves<br />

and set a spending limit before they can play<br />

poker machines.<br />

ClubsAustralia CEO Peter Newell (OAM), in an<br />

extended address, sought to put some facts on<br />

the table about the pre-commitment proposal,<br />

which, he says will have a dire impact on clubs<br />

across Australia.<br />

There are 4000 clubs in Australia with a<br />

membership <strong>of</strong> 10.5 million. There are 90,000<br />

people employed directly by clubs, countless<br />

more suppliers to clubs (entertainers, food<br />

and beverage suppliers, builders etc),<br />

around 100,000 volunteers and hundreds <strong>of</strong><br />

communities who benefit from club support.<br />

About five million people a year play<br />

poker machines and <strong>of</strong> those, 2 per cent are<br />

considered problem gamblers.<br />

Mr Newell said the new system, scheduled to<br />

start next year and be fully rolled out by 2014,<br />

will require anyone who wants to play the<br />

pokies to possess a “licence” to gamble.<br />

This “card” containing your personal details<br />

will be linked to a national grid covering every<br />

poker machine in Australia, allowing<br />

the Federal Government to track every bet.<br />

“Big Brother in the extreme you might think,”<br />

Mr Newell told the press club.<br />

“With this intrusive device in place, players<br />

would be able to set binding limits on<br />

their expenditure, and if that limit were to<br />

be reached, they would be compulsorily<br />

prevented from playing a poker machine<br />

probably for 24 hours at any one <strong>of</strong> the 5700<br />

clubs and pubs across the country, as well<br />

as casinos.<br />

“The deal also provides for club and pub<br />

patrons to be prevented from withdrawing<br />

more than $250 a day <strong>of</strong> their own money<br />

from an ATM. Inexplicably, this does not apply<br />

to casinos.”<br />

Mr Newell said there were three reasons<br />

why this should not happen: Clubs and many<br />

others say it will do little, if anything, to assist<br />

the problem; the cost to implement it will drive<br />

clubs to the wall resulting in closures and job<br />

losses and in the longer term, there will be<br />

devastating losses <strong>of</strong> revenue as recreational<br />

gamblers walk away from clubs in the face <strong>of</strong><br />

this “licence to gamble” scenario.<br />

“The proponent <strong>of</strong> this deal [MP Andrew<br />

Wilkie] has said himself the revenue impact<br />

would be up to 40 per cent.”<br />

The Federal Government is seeking<br />

agreement from the States to implement<br />

the system but there is resistance as the<br />

States have their own harm minimisation<br />

measures in place.

