Why did you leave?<br />

I wanted to travel, so after I left Taste Kitchen, that’s what I<br />

did. But, just before I left, a friend (who also worked at Taste<br />

Kitchen) and I decided to seriously think about opening our own<br />

restaurant. We had joked about opening a restaurant, never<br />

thinking anything would materialise, and if it did that it would<br />

probably be a little pastry shop or a small burger place, nothing<br />

big. Then one day she called and said “Let’s do this” and we<br />

started to think about our way to create the restaurant.<br />

And Smak was born!<br />

Yes, it was. When I got back from overseas, we hit the ground<br />

running, found a spot, started renovating and four months<br />

later we opened the doors to “Smak”, our delicatessen and<br />

restaurant.<br />

Are you inspired by having your own place?<br />

I really love being at the head of the creative side. I am creative<br />

and it feels like my whole life I would say “I want to do this”,<br />

and people would say, “No you can’t do that”. Being in charge<br />

of creativity means I have the freedom to do what I feel inspired<br />

to do.<br />

What are some of your best creations?<br />

Some of my favourite creations are entremets – a French-style<br />

layered cake. We make them every day. They’re made up of<br />

cake, mousse, custard and a glaze. With these four elements,<br />

I can be incredibly creative. I can go anywhere from creating a<br />

classic coffee and vanilla cake, to a Bride Marshmallow Cake,<br />

with a marshmallow mousse and a honeycomb custard.<br />

Stop, you’re killing us! What is important to you?<br />

Freedom! Most people don’t have the opportunity to say, “I<br />

want to do this today” and then to just do it. I do.<br />

Smak<br />

Every item on the menu is made to order, including handmade<br />

pasta. Smak delicatessen brews fresh coffee every day, using<br />

their own brand, Uber Coffee. Guests can enjoy anything from<br />

the traditional decadence to something different and quirky.<br />
