Chowanoke Indian History<br />

LOCAL HISTORY 5<br />

In today’s culture, many people celebrate around the<br />

world on <strong>January</strong> 1st as they ring in a refreshing of the<br />

New Year and a cleansing from the old one. It is interesting<br />

to note though that many countries did not begin to<br />

celebrate the start of a new year on <strong>January</strong> 1st until the<br />

mid-1700s. For them, the beginning of a new year was<br />

celebrated in March. It was not until the Gregorian calendar<br />

was adopted by Europe that even Europeans began<br />

to celebrate in <strong>January</strong>.<br />

Likewise, prior to colonization in North America, not all<br />

Native Indian tribes had traditionally celebrated the New<br />

Year on the same day. Some tribes observed it during the<br />

Winter Solstice period around December 22nd while other<br />

tribes celebrated the beginning of a new year between the<br />

middle of <strong>January</strong> to the first of February. Those American<br />

Indians celebrating in <strong>January</strong> typically observed a<br />

complete year based on a lunar calendar of thirteen moon<br />

cycles or a new year with the first appearance of a new<br />

moon after the Winter Solstice. While each tribe celebrated<br />

differently, American Indians brought in the New Year<br />

with a period of fasting and prayer followed by various<br />

ceremonies of thanksgiving for the prior year’s blessings<br />

and ceremonies embracing the return of light.<br />

These celebrations also included several days of feasts<br />

and dancing. Many tribes today continue to celebrate by<br />

holding PowWows on New Year’s Day. However, there<br />

are tribes today who continue to observe their ancient<br />

traditional ceremonies and will celebrate the New Year<br />

during their midwinter festival.<br />

Grandma Swain’s Corned Beef Potato Patties<br />

Grandma Swain had to make do with what she had. Sometimes (not too often) she<br />

would have some left over mashed potatoes. She would make the boys corned beef<br />