“...State and Territories across the country have<br />

been reporting year-on-year a marked decline<br />

in the prevalence <strong>of</strong> problem gambling,” Mr<br />

Newell said. “In NSW, which hosts half the poker<br />

machines in the country, problem gambling<br />

rates halved from 0.8 per cent <strong>of</strong> the adult<br />

population in 2006 to 0.4 per cent in 2008. The<br />

Queensland Government has conducted four<br />

surveys each <strong>of</strong> some 30,000 respondents over<br />

seven years from 2001, and found a consistent<br />

decline from 0.83 per cent to 0.37 per cent.”<br />

“I am sure when they reached this agreement,<br />

neither the Prime Minister nor the Member for<br />

Denison [Andrew Wilkie] had the first idea <strong>of</strong><br />

what was involved...<strong>of</strong> the size and complexity<br />

<strong>of</strong> the animal they had grabbed by the tail,” Mr<br />

Newell said.<br />

Here are some statistics to bring everyone<br />

up to speed.<br />

There are around 198,000 poker machines<br />

in 5700 venues across Australia.<br />

There are a dozen manufacturers and<br />

the machines operate on different State or<br />

Territory-approved systems which don’t “talk”<br />

to each other.<br />

The Government’s expert advice is that to<br />

equip all the machines with the technological<br />

capacity to accommodate an Australia-wide<br />

scheme, that a quarter <strong>of</strong> machines might<br />

be able to have a suitable s<strong>of</strong>tware update; a<br />

quarter would need a hardware and s<strong>of</strong>tware<br />

upgrade and half the total number <strong>of</strong> machines<br />

(about 99,000) would have to be replaced at a<br />

cost <strong>of</strong> about $3 billion.<br />

There would need to be a national network<br />

linking all States and Territories and a database<br />

capable <strong>of</strong> tracking every player’s activity.<br />

“ClubsAustralia has always been in favour<br />

<strong>of</strong> targeted, sensible, effective and affordable<br />

measures to further reduce problem gambling,”<br />

Mr Newell said.<br />

These include family interventions, education,<br />

greater empowerment <strong>of</strong> counsellors and<br />

improved counselling services, proper<br />

research and ensuring that measures are not<br />

experimental, venue staff training, tightening<br />

regulation <strong>of</strong> the internet and a ban on betting<br />

on credit.<br />

Mr Newell said “The unfortunate consequence<br />

<strong>of</strong> this obsession with mandatory<br />

pre-commitment is that such other measures<br />

that would further assist problem gamblers are<br />

not receiving the attention and support they<br />

deserve.”<br />

ClubsAustralia would “support a system that is<br />

voluntary for the player to use, is venue-based<br />

and is affordable” and is currently driving trials<br />

<strong>of</strong> voluntary pre-commitment, and investing<br />

heavily in a multi-venue self exclusion scheme.<br />

“We will not agree to a compulsory system<br />

that is personally intrusive, deliberately<br />

designed to ‘inconvenience’ players, and which<br />

will be a turn-<strong>of</strong>f to most ordinary, everyday<br />

Australians who wish to spend some <strong>of</strong> their<br />

recreational and entertainment time playing<br />

poker machines.<br />

“The Australian government should deal<br />

meaningfully with industry and not simply<br />

shove a politically expedient done deal in<br />

our faces.”<br />

Mr Newell described the internet as “the<br />

elephant in the room”. “That woolly mammoth<br />

is the internet and its lure to vulnerable people<br />

who sit at home, <strong>of</strong>ten alone with no social<br />

inclusion, and have the choice <strong>of</strong> two thousand<br />

sites on which they can gamble on credit,<br />

many with money they do not have.”<br />

“According to Merrill Lynch, Australians spent<br />

$840 million on online casinos and poker<br />

in 2008...”<br />

“This burgeoning industry is powering on –<br />

with no taxes being returned to government,<br />

very few jobs, and no regulation.”<br />

“I for one am not prepared to see our<br />

magnificent club industry destroyed on an<br />

altar <strong>of</strong> political expediency – and I have no<br />

doubt an enormous number <strong>of</strong> my fellow<br />

Australians will feel the same way, let alone<br />

the prospect <strong>of</strong> having government breathing<br />

more heavily down our necks.”<br />

An era <strong>of</strong> uncertainty<br />

Bankstown Sports Assistant Secretary/Manager Mark Condi says an<br />

enormous amount <strong>of</strong> uncertainty has been created by the Mandatory<br />

Pre-Commitment proposals currently before the Federal Government.<br />

“No cost-benefit analysis <strong>of</strong> this system has been done, there has been<br />

no information about how much it will cost clubs and who will pay for<br />

these new systems. At this stage, all we have been told from Mr Andrew<br />

Wilkie MP is that there will be a massive reduction in revenue to clubs.<br />

“We employ 550 people across all <strong>of</strong> our clubs – Bankstown Sports,<br />

Bankstown Sports Bowls, Baulkham Hills Sports and now Birrong Sports.<br />

On top <strong>of</strong> that are our suppliers who rely on our business for their ongoing<br />

viability – from builders, to cake makers, to fishmongers, to entertainers.<br />

“It is estimated that Bankstown Sports alone could lose $30 million or<br />

more each year as a result <strong>of</strong> Mandatory Pre-Commitment.<br />

“This uncertainty makes for a very difficult operating environment,<br />

especially when we are constantly embarking on new works, such as the<br />

Travelodge expansion or recent upgrades at our other clubs. We want to be<br />

able to continue to support the sporting and other community groups that<br />

rely on us as well as continue to provide excellent value for money for our<br />

60,000 members.”<br />

“The system discriminates against the social gambler, who may or may<br />

not frequent a club and will not be able to use a gaming machine without<br />

registering and receiving a card. But there is a great deal <strong>of</strong> uncertainty as<br />

to whether it will really help problem gamblers.”<br />

“The Productivity Commission recommended a trial <strong>of</strong> Mandatory Pre-<br />

Commitment be carried out first to see if it works but this has been ignored,”<br />

Mr Condi says.<br />

In April, ClubsAustralia rolled out a campaign which provides many<br />

ways <strong>of</strong> having your voice heard about this issue. Coasters are in the club<br />

