Welcome to our <strong>March</strong> issue.<br />
As many of you may already be aware, there’s been a few<br />
changes here at <strong>Velvet</strong>. Iliffe Media, based in Cambridge are<br />
our new owners and I am staying with the magazine. Other<br />
than a change in hands, everything else about the magazine<br />
will be remaining the same.<br />
Iliffe have acquired <strong>Velvet</strong> and iQ magazine from Gemma and<br />
John Treby, who launched the magazine nearly 10 years ago.<br />
Gemma and John have decided to focus on their awardwinning<br />
design and marketing agency Cubiqdesign, which<br />
has seen rapid growth over the last 6 months. I’d like to thank<br />
both John and Gemma for giving me the opportunity to move<br />
forwards with the magazine as I’m really excited about what’s<br />
to come!<br />
Alongside this, it’s been a busy month as always as we look<br />
forward to spring. This issue has lots of foodie excitement as<br />
we near Easter, as well as ideas on how to treat your Mum<br />
this Mother’s Day (page 32). Take a look at page 35 for other<br />
things going on in the local area this month too.<br />
I was also lucky enough to attend London Fashion Week this<br />
year so look out for my future features on beauty and fashion<br />
trends for next season. For now, I’ve given a quick rundown as<br />
to what we can expect for A/W17. Check out page 52.<br />

Pie Week<br />
Following on from the success of ‘Skip’s Pop-Up Pie<br />
Shop’ at Cambridge Chop House in January this year,<br />
their sister restaurant St John’s Chop House will be<br />
serving two special pies for British Pie Week this year!<br />
Andrew Skipper, Head Chef at Cambridge Chop House<br />
has given us his recipe for a delicious beef pie<br />
you can make at home!<br />
Makes 4-6 individual pies<br />
FOR THE FILLING:<br />
• A little vegetable oil<br />
• 500g diced beef<br />
• 1 medium sized onion, finely chopped<br />
• 3 sticks of celery, finely chopped<br />
• 1 carrot, finely chopped<br />
• 1 tin of chopped tomatoes<br />
• Salt and pepper<br />
• 1 pint of beef stock<br />
FOR THE PASTRY:<br />
• 250g unsalted butter, cold & diced<br />
• 500g plain flour<br />
• Pinch of salt<br />
• Water enough to bind<br />
• 1 medium egg<br />
TO MAKE THE FILLING:<br />
Heat the vegetable oil in a thick<br />
based pan and caramelise the<br />
beef until golden brown on<br />
all sides. Add the chopped<br />
onions, celery, carrot and<br />
tomatoes. Season with salt<br />
and pepper, add the stock<br />
and cook on a low heat with<br />
a lid on for 90 minutes or<br />
until the meat is tender.<br />
Remove from the heat and<br />
set aside to cool.<br />

TO MAKE THE PASTRY:<br />
Rub together the butter<br />
and flour with the salt until<br />
it resembles breadcrumbs.<br />
Bind together with a little cold<br />
water until you have a dough,<br />
being careful not to overwork.<br />
Leave the pastry to rest for 30<br />
minutes in the fridge, wrapped<br />
in cling film to stop it drying out.<br />
Pre-heat the oven to 180°C / 160°C<br />
(fan) /Gas Mark 4. Roll out the pastry<br />
to a thickness of 0.5cm, then place the pie<br />
dish upside down on the pastry and cut out<br />
the lids. Shape the rest of the pastry into the<br />
mould by hand to a thickness of 0.5 cm. Fill with<br />
the pie mix and top with the lids. Crimp the pastry<br />
edges together around the rim and trim off any excess<br />
using a small knife.Brush the lid with the egg wash using a<br />
pastry brush.Bake in the pre-heated oven for 30 minutes or until<br />
the pastry is golden brown. Serve hot with mash & gravy or liquor.<br />

National Butchers’ Week<br />

Powters is one of many butchers who will be celebrating National<br />
Butchers’ Week with tastings, promotions and other events to<br />
promote the benefits of using a good butchers shop.<br />
With the so called ‘food revolution’ well underway, shoppers<br />
are far more choosey about what meat they cook with, where<br />
it comes from and most importantly - the quality of it. People<br />
are looking for exciting and original products which offer tasty<br />
modern twists. The growing popularity of restaurant and fast food<br />
eating has made consumers aware of many alternative ways of<br />
preparing and cooking meats – but they don’t necessarily want<br />
the inconvenience, neither can they spare the time to create<br />
these at home. This is where an artisan butcher comes in. They<br />
have detailed knowledge and source their meats locally to give<br />
assurance as to where the meat comes from and how it was<br />
raised.<br />
At Powters some of the most popular meat products are ‘kitchen<br />

INGREDIENTS:<br />
• 100g of pork loin per person<br />
• 1 shoulder of pork<br />
• 2 litres of good quality beek stock<br />
• 500g mirepiox (carrot, celery, onion<br />
and leek roughly cut)<br />
• 75g tomato puree<br />
• 1 bottle of red wine<br />
• 1 baby pear peeled, cooked seeds<br />
removed<br />
• 1 spring onion<br />
• 200g of cooked potato<br />
• 50ml of double cream<br />
• 50g butter<br />
• 1 spring cabbage leaf<br />
• Pork skin<br />