potato patties. The whole family loved them!<br />

Ingredients:<br />

1 small onion, chopped<br />

1 can corned beef<br />

Boiled potatoes (Mashed) Or leftover<br />

Egg<br />

Instructions:<br />

Place corned beef in a bowl, pull it apart with a fork, and set aside.<br />

Heat grease in a large skillet over medium heat.<br />

Fry chopped onion in oil until translucent. Transfer to a medium bowl,<br />

and mix with mashed potatoes, egg and corned beef.<br />

Season with salt and pepper. Form into 8 patties.<br />

Fry patties in the skillet over medium-high heat<br />

until golden brown on both sides.<br />

INDOOR SURVIVAL GUIDE FOR GUYS<br />

(BPT) - The winter months are known as a leading cause<br />

of indoor stir-craziness. Colder temperatures, rain, sleet,<br />

snow and shortened daylight hours all mean we spend<br />

more time inside than we would like.<br />

This poses a particular challenge for guys, who after<br />

months of hibernation are surely climbing the walls. The<br />

male head of the family needs some creative outlets that<br />

will keep him from driving the rest of the house - not to<br />

mention himself - crazy. Here are some outside-the-box<br />

ideas to support inside pastimes for guys to help maintain<br />

sanity.<br />

B.Y.O.B. (Brew Your Own Beer)<br />

The craft beer craze continues to grow, with nearly 1,000<br />

new breweries opening across the country each year,<br />

according to the Brewers Association. But no need to<br />

venture out to the local taproom if you can serve the fruits<br />

of your own labor from the comforts of home. Given the<br />

right ingredients and equipment, brewing homemade beer<br />

is as simple as following a recipe. After brewing, fermenting<br />

and bottling over a couple of weeks’ time, invite the<br />

pals over to show off your own brand of beer.<br />

Establish the indoor work station<br />

Tackling the list of projects around the house requires a<br />

work station where you can get things done, though being<br />

confined indoors means that space is at a premium. The<br />

In the event that you are forced to shoot<br />

someone in self-defense, there are several<br />

things you must do. What you do and say now<br />

will determine whether you go home, to jail, or<br />

even prison. What seemed like a clear-cut case<br />

of self-defense to you may not appear so to an<br />

anti-gun prosecutor, judge, jury, or family of the<br />

decedent.<br />

The first thing you should do is make sure your<br />

attacker is no longer a threat. Do not fire extra<br />

shots once the attacker is down. If you can get<br />

a safe distance away, do so as soon as possible.<br />

If you cannot get away, then make sure<br />

his weapon cannot be used against you further.<br />

Avoid contaminating it with your fingerprints.<br />

You may want to render first aid only IF you can<br />

safely do so. Double check that your weapon’s<br />

safety is on. Holster your weapon, and conceal it<br />

(if you have a CCW permit). There is no need to<br />

cause further excitement and panic by waiving a<br />

gun around.<br />

Pause for a minute and collect your thoughts.<br />

911 calls are recorded, and anything you say<br />

may very well be used against you.<br />

Call 911. Tell them where you are, that someone<br />

attacked you, that you feared for your life,<br />

and you shot them. Tell them that you need an<br />

ambulance and the police. Describe yourself so<br />

the police will not mistake you for the attacker<br />

or an accomplice. Feel free to repeat that you<br />

need an ambulance for a gunshot, and the<br />

police, etc., and give any helpful information to<br />

allow the responders to find you. But, DO NOT<br />

repeat details of the shooting. If the operator<br />

insists on talking about the details, just tell them<br />

that you need to go, and hang up. If you repeat<br />

any details, there is a risk that you will make an<br />

inconsistent statement on tape, that might later<br />

be used against you.<br />

While you are waiting for the police, call your<br />

attorney. Try to have the conversation in private<br />

if possible. Anything that anyone overhears may<br />

be used against you. Look for witnesses. Get<br />

names, addresses, phone numbers. If they are<br />

uncooperative, take pictures of them with your<br />

cell phone. Take pictures of the scene as well.<br />

Look for any surveillance cameras and determine<br />

who they belong to.<br />

When the police arrive, meet them in a nonaggressive<br />

manner. Do not make any moves for<br />

your wallet, and certainly not for your weapon.<br />

Identify yourself, and tell the officer where the<br />

weapon is. Cooperate fully in providing your ID,<br />

your CCW permit, and surrendering the weapon.<br />

Respectfully decline to discuss what happened<br />

without first having an attorney present. The<br />

police may not want to take that for an answer,<br />