which can be filled in and dropped into bins. There is also a website you<br />

clubs are being attacked,<br />

internet gambling continues<br />

unchecked. If people are<br />

playing machines in clubs,<br />

there are responsible gaming<br />

practices in place, whereas at<br />

home, there are no such checks<br />

and balances,” Mr<br />

Condi says.<br />

“ClubsNSW already has a<br />

very good program in place<br />

called the ClubSafe Program<br />

and here at Bankstown Sports we<br />

will soon have a system in place<br />

where anyone who wants to<br />

set a limit on what they spend,<br />

can do so too.”<br />

for the<br />

Australian<br />

Youth<br />

and Road<br />

Trauma.<br />

Bankstown Sports’ funding <strong>of</strong> $20,000 over<br />

two years has had an enormous impact on<br />

the Australian Youth and Road Trauma Forum,<br />

helping it to “keep its head above water,”<br />

according to Westmead Hospital Trauma<br />

Coordinator, Stephanie Wilson. Funding<br />

was made through the club’s Community<br />

Development Support Expenditure scheme.<br />

The forum, which has been held annually since<br />

2006, has been attended by more than 46,000<br />

Year 10-12 students from 275 schools all over<br />

Sydney. Its aim is to provide students with an<br />

education about the effects <strong>of</strong> car accidents on<br />

people’s lives using graphic role-playing, real-life<br />

scenarios and first-hand accounts from survivors<br />

with brain and spinal injuries.<br />

Last year, long-term sponsor NRMA withdrew its<br />

financial support, leaving the organisers scratching<br />

for funds. “Bankstown, and also Blacktown RSL<br />

helped us out,” Ms Wilson says, as well as private<br />

philanthropic group, The Balnaves Foundation.<br />

“Fortunately we have now been promised funding<br />

by the new Premier, Mr O’Farrell, so we are looking<br />

forward to seeing that happen so we can take the<br />

program out to rural schools.”<br />

The one day program is staged three times at<br />

ACER arena every year and the next forum will be<br />

held this month from June 21 to 23.<br />

Ms Wilson says students watch a crash scenario<br />

in the morning, played out by actors and real<br />

emergency services staff. “You can hear a pin<br />

drop when that’s on,” she says.<br />

Later, students hear personal accounts from<br />

victims <strong>of</strong> crashes and later visit interactive<br />

displays provided by a range <strong>of</strong> organisations<br />

including Westmead Hospital Emergency<br />

Department, Care Flight, Sydney-West Area<br />

Health Service Organ and Tissue Donation, NSW<br />

and St John’s Ambulance Services, NSW Police,<br />

NSW Fire Brigade, NRMA Motoring & Services,<br />

Community Drug Action Team, Australian Red<br />

Cross, NSW Wheel Chair Sports Association and<br />

Para Quad.<br />

The afternoon session includes a demonstration<br />

<strong>of</strong> wheelchair basketball involving students,<br />

a speaker who has sustained a spinal injury, a<br />

stopping distance demonstration followed by<br />

a session with an organ donor recipient and an<br />

organ donor family.<br />

Students responding to a survey after the<br />

2010 forum made the following comments:<br />

“I am more aware <strong>of</strong> the ongoing impacts<br />

<strong>of</strong> road accidents and how they can be easily<br />

prevented.”;<br />

“The impact <strong>of</strong> the forum was real and gave<br />

me a insight into the pain and suffering that<br />

could happen.”; “I now fully understand the<br />

consequences <strong>of</strong> accidents on the road and<br />

would never want to be placed in a situation<br />

where I need to be taken by ambulance to<br />

hospital or cut out <strong>of</strong> a car and I would never be<br />

able to live with the burden <strong>of</strong> having someone’s<br />

life lost because <strong>of</strong> me.”<br />

According to a Youth and Road Trauma Forum<br />

report, 73 young people aged 15-24 years were<br />

killed on NSW roads last year – more than one<br />

young person every week. Young people account<br />

for 15 per cent <strong>of</strong> licensed drivers but represent<br />

more than a third <strong>of</strong> road fatalities. A 17-yearold-driver<br />

with a P1 licence is four times more<br />

likely to be involved in a fatal crash than a driver<br />

aged 26 or older. As well as those killed, another<br />

14,842 were injured last year, many severely, with<br />

pr<strong>of</strong>ound consequences for themselves, their<br />

families and the wider community.<br />

An Access Economics study (Spinning Out <strong>of</strong><br />

Control: The economic cost <strong>of</strong> trauma in young<br />

people in NSW. February 2011) estimated that in<br />

2010, the cost from car crashes involving young<br />

people in NSW was $1.5 billion dollars.<br />

While many <strong>of</strong> the government services<br />

volunteer their time, the cost <strong>of</strong> the annual<br />

forum, which 12,000 students attend, is $230,000<br />

per annum.<br />

“This is the same cost to the health system for<br />

just one young person being hospitalised as a<br />

result <strong>of</strong> a car crash,” Ms Wilson says. “If just a few<br />

<strong>of</strong> the thousands <strong>of</strong> students attending the forum<br />

