May is my favourite time of year; I love warmer<br />
weather, being able to do more in the day as the<br />
nights draw out, and it’s also my birth month!<br />
This year, in particular, May will be very special<br />
as I am also celebrating two hen parties before<br />
my wedding next month. So I want to say a<br />
special thank you to everyone organising those<br />
for me.<br />
This month, I had the pleasure of interviewing<br />
Nadine Coyle, former Girls Aloud member. We<br />
had a great chat about her new EP, her passion<br />
for empowering women and motherhood. Read it<br />
in full from pages 22-27.<br />
I was also lucky enough to speak with the very<br />
talented singer-songwriter Frank Turner, about his<br />
new tour and album, ‘Be More Kind’. It was great<br />
to talk about the importance of lyrics; in fact, the<br />
conversation got pretty deep, much like Frank’s<br />

Fish Koftas...<br />
BY AWARD WINNING<br />

Perfect for sharing...<br />
These Koftas have an intense yet delicate<br />
flavour, they look great served with an orange<br />
coloured sauce.<br />
Method<br />
1. Bring the milk, cardamom pods, turmeric and<br />
ground cumin to the boil in a heavy-based pan.<br />
Poach the fish fillets in this for three minutes<br />
on either side, drain, discarding the milk, and<br />
transfer to a mixing bowl. Leave to cool. Now<br />
remove the cardamom pods and add the potato.<br />
2. Blend the onion, ginger and green chilli with<br />
1 tbsp of water to a smooth paste in a liquidiser.<br />
Add this to the fish mixture along with all the<br />
other ingredients except the oil. Knead well<br />
together and form into balls, each the size of a<br />
ping-pong ball. If the mixture is sticky, moisten<br />
your hands with water before forming the koftas.<br />
3. Heat the oil for deep-frying in a deep, heavybased<br />
pan or wok until it begins to sizzle. Reduce<br />
the heat and drop the fish balls into the oil a few<br />
at a time, turning them frequently and frying to<br />
an even golden brown. Drain on kitchen paper.<br />
4. Put the koftas into a dish and pour the<br />
reheated sauce over. Sprinkle with coriander and<br />
almonds and serve.<br />
Ingredients<br />
• 240ml whole milk<br />
• 4-6 green cardamom pods, lightly crushed<br />
• 1 black cardamom pod<br />
• 1 tsp turmeric<br />
• 1 tsp ground cumin<br />
• 500g white fish fillets, rinsed and patted dry<br />
• 1 large potato, cooked and diced<br />
• 1 onion, roughly chopped<br />
• 1 tsp root ginger roughly chopped<br />
• 1 large green chilli<br />
• 2-3 tbsp chopped coriander leaves, more to serve<br />
• 1 tsp roasted cumin seeds, coarsely crushed<br />
• 2 tbsp flaked almonds, toasted, plus more to serve<br />
• 1 tbsp gram flour<br />
• Freshly ground black pepper<br />
• 1 egg, beaten<br />
• Vegetable oil, to deep-fry<br />

Overcome pre-wedding nerves...<br />

Panic At The Altar?<br />
Wedding anxiety setting in? Not to<br />
fear I have a few tips to help combat<br />
those nerves and allow you to revel<br />
in your big moment...<br />
Talk to any budding bride or groom<br />
and one word usually resounds:<br />
nerves. Ask them how they’re<br />
feeling and I’ll guarantee, ‘stressed’,<br />
‘excited’ and ‘nervous’ will pour as<br />
much from their verbal response as<br />
it will off their entire aura. Each will<br />
have their individual anxieties, but<br />
research reveals that brides appear<br />
to be taking the brunt, reporting<br />
an upsurge in panic attacks and<br />
breakdowns before – and most<br />
worryingly – on the day itself. So<br />
here’s a few of my top tips!<br />
1. It’s OK to feel overwhelmed...<br />
There’s a huge amount of pressure for everything to go<br />
perfectly, and if you’re anxious you’ll probably feel that pressure<br />
even more intensely.<br />
2. Say a big “yes” to those offers of help...<br />
If you see deadlines looming but freeze up and find yourself<br />
unable to meet them, don’t suffer in silence. Turn to a friend<br />
and say: “Remember when you asked if there was anything you<br />
could do to help? The answer is a thousand times yes.”<br />
3. You really don’t need those Mason jars full of glitter...<br />
I constantly made more work for myself. Buy invitations?<br />
Nope. I decided to make them, despite once glue-gunning<br />
myself to an art workbench at school. It took months of stress<br />
and the end result looked like it was made by a 5-year-old.<br />
Try to prioritise the fine touches and detail; it all adds up and<br />
before you know it you’re facing an impossible to-do list. It’s<br />
perfectly OK to have ordinary place cards or a straightforward<br />
table plan.<br />
You’ll still have an amazing day and won’t have wasted weeks<br />
crying into a pot of calligraphy ink.<br />

4. Take time to reassure your partner...<br />
It’s a good idea to make it clear that<br />
freaking out about the wedding does<br />
not mean you’re not super happy about<br />
getting married. It’s just the same old<br />
crap you’ve had to deal with for years<br />
being magnified by the wedding stress.<br />
You’re both going to feel a bit weird<br />
at times – it’s a big deal – but let your<br />
partner know that it doesn’t mean your<br />
relationship isn’t 100% solid.<br />
5. It’s OK to not enjoy being the centre<br />
of attention...<br />
As an anxious person, being on display<br />
isn’t really part of your MO, but it’s an<br />
integral part of any wedding. Selfconsciousness<br />
might not be something<br />
you consider until quite close to the day<br />
itself, but it’s a good idea to plan for it.<br />
6. It’s fine to be selfish and put yourself<br />
first...<br />
You’re going to feel pretty delicate the<br />
week before the wedding, even if you’ve<br />
been careful and looked after yourself.<br />
7. Don’t be afraid to let things go...<br />
You might feel the only way for things<br />
to go “perfectly” on the wedding day is<br />
if you keep a close eye on all of it, but<br />
that’s actually the best possible way to<br />
utterly exhaust yourself, which can make<br />
anxiety worse.<br />
And after the big day...<br />
You didn’t let anxiety hold you back, you<br />
got married, and you’re awesome. It can<br />
be a scary time for anyone and you did it!<br />

Ken Norton a Unique<br />
World Heavyweight<br />
Champion...<br />

A series of articles which will feature boxing facts<br />
from both the past to the present...<br />
Ken Norton was without<br />
question a fine fighter<br />
who more than proved his<br />
worth amongst the top elite<br />
heavyweights during the time<br />
period he boxed. Norton hit the<br />
headlines when he became just<br />
the second man in the division<br />
to defeat Muhammad Ali in<br />
the professional rank’s .(Ali’s<br />
first defeat came against Joe<br />
Frazier by way of a 15 round<br />
points defeat on the 8 March<br />
1971 when attempting to regain<br />
his world heavyweight crown).<br />
In the said 12 round points<br />
victory over Ali on the 31 March<br />
1973 Norton won the National<br />
Association Boxing Federation<br />
heavyweight title which Ali<br />
was defending. If that loss<br />
wasn’t bad enough for Ali he<br />
also ended the bout with a<br />
broken jaw. Make no mistake<br />
no-one expected to see Ali lose<br />
against Norton. Muhammad<br />
was expected to win and hence<br />
go on to secure another tilt at<br />
the world heavyweight crown.<br />
However on the night Norton<br />
didn’t share the ring with Ali<br />
just to make up the numbers<br />
he was there to win.<br />
A return with Ali took place on<br />
the 10 September 1973, Norton<br />
was confident of a repeat<br />
victory over the former world<br />
champion. Ali however gained<br />
revenge on this occasion<br />
wining a 12 round points<br />
victory over Norton to regain<br />
his NABF title.<br />
Apart from that famous<br />
victory over Ali Norton also<br />
holds a very unique record<br />
that of being the only man in<br />
boxing to hold a version of<br />
the world heavyweight crown<br />
without ever winning a title<br />
bout. How could that be? You<br />
<strong>may</strong> very well ask. Truth can<br />
often be stranger than fiction.<br />
On the 26th March 1974<br />
Ken challenged the hard<br />
punching George Foreman<br />
for the undisputed title and<br />
was duly stopped in round<br />
two of a scheduled 15. The<br />
second challenge for world<br />
honours came on the 28<br />
September 1976 when Norton<br />
met defending champion<br />
Muhammad Ali who had by this<br />
time regained the title .Norton<br />
pushed Ali hard but at the end<br />
of the fifteen round contest<br />
was deemed to have come in<br />
second losing the decision on<br />
points.<br />
On the 5 November 1977 Ken<br />
met Jimmy Young in a final<br />
eliminator for the world crown<br />
and won a 15 round points<br />
decision. The then reigning<br />
champion Leon Spinks ignored<br />
the mandated challenger and<br />
defended his title against<br />
Muhammad Ali (whom he<br />
had previously beaten for the<br />
championship). The World<br />
Boxing Council responded by<br />
stripping their version of the<br />
title from Spinks and made<br />
Norton their new champion.<br />
The fates were not on Ken’s<br />
side since he hence lost his<br />
crown in his first defence when<br />
outpointed over 15 rounds by<br />
Larry Holmes on the 9 June<br />