but you must firmly, respectfully stand your<br />

ground on this. If you cannot reach an attorney<br />

until the next morning, then take it in stride.<br />

Spending one night in jail beats spending life in<br />

prison. KEEP YOUR MOUTH SHUT! Jails are<br />

full of people who will use anything they can to<br />

get themselves out of trouble. These characters<br />

are famous for taking one tiny detail that you<br />

provide, and stretching it into whatever story the<br />

police want to hear.<br />

Discuss the case ONLY with your attorney.<br />

Stay off social media. Don’t discuss it with your<br />

friends. Don’t give interviews to the press. Stay<br />

out of the public if you possibly can. Remember,<br />

it’s not just the police who are a potential threat.<br />

The decedent’s family may be filing a wrongful<br />

death civil action against you, and they are<br />

looking for evidence as well. Finally, there is the<br />

possibility of violence from the decedent’s family<br />

and friends.<br />

Get used to the idea that this may very well be<br />

unresolved for the rest of your life, and deal with<br />

it. There is no statute of limitations for felonies<br />

in NC. You may very well need counseling from<br />

a psychiatrist or a minister. Seek that help if<br />

you need it. Both are covered by evidentiary<br />

privilege. Dont ever assume that it is safe to talk<br />

about it outside of a protected setting.<br />

Wind Turbines<br />

Wind power has been recognized globally as a<br />

source of renewable energy and that’s why they<br />

are being employed globally. In recent years, Wind<br />

power has become increasingly popular because it<br />

generates electricity without burning fossil fuels or<br />

emitting greenhouse gases into the atmosphere. Despite<br />

the fact that wind turbines are a familiar sight in<br />

much of the U.S., wind power still accounts for an estimated<br />

4% of the power sector. There’s no doubt about<br />

the immense potential for wind energy, in fact experts<br />

suggests that wind power can easily supply more<br />

than 20% of U.S. and world electricity. This blog-post<br />

enumerates some of the arguments for and against<br />

wind energy to help you see its immense potential for<br />

the future. Many of the arguments against wind power<br />

follow a pattern. Many people dislike or fear advanced<br />

technology - technophobia. Some of the arguments<br />

against wind turbines include the following:<br />

1. Costs<br />

The high maintenance cost claimed by many is highly<br />

debatable. Both small residential wind turbines and<br />

utility-scale wind farms usually rely heavily on financial<br />

incentives. This is basically to give wind energy a fair<br />

chance in the fierce competition against already established<br />

energy sources like coal and fossil fuels. Just<br />

like the auto industry developed the automobile to what<br />

it is today, in time wind turbines will be a reliable energy<br />

source. It is also interesting to note that the prices<br />

have continually decreased over the years since 1980,<br />

up to 80% reduction in prices thanks to increased<br />

demand and technological advancements.<br />

2. Threat to Flying creatures<br />

The chances of surviving a direct hit from a rotating<br />

wind turbine blade is very slim for bats, birds and other<br />

flying creatures. Conversely, some environmentalists<br />

have blown this issue out of proportions. Studies reported<br />

that U.S. Wind turbines results in an estimated<br />

10,000 to 440,000 avian fatalities. However, the same<br />

study revealed that collisions with buildings may result<br />

in the death of about 976 million birds. Furthermore in<br />

recent years, turbine designs have changed radically.<br />

The blades are now solid, implying that there are<br />

no lattice structures to attract birds looking to perch.<br />

Moreover, the surface area of the blades are much<br />

larger, hence they don’t have spin as fast as blades<br />

with smaller surface area to generate power. Modern<br />

design turbines are now mounted on tubular towers<br />

and their blades spin only about 15 times per minute.<br />

3. Noise<br />

For most people living in proximity of wind turbines,<br />

noise may be a problem because they are not quiet.<br />

The sounds wind turbines produce are usually foreign<br />

to the rural setting where they are often used.<br />

However, with the significant improvements in turbine<br />

technology, the noise has reduced considerably. The<br />

noise of wind turbines do not also obstruct normal daily<br />

activities, such as quietly talking to one’s neighbor. Latest<br />

designs show momentous improvements compared<br />

to previous models and produce less noise.<br />

4. Looks<br />

People have varying reactions to the sight of wind<br />

turbines, some people see elegant symbols of environmental<br />

progress and<br />

economic development of<br />

