Your fresh food people GREEK PORK LOIN CHOPS WITH TOMATO AND CUCUMBER SALAD Ingredients 5 Tbsp red wine vinegar 1 tsp dried oregano 3 tsp olive oil, divided 2 cloves garlic, minced 4 free range pork loin chops ¾ cup plain greek yogurt 1½ Tbsp fresh dill, chopped 3 tomatoes, diced 2 cucumbers, peeled and diced ½ red onion 1 tsp sugar Salt and pepper to taste Directions To make the pork chops: Combine two tablespoons red wine vinegar, dried oregano, two teaspoons olive oil, and garlic. Mix well. Combine marinade with the pork chops in a plastic container or plastic bag and distribute evenly. Let pork chops marinate for at least one hour, preferably overnight. To make yogurt dill sauce: Combine one tablespoon red wine vinegar, one teaspoon olive oil, yogurt, dill, and ½ cup diced cucumber. Mix well. Cover and chill. To make tomato and cucumber salad: Combine tomatoes, red onion, remaining two tablespoons red wine vinegar and sugar. Season with salt and pepper. Set aside. To cook the pork chops: Heat grill over mediumhigh heat. Place pork chops on grill and cook 4-6min on each side, depending on thickness of pork chops. Remove from grill and let sit 2min. Serve pork top.