Bounce Magazine’s Rachel Ducker speaks to Nadine Coyle about her<br />
time in Girls Aloud, motherhood and her new EP...<br />
As one fifth of chart-mauling, award-winning,<br />
expectation-shattering girl band Girls Aloud,<br />
Nadine Coyle has already played her part in<br />
helping redefine pop.<br />
She returned to the music scene late last<br />
year with a brand new song ‘Go To Work’,<br />
now Nadine announces the release of a new<br />
4 track EP and a UK tour, celebrating strong<br />
women.<br />
She will also be hitting the road this May for a<br />
UK and Ireland tour, performing the greatest<br />
hits of Girls Aloud solo, alongside songs from<br />
her forthcoming new album. Pop fans should<br />
rejoice as this tour is set to be the ultimate<br />
party night out this Spring, seeing Nadine<br />
perform such legendary<br />
hits as ‘Sound Of The<br />
Underground’, ‘Love<br />
Machine’, ‘Biology’,<br />
“Something New’ and<br />
‘The Promise’, alongside<br />
new Nadine stormers<br />
such as ‘Go To Work’<br />
and ‘Girls On Fire’.<br />
If each member of the band – who<br />
sashayed their way through a ten-year, five<br />
album career – had a role, then Nadine’s was<br />
The Voice. Often demoing the songs with<br />
Brian ahead of the other girls during the<br />
band’s tenure, it’s always been any<br />
discerning pop fan’s dream for the pair<br />
to collaborate again on Coyle’s<br />
solo material.<br />
The Derry-born singer opens up to Rachel<br />
Ducker, about motherhood and touches upon<br />
her time in Girls Aloud.<br />
R: Hi Nadine, how are you today?<br />
I’m really good how are you Rachel?<br />
R: I’m great… thanks for your time, I know<br />
I don’t have long so I will start with my<br />
questions! When did you realize you had a<br />
passion for singing?<br />
I was really young. I used to sing ‘Saturday<br />
Night at the Movies’ when I was three years<br />
old, I even used to sing the ad-libs on it. My<br />
mummy and daddy were like “what is she<br />
doing?” A, where did she hear this<br />
song, people kissing on the back<br />
seat of the movies, and B where<br />
did she get all of these ad-libs?<br />
Very early on, I just loved singing<br />
and singing songs that I felt<br />
connected to. My dad was a<br />
singer in his spare time, he did<br />
performances and shows, so he got<br />
me and my younger sister involved.<br />
It’s just something I’ve always done.<br />
R: We saw you emerge onto the music scene<br />
through the TV Show ‘Popstars,’ in 2002,<br />
which is where Girls Aloud was formed. Does<br />
it feel like a lifetime ago now?<br />
It really does? It’s almost like a different world.<br />

R: I mean, how was it to reach Christmas<br />
number one with your very first single the<br />
‘Sound of the Underground’?<br />
It was incredible; I did not expect that at all,<br />
even though I knew the song was amazing.<br />
Yeah it was fine, I wouldn’t say it was<br />
particularly hard or anything of that nature,<br />
but as people, there are times when things go<br />
up and down. There are highs and lows in the<br />
entertainment industry and that’s just how it<br />
is. You know what I mean, you just roll with it?<br />
R: And it still is, I still love it!<br />
I still love it… I know! I think I am going to do<br />
that one on tour, there’s just so many songs<br />
that I want to do on tour, but I can’t do them<br />
all. Yeah, it was a huge surprise to get to<br />
Christmas number one. I remember just going<br />
home and being so exhausted. We had so<br />
much promo once we were in the band, we<br />
were just like “urgh”, and I didn’t know how I<br />
was supposed to feel?<br />
R: What was it like to be in an all girl band?<br />
Well, I have two sisters, there’s us three girls,<br />
and I went to an all girls secondary school<br />
and I have lots of girlfriends, so for me being<br />
around girls was what I was used to. I have<br />
definitely spent a lot of time in my life with<br />
girls, so it wasn’t anything out of the ordinary<br />
for me. I think there was 30 girls in my school<br />
class, so going from 30 girls to 5 was easy!<br />
R: Its no secret that since the band have<br />
gone their separate ways that there has<br />
been lots of things said, not all pleasant,<br />
has is it hard going through all of that in the<br />
spotlight?<br />
No, not at all. I mean, I think its definitely part<br />
and parcel, its just what happens, journalists<br />
write things and people make stuff up. You will<br />
feel like there are times where it’s a personal<br />
attack, but if you can’t handle it, you should<br />
probably pick another job! [laughs]<br />
R: I don’t think I could do it!<br />
R: I guess it’s like a bad day at work then?<br />
If you were working in an office there would<br />
be general office politics. You would then<br />
tell your friends about it when you go home.<br />
Whereas when you do something in this<br />
industry your then the person that people talk<br />
about in their offices! But I am not in offices<br />
having to hear what people have to say so… I<br />
am fine [haha]<br />
R: So you’ve teamed up again with the bands<br />
mastermind, Brian Higgins, what can we look<br />
forward to from here on?<br />
Yes I have! Oh… you can look forward to lots<br />
of new music, which is always great, they<br />
are really supportive. We are doing very soft<br />
releases and building up a portfolio of songs,<br />
and then we can work on the directions,<br />
much like with Girls Aloud, there are so many<br />
different genres of music. It’s so easy to put<br />
music out these days so it’s a great place to<br />
be.<br />
R: Your tour starts in May, what are you most<br />
looking forward to about that?<br />
Yesss! I am most looking forward to having<br />
the set list nailed down, having the show<br />
rehearsed, knowing exactly what we are all<br />
doing and then I think I will be able to get a<br />
good nights sleep! Until then, I don’t think I<br />
will sleep properly until May!<br />
R: You’re also a mum as well now, how does<br />
that work around your career?<br />

She’s so brilliant, she really, really is! She’s just<br />
hilariously funny, and we have a great time<br />
together, so its just a matter of balancing<br />
me being a mother, and then having to go to<br />
work, because sometimes mummy’s have to<br />
work and we can’t all be at home, all of the<br />
time. You just try your best and try to apply<br />
yourself to each thing as best you can and<br />
fingers crossed that it’s all alright? [laughs]<br />
R: In the next year I hope to be a mum, but<br />
as a full time editor I am worried…<br />
Oh wow, are you planning or already<br />
pregnant?<br />
R: Well, I have an upcoming wedding in June,<br />
so we will see what happens after! Do you<br />
have any advice for working mums?<br />
Just don’t beat yourself up to much; you’re<br />
going feel guilty by not spending every single<br />
second with your child, whether awake or<br />
asleep. You have to work, its not like the days<br />
where the man went to work and the woman<br />
stayed at home and shook him a cocktail at<br />
the end of the day – those days are long gone.<br />
I like working, I enjoy working and if you do<br />
too, you should incorporate that into being<br />
part of your life and not worry about it too<br />
much.<br />
R: I think its tough being a woman… even<br />
having to change your surname…<br />
Well you don’t have to [laughs] there’s no law<br />
against that!<br />
R: True, I think I’ll keep my surname for<br />
business purposes only [laughs] I have<br />
noticed your songs are so empowering and<br />
embrace strong women – is that something<br />
you will continue to do?<br />
Yes! Absolutely I am all about that. I am one<br />
of three sisters as I said earlier I have lots<br />
of girlfriends. I am so passionate about it,<br />
you cannot tell me that we are inadequate<br />
or not as good, it’s the complete opposite<br />
and we have some amazing strengths. There<br />
is nothing that we cannot achieve and I will<br />
challenge anyone who dares to disagree!<br />