modern technology, while<br />

others might see industrial<br />

infringement in rural and<br />

natural landscapes. When<br />

compared to other major<br />

sources of energy (nuclear,<br />

solar and coal) wind turbines<br />

leave a smaller footprint on<br />

land. There are several ways<br />

by which this problem can<br />

be mitigated. Wind turbines<br />

may be built outside urban<br />

areas, painted with a neutral<br />

color or designing the turbine<br />

uniformly to minimize the<br />

visual impact.<br />

Enormous Potential<br />

As highlighted in the introduction of this article, wind<br />

power has an incredible potential in the next decade.<br />

Research revealed that the worldwide potential of wind<br />

power is more than 400 TW (terawatts). Even though,<br />

wind power only accounts for a small percentage of the<br />

total worldwide electricity production, the capacity is increasing<br />

at an unbelievable rate of 25percent per year<br />

(2010). Not only will this help in the fight against global<br />

warming, but will also contribute to lowering costs.<br />

In conclusion<br />

The development of numerous large wind farms (both<br />

on and offshore) is on right at this moment, the future<br />

of wind power looks promising. It will be fascinating to<br />

see what lies in the future. The U.S. is working hard to<br />

produce at least 20% of its electricity by wind power<br />

by the year 2030. For the sake of our planet, rural<br />

economic revitalization, national security and resource<br />

preservation we must encourage a renewable energy<br />

economy. Wind energy can be a basis of that sustainable<br />

energy future because it is affordable, does not<br />

cause environmental pollution, generates hazardous<br />

wastes, or deplete natural resources. Embracing wind<br />

power today will lay the foundation for a healthy tomorrow.<br />

2 whole-wheat naans (about 4.4 ounces each)<br />

Directions<br />

Heat oven to 475 F. In a large bowl combine the grapes,<br />

parsley leaves, red onion, lemon juice and 1 tablespoon<br />

olive oil. Season with salt and pepper and set aside.<br />

In a large skillet heat 1 tablespoon oil. Add the garlic and<br />

meat, and cook until browned, 2-3 minutes. Stir in the tomato<br />

paste, cumin, paprika and cayenne.<br />

Place naans on parchment-lined baking sheets, brush with<br />

the remaining 1 tablespoon olive oil and spread the meat<br />

mixture on the naans. Bake until each naan is browned<br />

and lightly crisp, 8-10 minutes. Top with grape mixture and<br />

drizzle with additional olive oil if desired. Cut in pieces and<br />

serve.<br />

Prep time: 15 minutes; cook time: 15 minutes<br />

Ingredients<br />

1 1/2 cups halved red California grapes<br />

2 tablespoons lightly chopped Italian parsley leaves<br />

1/4 cup slivered red onion<br />

1 tablespoon lemon juice<br />

3 tablespoons extra-virgin olive oil (divided) plus additional<br />

for drizzling<br />

Pinch of salt<br />

Freshly ground black pepper to taste<br />

1 garlic clove, minced<br />

1/2 pound ground lamb, beef, or dark meat turkey<br />

1 tablespoon tomato paste<br />

1/2 teaspoon ground cumin<br />

1/2 teaspoon ground paprika<br />

In a medium-sized saucepan, bring the water to a boil and<br />

add the quinoa; reduce the heat and simmer until quinoa<br />

is tender, about 10 to 12 minutes. Drain any excess water,<br />

then fluff the quinoa and transfer it onto a baking sheet to<br />

cool for 10 minutes. In a medium bowl, combine the grapes,<br />

cucumber, parsley, dill, mint, olive oil, lemon juice and zest,<br />

salt and pepper. Gently fold the cooled quinoa into the<br />

grape mixture and serve.

All Goes to the Hips<br />

Rose Hip Jam<br />

Yield: about 1 and 1/2 cups of jam<br />

INGREDIENTS<br />

1 cup rose hips dried, sifted, and deseeded<br />

1 and 1/2 cups unfiltered apple juice (or cherry or pomegranate<br />

juice)<br />

1 tsp orange zest<br />

INSTRUCTIONS<br />

Bring juice and rose hips just to a boil in a medium pot. Turn<br />

down heat a bit and simmer for 4-5 minutes.<br />

Remove from heat, cover, and let sit overnight in fridge.<br />

Remove from fridge, and add orange zest. Using a food<br />

processor or blender, puree until smooth.<br />

Serve with breads, muffins, crackers OR simply eat by the<br />

tablespoon to reap the benefits of rose hips.<br />

N<br />

ow that almost all the Thanksgiving turkey has been<br />

gobbled up (sorry), we can expect increasingly cold winter<br />

months. Once the climate takes this frigid turn, the options<br />

for locally foraged food become starkly limited. I suggest we<br />

look for the near bare template of not so long ago colorful and<br />

fragrant rose bushes for a valuable remaining feature. Although<br />

most rose varieties are from Asia, there are quite a few native<br />

roses found locally. Coincidentally, two of them are the <strong>Carolina</strong><br />