METHOD:<br />
• Trim all the sinew from the loin and pan fry in a hot pan until all sides are coloured.<br />
Place in the oven for 3-4 minutes, then allow to rest. Reheat under the grill before<br />
serving.<br />
• Fry the pork shoulder in a heavy bottomed pan until brown on each side. Remove the<br />
shoulder and add the mirepoix to the pan. Cook this until all of the veg has browned.<br />
Add the tomato purée and red wine, then reduce this until nothing is left. Add the<br />
shoulder back to the pan and pour over the stock.<br />
• Cover and place this in the oven for 5 hours at 140°C until the meat is fully cooked<br />
and falls apart easily. Take the meat out and pick though to remove all fat and sinew,<br />
then roll this. Pass the liquor and use this to heat the shoulder back up and as a jus for<br />
the dish.<br />
• The baby pears once cooked and de-seeded, cut in half and caramelise them in a<br />
hot pan with some sugar. Blanch the spring onion in salted water and colour in some<br />
foaming butter. Simply blanch the spring cabbage leaf.<br />
• For the pomme purée, heat the cream and butter in a pan and reduce it slightly. Add<br />
the dry cooked potato. Mix this and season.<br />
• For the pig skin in the restaurant, we cut this finely in strips and place in between two<br />
trays in the oven for about 20 minutes at 180°C.<br />

seasonal produce and their<br />
upcoming spring menus<br />

Head Chef, Lee Bye and his Sous Chef, Stuart Drake, really know<br />
their stuff when it comes to sourcing the very best ingredients<br />
throughout the year and it is their main starting point when they’re<br />
conjuring up new dishes for the menu.<br />
“We spend a lot of our time in the kitchen testing and trialling<br />
different flavours to see what works well together. Our main point<br />
of inspiration is to see what is in season and how we can create<br />
something delicious using it,” Stuart explains. “Picking one seasonal<br />
ingredient is a fantastic starting point and it usually snowballs from<br />
there!” he continues. “We start with something as little as garlic<br />
or asparagus and then add different<br />

to be the main ingredient like meat<br />
or fish as this is something we can<br />
add later.”<br />
Tuddenham Mill’s menu changes<br />
every 2-3 weeks to reflect the<br />
changing seasons as well as<br />
accommodating to the change in<br />
weather. “We don’t completely<br />
change the whole menu. Some weeks<br />
it is a matter of tweaking certain<br />
dishes to bring a new dimension. We also consult our suppliers and<br />
see if they have anything new to offer. Lee and I spend a lot of time<br />
in the kitchen tasting and trying different things and working out<br />
ways we can add a new spin to certain ingredients,” Stuart says.<br />
So what is in season for <strong>March</strong> and April and what can we expect<br />
from your spring menus?<br />
<strong>March</strong> and April have lots to offer when it comes to seasonal<br />
produce. “I really like this time of year as we can start to experiment<br />
with some really fantastic flavours. <strong>March</strong> and April are great for<br />
wild garlic, East Anglian oysters, rhubarb, lamb and asparagus just<br />

to name a few,” he adds. “We source our lamb from Nedging farm<br />
here in Suffolk as it is grass-fed. This makes a huge difference to<br />
the flavour. We tend to roast in the pan and then finish it off over<br />
the fire. This will be on our Sunday roast menu throughout <strong>March</strong><br />
and April and we’re looking forward to using it on our Easter Sunday<br />
menu too. We actually pick wild garlic ourselves from Brandon<br />
forest as it offers a delicate but strong flavour. It works really well in<br />
our wild garlic and English pea soup.”<br />
Asparagus is another favourite flavour in the Mill’s kitchen.<br />
“Asparagus season only lasts around 3 weeks so we really try to<br />
make the most of it. Tilbrook’s asparagus is by far the best and<br />
it’s right on our doorstep. We phone in the morning and let them<br />
know how much we need and they cut it fresh for us!” he tells us.<br />
Tilbrook’s have been growing asparagus in Tuddenham since before<br />
the war and they have a rather prestigious patch. So much so that<br />
they are in demand across the country. “When asparagus comes,<br />
spring really is here!” Stuart adds. Be sure to look out for this across<br />
their menus throughout April!<br />
Rhubarb is another favourite for Lee and Stuart. They use Yorkshire<br />
forced rhubarb which is actually grown by candlelight. (Yes, we<br />
were a little confused too!) “It’s grown in complete darkness and<br />
harvested by candlelight which stops them turning green and being<br />
too tough,” Stuart explains. “They’re famed for their striking red<br />
colouring and flavour. They add a pop of colour to any dish and we<br />
usually make a compote with it. It’s great for a dessert but we also<br />
use it with duck which works perfectly together,” he adds.<br />

Add a little something extra by finishing the<br />
cupcakes off with a small sprinkling of lemon zest<br />
INGREDIENTS:<br />
• 500g pack Waitrose Cooks’<br />
Homebaking Golden Marzipan<br />
• 150g Tate + Lyle Light Muscovado<br />
Sugar<br />
• 150g essential Waitrose Unsalted<br />
Dairy Butter, at room temperature<br />
• 2 large Waitrose British Blacktail<br />
Free Range Eggs<br />
• 150g self-raising flour<br />
• 125g essential Waitrose Mixed<br />
Fruit<br />
• 2 lemons, both zested & juice of 1<br />
• Icing sugar to dust<br />
• 2 tbsp apricot jam<br />
Lemon Simnel Cupcakes<br />
1. Preheat the oven to 180ºC, gas mark 4 and line a 12-<br />
hole muffin tin with muffin cases. Cut off an 80g piece of<br />
marzipan, then set aside the larger piece for later. Cut the<br />
smaller piece into 12 equal chunks.<br />
2. Place the sugar and butter in a large mixing bowl and<br />
beat together until pale and creamy. Add the eggs, one at a<br />
time, gradually folding in the flour along with the mixed fruit,<br />
lemon juice and half the zest. Add a spoonful of mixture to<br />
each case, place a chunk of marzipan in the centre, then top<br />
each evenly with the rest of the mixture. Bake in the oven<br />
for 15–20 minutes, until risen and golden, then allow to cool<br />
on a wire rack.<br />
3. Sprinkle a little icing sugar on the work surface and roll<br />
out the remaining marzipan. Using a small cookie cutter<br />
(about 6cm) cut out 12 circles, saving the leftover marzipan.<br />

