SELWYN TIMES Tuesday June 7 2016 25 Food Korean twist to Kiwi food • By Gabrielle Stuart MAY SHIN just had her first day off in more than six months – and she realised it had been so long she had forgotten how to enjoy it. “I felt so nervous. I had nothing to do but just sit and drink coffee.” Gentle Giant, in Ferry Rd, is the third cafe she has opened with her sister, business partner and “best friend”, Ji Shin, since she moved to New Zealand from Korea eight years ago. The first was Cafe Pure on Cashel St, which was destroyed in the earthquakes. At the time, she said she was very new to New Zealand and still trying to grasp what customers were looking for in terms of food and environment. She said cafe culture in Korea was very different, especially as the population of cities there was so much denser. “Just on my street there was one after another, cafe, cafe, cafe, and then upstairs there were more, cafe, cafe, cafe. And they served a lot of drinks, but mostly no food.” Although she had spent time in the United States in her 20s, FLAT WHITE: May Shin’s artistic side spills over into her menu. PHOTO: GEOFF SLOAN she said she also struggled with the language. “At the time I didn’t really enjoy selling at all, but now my regular customers are friends. So many people have helped me, they are very lovely.” Losing not only their cafe in the earthquakes but their prime central city location was a big blow, but the sisters bounced back. They opened In Situ on Opawa Rd four years ago, and with its quirky interior and Lyttelton coffee, it became a popular local hangout. But Ms Shin’s real love was food, and she said the cafe’s kitchen was far too small to be able to offer real meals. That was one of her goals for Gentle Giant: she wanted to put a lot more emphasis on food, with a full breakfast menu rather than just cabinet food. Her vision for the menu was traditional Kiwi classics with Korean twists – from the herbs and spices used on pulled pork, to incorporating vegan options which were hugely popular in Korea. But finding the balance wasn’t easy, and she said it took several months to develop the menu, using friends and family as guinea pigs to test the dishes. As Gentle Giant had been open just six months, she said there was still a lot of work to do there. But she said it was already a place she loved to be. And one thing she was sure of was that Christchurch was home.