rose and the Virginia rose. In this case, a rose hip by any other<br />

name tastes just as sweet, or tart.<br />

Rose hips, which store the seeds of the rose, yield the important<br />

C Vitamin if consumed in the fresh form. Rose hips are used to<br />

make tea, jams, jellies and soups, and as flavor enhancers. All<br />

of these things bring comfort, especially in cold weather. Native<br />

Americans used rose hips as fresh, frozen, dried and boiled<br />

decoctions in internal and external medicines.<br />

One word of caution as a fun fact. The fine hairs found within<br />

the rose hip are used as the main ingredient in the prankster<br />

mixture known as “itching powder”. Obviously, wild collected<br />

rose hips need to be meticulously cleaned before consuming<br />

them, or if you are somewhat intimidated by this daunting task,<br />

commercial forms of prepared rose hips are available.<br />

Hang Town Fry<br />

1 dozen plump oysters<br />

Flour<br />

9 eggs<br />

Fine cracker crumbs<br />

3 tablespoons of butter<br />

Drain oysters on paper towels, dip each oyster<br />

into well beaten egg then into the cracker<br />

crumbs.<br />

Fry in heated butter until nicely browned on<br />

both sides. Beat remaining eggs with salt<br />

Harvard Study Shows the Dangers of Early School Enrollment<br />

Every parent knows the difference a year makes in the<br />

development and maturity of a young child. A oneyear-old<br />

is barely walking while a two-year-old gleefully<br />

sprints away from you. A four-year-old is always moving,<br />

always imagining, always asking why, while a five-yearold<br />

may start to sit and listen for longer stretches.<br />

Growing Expectations vs. Human Behavior<br />

Children haven’t changed, but our expectations of their<br />

behavior have. In just one generation, children are going<br />

to school at younger and younger ages, and are spending<br />

more time in school than ever before. They are increasingly<br />

required to learn academic content at an early age<br />

that may be well above their developmental capability.<br />

In 1998, 31 percent of teachers expected children to learn<br />

to read in kindergarten. In 2010, 80 percent of teachers<br />

expected this. Now, children are expected to read in<br />

kindergarten and to become proficient readers soon after,<br />

despite research showing that pushing early literacy can<br />

do more harm than good.<br />

In their report Reading in Kindergarten: Little to Gain and<br />

Much to Lose education professor Nancy Carlsson-Paige<br />

and her colleagues warn about the hazards of early reading<br />

instruction. They write,<br />

When children have educational experiences that are<br />

not geared to their developmental level or in tune with<br />

their learning needs and cultures, it can cause them<br />

great harm, including feelings of inadequacy, anxiety and<br />

confusion.<br />

Hate The Player, Love the Game<br />

Instead of recognizing that schooling is the problem, we<br />

blame the kids. Today, children who are not reading by<br />

a contrived endpoint are regularly labeled with a reading<br />

delay and prescribed various interventions to help them<br />

catch up to the pack. In school, all must be the same. If<br />

they are not listening to the teacher, and are spending<br />

too much time daydreaming or squirming in their seats,<br />

young children often earn an attention-deficit/hyperactivity<br />

disorder (ADHD) label and, with striking frequency, are<br />

administered potent psychotropic medications.<br />

The U.S. Centers for Disease Control and Prevention<br />

(CDC) reports that approximately 11 percent of children<br />

ages four to seventeen have been diagnosed with ADHD,<br />

and that number increased 42 percent from 2003-2004 to<br />

2011-2012, with a majority of those diagnosed placed on<br />

medication. Perhaps more troubling, one-third of these<br />

diagnoses occur in children under age six.<br />

Children who start school as the youngest in their grade<br />

have a greater likelihood of getting an ADHD diagnosis<br />

than older children in their grade.<br />

It should be no surprise that as we place young children<br />

in artificial learning environments, separated from their<br />

family for long lengths of time, and expect them to comply<br />

with a standardized, test-driven curriculum, it will be too<br />

much for many of them.<br />

New findings by Harvard Medical School researchers<br />

confirm that it’s not the children who are failing, it’s the<br />

schools we place them in too early. These researchers<br />

discovered that children who start school as among the<br />

youngest in their grade have a much greater likelihood<br />

of getting an ADHD diagnosis than older children in their<br />

grade. In fact, for the U.S. states studied with a September<br />

1st enrollment cut-off date, children born in August<br />

were 30 percent more likely to be diagnosed with ADHD<br />

than their older peers.<br />

The study’s lead researcher at Harvard, Timothy Layton,<br />

concludes: “Our findings suggest the possibility that large<br />

numbers of kids are being overdiagnosed and overtreated<br />

for ADHD because they happen to be relatively<br />

immature compared to their older classmates in the early<br />

years of elementary school.”<br />

This Should Come as No Surprise<br />