4. To decorate the cupcakes, take off the paper cases. Brush<br />
on a little apricot jam then place on the circles of marzipan.<br />
Shape the leftover marzipan into 12 balls, then place one in<br />
the centre of each cupcake, using some jam to help secure<br />
if necessary. Place them on a baking tray and pop under a<br />
hot grill for 1 minute until the marzipan is lightly browned.

to how to cook the perfect Easter Sunday<br />
lunch, we speak to the people in the know<br />
when it comes to delicious treats this Easter<br />
Hot Cross Donuts are top of the menu at George’s Bakery for<br />
Easter this year! They have all of the spice and fruit of a normal<br />
hot cross bun but are deep fried instead of toasted and rolled<br />
in spiced sugar and filled with apricot jam. A traditional Easter<br />
favourite at George’s stall, they were one of his first creations<br />
when he started markets in spring 2015. They will be available<br />
from 25th <strong>March</strong> - 15th April with limited supply, so be sure to<br />
be at the market early!<br />
Other Easter bakes will include Ely Sloe Gin with cherry and<br />
chocolate simnel cake, the gooey Crème Egg brownies and<br />
seasonal quiches will include lamb, pea and mint quiche and<br />
asparagus, pea, broad bean and ricotta quiche.<br />

Chocolatier and owner of Cambridge’s very own Chocolat<br />

Easter Sunday Roast<br />
Roast leg<br />
of lamb<br />
Serves 8<br />
INGREDIENTS:<br />
• 1lb of sausage meat<br />
• 150g of chopped<br />
chestnuts<br />
• 1 table spoon of red<br />
onion jam<br />
• 1 teaspoon of whole<br />
grain mustard<br />
• 75g of dried cranberries<br />
• 100g breadcrumbs<br />
• 1 small onion<br />
• 30g fresh sage<br />
METHOD:<br />
1<br />
• Crush the garlic in a pestle and mortar.<br />
Add a good pinch of the sea salt and ground<br />
black pepper, the thyme springs and chopped<br />
rosemary. Grind together in the pestle and<br />
mortar to make a paste.<br />
• Using the tip of a knife, spike the leg of lamb<br />
about 15 times covering the surface area.<br />
With the tip of a knife or piping bag with a<br />
large nozzle ease the garlic paste into each cut<br />
and message gently to encourage the paste to<br />
penetrate the meat.<br />
• Preheat the oven to 200°C /180°C (fan) /gas<br />
mark 6.<br />
• Mix together the olive oil and soy sauce with<br />

Lamb/Beef – If it’s lamb you’re after, give our roast leg of<br />
lamb recipe below a try. Otherwise when it comes to beef,<br />
go for striploin and be sure to rub the exterior 12-24 hours in<br />
advance with salt and chopped rosemary before roasting.<br />

Roast Potatoes – You can play around with flavours but<br />
ultimately there’s nowhere to hide if you haven’t followed<br />
the golden rules. Choose a floury potato; parboil for 7-10<br />
minutes; drain and let cool for 10 minutes; rough them up by<br />
shaking in a colander; pre-heat your fat (we like beef dripping for<br />
a beef roast or goose fat for other meats.)<br />

Yorkshires – There are lots of myths about the Yorkshire<br />
pudding but we’ve got it down to a simple equation: warm<br />
batter rested at room temperature overnight + hot pan = the<br />
perfect Yorkshire pudding. It also helps to choose a recipe<br />
that uses a mixture of milk and water (instead of just milk) for<br />
maximum rise and crispness.<br />

Carrots – The humble carrot can be boiled, roasted,<br />
or mashed but for something extra special and more<br />
colourful, try using heritage carrots. Once boiled, finish them off<br />
in a pan with a squeeze of orange juice, a knob of butter and a<br />
sprig of thyme. Reduce whilst stirring until you have a gorgeous<br />
buttery glaze.<br />

Gravy – It’s time consuming but a proper stock is a musthave<br />
for making cracking gravy. Pick a day when you’re at<br />
home all day and let it simmer away on the stove for five hours or<br />
so. Later freeze in it batches or even in an ice cube tray for easy<br />
use in Sunday gravies for weeks to come.<br />

• Rub the leg of lamb with the oil mixture. Leave<br />
for 10 minutes to absorb the oily mix.<br />
• Chop the carrot from top to bottom into thick<br />
slices and slice the onions in half.<br />

the leg of lamb on top. Cover with foil and cook<br />
in the oven for 30 minutes. After 30 minutes<br />
cooking time remove the foil.<br />
Roast for a further 50-60 minutes for medium<br />
lamb, basting occasionally.<br />
• Leave the leg of lamb to rest for 20-30<br />
minutes, covered in foil to keep it warm.<br />

Just in time for Summer Blockbuster season comes the latest<br />
attempt to kickstart DC’s Cinematic Universe. It’s fair to say that<br />

and their endeavors reached rock bottom with last year’s poorly<br />
received Batman Vs Superman. Gal Gadot made her debut as the<br />
immortal Amazon warrior (princess) in that film, but far from being<br />
tainted by association, hopes are high for a character whose comic<br />
book counterpart has been revitalized in recent years. Wonder<br />
Woman director Patty Jenkins is a relative newcomer to the world<br />
of big budget blockbusters, but her work on the US crime drama<br />
‘The Killing’ suggests a darker take on a character that is often not<br />

“French luxury fashion house, Kenzo was the concept of<br />
fashion student, Kenzo Takada. The Japanese designer<br />

evening for the style-conscious, with the best of Bury displayed on the<br />
catwalk. “I’d like to thank The Apex team for holding Fashion Fusion in<br />
aid of the hospice. In previous years the event has raised thousands for<br />
us, so I hope the <strong>2017</strong> event is another show-stopper.”<br />
As well as being able to enjoy the show guests will also be able to peruse<br />
a selection of fashion and beauty related stalls in The Apex’s upstairs<br />
lounge before the show and during its intermission. Tickets, which cost<br />
£18, include a welcome cocktail courtesy of the English Spirit Distillery,<br />
interval refreshments will be supplied by Sodexo Prestige. There will also<br />
be a raffle, with all proceeds going to the hospice.<br />