change their behavior and avoid a car crash, the<br />

outcome will be worth it.”<br />

The program has generated interest nationally<br />

and internationally. South Australia has<br />

developed its own forum following consultation<br />

with the NSW organisers and a representative<br />

from Victoria attended last year’s forum with the<br />

view to starting a similar program there.<br />

Tom Yum Kung<br />

Thai Hot and Sour Prawn Hot Pot<br />

Ingredients (4 serves)<br />

1 bunch <strong>of</strong> coriander<br />

2 stalks lemongrass<br />

1 litre <strong>of</strong> chicken or vegetable stock<br />

4 kaffir lime leaves<br />

3 garlic gloves<br />

1 tbsp finely chopped ginger<br />

2 tbsp fish sauce<br />

half a punnet <strong>of</strong> cherry tomatoes cut in half<br />

half Lebanese cucumber<br />

1 baby Bok Choy cut in wedges<br />

2 shallots cut on an angle<br />

1 carrot cut (julienne)<br />

half a packet <strong>of</strong> baby corn cut in half<br />

half a packet <strong>of</strong> oyster or straw mushrooms<br />

400g <strong>of</strong> prawn cutlets<br />

2 tsp tom yum paste<br />

80ml lime juice<br />

450g thin hokkien noodle cooked<br />

2 chopped chilli<br />

Method<br />

Cut the roots from the coriander about 3cm<br />

along the stem. Reserve the leaves for later.<br />

Hit the lemongrass with a meat mallet to<br />

split and s<strong>of</strong>ten it. Bring the stock to boil in<br />

a pot. Add coriander roots, lemongrass, lime<br />

leaves, ginger, garlic, fish sauce, lime juice<br />

and Tom Yum paste and let simmer for 15<br />

minutes. Strain the stock. Add prawns to<br />

the stock and simmer for one minute until<br />

they have changed colour. Now add the<br />

baby corn, baby bok choy, julienne <strong>of</strong> carrot,<br />

cherry tomatoes, Lebanese cucumber and<br />

hokkien noodles and bring to boil. Garnish<br />

with coriander, chilli and shallots.<br />

Sugar Pancake with Raisin<br />

This Austrian pancake dessert - Kaiserschmarrn -<br />

was first served to Emperor Franz Joseph I<br />

around the turn <strong>of</strong> the century, but there<br />

are several legends telling just how it was<br />

developed. It is enriched with raisins and sugar,<br />

making it a “Süβspeise” (sweet meal) fit for a king.<br />

Kaiserschmarrn<br />

Ingredients (Serves 3)<br />

500ml milk<br />

4 eggs (separated)<br />

3 tbsp caster sugar<br />

2 tbsp vanilla essence<br />

2 tbsp rum<br />

200g plain flour<br />

2 tbsp unsalted butter<br />

2 tbsp raisin<br />

Method<br />

Prepare the base in a bowl. Mix the milk, egg<br />

yolks, one third <strong>of</strong> the sugar, vanilla, rum and<br />

flour together. In a separate bowl whisk the egg<br />

whites, add one third <strong>of</strong> the sugar and continue<br />

to whip until stiff but not dry. Fold the meringue<br />

into the base. Melt half <strong>of</strong> the butter in a pan<br />

then pour the dough into the pan, add the<br />

raisins and fry like an omelette on low heat. Try<br />

to turn after a while. Add the rest <strong>of</strong> the butter<br />

and let it caramelise with the caster sugar. Tear<br />

the Schmarrn into small pieces, serve with the<br />

strawberry sauce and dust with icing sugar.<br />

Strawberry Sauce<br />

Ingredients (Serves 3-4)<br />

200g strawberries<br />

3 tbsp caster sugar<br />

half star anise<br />

juice <strong>of</strong> half orange<br />

dash <strong>of</strong> dry white wine<br />

half tbs lemon juice<br />

Method<br />

Combine all the ingredients in a medium<br />

saucepan (keep a few strawberries for garnish).<br />

Bring to boil. Cook for five minutes. Remove from<br />

heat and cover with plastic wrap. Allow flavour<br />

to infuse for 10 minutes. Transfer the mixture to a<br />

blender and process until well incorporated. Add<br />

some fresh chopped strawberries to the sauce.<br />

Ingredients (Serves 8)<br />

8 French trimmed lamb shanks<br />

Salt and pepper<br />

150g plain flour<br />

100ml olive oil<br />

2 onions cut into 1cm slices<br />

2 garlic cloves crushed<br />

2 cups lamb or beef stock<br />

1 cup red wine<br />

2 bay leaves<br />

1/3 cup maple syrup<br />

2 tbsp cornflour<br />

2 tbsp cold water<br />

Method<br />

Preheat oven to 180 degrees. Season the<br />

shanks with salt and pepper. Place flour in a<br />

Red Cabbage<br />

Ingredients (Serves 8)<br />

30g butter<br />

1 large onion, sliced finely<br />

1 red cabbage, sliced finely<br />

200ml orange juice<br />

100ml red wine<br />

150g cranberry relish or jelly<br />

2 granny smith apples, peeled, cored<br />

and chopped<br />

1tsp ground cinnamon<br />

Method<br />

Melt the butter in a large pan. Seal the onions.<br />

Add the red cabbage, orange juice, red wine<br />

and cranberry. Season with salt, pepper and<br />

cinnamon. Simmer till the cabbage is nearly<br />

s<strong>of</strong>t, stirring <strong>of</strong>ten, then add the diced apples.<br />

