Bit about you and starting your Charcuterie...<br />

I’m from Arbroath, married to Jackie. I was in<br />

the music business for the last 20 years and<br />

was looking to do something a little different...<br />

I needed a new challenge, and I’ve had a keen<br />

interest in the restaurant and bar trade over<br />

the last 5 years.<br />

Influences in your restaurant? We spent the<br />

last 5 years living in Barcelona... so a lot of the<br />

menu choices, presentation and design of the<br />

restaurant are influenced by this great city.<br />

We are the only restaurant/bar in Scotland to<br />

sell Moritz Lager from Barcelona, we have 4<br />

spanish hams in the charcuterie section, which<br />

I used to eat all the time in my favourite charcuterie<br />

bar in Barcelona called La Pineda. The<br />

design of the bar area I copied from another<br />

favourite restaurant called Bodega 1900.<br />

Local food/drink? I’m using Dough Re Mi Bakery<br />

for all my bread, IJ Mellis for all cheese,<br />

Pickerings Gin plus Drinkmonger for all my<br />

whiskey, Rum, Vodka<br />

Best local coffee stop - Machina Espresso on<br />

Brougham Place<br />

Best bite to eat - The Apartment, Harajuka<br />

Kitchen and Summerhall cafe for lunch<br />

Favourite thing to do in Edinburgh? I’ve always<br />

enjoyed heading over to Stockbridge on a Sunday<br />

for the food market, picking up some great<br />

scotch eggs from mark @ aye love real food<br />

What do you do outside work? right now…<br />

sleep, that’s it. I still try to get to as many gigs<br />

as I can... a few shows at Summerhall and<br />

Queens Hall I’m hoping to catch soon are<br />

American Football, Jake Bugg and Ride.<br />

Bea Alexander of Bea Alexander Pilates<br />

Bit about you...<br />

I ‘found’ Pilates after I had to give up dance<br />

training because of injury... I have an extreme<br />

form of hyper mobility, Elhers-Danlos, and<br />

dislocate joints easily. At the age of 18, a Pilates<br />

teacher explained what was happening<br />

because of my extreme flexibility, and showed<br />

me how I could re-balance my muscles to function<br />

better. Even while studying skeletal and<br />

dental bioarchaeology at University, I knew I<br />

wanted to go and train to be a Pilates teacher.<br />

Bit more about Pilates...<br />

Pilates is not only a ‘matwork’ class... Joe Pilates<br />

invented a range of spring-assisted apparatus<br />

to do his exercises with such as the<br />

‘Pilates reformer’, the ‘Wunda Chair’, ‘Trapeze<br />

Table' and ‘Ladder Barrel’. These add resistance<br />

and can make things easier for people<br />

who have mobility issues. We teach what is<br />

known as ‘studio work one-to-one or one-totwo.’<br />

The class is tailored exactly to the person’s<br />

needs. Rather like personal training combined<br />

with physiotherapy!<br />

Favourite local tea/coffee? I am a tea person -<br />

and love the tea specialists Rosevear in Bruntsfield<br />

and near my Broughton Street Studio. For<br />

pure luxury, Bruntsfield’s Chocolate Tree’s<br />

traditional hot chocolate cannot be beaten; my<br />

administrator, Andy, loves their Mocha.<br />

Best meal out? I think two of the best and<br />

healthiest places to eat are “The Three Birds”<br />

in Bruntsfield and its sister restaurant in<br />

Broughton Street, the “Educated Flea”. They<br />

use a lot of local, very fresh produce<br />

Favourite shows at the festival this year?<br />

The acrobatic shows ‘Driftwood’, ‘Paris du<br />

Nuit’ and ‘Fauna’.<br />

Food<br />

Smorgasbord with open sandwiches<br />

This scandi-inspired smorgasbord features some easy to prepare open sandwiches and involves<br />

practically no cooking. Just buy a selection of tasty ingredients and put them all out to share,<br />