Yes I know... we’ve not even had a chance to don our spring/summer garments yet but the<br />
runways have already determined what we should be adhering to this autumn/winter.<br />
When it comes to colour it appears anything goes. From rich<br />
earthy colour palettes to bright colour blocks. Fuchsia pink will<br />
carry us right through to next year as seen by the likes of Versus<br />
Versace and others. Christopher Kane opted for a much more<br />
muted pink palette as did Anya Hindmarch. Antonio Berdardi<br />
went for a heavily navy infused look, whilst David Koma favoured<br />
khaki. It appears mustard yellow is set to be the colour of the<br />
season thanks to the likes of Calvin Klein. Other colour palettes<br />
include rich blues and purples and oxblood red.<br />
For inspiration when it comes to prints and patterns, think vintage<br />
wallpapers, wild flowers, embroidery, patchwork and other clashing<br />
favourites. Things we didn’t think went together now do thanks<br />
to mismatching at JW Anderson and Mary Katrantzou. Florals<br />
are sticking around for yet another season but in vast variation.<br />
Christopher Kane brought pale pink brocade florals whilst Preen<br />
by Thornton Bregazzi mixed electrified florals and vintage prints.<br />
As expected we will see a slight adaptation of this year’s SS17<br />
trends as we move into the colder months. Ruffles won’t be going<br />
anywhere and neither will velvet. Both dominated the runways of<br />
Erdem, Antonio Berdardi and others.<br />
Asymmetry will also stay prominent as we look towards uneven<br />
hemlines and skewed skirts and dresses from David Koma,<br />
Christopher Kane and others. Pleats and flute sleeves will also<br />
continue to dominate, as will drop hems. A heavy emphasis<br />
on shoulder detailing is still a must, as we see an abundance of<br />
puffiness at Temperley London. We loved their adorable bib<br />
necklines and tie collars. Talking of adorable, we loved Molly<br />
Goddard’s pretty dresses and renowned knits. We also saw the<br />
return of the classic Noughties leggings and ballet pumps combo.<br />
Talking of comebacks, remember wearing hotpant shorts over<br />

rekindled this romance. We also saw Ryan<br />

When it comes to outerwear, it’s all about<br />
making an entrance. Opt for the oversized,<br />
patterned piece and let that do the talking.<br />
Patterned coats were seen across the<br />
board from Paul Costelloe and Peter<br />
Pilotto. From loud jacquard prints at Mary<br />
Katrantzou to more muted pastel florals,<br />
they are a must for everyone’s winter<br />
wardrobe. If you’re not fancying the garish<br />
prints, go oversized and pick those with a<br />
fur collar trim. Capes and wraps will remain<br />
so be sure to keep them at the front of<br />
your wardrobe. Roksanda showcased<br />
oversized shearling coats in abundance and<br />
Preen by Thornton Bregazzi also favoured<br />
the boyish fitting quilted shrugs.<br />
Oscar de la Renta brought a new twist to<br />
jazzing up our favourite LBD as it’s now<br />
all about the embellished footwear. Ditch<br />
your statement necklaces and draped<br />
earrings as it’s time to let your feet do the<br />
talking.<br />
Much-loved British label Mulberry brought<br />
yet another stunning show which was<br />
full of wallpaper prints, pleated dresses,<br />
checked suits, floral capes, cord skirts,<br />
fairisle knits and embroidery. Bag-wise,<br />
it was all about their cross-body ‘hat box’<br />
style bags.<br />
Topshop Unique offered yet another<br />
uplifting show of colour. They returned<br />
back to their British roots with their new<br />
campaign girl Lily Jean Harvey. Lily has<br />
taken over from our American Instagram<br />
crush, Taylor Hill. The show was jampacked<br />
with slogan tees, stripes and<br />

Q: HOW LONG HAVE YOU BEEN AT<br />
SK CLINIC + SPA AND WHAT TREATMENTS<br />
ARE YOU TRAINED IN?<br />
A: I joined SK Clinic + Spa in June 2016<br />
after moving from Ireland. I studied for<br />
three years in the South of Ireland which<br />
enables me to carry out a wide variety<br />
of treatments including waxing, facials,<br />
massage and reflexology. Over the seven<br />
and half years I have been in the industry, I<br />
have gained a great insight into the beauty<br />
world from working in salons and spas in<br />
both Ireland and New York and from my<br />
ongoing training. I have recently been<br />
trained in IPL which I am really excited<br />
about starting in <strong>March</strong>.<br />
Q: WHAT IS YOUR FAVOURITE TREATMENT TO<br />
DO FOR YOUR CLIENTS?<br />
A: I enjoy doing all treatments, but if I had to<br />
pick a favourite it would have to be facials.<br />
Pevonia facials are very relaxing treatments<br />
and achieve amazing results. This is<br />
something I have always loved about the<br />
brand. I have seen clients leave astonished<br />
with their instant results and most return<br />
for follow up treatments.<br />
Q: WHAT IS YOUR MOST POPULAR<br />
TREATMENT?<br />
A: At SK Clinic + Spa we do a lot of<br />
maintenance treatments like waxing. One<br />
of our most popular being intimate waxing<br />
such as Hollywood and Brazilian. We are<br />
also very lucky to be one of the only spas/<br />
salons in the area to offer male intimate<br />
waxing which has become increasing<br />
popular over the last few years.<br />
Q: DO YOU HAVE ANY NEW TREATMENTS?<br />
A: Pevonia strive to constantly keep up to<br />
date with their treatments, products and<br />
packaging and this means clients are getting<br />
the best treatments and products. This also<br />
keeps it very interesting for us as therapists.<br />
The most recent treatments to the list are<br />
LipRenew Plump & De-Age Treatment,<br />
and the Wellness Fusion. LipRenew Plump<br />
& De-Age treatment has an instant effect<br />
increasing lip volume, visibly smoothing the<br />
lip contour and reducing lines and wrinkles<br />
with the client achieving fuller, sexier lips.<br />
The Wellness Fusion treatment is the<br />
ultimate head to toe relaxing treatment and<br />
includes a full-body polish and 30-minute<br />
massage. It’s the perfect treatment for this<br />
time of the year to relax and unwind. The<br />