Parents don’t need Harvard researchers to tell them that<br />

a child who just turned five is quite different developmentally<br />

from a child who is about to turn six. Instead, parents<br />

need to be empowered to challenge government schooling<br />

motives and mandates, and to opt-out.<br />

As universal government preschool programs gain traction,<br />

delaying schooling or opting out entirely can be increasingly<br />

difficult for parents. Iowa, for example, recently<br />

lowered its compulsory schooling age to four-year-olds<br />

enrolled in a government preschool program.<br />

As New York City expands its universal pre-K program to<br />

all of the city’s three-year-olds, will compulsory schooling<br />

laws for preschoolers follow? On Monday, the New York<br />

City Department of Education issued a white paper detailing<br />

a “birth-to-five system of early care and education,”<br />

granting more power to government officials to direct<br />

early childhood learning and development.<br />

As schooling becomes more rigid and consumes more<br />

of childhood, it is causing increasing harm to children.<br />

Many of them are unable to meet unrealistic academic<br />

and behavioral expectations at such a young age, and<br />

they are being labeled with and medicated for delays and<br />

disorders that often only exist within a schooled context.<br />

Parents should push back against this alarming trend<br />

by holding onto their kids longer or opting out of forced<br />

schooling altogether.<br />

Dear Pop: The Journal of the American Medical Association<br />

Pediatrics reports that one in five (yep, 1 in 5)<br />

girls are victims of violence, including sexual violence.<br />

Boys are 1 in 10. I get very mad about this. See the<br />

work done by Ed and Patricia Boelte with Darkness to<br />

Light to combat this. A report in ASA Footnotes2 review<br />

some major recent changes in the way we handle sexual<br />

assault in schools, shifting it from crime alone to crime<br />

and civil rights. It indicates that 19% of females have<br />

experienced rape since entering college. The statistics<br />

are but the tip of an iceberg but things are becoming<br />

more open. The increase of 32% in the reported cases<br />

on campus since 2011 do not indicate more assaults but<br />

less gender inequality.<br />

here was a time when pretty much everyone in the<br />

south new what hog killing time was and participated<br />

in the process one way or another. An old timey hog killing<br />

was a major family event that took place in late fall or<br />

winter on every farm in the southern United States. The<br />

entire family and most times several families would come<br />

together to kill several hogs which would provide meat to<br />

last most of the year. The hog killing would begin by killing<br />

the hogs and then scalding the carcasses in hot water so<br />

that the hair could be scraped off. The next step was to<br />

hang the hog so any remaining hair could be singed and<br />

the hog could be gutted. Most of the organs were utilized<br />

in some form or fashion such as the heart, lungs, liver,<br />

and intestines (used for sausage casings or cooked as<br />

chitterlings).<br />

They would then start butchering the carcasses by<br />

removing the prime cuts such as the shoulders, hams,<br />

ribs, loins, and chops. In the days before refrigeration<br />

some of these cuts would be cured for later use and only<br />

a small part of them eaten fresh. Some of the lesser cuts<br />

and pieces would be ground to make sausage, cured and<br />

smoked for later, or boiled down for lard and cracklings.<br />

As a teenager and young man I had the opportunity to<br />

help at several hog killings. What a great experience …<br />

the smell of lard being rendered and the taste of fresh<br />

hot cracklings. Also there would usually be a huge meal<br />

prepared using some of the fresh pork along with sweet<br />

potatoes, collards, and corn bread. I remember my grand<br />

mother corning hogs heads, cooking pig tails, making<br />

souse, and using lard to make biscuits. The hog was a<br />

very important animal on the farm and supplied many<br />

useful products. As the old folks used to say “They used<br />

everything off the hog except the squeal!”<br />

What’s in your diet?<br />

It’s my optimizing time. <strong>January</strong> and possibly February,<br />

I go into a eating mode that’s intended to<br />

enhance my health. My personal strategy is a modified<br />

“Mediterranean Diet”. I identify mine as a modified<br />

because a Mediterranean Diet allows a minimum amount<br />

of red meat,and dairy. I eliminate cured meat and poultry<br />

because curing materials such as sodium nitrite and<br />

sodium nitrate are toxic and works your immune system<br />

which you’re trying to avoid. I reduce processed simple<br />

carbohydrates to a bare minimum.<br />

I use dairy substitutes except for organic yogurt. My<br />

concerns with dairy are the use of Recombinant Bovine<br />

Growth Hormones (rBGH) allowed in dairy cows since<br />

the mid 1990’s. The use of rBGH causes inflammation<br />

to a cows udders which is treated by antibiotics. Dairy<br />

livestock treated with rBGH is not permitted in the United<br />

Kingdom, Canada, and with other trading partners.<br />

Consequently, rBGH treated domestic livestock products<br />

