The Weekly TImes - TWT - 8th May 2019
The Weekly Times - TWT - cheekily describes itself as a campaigning, crusading, truth-seeking, death defying, Aussie battler-aligned, one-eyed-Tiger-led news organisation dedicated to Sydney's north west. It's one of the few remaining independently run community newspapers and turns 100 years old in 2021 - so if you want to show your support for independent media, have a quick look at the paper, submit a letter to the editor via its website or like or share one of its posts on social media. Fine Italian dining on Woolwich waterfront
CUCINETTA, a classic, beautiful Italian restaurant in Woolwich
has become known for bringing regional Italian flavours to Sydney.
The resturant was established
in 2006 by the
AGFG three-hatted chef
Vincenzo Mazzotta.
Before Cucinetta, Vincenzo
worked in a number
of kitchens in Australia
under the excellent
guidance of a senior Italian
chef. Vincenzo was
quick to learn the way of
Italian and continental ingredients
continuing his
journey by strong motivation,
experimentation,
hard work and a deep
love for making people
happy through food.
Chef Vincenzo describes
the food at Cucinetta
to be ‘about classic
methods of cooking by
keeping the rules true to
the Italian kitchen, but
with a modern twist, innovation
and creativity’.
He prides himself in traditional
methods of slow
cooking, cheese making
and home-style comfort.
Vincenzo’s signature seafood casserole
After travelling through
Italy himself, Vincenzo
came back inspired by
the flavours of the north
and south of Italy.
To him, their flavours
were incomparable to
anything he has experienced
before, especially
in the dining industry in
Sydney, “I brought them
to Sydney to create a
dining concept that was
like no other restaurant”,
he says.
With high attention to
detail, Vincenzo personally
hand-picks all of his
suppliers that now play a
crucial element to make
up his beautiful dishes.
His suppliers produce
some of Sydney’s best
meat, fish, vegetables
and fruit, and the flavours
speak for themselves.
Popular signature dishes
on the menu include
Roasted Lamb, Crab
Spaghetti, Seafood Casserole
and Fish cooked in
Cartoccio. Each dish at
Cucinetta arrives beautifully
presented.
Many dishes are known
to be topped with micro
herbs and unique baby
vegetables.
The rich flavours of
the menu are also quite
prominent within Cucinetta’s
dessert menu.
Vincenzo’s classic
mouth-watering Tiramisu,
has a twist like
no other and has to be
experienced to describe
the flavoursome combinations.
After many years of
serving exquisite dishes,
in early April Vincenzo
welcomed their
new breakfast menu (or
colazione).
Offerings on the menu
are inspired by rustic
classic Italian dishes
that also include favourites
such as the bacon
and egg burger with the
added delight of chili and
tomato chutney, Fontina
cheese and rocket, or the
luxurious Brioche French
toast served with caramelized
banana, mascarpone
and chocolate.
The breakfast choices
are vast and with other
tasty ingredients featured
such as coconut yoghurt,
buffalo feta, chorizo and
heirloom tomatoes, just
Chef Restaurateur Vincenzo Mazzotta
to name a few.
Available all day are
a selection of sumptuous
pasticceria with the
croissants being made
directly in-house.
Their range of delicious
options will also delight
gluten-free, Paleo and
vegetarians.
Vincenzo is extremely
excited to have opened
his doors for breakfast
and says it has been successful,
especially for the
locals.
With plans to also introduce
Friday sessions in
coming weeks, that also
includes a kids menu, it’s
no doubt going to be a
hit.
Those that are familiar
with Cucinetta would
know that the restaurant
isn’t just popular for its
Sydney Harbour views,
but also for the attentive,
warm and professional
service that all guests receive.
“All of our staff are
known for giving their
full attention to each and
every guest at Cucinetta
- our experience is like no
other” he says.
‘The Italian culture is
known for being welcoming
and hospitable.
They’re two important
values that we also want
all of our guests to receive
when they come to
experience us. It makes
Cucinetta so much more
than just somewhere to
eat, but also somewhere
where everyone feels like
they’re at home’.
The open space at Cucinetta
is bright, with organic
light streaming into
the long dining room.
The clear open blinds
that open in Summer,
Spring and Autumn,
provide beautiful views
of the sparkling Sydney
Harbour Bridge and the
CBD skyline.
Whether it’s for breakfast,
lunch or dinner, Cucinetta
is a mouth watering
experience that can
be a part of your day.