Q: WHAT WOULD BE YOUR ONE DESSERT<br />
ISLAND PRODUCT AND WHY?<br />
A: This is a very tricky question but I<br />
would have to pick the Soothing Propolis<br />

always go back to as I suffer with hormonal<br />

breakouts around my chin. It’s made by<br />
bees and is desensitising, decongesting, an<br />
antiseptic and antibacterial. It also works<br />
great on minor burns.<br />
Q: WHAT IS YOUR FAVOURITE MAKE UP<br />
BRAND AND WHY?<br />
A: My favourite make up brand is<br />
bareMinerals. It’s fantastic as it’s based on<br />
only natural ingredients found in the earth.<br />
When working in a spa it can be quite warm<br />
at times, and I find the bareMinerals make<br />
up lets my skin breathe as it is very calming<br />
and non-irritating on the skin which ensures<br />
I don’t get breakouts. I also find it lasts all<br />
day and coverage can be built up to suit<br />
your needs. It has a wide range of colours<br />
and I particularly like their lip gloss. My<br />
favourite lip gloss colour at the moment is<br />
most definitely Party Starter.<br />
Q: WHAT IS YOUR FAVOURITE SKIN CARE<br />
BRAND AND WHY?<br />
A: Pevonia, I have worked with the brand in<br />
a previous Spa and was very excited to be<br />
working with it again at SK. I love Pevonia’s<br />
products to work with and for my own skin.<br />
All of pevonias natural products are<br />
designed to meet the needs of specific skin<br />
types and conditions.<br />
Q: WHAT WOULD BE YOUR BEST SKINCARE<br />
ADVICE?<br />
A: My number one skincare advice for<br />
everyone would be to wear a Sun Protection<br />
Factor (SPF). By simply applying an SPF,<br />
you are protecting your skin from harmful<br />
rays from our depleting ozone layer, skin<br />
cancer, brown age spots and preventing the<br />
development of wrinkled, premature<br />
ageing skin.<br />
There are two types of SPF - one chemical<br />
and the other mechanical. Pevonia opts for<br />
the mechanical product as it is far more<br />
effective in its ability to protect the skin<br />
and does not cause sensitivity as a chemical<br />
SPF could.<br />

WHO ARE THEY AIMED AT AND WHY MIGHT<br />
PATIENTS USE THEM?<br />
These treadmills are aimed at all levels<br />
of fitness - from top-level athletes and<br />
orthopaedic and neurological patients to<br />
seniors and even those who are looking to<br />
lose weight.<br />
For rehabilitation patients with lower limb<br />
injuries the AlterG treadmills are great.<br />
They’re also really beneficial to neurological<br />
patients who have conditions which mean<br />
they require extra assistance with mobility<br />
and strength. Not only this, they’re ideal<br />
for runners who are looking to boost their<br />
cardiovascular fitness without the impact<br />
that running unfortunately has on our joints.<br />
By reducing pressure on the body and joints,<br />
it enables rehabilitation users to quicker<br />

HOW DOES A SESSION ON AN ALTERG ANTI-<br />
GRAVITY TREADMILL WORK?<br />
Each session allows you to exercise at a<br />
chosen percentage of your bodyweight. The<br />
anti-gravity condition is reached by filling<br />
the treadmill’s pressure-controlled chamber<br />
with air which lifts the user up and reduces<br />
any weight-bearing pain. Sessions may<br />
be booked as part of your physiotherapy<br />
appointment or as a stand-alone session.<br />
WHAT WAS IT LIKE?<br />
As a regular road runner I wasn’t quite sure<br />
what to expect, but after being zipped in and<br />
letting the machine gauge my bodyweight,<br />
Lauren was able to adjust the treadmill<br />
allowing me to run at different percentages<br />
of my bodyweight. When it was dropped<br />
to just 20% it felt as though I was running<br />
in space and had virtually no impact at all.<br />
My muscles were still running at 12km per<br />
hour but without the usual pounding on my<br />
knees and other joints. I can certainly see<br />
the benefit for those with injuries who are<br />
looking to regain mobility.<br />

Rewind 6 months and I was working full-time running my<br />
Cambridge Bootcamp sessions; doing 1-2-1 personal training;<br />
1-2-1 coaching sessions and running online mindset groups. Whilst<br />
doing this, I was also training myself, using kettlebells, strength<br />
training and doing HIIT sprint training. I was basically going<br />
at 100mph almost everyday. Following some sad news in my<br />
personal life at the end of last year, my training took a backseat.<br />
I didn’t have time to work, or see my clients or train myself.<br />