Adjust seasoning to taste.<br />

shallow dish. Lightly coat the shanks<br />

with flour. Heat the oil in a large saucepan<br />

over high heat. Brown the shanks for 2-3<br />

minutes on each side. Transfer the shanks to<br />

a roasting pan. Add the onions, garlic, stock,<br />

red wine, bay leaves and maple syrup to the<br />

saucepan. Bring to the boil.<br />

Cover roasting pan with foil. Roast the shanks<br />

for 1 ¼ hours. Remove foil. Turn shanks and<br />

roast for 10 minutes or until tender.<br />

Transfer the shanks to a platter. Strain the<br />

stock through a sieve. Discard onions. Return<br />

liquid to a pan. Mix cornflour and water until<br />

smooth. Stir it into the stock and simmer for<br />

10 minutes to get the right consistency.<br />

Serve the shanks with the mash and the<br />

red cabbage.<br />

Classic Mashed<br />

Potato<br />

Ingredients (Serves 6)<br />

800g Desiree potatoes<br />

100g chopped butter<br />

200ml fresh cream (warmed)<br />

1 bunch <strong>of</strong> chives (chopped)<br />

salt, pepper and nutmeg<br />

Method<br />

Cook potatoes in saucepan <strong>of</strong> boiling, salted<br />

water until tender but not falling apart.<br />

Drain the potatoes and return to saucepan<br />

over low heat. Shake pan gently until any<br />

remaining water evaporates.<br />

Now mash the potatoes. Add the cream and<br />

the butter to the mash. Beat with a spoon<br />

until fluffy. Season with salt, pepper, nutmeg<br />

and sprinkle with chives.<br />

Customer Service<br />

Therese has been with the club since 1999,<br />

serving patrons in Greenfield Station Bistro.<br />

She regards the club as her second family:<br />

“I have my family at home and when I go to work<br />

I have my family there. I feel so comfortable and I<br />

really like working with people, it’s in my nature,”<br />

she says.<br />

Her managers’ comments included, “Therese<br />

always goes out <strong>of</strong> her way to make sure she<br />

pleases the patrons. For example, if a patron<br />

wants boiled rice when there is only fried rice,<br />

she will put it on for them.<br />

“When faced with a complaint, her calm,<br />

polite and pr<strong>of</strong>essional manner defused the<br />

situation and resolved the complaint quickly and<br />

efficiently.”<br />

Therese was enormously surprised and very<br />

grateful for her award. “To be recognised by my<br />

boss but also by the biggest bosses in the club, I<br />

felt so special,” she says.<br />

“Then the people I work with also were so kind<br />

and said ‘you deserve it’ – that made it feel extra<br />

good. I really felt appreciated.”<br />

Rebecca Auava<br />

for HIGH LEVELS<br />

OF PERFORMANCE<br />

Rebecca is an all-rounder, working between<br />

the bar, gaming area and TAB. She also has a<br />

certificate in mentoring and trains staff. She has<br />

been with the club since November 2007.<br />

Rebecca says she really enjoys her work. “Each<br />

day is different giving you a different experience,<br />

and as it is such a big place you are able to make<br />

a lot <strong>of</strong> friends on the way. The club also provides<br />

avenues to get ahead and I have completed my<br />

Certificate 3 in hospitality. The club is also a good<br />

place where you can enjoy yourself.”<br />

Rebecca won the award for always being<br />

friendly and polite to customers and going out<br />

<strong>of</strong> her way to provide great customer service.<br />

Her managers noted: “Rebecca’s workload is<br />

awesome as you will never see her not doing<br />

anything. She is only too happy to help others in<br />

need. Every aspect <strong>of</strong> her work is completed at a<br />

very high level.”<br />

Rebecca says she was really happy to have won<br />

the award: “The recognition <strong>of</strong> your hard work<br />

and efforts encourages you to keep working well.”<br />

Anthony Matak<br />

for INITIATIVE<br />

Anthony has been with Bankstown Sports for<br />

about five years, is a livewire and loves interacting<br />

with the public. He came across from Bankstown<br />

Sports Bowls club.<br />

He works in both the bar and gaming areas,<br />

serving drinks and making himself useful<br />

wherever he can. He likes working at the club<br />

because <strong>of</strong> its friendly atmosphere. “The staff<br />

are great and there’s a diverse culture here too,”<br />

he says.<br />

Another all-rounder, Anthony “can always be<br />

trusted to give 100 per cent to any task”, say his<br />

managers. “And takes it upon himself to realise<br />

what needs to be done without a team leader<br />

asking him to.” He was also found to be willing<br />

to help all staff members.<br />

Anthony says he was "surprised and<br />

a bit shocked" to receive the award but,<br />

ultimately “very happy about it. It’s good to<br />

be recognised for your hard efforts,” he says.<br />

He is looking forward to taking advantage<br />

<strong>of</strong> his adventure prize.<br />

Kim Armit<br />

for EXCELLENT<br />

CUSTOMER SERVICE<br />

AT BAULKHAM HILLS<br />

Kim is Baulkham Hills Sports’ front<br />

receptionist and has been with the club for<br />

18 years. She meets and greets members and<br />

their guests, handles phone inquiries,<br />

bookings and any other job that needs doing.<br />

Apart from being close to home, Kim says<br />

the club is “a friendly environment with<br />

Birrong's BEAUT!<br />

It’s <strong>of</strong>ficial! Birrong Bowling and Sports Club has joined<br />

the club. Final regulatory requirements have been met for<br />

the amalgamation <strong>of</strong> the club into the Bankstown Sports group.<br />