R: Well said I completely agree. So are you back from<br />
the states full time now? Is it nice to be back?<br />
do for the next series and how we can<br />
make it work.<br />
I love being back in the UK, I really do. I mean, I have<br />
the restaurant in the states and I go back and tour,<br />
which is always great. I used to go back and forth more<br />
before I had Anaíya, but now its just not feasible with<br />
the time zones. I was constantly running her between<br />
here, LA and New York and it was confusing her eating<br />
times and routine. It was better to just try and limit it.<br />
R: I guess some stability it probably quite nice right<br />
now after all that?<br />
Yes! It is! Having Anaíya forced me to be just<br />
comfortable, I had no stability at all since the age of 17,<br />
now I am like, I have a bern I have to have a routine, so<br />
its been very nice.<br />
R: There’s been talks of you starring in the Channel 4<br />
comedy Derry Girls… any truth in those rumours?<br />
Yes! There absolutely is! I have been talking to the<br />
writer so we are just trying to figure out what we can<br />
R: I bet it will be nice to be back in<br />
Ireland?<br />
I love Ireland, it still is and always will<br />
be home. It’s so easy to get there from<br />
London. I am in Ireland regularly; I am<br />
never to far away [laughs]perspective,<br />
it’s given me strength and also with<br />
the physical side of what we do, it’s<br />
helped me.<br />
R: Any plans for another album?<br />
Definitely, I mean this is my 15 th year,<br />
and I hope that I can continue for<br />
another 16 years! That would be great!<br />
R: Well thanks so much for your<br />
time Nadine and best of luck with<br />
everything to come.<br />

Exam Stress<br />
Taking an exam or test, be it at<br />
work, school or university can be<br />
quite daunting.<br />
It’s been few years since my university days,<br />
but I still remember the stress and anxiety I had<br />
before taking my exams. Don’t get me wrong,<br />
a little stress and anxiety before an exam or test<br />
can be a good thing because it can help keep<br />
you focused and motivated to do the work that<br />
needs to be done. But too much can lead to<br />
feeling overwhelmed, panicked and potentially<br />
underachieving in the exam.<br />
So here are a few tips to help you manage any<br />
stress or anxiety you <strong>may</strong> have relating to any<br />
work, school or university exams or assessments:<br />
BREATHING: A good breathing technique like<br />
7/11 (see my blog post ‘How to Deal with Anxiety’<br />
for further details) is worth its weight in gold<br />
when it comes to helping you relax because it<br />
induces the bodies relaxation response and it’s so<br />
discreet, it can be done almost anywhere.<br />
REGULAR BREAKS: Take regular breaks,<br />
you wont be as efficient if you revise or work for<br />
hours on end.<br />
Generally, studying in roughlyone hour blocks<br />
is suggested to be the most effective way of<br />
working, then take a break.<br />
EXERCISE REGULARLY: Exercising releases<br />
various important hormones, such as serotonin,<br />
dopamine and norepinephrine, all of which<br />
contribute towards helping you stay focused,<br />
keeping your energy levels and mood up, and<br />
keeping your stress levels down.<br />
SLEEP: The benefits of getting a good quality<br />
night’s sleep are numerous, but not getting<br />
enough sleep can have a negative effect on your<br />
memory as well as increase your stress levels, so<br />
try and avoid those ‘all nighters’ and get a good<br />
nights sleep.<br />
REMEMBER: Exam success isn’t just about<br />
being knowledgeable and knowing the right<br />
material; your state of mind also plays a big part.<br />
Having the ability to stay calm, relaxed, confident<br />
and focused can all play a vital role in helping you<br />
achieve your full potential.<br />

Anchor this movement by strengthening the<br />
left leg and pressing the outer heel firmly to<br />
the floor. Rotate the torso to the left, keeping<br />
the two sides equally long. Let the left hip<br />
come slightly forward and lengthen the<br />
tailbone toward the back heel.<br />
4. Rest your right hand on your shin, ankle, or<br />
the floor outside your right foot, whatever is<br />
possible without distorting the sides of the<br />
torso. Stretch your left arm toward the ceiling,<br />
in line with the tops of your shoulders. Keep<br />
your head in a neutral position or turn it to the<br />
left, eyes gazing softly at the left thumb.<br />
5. Stay in this pose for 30 seconds to 1 minute.<br />
Inhale to come up, strongly pressing the<br />
back heel into the floor and reaching the top<br />
arm toward the ceiling. Reverse the feet and<br />
repeat for the same length of time to the left.<br />
Beginner’s Tip:<br />
Brace your back heel or the back of your torso<br />

So the sun has finally come out after a<br />
long, wet and miserable winter and I have<br />
noticed an increasing number of people<br />
out running and cycling.<br />
Evenings are getting lighter, our moods are improving<br />
and we all want to catch a little bit of sun, so now is<br />
the perfect time to get active outdoors!<br />
May is ‘National Walking Month’, and if you live a<br />
relatively sedentary life, walking is the perfect place<br />
to start. You could perhaps walk to work, or if that’s<br />
not an option, you could park a little further away<br />
than normal. You could take the stairs rather than the<br />
escalators, or you could walk your dog a little more.<br />
Studies have proved two things, 1. Exercise is improves<br />
our mood through release of ‘feel good’ endorphins,<br />
and obviously our health for a number of reasons and<br />
2. Controlled sun exposure improves our mood, as<br />
well as our health. So why not combine the two?<br />
Personally I have just signed up to join a Canicross<br />
club, which is a running club for owners and their four<br />
legged friends! I’m using this to kick-start my running<br />
season, as well as meet new people and socialise my<br />
dog a little more.<br />
There are a number of social clubs you could get<br />
involved with over summer, like boot camps, village<br />
cycle clubs and park runs. Park runs are a great way to<br />
get out in a welcoming environment and run or walk<br />
at your own pace with a friendly group of locals!<br />
A little added bonus, is you’ll burn more calories when<br />
it’s hot, but remember to stay hydrated and always<br />
listen to your body, if you feel like it’s too much then<br />
take a rest, it is easy to over work during summer.<br />

Celebrating local talent is an exciting<br />
collaboration between one of the most prolific<br />
entertainers of the past 30 years, Aled Jones,<br />
and the young talent of Bury St Edmunds’<br />
Voice Squad as well as performances from the<br />
St Edmundsbury Singers, The Edmund Octet<br />
and Suffolk Philharmonic Orchestra.<br />
Music is not the only art form on display. In<br />
the abundance of brilliant acts, literary legend<br />
and one of Britain’s most remarkable poets<br />
Benjamin Zephaniah returns to the stage with<br />
his first tour in eight years, the hilarious Roger<br />
McGough will be setting his wit and wordplay<br />
to the musical sound of Little Machine<br />
and direct from Sadler’s Wells the festival<br />
welcomes The Tap Pack for a cocktail of highenergy<br />
tap dancing entertainment.<br />

Food & Drink Festival set to delight the taste buds...<br />
Beccles town centre is set to be<br />
transformed as the Beccles Food<br />
and Drink Festival 20<strong>18</strong> returns for<br />
another gastronomic extravaganza.<br />
The free event, which runs from 10am till<br />
4pm on Saturday 26 th May, is following<br />
a tried and tested<br />
formula, and upwards<br />
of 50 stalls will be<br />
selling a variety of<br />
raw and cooked food,<br />
preserves, pickles, oils<br />
and other condiments,<br />
confectionery, and a<br />
variety of alcoholic<br />
and non-alcoholic<br />
drinks.<br />
Among local producers, Chet and<br />
Waveney Vineyard will be making their<br />
first appearance at the event, while from<br />
further afield The Chutney Barn, Curry<br />
Pie and Mr Bees will be attending.<br />
In addition to the town centre, stalls will<br />
be nearby in and around St. Michael’s<br />
Church, and also in the Public Hall, where<br />
East Coast College will be running a<br />
Cookery Theatre throughout the event,<br />
consisting of a variety of<br />
cookery demonstrations<br />
and talks.<br />