2016, I started to raise money<br />
for Headway Cambridgeshire in<br />
his memory. I decided I needed<br />
something to aim for so signed up<br />
to do the Cambridge Half Marathon<br />
this month. I am not a huge fan of<br />
long distance running but along with<br />
some supportive friends, I was on<br />
target to run it in a good time. I felt<br />
proud that the money being raised<br />
was going to a worthy cause and that I was back training. I was<br />
really enjoying the positive impact on my mental health too.<br />
All was well until I was rushed to hospital with extreme back pain.<br />
The doctors discovered that my small intestine had twisted and I<br />
needed an emergency operation to try to save the bowel. To cut<br />
a very long story short, when I saw the doctor post-op he told me<br />
that luckily they had saved my small intestine, but that they had<br />
found the ovaries ‘stuck’ to some pelvic scar tissue, and I had a fair<br />
amount of ‘rusty looking fluid’. I had three holes in my stomach<br />
and was told not to train. The doctor told me it wasn’t stress or<br />
running, I was simply unlucky. My world had officially crashed.<br />
After being house bound for the best part of two weeks, I<br />
happened to stumble across a 31-day yoga challenge on YouTube.<br />
I promised myself at least 10 minutes a day just basic stretching to<br />
get me moving again. I knew I was sinking in my mood and needed<br />
to take control. As a PT I knew what I should and shouldn’t be<br />
doing, so I adapted routines to suit. What I hadn’t considered was<br />
just how much it would improve my mental wellbeing and sense of<br />
control.<br />
I had no idea when I started the yoga challenge just how much I<br />
would enjoy it, how much I needed the space, time and element<br />
of self-care, or how many mental benefits it would give me.<br />
Yoga has helped me to open up. It’s helped me breathe, meditate,<br />
focus and be patient. It’s helped me to be kind to myself and<br />
given me time to think. I’ve learnt about mindfulness, meditation<br />
and about taking care of myself. I’ve learnt to practise gratitude,<br />
compassion and most importantly, I’ve learnt that I will not give<br />
up. “Turn your face toward the sun and the shadows will fall behind<br />
you.” - Maori Proverb.<br />
I am now doing yoga daily at home and I try to go to one class<br />
per week if I can. I hope to start running again soon, but I feel my<br />
body was telling me to slow down. I am going to embrace that for<br />
now and just see where it takes me.<br />

sliding doors? Which is better?”<br />
The short answer to that question is that<br />
both are equally desirable in a property,<br />
but the choice is entirely personal<br />
according to Kloeber.<br />

Is there another exit door near the bifolds/sliders or<br />
will this be a main point of entry and exit to the garden?<br />
A bifold with one master door leaf that can be used<br />
independently may be more suitable for a frequently used door.<br />

How wide is the aperture?<br />
If it’s smaller you may want to be able to open up the<br />
whole space with bifolds. Bifold doors offer a 90%<br />
opening when folded back. If you have a larger opening, say 5<br />
metres or more, you may only need to open up part of the space<br />
therefore a slider may be more suitable. If the doors are going<br />
to be shut most of the time do you need the functionality of<br />
a folding door? Would you rather have the bigger expanses of<br />
glass that a sliding door could provide giving you an unbroken<br />
view of your environment?<br />

Always consider your floor finishes. A level threshold<br />
with similar flooring inside and outside really creates<br />
a cohesive single space, especially when you open<br />
the whole space up with a bifold. Creating that seamless look<br />
between the inside and outside can transform your home and<br />

about Lady Fishers Field in Risby, an elegant collection of just 14<br />

company. “We do most of our developments in North Norfolk,”<br />
she explained. “This is our first foray into Suffolk and so this is a<br />
landmark site for us.”<br />

site and Risby certainly met our criteria, offering a rural idyll<br />
within close proximity to Bury St Edmunds and Cambridge.”<br />

styles and local materials and the Lady Fishers Field homes are<br />
a lovely mix of brick, render, weatherboard and generous barge<br />
boards and deep timber fascias. We also specified that the roofs<br />
must be steeply pitched and used clay pantiles (we never use<br />
concrete) to ensure the homes echoed the period homes in the<br />
surrounding area.<br />
“For the setting itself, we make every effort to landscape the<br />
development so it captures the village feel, with abundant green<br />
spaces, specimen trees and lots of spring bulbs.” Commenting<br />
on the interiors, Rachel said: “Inside, our homes are well-crafted<br />
throughout, but what really sets us apart from other regional<br />

Rachel added: “While some of our threebedroom<br />
homes would be made into four<br />
by other developers, we choose to include<br />
the luxury of both a walk-in dressing room<br />
and an en suite in the master bedroom. In<br />
the kitchen/dining room, we always include<br />
a sizeable island in the kitchen area, as we<br />
consider this the hub of the household and<br />
so try to imagine how best to make family<br />
life work and make provision for that.”<br />
What else makes a Fleur home unique?<br />
“I think it is the attention to detail with<br />
the design of the homes,” replied Rachel.<br />
“Juliet, our Design Director, is very handson<br />
when it comes to deciding what she<br />
thinks is suitable. She takes great pains to<br />
make sure that everything exudes quality<br />
and is in keeping with the area.”<br />
“They’re lovely spaces to be in,” said Rachel,<br />
“and not a thing slips through without being<br />
really considered. They’re as good a quality<br />
as we can make them.”<br />
The Risby homes will be completed<br />
from June 17 and will be rolling out until<br />
February, 2018. Although the show home<br />
was only launched two weeks ago, four of<br />
the 14 available homes are already under<br />
offer. Asked whether there will be more<br />
Fleur developments to come in Suffolk,<br />
Rachel concluded: “While Risby is our first<br />
development in Suffolk, we are definitely<br />
looking at other sites in the area and hope<br />
to do many more in the years to come.”<br />