Since April 28, the club has been renamed<br />

Birrong Sports Club and members <strong>of</strong><br />

Bankstown Sports and its affiliated clubs<br />

automatically have membership to Birrong<br />

Sports, and vice versa.<br />

Birrong Sports has three bowling greens,<br />

a bistro, functions area, a TAB and a sports<br />

lounge. You can also eat and drink outside in<br />

the wonderful alfresco areas with views across<br />

the manicured greens and through to the<br />

parklands. A courtesy bus runs from Thursday<br />

to Sunday.<br />

The club has just over 1800 members and<br />

also supports a number <strong>of</strong> local sports groups<br />

including netball, golf, darts, soccer, baseball,<br />

basketball and Oztag. See story on page 46.<br />

The immediate change to the club will be in<br />

the dining <strong>of</strong>fering, which will be taken over<br />

by La Piazza’s Mario Libertini (pictured right).<br />

Mario is revamping the eatery to provide<br />

good quality, simple Italian-influenced meals.<br />

It will be called The Italian Bistro – think<br />

pizza and pasta – but will also feature<br />

super fresh hamburgers, ribs, seafood<br />

baskets and schnitzel.<br />

Pizza will soon be on the menu, to eat-in and<br />

takeaway, so a new pizza oven will be installed<br />

in July. Ordering takeaway pizza which meets<br />

the high standards found at La Piazza will<br />

be a real treat for locals. The pizza menu will<br />

include the best traditional styles around.<br />

Members <strong>of</strong> both clubs voted unanimously<br />

for the amalgamation and Bankstown Sports<br />

Assistant Secretary/Manager Mark Condi feels<br />

it’s a great win-win for both parties.<br />

“Birrong can continue to function as a club,<br />

while our goal <strong>of</strong> having another local venue is<br />

achieved. There are many synergies between<br />

the clubs and, in fact, about 95 per cent <strong>of</strong><br />

Birrong’s members are already members here<br />

at Bankstown,” Mr Condi says.<br />

Existing staff are being retained and <strong>of</strong>fered<br />

extra training and some Bankstown Sports<br />

staff will rotate through Birrong too.<br />

“We are confident this amalgamation will be<br />

beneficial for both clubs in the future,” Mr<br />

Condi says.<br />

Bankstown Sports Junior Rugby League Club<br />

now has a team in the Bundy Cup, with the<br />

home ground at The Crest. The Canterbury S.G.<br />

Ball and Harold Mathews games and NSW Cup,<br />

Toyota Cup also feature at The Crest. The St<br />

John’s Eagles have taken the place <strong>of</strong> the Bulls<br />

in the Bundy Cup.<br />

In May, Glenn Turner was once again playing<br />

hockey for Australia in the Azlan Shah Cup<br />

in Malaysia. As InTouch went to print, the<br />

Kookaburras were in joint second place<br />

on the table with India (with Britain in first<br />

place), having won two <strong>of</strong> its three matches<br />

so far. Glenn has been a pivotal member <strong>of</strong><br />

the Australian squad, scoring 37 goals in 50<br />

international matches. He still finds time to<br />

pass on his knowledge, experience and skills<br />

to Bankstown Hockey Junior members and is a<br />

great example <strong>of</strong> the spirit <strong>of</strong> the club.<br />

The Staff versus Managers Cricket Match<br />

was played in recent weeks. The Managers’<br />

team won, just scraping in, with an over and<br />

two balls to spare. Unfortunately, the annual<br />

Past versus Present Bankstown Grade Cricket<br />

Club Match on Memorial Oval in April was<br />

washed out.<br />

Rugby League sadly lost one <strong>of</strong> its finest<br />

players when Mohammed Yatim died tragically<br />

in a car accident in mid-April. Our thoughts are<br />

with his family, friends and club mates.<br />

The women’s cricket club’s first grade team<br />

continues to dominate the Sydney Women’s<br />

Cricket competition, winning for the fourth<br />

year in a row. A special congratulations to<br />

them and to Sharron Milanta for making the<br />

Australian Women’s Cricket Squad.<br />

The golf club lost a long-time member & past<br />

president, Dennis Fulerton, who was farewelled<br />

by family and friends on April 29. Dennis was a<br />

likable larrikin who will be dearly missed.<br />

I recently visited the Bankstown Sports Little<br />

Athletics Club to present awards to some<br />

young athletes. Bankstown Sports Little A’s is<br />

an efficiently run club, thanks to the volunteers<br />

who stayed at the club long after the children<br />

had progressed through the age groups.<br />

The children are a credit to their parents<br />

and club. Little A’s is a wonderful sport for<br />

children to be involved in, it’s great for fitness<br />

and gets the kids outdoors and away from the<br />

television or computer. They start as young<br />

At the Club’s Annual General Meeting in late March Bob Cassie was elected President and John Byrne<br />