Summer<br />
Sesame<br />
Salmon...<br />
Try this Asian-inspired salmon<br />
supper with a nutty sesame dressing,<br />
crisp veg and comforting sweet<br />
potato mash. It’s healthy, low-calorie<br />
and rich in omega-3...<br />
1. Heat oven to 200C/<strong>18</strong>0 fan/ gas 6 and<br />
line a baking tray with parchment. Mix<br />
together 1/2 tbsp sesame oil, the soy,<br />
ginger, garlic and honey.<br />
2. Put the sweet potato wedges, skin and<br />
all, into a glass bowl with the lime wedges.<br />
Cover with cling film and microwave on<br />
high for 12-14 mins until completely soft.<br />
3. Meanwhile, spread the broccoli and<br />
salmon out on the baking tray. Spoon over<br />
the marinade and season. Roast in the<br />
oven for 10-12 mins, then sprinkle over the<br />
sesame seeds.<br />
Ingredients<br />
• 1 ½ tbsp sesame oil<br />
• 1 tbsp low-salt soy sauce<br />
• thumb-sized piece ginger, grated<br />
• 1 garlic clove, crushed<br />
• 1 tsp honey<br />
• 2 sweet potatoes, cut into wedges<br />
• 1 lime, cut into wedges<br />
• 2 boneless skinless salmon fillets<br />
• 250g purple sprouting broccoli<br />
• 1 tbsp sesame seeds<br />
• 1 red chilli, thinly sliced<br />
(deseeded if you don’t like it too hot)<br />
4. Remove the lime wedges and roughly<br />
mash the sweet potato using a fork. Mix<br />
in the remaining sesame oil, the chilli and<br />
some seasoning.<br />
Divide between plates, along with the<br />
salmon and broccoli.<br />

The Wines<br />
of Romania and<br />
Bulgaria<br />
Both of these countries have been making wine for<br />
millennia. Classed as East European.<br />
BY ‘WINE BUFF’ FRED FISHER<br />
Imports to the UK have varied from high to low,<br />
brought about by the stiff competition from<br />
New World, such as countries like Australia, New<br />
Zealand and Chile, and have suffered as a result.<br />
They are now producing more wine with<br />
affordable prices especially compared with other<br />
European countries like France, Germany and<br />
Spain.<br />
Romania...<br />
One of the oldest wine producing regions with<br />
viticulture dating back more than 6000 years.<br />
Being close to the Black Sea the country has a<br />
suitable climate, geography and soils to produce<br />
good quality wine. Up to the phylloxera crisis in<br />
the <strong>18</strong>80’s each region had its own grapes that<br />
provided generic wine. Wine had become the<br />
traditional Romanian beverage. An improvement<br />
in its fortunes came about by introducing French<br />
grape varieties while retaining many of their<br />
indigenous varieties. Merlot, Cabernet Sauvignon,<br />
Pinot Noir, Chardonnay, and Sauvignon Blanc<br />
being the main ones. Currently Romania has<br />
<strong>18</strong>7,000 hectares of vines which ranks it about<br />
sixth in Europe and thirteenth in the world.<br />
Main Regions..<br />
Can be seen as 8 distinct zones...<br />
Transylvania - A high central region producing<br />

mainly white wines, the most important being<br />
Tirnave, wines similar to Mosel in Germany.<br />
Crisana - To the west and influenced by the<br />
Adriatic producing crisp white wines.<br />
blight in the late <strong>18</strong>80’s affected it and led to a lot<br />
of replanting. The French were consulted about<br />
what to replant. It was agreed that several local<br />
varieties such as the red Mavrud, Pamid, Gamza<br />
(Kadarka) and white Miskat (Muscat) be retained.<br />
Silvania - North of Transylvania and moderate<br />
climate.<br />
Moldavia - Cotnari one of the oldest regions.<br />
Famous for sweet wines.<br />
Muntenia - North of Bucharest with the area<br />
called Dealul Mare, this provides good red wines<br />
using French varieties.<br />
Oltenia - West of Bucharest and dating from<br />
Roman times. The Sauvignon Blanc<br />
does well here.<br />
Banat - Near Serbia and the<br />
Danube it has a mixture of local<br />
grapes and imported ones.<br />
Dobrudja - Near the Black Sea<br />
with Murfatler being the most<br />
important part. Many French<br />
varieties making good wine as well<br />
as a supply of table grapes.<br />
Indigenous grapes - Many are still used mainly<br />
Feteasca, Rkatsiteli and Grasa among many<br />
others.<br />
Bulgaria...<br />
Wine has been made in Bulgaria for at least 3000<br />
years. It was probably mostly sweet wine and<br />
sold to the Greeks. Even during the crusades it<br />
was spared because of its wine. The phylloxera<br />
The Ga<strong>may</strong> Noir and Syrah from France were also<br />
planted. The Bulgarian Wine Institute was formed<br />
in Pleven in 1902. The 20’s and 30’s saw the<br />
growth co-operatives but with Communist rule in<br />
the 60’s and 70’s much export wine was<br />
mass produced creating a plonk regime.<br />
In 1989 with the fall of communism<br />
privatisation ensued leading to better quality<br />
wine production.<br />
Main Regions...<br />
There are 5 viticultural Regions...<br />
The Danubian Plain - Good conditions<br />
for Muscat, Cabernet Sauvignon,<br />
Merlot, Chardonnay, Pamid and the<br />
Gamza.<br />
Black Sea - Riesling, Muscat,<br />
Sauvignon Blanc and Gewurztraminer<br />
are grown here.<br />
Rose Valley - The Sungurlare Valley is famous<br />
for a red Misket grape variety.<br />
Thracian Lowland - A temperate climate and<br />
adequate rainfall produce good red wine from<br />
Mavrud, Merlot, Cabernet Sauvignon, Muscat and<br />
Pamid grapes.<br />
Struma River Valley - In the South West. From<br />
the historical region of Macedonia with some<br />
local grapes and Cabernet Sauvignon and Merlot.<br />
Conclusions...<br />
Give them both a try as they historically, have been in the top league of wine producers.<br />
Especially look for some of the local grape varieties such as Gamza, Feteasca, Mavrud and<br />
Rkatsiteli. I have tasted some fine Pinot Noir as well.<br />

Brush the aubergines with the olive oil;<br />
season.<br />
• Griddle in batches for 2-3 mins each<br />
side until charred, then remove from the<br />
pan and leave to cool.<br />
Summer Sizzlers...<br />
Inspired by the fragrant herbs and spices<br />
of the Middle East, these easy aubergine,<br />
mint and pomegranate skewers make a<br />
great vegan and gluten-free canapé for a<br />
cocktail party or festive gathering.<br />
• In a bowl, mix the za’atar, 2/3 of the<br />
pack of pomegranate seeds and 1/2 x<br />
pack chopped mint leaves, then scatter<br />
over one side of the aubergine slices and<br />
roll up. Secure with a cocktail stick.<br />
• Drizzle over the tahini, then scatter over<br />
the remaining pomegranate seeds, extra<br />
za’atar and mint.<br />

• Once home, place your fillet skin down<br />
on an absorbent piece of tissue paper and<br />
season well. Keep in the fridge until needed.<br />
• Make your olive dressing by adding the<br />
chopped ingredients together with the olive<br />
oil and seasoning, reserve.<br />
• Cook the potato gnocchi for 4 to 5<br />
minutes in boiling water with a pinch of salt,<br />
drain and keep aside.<br />

Method<br />
• Buy the Seabream from the fishmonger<br />
and ask for your fish to be filleted.<br />
• Pour the tomato Passata in a sauce pan<br />
and add the 1/2 glove of garlic (finely<br />
chopped) the white wine and one pinch of<br />
salt, reduce on a low heat for 5 minutes.<br />
• Pour some oil and add a 20g of butter into<br />
a non-stick frying pan, place on a medium<br />
heat and wait until the butter is completely<br />
melted.<br />
• Add the fish to the pan skin down and<br />
cook for 4 to 5minutes, turn the fillet over<br />
and cook for a further 2 minutes.<br />
• Add the potato gnocchi to the tomato<br />
sauce and reheat. Once hot, place the<br />
gnocchi at the center of the plates, place<br />
the Seabream fillet on top and serve with<br />
the black olive dressing.<br />