We catch up with Simon Luckings, Operations Manager at S P Landscapes<br />
to hear more about the commercial side of their business and their recent projects<br />
S P Landscapes & Tree Contractors was founded back in 1998<br />
by their existing Managing Director, Steve Pammenter. Nearly<br />
20 years on, there are over 30 full time members of staff in their<br />
Red Lodge based depot which operates across 3 main divisions;<br />
tree services, grounds maintenance services and highway<br />
services. Whilst the team at S P Landscapes work heavily on<br />
domestic projects, the commercial sector also brings in a lot of<br />
work. “As well as undertaking tree works and landscaping works<br />
to private domestic properties, which is a large proportion of our<br />
business, we also undertake a lot of work for District and County<br />
Councils and the Highways,” Simon tells us. “These jobs tend<br />
to be larger vegetation clearance jobs as opposed to working<br />
on a single tree in someone’s garden,” he continues. “Our work<br />
for Councils include managing their tree stock to ensure that<br />
they do not pose a hazard to the public. This work will include<br />
the removal of dead branches, lifting of low branches that may<br />
impede pathways or roadways, and the removal of dead, diseased<br />
or unsafe trees,” Simon adds. “Our work for the Highways<br />
includes the removal of hazardous trees that pose a threat to<br />
road users, cutting back of vegetation to ensure signs are visible<br />
and large scale vegetation clearance for new junctions or road<br />
widening projects.” And it doesn’t stop there! In addition to tree<br />
cutting and removals, S P Landscapes also undertake a lot of<br />
tree planting. This involves anything from replacing a single tree<br />
to much larger scale planting of plots on the side of the highway.<br />
“We have recently completed a tree planting job on the M11<br />
Northbound carriageway near Fiddlers Hamlet in Epping, which<br />
was required to provide screening of the motorway from nearby<br />
houses,” Simon adds. Other recent planting projects include<br />
over 200 trees planted on street verges for Cambridge City<br />
Council and over 25 trees planted in parks and open spaces for<br />
Forest Heath District Council which were planted in January and<br />
February of this year. “We have also recently purchased a new<br />
Bomford Flail Bot which is a remote controlled mower capable<br />
of cutting grass, bramble or scrub on banks of up to 55 degree<br />
angles. This has a massive advantage when it comes to health<br />
and safety as the operator is not put at risk and can operate the<br />
machine from the safety of the flat ground at the bottom of the<br />

bank. It has 2 different types of cutting<br />
heads; one for normal grass cutting and<br />
one for clearing scrub, brambles and wood<br />
vegetation. The scrub clearance head is<br />
capable of cutting through vegetation<br />
with a stem diameter of up to 3cm or 1<br />
inch. The machine is ideal for areas that<br />
are difficult to cut due to the steepness<br />
of the ground or where there is narrow<br />
access or rough ground. It has been used<br />
on Cambridge Water Reservoir sites, the<br />
Cambridgeshire Guided Busway and the<br />
Highway verges,” he concludes.<br />
Alongside this, they also help out a number<br />
of charitable organisations and volunteer<br />
groups with small projects in order to<br />
improve the landscape. “Last year we<br />
helped St Ives in Bloom by digging out the<br />
old existing shrubs from 3 planters that had<br />
become overgrown and unsightly at the<br />
St Ives Park & Ride site that links to the<br />
Cambridge Guided Busway,” he tells us.<br />
“We carried out this work free of charge<br />
with the help of some other companies<br />
so that St Ives in Bloom volunteers could<br />
carry out the planting. This has massively<br />
improved the amenity value of the site and<br />
St Ives in Bloom won a GOLD Award at<br />
the 2016 Anglia in Bloom Competition<br />
which was a rewarding outcome!”.<br />

Design Inspiration Can<br />
Come From The Smallest Detail<br />
The two rooms of the home that are the most personal are the<br />
kitchen and the bathroom. Injecting a sense of character and<br />
personality into these spaces is therefore important, in order to<br />
create a sense of homeliness and to make them truly your own.<br />
Very often seen as the hub of the home, the kitchen is where<br />
family life takes centre stage and where entertaining friends<br />
begins, whilst the bathroom is a private space of sanctuary<br />
and relaxation. Both rooms from a design point of view lend<br />
themselves to experimentation and breaking from the norm in<br />
order to create something unique.<br />
When planning a new kitchen or bathroom it is vital to consider<br />
how you envisage the space will be used, what are the most<br />
important elements and what works in the existing space and what<br />
doesn’t? In the kitchen, practical elements such as layout and<br />
storage need to be decided at an early stage in the design process,<br />
in order to ensure the room works aesthetically too. Similarly, in<br />
the bathroom, it is important to think about who will be using the<br />
space and how frequently – is it the main family bathroom or a<br />
master en-suite or guest bathroom used on the odd occasion?<br />
Once these practicalities have been established, I really like to<br />
explore shapes, textures and colours in order to create your<br />
dream kitchen and bathroom within the boundaries set by you.<br />
This design outlook is something we actively encourage at Design<br />
Republic. It might be that we take the design inspiration for your<br />
space from a favourite piece of artwork or artefact, or it could be<br />
a piece of fabric or a favourite colour accent. Or it could simply<br />
just come from a conversation about how your family lives and<br />
operates. After all, if children are doing homework in the kitchen<br />
then this needs to be accommodated and if you love to entertain<br />
the last thing you want is for your sparkling conversation to be<br />
drowned out by the drone of an extractor hood or to have to<br />
reach too far for the next bottle of wine!<br />
Of course, a new kitchen or bathroom is a big investment and<br />
the design of the space needs to be tangible. Just as buying a<br />
new car requires a test drive in order to get a feel of how it drives,<br />
deciding on a new bathroom or kitchen is a similar process where<br />
visiting a showroom enables you to see the products ‘in the flesh’.<br />
As experienced designers this is something we feel very strongly<br />
about, which is why new customers are always assured of a warm<br />

After Jon and Clare moved into their<br />
new home in Cambridge, they wanted<br />
to maximise the space available without<br />
extending. They brought in Max from<br />
Design Republic to help.<br />
The home was a new build c.2000 and<br />
was a typical new-build with old Trade-Hut<br />
kitchen and utility room. The layout left<br />
no room for a breakfast table or enough<br />
tall units. There was also a separate dining<br />
room which Jon and Clare felt was not<br />
something they would use very often.<br />
Max began by opening the whole space<br />
to bring the dining area into the kitchen<br />
space. Max says: “The dining room suited<br />
the open-plan layout and would be used<br />
every day. With a couple of steel supports,<br />
this would be very easy to achieve.”<br />
After<br />
The clients wanted the new kitchen to<br />
retain a slightly country feel but not at a<br />
premium cost, so Max used painted shaker<br />
lay-on doors and end panels. The worktops<br />
were a Polar White Quartz. The white<br />
tones were offset by the warmth of the<br />
oak flooring. For what would be created,<br />
Jon and Clare were happy to lose the<br />
separate utility room as long as they had<br />
space to hide the washing machine and<br />
tumble dryer. Max created some tall units<br />
where the utility room was and stacked<br />
them behind matching furniture which also<br />
included larder storage.<br />
The medium height units work really well<br />
within the design. It offers a great ‘cooking<br />
centre’ with multifunction oven, compact<br />
oven with microwave, integrated coffee<br />
machine and pull-out larder.<br />
“We are over the moon with the design.<br />
The layout works so much better for us<br />
on a daily basis and we never thought we<br />
would be able to get so much into this<br />
space when we bought it. Looking back,<br />
getting Max in to help was the best thing<br />
to do rather than trying to do it ourselves.”<br />