Vice President for the ensuing year. All other positions were filled by the previous Committee Members.<br />

The honour <strong>of</strong> Life Membership was bestowed on Don Worthington and Bill Davies for their outstanding<br />

contributions over many years for the benefit <strong>of</strong> their fellow members.<br />

At recent monthly meetings we had guest speakers who covered topics such as “Lifetime in Radio and<br />

Variety Shows” and “Medi Alert”. Day Tours have been to a number <strong>of</strong> attractions in the Southern Highlands<br />

and Lake Macquarie on the Central Coast.<br />

HILLS JILLAROOS<br />

HOP TO IT<br />

These sisters have more than their parents<br />

in common. Eliza and Lily Brazel are two rising<br />

stars in the world <strong>of</strong> women’s hockey whose<br />

ultimate aim is to play for the Hockey-roos.<br />

And the way they’re going, they could be on<br />

the pitch for the 2016 Olympics in Rio.<br />

At just 18, Eliza Brazel has had a whirlwind<br />

couple <strong>of</strong> years. Last year she was named<br />

Hockey NSW’s Junior Player <strong>of</strong> the Year,<br />

then she was accepted into the Australian<br />

Institute <strong>of</strong> Sport in Perth and has been there<br />

since February, training with the Hockeyroos.<br />

She has just returned to Sydney to play in<br />

the Hockey League for NSW at Homebush,<br />

before heading to Cairns and Darwin to<br />

finish the comp.<br />

Both Eliza and Lily, 16, played in the<br />

Jillaroos U21 side three-test series against<br />

France in February in which Australia beat<br />

France 3-0.<br />

Both girls play in defence and on either<br />

side <strong>of</strong> the field, so during their matches<br />

against France, they were (almost) side<br />

by side.<br />

Their mum, Janette, who introduced them<br />

to the Baulkham Hills Hockey Club at the<br />

ages <strong>of</strong> 9 and 7, was also a hockey player<br />

and has been part-coach, part-inspiration.<br />

“They were both dancers and very<br />

competitive and I said to them: ‘You need to<br />

learn how to lose – to lose gracefully and win<br />

gracefully. So a team sport is the way to go’.”<br />

By all accounts, they took to hockey like<br />

fish to water and haven’t looked back.<br />

“The second year they were playing,<br />

both were selected for the Parramatta<br />

Association team – so they were already<br />

playing representative hockey in the U10's<br />

and U12's,” Janette says.<br />

Lily has had a huge few years too. First she<br />

won the Blacktown Junior Sports Person<br />

Award, then a Layne Beachley $1500 Kickstart<br />

Grant. She also won a scholarship<br />

with the NSW Institute <strong>of</strong> Sport, then was<br />

selected to play in the Australian Schoolgirls<br />

U17’s side to tour Germany, Belgium, France<br />

and The Netherlands. She returned from that<br />

trip on March 31.<br />

In April, she played in the Australian<br />

U18's nationals in Brisbane – so three major<br />

tournaments in eight weeks. “In the Jillaroos,<br />

she’s the youngest by about two years,” says<br />

Janette, “so she’s got a lot going on!”<br />

Lily is also in the Australian Futures Group<br />

(18s) <strong>of</strong> the Jillaroos. “It’s a big squad and<br />

they select different players to play certain<br />

tournaments.”<br />

Despite the sisters being equally<br />

competitive, Janette says they are very<br />

respectful <strong>of</strong> one another.<br />

“They love playing with each other and they<br />

really respect each other on the field,” she says.<br />

“They are very different players. Lily is taller,<br />

aggressive and a risk-taker while Eliza is a<br />

tough, hard grafter. They really complement<br />

each other with their playing styles.”<br />

“But they are well-grounded kids,” says<br />

Janette. “It’s very nice seeing them in their<br />

uniforms together.”<br />

As for learning to lose, it sounds like that<br />

lesson might still be some way <strong>of</strong>f!<br />

BIRRONG<br />

a sporting hub<br />

Our newest family member, Birrong Sports<br />

Club, supports nine sporting codes. They are:<br />

golf, cricket, baseball (seniors), netball, soccer,<br />

darts, Oztag, touch football (juniors) and basketball.<br />

The contact information for the clubs has<br />

been added to our Sports Secretaries area on<br />

the page just inside the back cover <strong>of</strong> InTouch.<br />

As we do with all <strong>of</strong> our clubs, we will feature<br />

news from the Birrong clubs in future issues<br />

<strong>of</strong> InTouch.<br />

In this issue we are catching up with the<br />

soccer club – otherwise known as Birrong Sports<br />

Football Club.<br />

The club has a proud history going back nearly<br />

60 years, originally starting in Regents Park. This<br />

season, the club is fielding 28 teams from Under<br />

6's, to all age men and women, to the highly<br />

successful Premier League First Division squad.<br />

The club has a sister club relationship with<br />