great with elderflower cordial or some nice chilled white wine.<br />

For the open sandwiches:<br />

8 slices thinly sliced rye bread<br />

1 pack cream cheese<br />

4 slices smoked salmon<br />

half a thinly sliced red onion<br />

4 small gherkins, sliced<br />

1 dsp capers<br />

4 lemon wedges<br />

half a cucumber, sliced into thin strips<br />

small handful dill, finely chopped<br />

1 tbsp white wine vinegar<br />

1 tsp caster sugar<br />

pinch of salt<br />

4 large radishes, thinly sliced<br />

handful of blueberries<br />

black pepper<br />

For the rest of the platter<br />

Selection of smoked fish (e.g. salmon, mackerel)<br />

Sliced charcuterie (e.g. salami)<br />

Cheese such as Edam, Jarlsberg, Cheddar<br />

Green salad leaves<br />

Cherry tomatoes (raw or roasted in a bit of olive oil for<br />

15 minutes, 180 degrees)<br />

Pickles<br />

Extra rye bread, cream cheese lemon wedges, capers,<br />

red onion, radishes and blueberries, to serve<br />

1. To make the sandwiches spread each slice of bread with cream cheese.<br />

2. For the salmon sandwich top four slices with some salmon, then top with red onion, gherkins<br />

and capers.<br />

3. Add a squeeze of lemon and a twist of black pepper before serving.<br />

4. For a veggie option mix together the cucumber, dill, vinegar, sugar and salt and set aside for<br />

ten minutes.<br />

5. Strain off the vinegar and top each sandwich with the cucumber mixture, some radishes and<br />

blueberries.<br />

6. For the rest of the smorgasbord arrange the fish, charcuterie and cheese on a large platter.<br />

Garnish with the salad leaves, tomatoes and pickles.<br />

7. Serve with extra bread, lemon wedges and sandwiches toppings, as desired.<br />

Fermented foods, Prebiotics & Probiotics<br />

The bacteria that live in our gut are essential for health. That is how nutrients are absorbed,<br />

assimilated and digested. They also play a role in our immune systems, are linked to our mental<br />

health and there are a trillion of them living in each gut! They weigh around 4 pounds per person.<br />

They are also known as gut flora.<br />

Probiotics are thought to directly kill or inhibit the growth of harmful bacteria, stopping them<br />

producing toxic substances that can make you ill. Some foods are naturally probiotic. Sauerkraut,<br />

kimchi, kefir, yoghurt, miso and tempeh are amongst them. Most of these are only available instore<br />

as they are kept in the fridge.<br />

Prebiotics are non-digestible parts of food that promote the growth of beneficial microorganisms<br />

in the intestines. Onions, asparagus, chicory, leeks and artichokes are all good sources. These fibre<br />

-rich foods feed the good bacteria in the gut.<br />

Fermenting has been around for centuries. It helps to preserve foods and can reduce cooking<br />

times and fuel requirements. In addition, it can eliminate anti-nutrients and biologically enrich the<br />

foods with amino acids and vitamins. You probably already eat fermented foods in your diet.<br />

Chocolate, coffee, vanilla, some teas, pickles, vinegar, cheese and yoghurt are all fermented<br />

foods. Then there’s alcohol, sauerkraut, kombucha, sourdough and kefir, again all fermented!<br />

Would you like to volunteer with children?<br />

Article by Jac Phillimore, Radio Lollipop volunteer<br />

I started volunteering at Radio Lollipop at Sick Kids when I became a mum and<br />

took a career break. A few trips to A&E with my own kids made me realise that I’d<br />

be doing something useful.<br />

Radio Lollipop is a charity run by volunteers who each dedicate just two hours a<br />

week to running a live children’s radio show in hospital from 6-8pm and providing<br />

play and entertainment on the wards. We try to offer children a bit of control over their lives and<br />

a voice during their stay. While they can’t say no to medicine or receiving treatment, they can<br />

choose things to make or draw, their favourite song to play, and hearing their name or own voice<br />

on the radio is a real thrill for them.<br />

Going round the wards and talking to kids is the best bit and I know their tired and stressed parents<br />

feel really supported by our charity. I come home from volunteering with renewed energy<br />

and an altered perspective on what matters.<br />

people to find out about what is going on in<br />

their community, get involved, and find any<br />

practical help that they need.<br />

If you are over 65, or are looking after an older<br />

friend or relative, we are here for you! Come<br />

and speak to us at one of our information stations.<br />

We have regular stalls at local libraries:<br />

Central Lending Library on the first Monday of<br />

every month, from 10am.<br />

Newington Library on the first Friday of every<br />

month, from 10am.<br />

Morningside Library on the second and fourth<br />

Wednesday of every month, from 10am.<br />

We can also arrange home visits to talk through<br />

your needs and options.<br />

Friday 22nd September - Macmillan Coffee<br />

Morning. Come along to Doodles between<br />

10am -1pm for some coffee and cake while<br />

you paint and help us raise money for Macmillan<br />

Cancer Support. We will have a bake<br />

sale, competitions and Doodles will donate<br />

25% of the pottery sales from the day.<br />

The next meeting of Merchiston Community<br />

Council will be on Tuesday 19 th September,<br />

starting at 7pm, in Merchiston Tennis & Bowling<br />

Club on Polwarth Terrace (just behind the<br />

Royal Ettrick Hotel). Local residents are<br />

The Royal Hospital for Sick Children moves in<br />

2018 to Little France and the site is now up for<br />

sale to developers. The MSCC is monitoring<br />

events and encourages local involvement from<br />

the early stages. At this stage, a community buy<br />

-out proposal from the Marchmont & Sciennes<br />

Community Trust is awaiting approval by the<br />

Scottish Government. For more details check<br />