A POTTERS PARTY<br />
Bounce Magazine were excited to be invited to one of the All<br />
Inclusive Party Weekends at Potters Resort in Hopton...<br />
On a bright summers<br />
day we were grateful<br />
to be heading towards<br />
the coast of Hopton<br />
near Gt Yarmouth.<br />
modern, spacious and could accommodate up to four people<br />
with a good amount of outside space, perfect for relaxing in<br />
the sun.<br />
All inclusive drinks started from 6pm each evening.<br />
The nice thing about this is was that once you left the<br />

was a real buzz in the air.<br />
We weren’t really sure what to<br />
expect from an all inclusive drink<br />
weekend, though we were soon to<br />
find out.<br />
bungalow, you didn’t have to worry about taking out your purse<br />
or wallet, everything was covered and with a simple show of<br />
your wristband... you could order any drink you desired.<br />
When we arrived at dinner in the main restaurant there were<br />
already two bottles of wine waiting for us, a sign of things to<br />
come!<br />
We were staying in one of the<br />
resorts bungalows, which were<br />
The three course meal was served extremely quickly and our<br />
waitress, Hannah, was very attentive. With two vegetarians in<br />

our group, there were some great options on the<br />
menu including a ‘Ricotta Tortellini’ and ‘Sweet<br />
Potato Curry’ followed by dessert.<br />
Take That, taking us through the 80s, 90s and<br />
noughties, we simply had to join in and dance, and<br />
that we did until the early hours of the morning.<br />
Our other guests enjoyed Sticky Ribs and a<br />
Carvary, which was self-service.<br />
When dining, you can never get lost as you<br />
have your own dedicated tables. We all know as<br />
creatures of habit it is nice to be in the same spot,<br />
so for us this was a bonus!<br />
Once worn out, on hand to help us sober, up was<br />
a wonderful Chilli, served in the Terrace. Much<br />
needed!<br />
As we arose with cloudy heads, the next day we<br />
wandered over to breakfast and discussed the day<br />
ahead.<br />
The highlight of our visit had to be the Potters<br />
Theatre Company.<br />
The quality of the acts were fabulous, from the<br />
Michael Jackson impersonator to Boy George and<br />
Over Eggs Benedict and a strong coffee, we<br />
decided our next stop was riffle shooting.<br />
Little did the staff member know, one of our<br />
team was a trained shooter, and of course he<br />
shot every bullseye on the target!<br />

The beauty of being on a Resort such as Potters<br />
means that you have the independence to create<br />
your own fun as well as partaking in planned<br />
activities.<br />
So whilst still in full competition mode, we headed<br />
over for a short session of mini golf. I think it<br />
is safe to say we weren’t quite as good at this<br />
activity!<br />
There is never a dull moment at this resort, the<br />
guests are at the heart of it, we loved taking<br />
part in the mid-morning quiz and only got three<br />
questions wrong!<br />
To make up for a heavy night, we hit the Palms<br />
Health & Fitness centre on site for a quick<br />
lunchtime workout. A full fitness suite is available<br />
along with a pool, whirlpool, sauna and steam<br />
room.<br />
After a shower and a short chill out in the<br />
bungalow, I then stopped at the Aphrodite Beauty<br />
Studio for a treat little treat and had a 30 minute<br />
back, shoulder and neck massage.<br />
My therapist Anna was lovely, very friendly and<br />
left me feeling super relaxed.<br />
Before dinner we went for a walk on the beach,<br />
which is situated right on the edge of the resort.<br />
On our second night we booked in to The Black<br />
Rock Grill.<br />
It’s a fixed price menu where you get to cook your<br />
own food on your very own volcanic ‘Hot Rock’.<br />

No oils and fat are used, so it is a really healthy<br />
way to dine, plus for the price, things keep<br />

Dirty<br />
Martini<br />
An all time classic…<br />
The dirty secret behind the Dirty Martini? A<br />
dash of olive brine brings a hint of<br />
umami to the classic Martini.<br />
Method<br />
1. Pour the vodka, dry vermouth and<br />
olive brine into a cocktail shaker with a<br />
handful of ice and shake well.<br />
2. Rub the rim of a martini glass with<br />
the wedge of lemon.<br />
Ingredients<br />
• 70ml/2fl oz vodka or gin<br />
• 1 tbsp dry vermouth<br />
• 2 tbsp olive brine<br />
• 1 wedge of lemon<br />
• 1 green olive<br />
3. Strain the contents of the cocktail<br />
shaker into the glass and add the olive.<br />
Don’t forget...<br />
Have it shaken not stirred, James bond<br />
was right... Stirring creates a cold, taut<br />
surface free from ice shards. Shaking is<br />
supposedly good to add antioxidants.<br />

Bounce Magazine’s Rachel Ducker speaks to singer songwriter,<br />
Frank Turner, about his new album and tour...<br />
A singular artist and songwriter of<br />
considerable talent, Frank Turner is able to sell<br />
out arena tours, Alexandra Palace and four<br />
consecutive nights at the Roundhouse but still<br />
walk down Holloway Road untroubled.<br />
Turner recently announced the Be More Kind<br />
World Tour, which will begin in April, with<br />
its first leg playing to over 200,000 people<br />
across the UK, the USA, Europe, Canada,<br />
Australia and New Zealand, taking them<br />
through to Christmas.<br />

up with Frank to find out<br />
more about the singer<br />
songwriter and his<br />
upcoming tour.<br />
R: Hi Frank, how’s it<br />
going?<br />
I’m great thanks!<br />
R: I would love to know a little more about<br />
your background before you got on the<br />
music scene and how you first started<br />
playing music?<br />
Well, I was raised in Hampshire by my folks,<br />
and had a relatively middle class upbringing.<br />
My parents are quite conservative so their<br />
experience of music was generally classical<br />
music and church music, which never did<br />
much for me. I got into music around 10 years<br />
old and I was at a mates house, and I will<br />
confess to the fact we were playing games,<br />
and he had an Iron Maiden poster on his wall,<br />
which I thought was very cool. My friend told<br />
me it was a band and it never really occurred<br />
to me that music could be that cool. So I ran<br />
off and I got a copy of ‘Killers’ by Iron Maiden<br />
on cassette and since that day I have not<br />
looked back! It was a light switch day, do you<br />
know what I mean?<br />
R: Touching on your education,<br />
is it true you went to school with<br />
Prince William at Eaton?<br />
I was there on a scholarship, yes.<br />
I took an exam when I was a kid, I<br />
can’t tell you what the exam was<br />
about, but I did it and passed. I<br />
am grateful for the education that<br />
I received but felt extremely out<br />
of place socially there. It was all a<br />
very long time ago, I am 36 now so<br />
its not something that crosses my<br />
mind all of the time.<br />
R: Your real name is actually Francis, how did<br />
you become Frank?<br />
Somebody at school one day called me<br />
Frank and given the fact the other kids at<br />
school used to beat me up for having a ‘girls<br />
name’, it was kind of an escape from that, so<br />
I went along with it. At the time I was quite<br />
impressed about being referred to as Frank!<br />
R: Does your mum still call you Francis?<br />
Oh she certainly does! Particularly if I have<br />

misbehaved! [laughs]<br />
R: You were in a band previously called<br />
Million Dead, do you miss being a band or<br />
are you happy solo?<br />
I am happy in a band when it’s a band. I was<br />
really proud of the things we did in that band;<br />
the problem was that the wheels fell off it<br />
happened in a pretty undignified way. We<br />
fell out with each other and forgot how to be<br />
friends and at the end, I felt let down by the<br />
other people, as I wanted to do it forever and<br />
ever! In retrospect now, I can accept my role at<br />
the end of the band as much as anyone else’s,<br />
one of the reasons I went solo is because<br />
I didn’t want to have to depend on other<br />
people, which meant I wasn’t vulnerable to<br />
other peoples decisions.<br />
R: I was introduced to your music by my<br />
partner a few years ago and when I first<br />
listened to a few of the tracks the lyrics<br />
really got to me!<br />
Thank you!<br />
R: They make me quite teary, in particularly<br />
‘Tell Tale Signs’ and ‘Plain Sailing Weather’,<br />
where do you draw inspiration for in your<br />
lyrics?<br />
Lyrics just kind of show up in my head, I was<br />
always quite literate. With these songs, I was<br />
trying to write in the most raw and honest<br />
fashion I could and that was helped and<br />
inspired by the fact that the major relationship<br />
in my life at the point had fallen apart, so I<br />
was writing about myself and my own short<br />
comings.<br />
are all almost all written from the point of view<br />
of the victim. It was entirely my fault that the<br />
relationship fell apart and I thought it would<br />
be interesting to try and write that record as<br />
at the time I couldn’t see anyone else who had<br />
done that?<br />
R: Your renowned for your honest, hard<br />
hitting words, when writing how do you hope<br />
people to interpret what you are trying to<br />
put out there?<br />
I think the interpretation is one of the most<br />
interesting parts, but I also think that what<br />
makes it interesting is that its not driven by<br />
me. Whatever other people take away from<br />
it is their affair and I find it interesting, but I<br />
can’t direct that. When people connect with<br />
songs that are that raw and that personal it is<br />
almost a relief, as you put your soul out there.<br />
If somebody else says, “Yeah, I get it man”<br />
that feels pretty good. In essence I feel that<br />
you have to write for yourself, otherwise it<br />
would be dishonest.<br />
R: I hope you don’t mind me saying but your<br />
relation a collection of your greatest hits…<br />
you seem very young to be doing that!<br />
[laughs]<br />
R: Either you’ve had an amazing career and<br />
you have loads of material or you’re older<br />
than you say you are!<br />
[laughs] Well I am 36 years old, I am not a<br />
man that has a stage age, I have known people<br />
over the years who have had stage ages and I<br />
am still laughing about it now, because really<br />
who gives a toss!<br />
R: Sorry to hear you had such a rubbish time<br />
Frank, as we can definitely here that through<br />
the lyrics…<br />
Haha! Actually the one thing about this record<br />
was I was trying to write a break up song from<br />
the point of view of the bad guy. There are<br />
lots of break up records in the world and they<br />
R: Your 8th studio album is to be released<br />
in May ‘Be More Kind’ can you tell us more<br />
about this? Will it be any different from your<br />
past material or something different?<br />
Part of the reason that we did ‘Songbook’<br />
my greatest hits, before Christmas is that I<br />
wanted to draw a bit of a line. Its an attempt<br />

