Dare I say it, summer has arrived and here are two delicious excuses
to get your friends and family together for some quality time
feasting in the sunshine!
JERK PULLED PORK SLIDERS
Method
1. Trim pork of excess fat and pat dry with a paper towel.
Cut into 2 pieces.
2. Generously salt pork, and then rub with jerk seasoning.
(If possible refrigerate overnight to allow the flavours
to penetrate the meat).
3. Place the pork pieces in the slow cooker so that they
are tucked tightly. Add onions, garlic, thyme and 1 cup
of water. Cover the slow cooker, turn it on to high and
let it cook for about 5- 6 hours.
4. After the pork is cooked, carefully remove the lid.
5. You may serve as is or shred it using a fork. I served
the pork in a crusty bun, with homemade coleslaw.
Ingredients
4-5 pound Pork shoulder
¼ cup Jerk Seasoning
6 garlic cloves, chopped
1 medium onion, coarsely chopped
1 sprig of fresh thyme
1 lime or lemon
Salt and pepper to season
These are sooo simple, they taste sooo good and the children will love making them and
eating them!
Slide lollipop sticks into the middle of peeled bananas or wedges of pineapple. Dip them into
melted chocolate (milk, dark or white chocolate).
Lay them on a baking tray that’s lined with baking
paper. Before chocolate sets, sprinkle them with
toppings of your choice. I've used desiccated
coconut and sprinkles. Pop them in the freezer
for 3-4 hours until frozen then enjoy!