Suita City in Osaka, Japan, and teams from<br />

there have visited Australia several times to play<br />

against the Birrong side.<br />

The club had planned a reciprocal trip to Japan<br />

this spring but have had to change plans at the<br />

last minute because <strong>of</strong> the devastating tsunami.<br />

Club treasurer Kerri Markkunen says the club<br />

has been fundraising and had pulled together<br />

the itineraries for the trip when the earthquake<br />

and tsunami struck.<br />

“Luckily we hadn’t booked the flights,” she says.<br />

“Thankfully, we have now made arrangements<br />

to play in Malaysia instead.”<br />

The team <strong>of</strong> boys, aged between 11 and<br />

16, will make the trip in the September<br />

school holidays.<br />

The football club’s long association with<br />

Birrong is a proud one. “The club has always<br />

been excited to be affiliated with our parent<br />

club, (former Birrong Bowling and Sports Club),<br />

where we have both supported each other over<br />

nearly 60 years,” says Kerri.<br />

“Birrong has always had a strong and energetic<br />

volunteer base which starts at 7am for set up<br />

till 6pm for pack-up.Our helpers are always well<br />

looked after, with a bacon and egg brekky.”<br />

As InTouch went to press the season had just<br />

kicked <strong>of</strong>f and had been rain affected. Both <strong>of</strong><br />

the clubs Premier League Division One teams,<br />

the First Grade and Reserve sides, made their<br />

grand finals last year – but just missed out on<br />

winning. We wish them well for the 2011 season.<br />

Four players from Bankstown Sports Bombers<br />

AFL Club were selected to compete in the<br />

Under-16 Joss State Zone Trials in mid-April – a<br />

landmark event which could lead to selection<br />

in the State squad, the U16s NSW/ACT RAMS,<br />

or the Sydney Swans or GWS Academies.<br />

Jackson Claridge, Jack Guthrie, Jacob Stek<br />

– all representing Sydney South Zone – and<br />

Bradley Wicken – representing Sydney West<br />

Zone – attended the trials at St Ignatius<br />

Riverview from April 17 to 21.<br />

Bombers’ U16s Liaison Officer Craig Guthrie<br />

(and father <strong>of</strong> Jack) said it was a great<br />

achievement for so many Bankstown players to<br />

be selected for the trials.<br />

“The boys are all multi-talented, dedicated<br />

individuals. We are very strong in that age<br />

group in the club. In fact, we had three other<br />

players who just missed out on going.”<br />

The trials gave the boys the chance to learn<br />

from some <strong>of</strong> AFL’s best coaches and players.<br />

The week involved a number <strong>of</strong> AFL matches<br />

as well as education sessions on health,<br />

nutrition and what is required to play AFL at<br />

the top level.<br />

Jack and GWS Giants’ Israel Folau spoke to the<br />

players about their experience at the top level.<br />

Keeping a close watch during the trials<br />

was U16 RAMS coach and dual premiershipwinning<br />

former Geelong captain Tom Harley.<br />

Harley is selecting a NSW/ACT RAMS squad<br />

to compete in the U16 nationals in July. As<br />

InTouch went to press, we were awaiting<br />

news about whether any <strong>of</strong> the boys had<br />

been selected.<br />

“The State Zone Trials has traditionally been<br />

the event where players take the next step to<br />

improve their football,” Harley said. “Last year,<br />

a record 18 NSW/ACT players were either<br />

primary or rookie listed by an AFL club, all<br />

<strong>of</strong> which came through the AFL NSW/ACT<br />

Talented Player Program. The State Zone Trials<br />

is truly a fantastic opportunity for all players to<br />

learn, improve and to get an insight into what<br />

is required at the AFL level.”<br />

Craig Guthrie said all <strong>of</strong> the boys are running<br />

midfield players. “None <strong>of</strong> them are six foot,<br />

which shows that it’s a bit <strong>of</strong> a myth that all AFL<br />

players are really tall. The style <strong>of</strong> the game has<br />

changed.”<br />

They have also all been through the<br />

club’s Youth Development Program, where<br />

they coach and mentor younger teams during<br />

the season.<br />

“It has helped immensely with their own<br />

game development and instilled them<br />

with more responsibility,” Craig said. “They<br />

do coaching one night a week and on the<br />

morning <strong>of</strong> the game.<br />

“The club tries to identify kids that are able<br />

to do it and they get an enormous benefit in<br />

learning how to mentor and lead others. We<br />

are trying to ensure the players develop the<br />

skills and the right attitude for the game and<br />

also for life.<br />

“Certainly, they don’t attain this level if they’re<br />

just good players. They need more going on<br />

than that,” Craig said.<br />

As pro<strong>of</strong> <strong>of</strong> their ability and diversity, Jacob<br />

Stek has also been selected in the Australian<br />

U17 S<strong>of</strong>tball Team.<br />