are marketed and concentrated in our domestic markets,<br />

primarily in the dairy industry and low cost fast food<br />

enterprises.<br />

Now about the yogurt exception. Most yogurts have live<br />

cultures. Live cultures cause fermentation. Fermentation<br />

is a process in which natural bacteria feed on the sugar<br />

and starch in food creating lactic acid. That process<br />

preserves the food and creates beneficial enzymes,<br />

b-vitamins, omega-3 fatty acids, and various strains of<br />

probiotics. I think that’s a reasonable trade off.<br />

Your immune system loves fermented stuff. A healthy<br />

immune system means a better quality of life. I consider<br />

yogurt the most cost effective probiotic. I love sauerkraut<br />

but only on cured sausage and corned beef products so<br />

its not an option during my optimizing. My primary and<br />

favorite fermented beverage is red wine because of its<br />

high resveratrol content.<br />

Finally, we’ll start the new year with info on my clean<br />

food/ Organic Capital of the World Initiatives.<br />

Let’s examine the logistics. Northeast North <strong>Carolina</strong> is<br />

geographically ideal for organic enterprises. However,<br />

because of our small markets the reverse doesn’t occur.<br />

Our organic produce is primarily imported and is some of<br />

the highest in the region. The lack of inexpensive, clean,<br />

organic food is the major cause of the serious disease<br />

disparities in our region.<br />

The USDA’s organic standards are informing us that if<br />

growers are not abiding by their standards, than consumers<br />

cannot be assured of the quality of the product. I think<br />

its time to combine our health concerns with our clean<br />

food/ Organic Capital of the World initiatives by informing<br />

and engaging our political leaders.<br />

You can’t possibly have good health by consuming toxic<br />

food.<br />

Let food be your medicine.<br />

(BPT) - You try to eat healthy, but the one thing you can’t control is<br />

who has been handling your food and whether they are practicing<br />

adequate food safety. Each year, foodborne illnesses sicken close<br />

to 50 million Americans and lead to more than 130,000 hospitalizations<br />

and 3,000 deaths. A lot of these illnesses are caused by simple<br />

things like restaurant employees’ failure to properly wash hands,<br />

cooking surfaces and fruits and vegetables.<br />

Foodborne illnesses present a greater challenge to certain groups of<br />

people with reduced immunity, such as children younger than age 4<br />

and people older than age 50. Food can also become compromised<br />

much earlier in the production process, and for this reason food<br />

producers are using a variety of means to keep our food safe.<br />

One approach uses the concept of hurdle technology in which a<br />

variety of mild steps (hurdles) are used to limit microbial growth at<br />

each stage of production. These include combinations of weak acid<br />

treatments with gentle heating and reduced humidity, or alternating<br />

low heat and chilling treatment. The fresh-bagged salads you see<br />

at the grocery store are a good example of this. Vacuum-packed<br />

products, prepared under rigorous hygienic conditions and heated at<br />

lower temperatures, are another.<br />

Other technologies include the addition of antimicrobial agents such<br />

as enzymes and other natural compounds that inhibit the growth<br />

of bacteria or prevent oxidation. Salt too is a very effective antibacterial<br />

in food. In fact, it is the oldest known food preserver. Salt is<br />

widely used in the production of all cheeses, cured meats and many<br />

fish dishes.<br />

Salt preservation works by influencing the amount of water that<br />

all microorganisms require to survive and grow. The use of salt in<br />

controlling water means that the levels of other preservatives or processes<br />

can be reduced. This means that microbiological safety can<br />

be achieved with reduced heat, acidity and other preservatives. This<br />

results in a product of vastly improved taste and nutritional quality<br />

because of the improved retention of other nutrients.<br />

However, as the federal government pushes companies toward<br />

lower salt content there are some concerns that it could affect food<br />

safety and increase the amount of preservatives that must be used.<br />

Many prefer salt as the more natural choice.<br />

be a top food trend in the new year. You may have seen it on<br />

the menu of your favorite coffeehouse or in the refrigerated<br />

section of your local grocery store, but what exactly is cold<br />

brew coffee, and why are people raving about it?<br />

Cold brew 101<br />

Cold brew coffee is commonly confused with iced coffee,<br />

but the name comes from how it’s brewed rather than how<br />

it’s served. Cold brew coffee is slowly steeped in cold water<br />

using coarsely ground coffee beans. While you can brew a<br />

pot of traditional hot coffee in a few minutes, cold brew takes<br />

hours - 12 or more - to achieve the signature result.<br />

When you taste a high-quality cup of cold brew coffee, the<br />

difference is apparent. Coffee made using the cold brew<br />

method has a smoother, naturally sweeter result that tastes<br />

less acidic than traditional hot-brewed coffee. The reason for<br />
