Dare I say it, summer has arrived and here are two delicious excuses<br />
to get your friends and family together for some quality time<br />
feasting in the sunshine!<br />
JERK PULLED PORK SLIDERS<br />
Method<br />
1. Trim pork of excess fat and pat dry with a paper towel.<br />
Cut into 2 pieces.<br />
2. Generously salt pork, and then rub with jerk seasoning.<br />
(If possible refrigerate overnight to allow the flavours<br />
to penetrate the meat).<br />
3. Place the pork pieces in the slow cooker so that they<br />
are tucked tightly. Add onions, garlic, thyme and 1 cup<br />
of water. Cover the slow cooker, turn it on to high and<br />
let it cook for about 5- 6 hours.<br />
4. After the pork is cooked, carefully remove the lid.<br />
5. You may serve as is or shred it using a fork. I served<br />
the pork in a crusty bun, with homemade coleslaw.<br />
Ingredients<br />
4-5 pound Pork shoulder<br />
¼ cup Jerk Seasoning<br />
6 garlic cloves, chopped<br />
1 medium onion, coarsely chopped<br />
1 sprig of fresh thyme<br />
1 lime or lemon<br />
Salt and pepper to season<br />

These are sooo simple, they taste sooo good and the children will love making them and<br />
eating them!<br />
Slide lollipop sticks into the middle of peeled bananas or wedges of pineapple. Dip them into<br />
melted chocolate (milk, dark or white chocolate).<br />
Lay them on a baking tray that’s lined with baking<br />
paper. Before chocolate sets, sprinkle them with<br />
toppings of your choice. I've used desiccated<br />
coconut and sprinkles. Pop them in the freezer<br />
for 3-4 hours until frozen then enjoy!<br />