V90<br />

Volvo claims that its cars are made by Sweden, not in Sweden.<br />
It’s a subtle difference, but one that the company is proud of,<br />
meaning that its luxuriously appointed behemoths can cope with<br />
anything the British climate might throw at it without breaking a<br />
sweat.<br />
I wanted to put that to the test, but if I’m going to test things<br />
thoroughly I might as well aim for ‘extreme’ and see what happens.<br />
Which is how I found myself in the middle of a lake in two tonnes<br />
of Sweden’s finest metalwork.<br />
Fortunately the lake, situated just a few kilometres from the<br />
remote ski resort of Åre, was frozen. Or at least that’s what the<br />
Volvo guys promised me, but given the creaks, cracks and moans<br />
coming from the icy surface, I was less than convinced. The<br />
temperatures had been unusually warm before my arrival, too,<br />
although it was a reassuringly cold -12C by the time I’d found my<br />
way to the Copperhill Mountain Lodge for the night.<br />
The drive there showed off the talents of the V90 Cross Country<br />
nicely. Raised by 65mm over the standard V90 estate, its softer<br />
suspension makes the ride even better than usual.<br />
Yes, there’s a little more bodyroll in corners, but it’s by no means<br />
intrusive and doesn’t affect how much confidence you can place<br />
in the car. That said, I was on special studded tyres that, on the<br />
clear stretches of tarmac, actually hindered roadholding slightly<br />
while making a lot more noise. Once I’d turned off the main roads<br />
and was on the way to Åre, the roads turned to sheet ice, where<br />
the studs came into their own.<br />
I confidently navigated my way using the Sensus infotainment<br />
system that’s built into this and the bigger XC90 SUV. It’s a<br />
masterpiece of design: everything you need is displayed on a<br />
HUD in front of you, while less important information is placed on<br />
the large touchscreen in the centre console. Seldom used options<br />
are hidden just a swipe of the finger away, leaving it safe to use on<br />
the road.<br />
The same goes for the rest of the interior. It’s as good as it<br />
gets, oozing minimalist Swedish style while being easy to use,<br />
spacious, comfortable and quiet. How the engineers have<br />
achieved this is a mystery, but they’re absolutely nailing it in<br />
Gothenburg right now.<br />

The car itself feels nailed to the ground,<br />
thanks to an all-wheel drive system that<br />
splits power intelligently between the four<br />
wheels. Under normal circumstances, all<br />
the power goes to the front wheels, but<br />
once things get sketchy, it sends some<br />
to the rear wheels to balance things up.<br />
Unlike most systems, it’s also engineered<br />
to remain neutrally balanced<br />
when on the limit of adhesion, which<br />
makes it a more predictable car to handle<br />
under extreme conditions.<br />
Ah yes, those extreme conditions.<br />
Creeping onto a frozen lake is an<br />
unnerving experience, but once I’d been<br />
given a thorough safety briefing (“don’t<br />
hit any other cars!”) and gone through<br />
an exhaustive training session (“there are<br />
some cones, go round them”), I was let<br />
loose on the 50cm thick ice sheet.<br />
For the purposes of genuine consumer<br />
journalism, I left the computer aids<br />
switched on, which means there’s traction<br />
control, stability control, automatic allwheel<br />
drive and emergency autonomous<br />
braking. The surprising result is that it<br />
was possible to drive reasonably sensibly<br />
around the lake, the car stepping and<br />
braking individual wheels once it had<br />
decided that things were getting too<br />
enthusiastic. Point proven – the car is<br />
inherently safe.<br />
Switch everything off and it’s a different<br />
beast, the tail end of the car swinging<br />
to angles even beyond 90 degrees, yet<br />
remaining controllable, which is impressive<br />
considering the 5m long pendulum it<br />
becomes. Yes, to get the most out of it you<br />
need to know what’s going on with weight<br />
transfer, steering angles, grip coefficients<br />
and such like, but any loon could go<br />
out and have a huge amount of fun at<br />
Sweden’s natural test track.<br />
It might not quite represent a slippy road<br />
in the suburbs of Cambridge, but it’s<br />
reassuring to know that the car will look<br />
after you every bit as well there as it would<br />
in Åre.<br />

The VW Golf has, since its launch in 1974, offered<br />
a range of practical and sporting variants. Originally<br />
intended to take over from the VW Beetle, the Golf<br />
offered a thoroughly modern take on being a car for all.<br />
So much so that by 2012, VW had built over 29 million<br />
Golfs. Figures like that speak volumes but in addition, the<br />
Golf has also won many awards over the years including<br />
European car of the year, not once but twice!<br />
In 1976 VW launched the Mark 1 Golf GTi, a car which<br />
has come to define the term ‘hot hatch’ fast, refined<br />
and above all, fun to drive. The GTi recipe was a game<br />
changer in the motoring industry and is still at the<br />
forefront of performance and affordable cars for many<br />
drivers.<br />
The original GTi set a new standard for road holding,<br />
reliability and all-round drivability, few cars in its class<br />
could compete.<br />
So why reflect on the long unbroken history of the VW<br />
