A RICH SOURCE OF VITAMIN A
Sweet potatoes and other types of
produce that are primarily orange get their
color from their high concentrations of
vitamin A. Sweet potatoes are a particularly
good source of beta-carotene, a reddish-orange
pigment found in plants that is
converted into vitamin A by the body. You
may be surprised to learn that you can get
more than 200% of the RDA of vitamin A by
eating just 200 g of sweet potatoes.
PACKED WITH VITAMIN B6
Pyridoxine, which is more commonly
referred to as vitamin B6, is used by the
body to produce serotonin. It plays a key
role in the brain’s ability to transmit messages.
The human body also uses vitamin
B6 in the production of red blood cells. You
can get approximately 36% of the recommended
daily allowance of this essential vitamin
in a 200 g serving of sweet potatoes.
3
HIGH IN POTASSIUM
Potassium plays a key role in maintaining
cardiovascular health. It helps your
body maintain a healthy heart rate. You
can get more than 30% of the RDA of this
essential mineral by eating a single 200 g
serving of sweet potatoes.