to get out of my comfort zone and<br />
do something I haven’t done before<br />
musically, so I am experimenting with<br />
a lot of new approaches, different<br />
technology, I am thinking a lot more<br />
about soul music and pop music than<br />
I have before. It’s definitely an attempt<br />
to not repeat myself, shall we say? am<br />
still laughing about it now, because<br />
really who gives a toss!<br />
R: You embark on your mammoth<br />
‘Be More Kind Tour’ stopping by us<br />
in Cambridge in April and Norwich<br />
in May what can we expect from the<br />
show?<br />
Participatory rock and roll explosion<br />
shall we say, we are obviously going to<br />
be playing quite a lot of new material.<br />
I have always tried to include old<br />
material in my sets as well; I don’t<br />
want to be one of those bands that<br />
stop playing the old songs.<br />
R: What has been the biggest<br />
moment of your career so far?<br />
The highlight for me is that I have a<br />
career still in my late thirties, when I<br />
was a kid I told everyone I was going<br />
to do this and everybody laughed… so<br />
f*ck them!<br />
R: What’s the secret to your<br />
longevity?<br />
Hahaha! I like to think I have been<br />
true to my artistic instincts and also<br />
blessed with a creative head, I get<br />
bored very easily and I like to be<br />
active, so I find myself in a creative<br />
form of ADHD.<br />
R: Well thanks for your time Frank we<br />

I’m not exactly one to have a<br />
monthly clear out. But I moved<br />
to a new house last month<br />
and it seemed like the perfect<br />
opportunity to access the<br />
situation!<br />
After deciding what was being left behind and what<br />
was coming on the new adventure- it was time to think<br />
of some savvy storage techniques.<br />
Shoe Bins...<br />
Don’t panic, this has nothing to do with throwing away<br />
shoes- PHEW. No, quite the opposite.<br />
This is just your very own treasure chest of shoes.<br />
Shoe racks have always been a classic option, but a<br />
shoe bin means they don’t have to be on display, for<br />
example if you didn’t want shoes as ornaments in your<br />
hallway.<br />
Replace the rack with a stylish chest. You’ll also find<br />
you can fit a lot more pairs in. Obviously the size of the<br />
chest is up to you.<br />

Hidden Hooks...<br />
For me, this has become<br />
a little bit of an obsession.<br />
However, you don’t have to<br />
go quite as far as a hook on<br />
the back of each door.<br />
Self-adhesive hooks are<br />
very handy to place on<br />
the inside of wardrobe<br />
doors, airing cupboards,<br />
cupboards under the stairs<br />
or kitchen cupboards.<br />
Whether your hanging up<br />
another jacket or a tea<br />
towel the extra place is<br />
helpful. The little hooks cost<br />
just a few pounds.<br />
Under the Bed...<br />
This doesn’t mean just shove it under the<br />
bed… out of sight out of mind? Nope. A<br />
step up from this is what I like to call my<br />
under bed filing system.<br />
I have some large plastic storage boxesnot<br />
at all expensive, that help me out when<br />
it comes to seasonal rotation of clothes.<br />
For example, from September last year to<br />
now, I didn’t have much use for my summer<br />
dress collection.<br />
So instead of leaving them hung up in my<br />
wardrobe, taking up space, they have been<br />
safely rolled up and stored under the beds<br />
in the boxes. Ready for me to pull out any<br />
day now and replace them with my winter<br />
coats- yay!<br />
I always have found the minimalist trend a<br />
hard one to stick too, but clever storage is<br />
a step in the right direction!<br />

The First Pedestrianised<br />
Shopping Street<br />
The first shopping street<br />
to be pedestrianised in<br />
the UK took place on 17<br />
July 1967.<br />
Norwich was chosen<br />
because of the ‘Traffic in<br />
Towns’ report, which had<br />
been produced by Sir Colin<br />
Buchanan for the Ministry of<br />
Transport in 1963. Originally<br />
three cities were looked at<br />
but Norwich came out on<br />
top by remaining a historical<br />
area with a reduced access<br />
for cars.<br />
To understand how and why<br />
London Street was chosen<br />
we have to go back to 1964<br />
when the Street closed for<br />
six weeks because of a sewer<br />
collapse. A majority of shop<br />
owners were concerned<br />
that their businesses would<br />
suffer, but in fact it had the<br />
opposite and sales were up.<br />
A year later business owners<br />
voted 2:1 in favour of parts<br />
of the street being closed<br />
between 9am to 6pm. During<br />
the 1700s when the street<br />
was known as Cockey Lane<br />
problems with pedestrians<br />
was a daily problem with my<br />
injuries caused by people<br />
and horses. The Watch<br />
Committee stated that the<br />
good people of Norwich<br />
would not accept an area<br />
where vehicles would not be<br />
permitted.<br />
After two members of the<br />
Traffic and Town Planning<br />
Committee visited four<br />
European Cities a report<br />
called ‘Foot Streets in Four<br />
Cities’ was produced and<br />
stated that there should be a<br />
three-month period to make<br />
the area vehicle free, but<br />
there were many objections<br />
but it did not stop the trial<br />
period taking place and the<br />
Lord Mayor tied a white<br />
ribbon at the south end of<br />
the street to state that no<br />
further vehicles could gain<br />
entrance and the start of the<br />
pedestrian area.<br />
All complaints soon<br />
disappeared as people were<br />
soon seen to be enjoying<br />
sitting outside cafés drinking<br />
hot drinks on a street that<br />
once thundered with the<br />
sound of traffic.<br />
Other routes had to be taken<br />
for drivers and nearby Lower<br />
Goat Lane and Dove Street<br />
did report that there was<br />
far more traffic than before<br />
and in June 1968 Lower Goat<br />
Lane joined London Street<br />
in being Pedestrianised and<br />
Dover Street became opened<br />
at certain times.<br />
Parliamentary Secretary at<br />
the Ministry of Housing Lord<br />
Kennet hailed the scheme<br />
a success and before the<br />
end of 1967 Perth, Australia<br />
adopted the London<br />
Street idea, which became<br />
permanent in 1968.<br />
The first three years of the<br />
scheme showed that there<br />
had been an increase of<br />
45% of pedestrians visiting<br />
and it paved the way for<br />
many streets in the UK to<br />
adopt the scheme and it was<br />
featured in the 1968 Rank<br />
film ‘Look at Life’.<br />
Since 1969 and continuing<br />
today, Central Area Traffic<br />
Plan have been working to<br />
remove traffic from all of the<br />
City of Norwich.<br />

This month, I am dedicating my column to my late Nana,<br />
as when she was young, she was the May Queen. …<br />
She loved reading my articles, she was my<br />

