Shiny Hair Shakshuka
(Serves 4)
This makes an incredible start to the day
with protein and collagen from eggs,
cholorophyll, vitamin A and iron (to name
a few) from the leafy green veggies and
herbs, as well as sulphur from the garlic and
onions.
Ingredients
3 tbsp extra virgin olive oil
2 onions, thinly sliced
100g spinach or baby spinach
100g kale leaves, stems removed
250g frozen peas
2-4 garlic cloves, minced
1 tbsp cumin seeds
Large handful parsley leaves, roughly
chopped
Large handful coriander leaves, roughly
chopped
Large handful mint leaves, roughly chopped
8 medium organic eggs
Salt and pepper to taste
150g pot natural yoghurt
1 tbsp harissa paste or chilli flakes (optional)
Method
1. In a large skillet over medium heat
soften the onion in the oil with a pinch of
salt. Gradually add in the spinach and kale,
allowing to wilt and make room for more
leaves. Add the peas, garlic and cumin
stirring constantly. Add the chopped herbs
and continue to stir and cook for a few
minutes until all the greens are wilted.
2. Make four wells and crack two eggs into
each. Cover and cook for around 10 minutes
until the whites are set but the yolks are still
runny.
3. Remove the lid and season with salt and
pepper and chilli flakes or dots of harissa.
Dollop on a few spoonfuls of yoghurt and
serve.
A traditional Tunisian recipe from
North Africa, Harissa is great as a
marinade for meat and seafood, a
ketchup alternative or a base for dips.
Spicy, savoury and delicious! Add to
soups, pasta sauces or couscous; mix
a teaspoon into some olive oil and
use to dress roasted root vegetables.
Trader Joe’s Traditional Harissa is
prepared in small batches with fresh,
red chilies that are grilled in a tumbler
over an open flame, and blended with
a traditional mix of herbs and spices,
including garlic, cumin, and caraway.
