Fine Italian dining on Woolwich waterfront<br />

CUCINETTA, a classic, beautiful Italian restaurant in Woolwich<br />

has become known for bringing regional Italian flavours to Sydney.<br />

<strong>The</strong> resturant was established<br />

in 2006 by the<br />

AGFG three-hatted chef<br />

Vincenzo Mazzotta.<br />

Before Cucinetta, Vincenzo<br />

worked in a number<br />

of kitchens in Australia<br />

under the excellent<br />

guidance of a senior Italian<br />

chef. Vincenzo was<br />

quick to learn the way of<br />

Italian and continental ingredients<br />

continuing his<br />

journey by strong motivation,<br />

experimentation,<br />

hard work and a deep<br />

love for making people<br />

happy through food.<br />

Chef Vincenzo describes<br />

the food at Cucinetta<br />

to be ‘about classic<br />

methods of cooking by<br />

keeping the rules true to<br />

the Italian kitchen, but<br />

with a modern twist, innovation<br />

and creativity’.<br />

He prides himself in traditional<br />

methods of slow<br />

cooking, cheese making<br />

and home-style comfort.<br />

Vincenzo’s signature seafood casserole<br />

After travelling through<br />

Italy himself, Vincenzo<br />

came back inspired by<br />

the flavours of the north<br />

and south of Italy.<br />

To him, their flavours<br />

were incomparable to<br />

anything he has experienced<br />

before, especially<br />

in the dining industry in<br />

Sydney, “I brought them<br />

to Sydney to create a<br />

dining concept that was<br />

like no other restaurant”,<br />

he says.<br />

With high attention to<br />

detail, Vincenzo personally<br />

hand-picks all of his<br />

suppliers that now play a<br />

crucial element to make<br />

up his beautiful dishes.<br />

His suppliers produce<br />

some of Sydney’s best<br />

meat, fish, vegetables<br />

and fruit, and the flavours<br />

speak for themselves.<br />

Popular signature dishes<br />

on the menu include<br />

Roasted Lamb, Crab<br />

Spaghetti, Seafood Casserole<br />

and Fish cooked in<br />

Cartoccio. Each dish at<br />

Cucinetta arrives beautifully<br />

presented.<br />

Many dishes are known<br />

to be topped with micro<br />

herbs and unique baby<br />

vegetables.<br />

<strong>The</strong> rich flavours of<br />

the menu are also quite<br />

prominent within Cucinetta’s<br />

dessert menu.<br />

Vincenzo’s classic<br />

mouth-watering Tiramisu,<br />

has a twist like<br />

no other and has to be<br />

experienced to describe<br />

the flavoursome combinations.<br />

After many years of<br />

serving exquisite dishes,<br />

in early April Vincenzo<br />

welcomed their<br />

new breakfast menu (or<br />

colazione).<br />

Offerings on the menu<br />

are inspired by rustic<br />

classic Italian dishes<br />

that also include favourites<br />

such as the bacon<br />

and egg burger with the<br />

added delight of chili and<br />

tomato chutney, Fontina<br />

cheese and rocket, or the<br />

luxurious Brioche French<br />

toast served with caramelized<br />

banana, mascarpone<br />

and chocolate.<br />

<strong>The</strong> breakfast choices<br />

are vast and with other<br />

tasty ingredients featured<br />

such as coconut yoghurt,<br />

buffalo feta, chorizo and<br />

heirloom tomatoes, just<br />

Available all day are<br />

a selection of sumptuous<br />

pasticceria with the<br />

croissants being made<br />

directly in-house.<br />

<strong>The</strong>ir range of delicious<br />

options will also delight<br />

gluten-free, Paleo and<br />

vegetarians.<br />

Vincenzo is extremely<br />

excited to have opened<br />

his doors for breakfast<br />

and says it has been successful,<br />

especially for the<br />

locals.<br />

With plans to also introduce<br />

Friday sessions in<br />

coming weeks, that also<br />

includes a kids menu, it’s<br />

no doubt going to be a<br />

hit.<br />

Sydney Harbour views,<br />

but also for the attentive,<br />

warm and professional<br />