Psoriasis<br />
One of the most popular questions we’re asked is<br />
‘how to I get rid of my Psoriasis?’<br />
Psoriasis is a skin condition marked by red, itchy,<br />
scaly patches. It’s technically the over duplication<br />
of cells. However it can be so much more to many<br />
people and can affect their self confidence.<br />
Unfortunately there is no miracle cure but there<br />
are lots of natural ways that can help you manage<br />
the condition and significantly reduce the<br />
appearance of Psoriasis, hopefully to a point where<br />
you don’t even notice it.<br />
Types of Psoriasis...<br />
There are many different types of Psoriasis<br />
including Guttate, Inverse, Pustular, Erythrodermic,<br />
Psoriatic arthritis and Plaque Psoriasis which is<br />
the most common. It usually appears as red or<br />
pink plaques of raised, thick, scaly skin. However<br />
it can also appear as small flat bumps. It doesn’t<br />
sound pleasant I know and can be painful and<br />
uncomfortable in many cases.<br />
Most commonly affecting the skin on the elbows,<br />
knees, and scalp, although it can appear anywhere<br />
on the body. I’ve often had small patches on my<br />
eyebrows as it tends to appear in areas with less<br />
flesh.<br />
Do you have Psoriasis?...<br />
The obvious choice when you find unusual<br />
patches on your skin is to visit the doctors and<br />
we absolutely advise you to get a professional<br />
diagnosis. However don’t feel that a prescription<br />
is your only option as the creams offered can<br />
be effective for a short time but are often filled<br />
with steroids which will actually thin the skin,<br />

potentially causing more problems. There are in fact many<br />
natural products and ingredients that can help just as well<br />
and often, dare I say it, better!<br />
Things to consider...<br />
There are lots of ways you can improve your skin and it’s<br />
good start with the basics. We often overlook the products<br />
we wash with daily; shower gel, bubble bath, shampoo,<br />
hand wash. All of which <strong>may</strong> contain SLS (Sodium Laureth<br />
Sulfate) which is a foaming agent often found in cleaning<br />
products and detergents but frequently found in our<br />
cleansing toiletries in quite large quantities.<br />
This chemical is known for drying out the skin and can<br />
irritate Psoriasis. Try to choose a natural option - I opt for<br />
the Childs Farm range - don’t be fooled that it’s just for kids<br />
- us adults can use it too and it’s super mild and nourishing<br />
for your skin.<br />
Moisturising your skin is very important when you have<br />
Psoriasis creams are great but do consider mild pure oils<br />
such as Argan Oil. It’s repairing benefits are unrivaled,<br />
packed full of nutrients including Omegas 3,6 and 9, it<br />
actually has the highest content of Vitamin E for an oil in<br />
the known world.<br />
It works by balancing out the skin and encouraging it to<br />
repair itself which can reduces the over duplication of cells,<br />
caused by Psoriasis, in many cases.<br />
How I manage my Psoriasis?...<br />
I know that my body gets used to just<br />
one set of products so I do mix it up. I use<br />
the Childs Farm hair and body wash or an<br />
avocado hard soap. Avocado is amazing for<br />
Psoriasis, even eating it will help heal your<br />
body from the inside. I regularly moisturise<br />
with Argan Oil too - it’s perfect for all areas<br />
of my body including my scalp.<br />
Stress can be a big factor in the severity of<br />
a Psoriasis flare up so I try to ensure I take<br />
lots of breaks to recharge my batteries.<br />
When I’m run down by body shows me.<br />
I know my Psoriasis will never be totally<br />
gone but by making different choices<br />
it’s now hardly noticeable on my skin. It’s<br />
important to remember the products that<br />
work for me <strong>may</strong> not be right for you but<br />
the greatest piece of advice I could give is<br />
to go natural and chemical free with your<br />
skincare choices. It’s the best thing I ever<br />
did.<br />

With warmer weather finally here,<br />
we can start contemplating long<br />
lazy summer days spent outside.<br />
Gardens bursting back into life after a dull winter can<br />
really lift our spirits and with that in mind, a little bit<br />
of effort now, or even a complete garden overhaul<br />
will pay dividends right through the coming months.<br />

2. At this stage it’s useful to decide on the<br />
style that you want your garden to reflect;<br />
whether rustic or modern for example, and<br />
work everything around achieving your<br />
finished ‘look’ from planting decisions to<br />
materials.<br />
3. Deal with the hard landscaping elements<br />
first. Deciding on a materials palette is helpful<br />
so that the garden ends up looking unified,<br />
especially if you are working in stages.<br />
4. Choose planting that ties in with your<br />
chosen style and draw out planting plans.<br />
Many garden designers are happy to jump in<br />
at this stage to recommend planting if you<br />
are unsure. Try to avoid going to the garden<br />
centre with nothing in mind and just buying<br />
whatever is in flower. Clients often come<br />
unstuck because they don’t look at fullygrown<br />
sizes.<br />

Construction, advises as much time spent<br />
planning as possible. He says, “really<br />
understanding what you want and where<br />
are the key components to a successful<br />

outside space holistically. For a complete<br />
update, you will need a garden survey plan<br />

Avenue. Having spent days ‘mocking-up’<br />

Jenga, to finding ways of singeing plants<br />
to recreate the post-bush fired indigenous<br />
fynbos landscape, Mark is looking forward to<br />
the complex business of installing the show<br />
garden in a few short days.<br />

cannas and dahlias<br />
As bulbs fade and herbaceous<br />
borders grow in leaps and bounds,<br />
it is now clear that summer is<br />
approaching.<br />
Sowing and planting out bedding can begin,<br />
depending on regional weather variations, and you<br />
can take softwood cuttings.<br />
It’s also time to get back into the lawn mowing<br />
regime, as the lawn will be loving the warmer<br />
temperatures this month brings.<br />
Flowers<br />
Tubs can be planted up with<br />
summer bedding in milder areas.<br />
In colder areas further north or at<br />
high altitudes, it is advised to wait until<br />
early June, or until all risk of frost has passed.<br />
Divide clumps of herbaceous perennials that you<br />
want to propagate.<br />
Bamboos and clumps of bulbs or rhizomes can be<br />
divided in the same way. Cutting back clumps of<br />
spring-flowering perennials such as Pulmonaria and<br />
Doronicum can encourage a fresh flush of foliage.<br />

The kitchen is the heart of<br />
many homes.<br />
What’s more, it’s usually at the centre of<br />
family gatherings and social occasions.<br />
Over time though, dents accompany<br />
scratches, doors don’t fit like they used<br />
to, and the worktops have seen better<br />

And one evening, while taking stock<br />
of your once lovely kitchen, you notice<br />
the tiles. Oh dear. Did you really choose<br />

And let’s not even talk about the<br />
grouting or the impossible to remove<br />

run at a whisper and it really does feel<br />
like the 21st century has arrived. And all<br />
this while saving space for the easy to<br />

Moving on then, time really does fly<br />
doesn’t it? And surely it makes sense<br />
that this all-important domestic<br />
rendezvous point gets an occasional<br />
facelift or refit?<br />
It isn’t even about new for the sake<br />
of vanity, or even keeping up with the<br />
Jones’ (although their kitchen is just too<br />
fabulous, darling!).<br />
The latest kitchen designs afford the<br />
use of just about every available inch of<br />
space, with innovative storage features.<br />
A bit like Heineken, refreshing the parts<br />
older kitchens can’t reach!<br />
From granite to quartz to new<br />
composite materials, today’s kitchen are<br />
streets ahead of designs even just a few<br />
years old.<br />
Breakfast bars are now islands, with<br />
integrated appliances such as hobs<br />
with their statement extractor fans<br />
suspended above.<br />
The ever-present family kettle is<br />
becoming redundant with the popularity<br />
of Boiling Water Taps, and all this with<br />
electrical outlets and charging points<br />
aplenty to gadgets, phones and other<br />
essentials.<br />

In last September’s edition of Bounce<br />
I wrote about my first foray into<br />
the global fitness phenomenon that<br />
is CrossFit, I even touched on the<br />
search for the fittest athlete on earth<br />
in CrossFit’s annual championship,<br />
Now I was and still am a relative novice to<br />
the sport and therefore conceded that I<br />
probably wouldn’t be in the running for the<br />
$250,000 top prize... this year.<br />
However I was encouraged by my gym<br />
(aka ‘box’ in CrossFit terminology) gang to<br />
participate under the guise of “it’ll be fun”<br />
but despite the fact I knew I would struggle<br />
with certain elements I was keen to use this as<br />
a benchmark to kick-on my CrossFit journey.<br />
The competition starts with ‘The Open’ which<br />
is available to all entrants at all levels and<br />
comprises of 5 workouts specifically designed<br />
for the event with their details a closely<br />
guarded secret.<br />
One workout is released every Thursday night<br />
for 5 weeks, you then have until the following<br />
Monday night to complete it at a CrossFit<br />
affiliated Box under the trained eye of a<br />
CrossFit affiliated coach and then submit your<br />
score online. It all sounds quite serious but we<br />
are talking about the world championship of<br />
a highly competitive, professional, sport and<br />
you can’t help but get caught up in the hype<br />
leading up to the workout reveals.<br />

For those still contemplating CrossFit then<br />
fret not, your local box is not filled with<br />
reebok clad, dumbbell hurling hooligans, quite<br />
the opposite in fact. A CrossFit workout has a<br />
number of different scaled difficulty levels to<br />
ensure that you get the best workout for your<br />
ability until the time you are ready for the top<br />
end RX workout.<br />
The 20<strong>18</strong> CrossFit Games Open got underway<br />
with over 400,000 competitors and I was<br />
able to give a good account of myself for the<br />
first 2 workouts <strong>18</strong>.1 & <strong>18</strong>.2, the follow week<br />
however was a different kettle of fish. A work<br />
conference saw me in Sri Lanka the following<br />
week, undeterred I found the nearest CrossFit<br />
gym, 90% humidity made the going tough but<br />
thanks to the support of CrossFit Colombo I<br />
happily ticked <strong>18</strong>.3 off the list.<br />
The final two workouts saw the difficulty<br />
level rise and my capabilities fail with some<br />
technical movements but this has only served<br />
to spur me on to bigger and better things<br />
in 2019 as I am to better my 160,534th final<br />
position, which sadly isn’t enough to see me<br />
qualify for the Europe regional event in Berlin,<br />
with the top competitors there going forward<br />
to the final in Las Vegas.The Open has also<br />
helped me integrate further into my box and<br />
the wider CrossFit community, both of which I<br />
feel immensely proud to be a part of.<br />

THE DIRE STRAIGHTS EXPERIENCE<br />
The Dire Straits Experience,<br />
the acclaimed live show from<br />
former Dire Straits touring<br />
member Chris White, have<br />
announced a six-date UK tour<br />
spanning May and June 20<strong>18</strong>.<br />
Over 25 years have passed since<br />
Dire Straits disbanded, leaving<br />
a catalogue of some of the<br />
finest compositions and musical<br />
performances that the heyday of<br />
rock ever produced. If anything,<br />
their reputation has only grown<br />
with time. Record sales of more<br />
than 125 million albums continue<br />
to increase as new young fans<br />
discover the music and join<br />
the band’s massive worldwide<br />
following. A trend that is echoed<br />
in their 20<strong>18</strong> inauguration into<br />
the Rock ‘n’ Roll Hall of Fame.<br />
It was against the backdrop of<br />
a two-decade break - and an<br />
increasing demand to hear one<br />
of the most dramatic songbooks<br />
in rock history played live again<br />
– that former members of Dire<br />
Straits, Alan Clark, Chris White<br />
and Phil Palmer formed The<br />
Straits for a charity show at The<br />
Royal Albert Hall in 2011. With<br />
the prolific Knopfler enjoying an<br />
incredibly successful solo career,<br />
Alan Clark called upon the<br />
singer songwriter, Terence Reis<br />
to front the band in his absence.<br />
By the time The Straits ended,<br />
three and a half years later, the<br />
band had played more than 150<br />
shows in 25 countries around<br />
the world.<br />
Chris White said; “I have been<br />
truly amazed and, frankly,<br />
humbled by the response we<br />
have had from the fans on<br />
hearing these songs again. In<br />
Terence Reis, I think we <strong>may</strong><br />
have found the only person on<br />
the planet that is able to play<br />
and sing like Mark, but maintain<br />
his own integrity and identity.<br />
I think this is the very essence<br />
of why the fans have been<br />
so accepting of what we do.<br />
They believe in Terence as his<br />
own man. They know he is not<br />
trying to be Mark. Because of<br />
his respect for Mark, Terence is<br />
able to perform these songs in<br />
a very honest way that allows<br />
his energy and talent to come<br />
through. This is exactly what<br />
allows the performances to<br />
feel alive and fresh. Not slavish<br />
copies of a bygone time.<br />
Without Terence, this would<br />
simply not work.”<br />
And so it is that these songs, in<br />
all their ambition, grandeur and<br />
aching beauty, are once again<br />
presented live... for the fans that<br />
that have kept them alive.<br />

IN THE SPOTLIGHT...<br />
JAMIE ARCHER<br />
MUSIC<br />
Jamie Archer is a 19 year old Funk-Rock<br />
solo artist from Halesworth, Suffolk.<br />
Currently studying at the University of<br />
Lincoln he is in his first year of Media<br />
Production. Jamie grew up in a household<br />
where music was around every corner,<br />
whether it be his brothers playing their<br />
guitars or his dad reminiscing in the<br />
lounge as he blared out Chic; it was safe to<br />
say music would undoubtedly become a<br />
part of his everyday life. Up until just over<br />
a year ago Jamie was very much a listener<br />
only, however having always wanted to<br />
produce something of his own, he did just<br />
that.<br />
Jamie began working on music, with<br />
influences from his upbringing becoming<br />
the forefront for establishing a genre. With<br />
a mix of his dad’s love of 80’s disco music<br />
and family’s shared love of rock, emerged<br />
a funky but also rocky vibe. Leading up<br />
to summer 2017 he continued producing<br />
such songs and began uploading them<br />
to BBC Introducing. BBC Radio Suffolk<br />
listened to his tracks and really liked them,<br />
following which they chose to broadcast<br />
them through the summer as part of the<br />
Introducing programme and receiving lots<br />
of positive feedback from listeners.<br />
Life was going great but then it all<br />
came crashing down. Towards the end<br />
of the summer Jamie’s mum tragically<br />
passed way and his world was torn<br />
apart. Suddenly everything about his life<br />
changed and music went out the window.<br />
Jamie expresses that during his grieving,<br />
he began to find that writing lyrics and<br />
producing music about his deepest<br />
thoughts and feelings served as a coping<br />
mechanism. Furthermore in time his love<br />
for music was reborn and soon began<br />
making more and more music, leading to<br />
being featured on Radio Suffolk again.<br />
A few months ago he had the realisation to<br />
make an album, to produce a soundtrack<br />
to his heartache, a testament to his grief.<br />
He decided early on the album would be<br />
entitled ‘Silently Loud’ due to the fact these<br />
songs were a way of taking his deepest<br />
thoughts that had been silent and loudly<br />
evoking them through music. Recently he<br />
has released a single off the upcoming<br />
album, which has been broadcast on<br />
university radio and subsequently the<br />
appreciation for which has led to him to<br />
becoming the University of Lincoln Artist of<br />
the Week. Which brings us to the present<br />
day.<br />
Jamie’s debut album ‘Silently Loud’ is now<br />
out across all music platforms including<br />
Spotify and iTunes.<br />

SAFETY IN THE GARDEN...<br />
I love a good scout around the<br />
garden, especially when it’s warm.<br />
Last year, I had a rather unpleasant experience<br />
with some uninvited friends who made their<br />
home on me… bloomin’ cheek!<br />
So in light of that, here is my handy doggy guide<br />
to staying safe in the garden.<br />
TICKS AND FLEAS...<br />
The warm weather brings out undesirable pests<br />
such as fleas, ticks and mites, I know I have had<br />
them!<br />
Make sure your four legged friend is treated<br />
monthly for fleas and ticks. If you find one use<br />
the hook method or seek vet advice.<br />
DRINK...<br />
Make sure that your dog has a fresh bowl of<br />
water always available to them. They will drink<br />
more in the hot weather so you will need to<br />
check and re-fill it on a regular basis.<br />
SUNBURN & PAW BURN...<br />
Dogs love to sit in the sun but don’t let them<br />
bake themselves. If necessary, restrict access<br />
to directly sunny areas and provide plenty of<br />
accessible shady places for them to relax.<br />
Pets with light or white coats or exposed skin<br />
can get sun burnt. Use a sun block on exposed<br />

dog on hot surfaces such as pavements, tarmac,<br />
parking lots etc. as this can burn their pads. If it is<br />
too hot for the back of your hand, it is too hot for<br />
your dog’s paws.<br />

Always make sure that your dog has access to a<br />
shady area, whether it is indoors or out. You can<br />
be prosecuted for cruelty to animals if you leave<br />
your dog without adequate shade and adequate<br />
