Creating raw planted based desserts is Zane Stankuna’s<br />

passion. She is a degree qualified nutritionist and<br />

member of the Nutrition Society of New Zealand.<br />

Her expertise is working with people recovering from<br />

eating disorders. She uses a whole food and evidencebased<br />

approach to health, well-being, and weight<br />

management and sees clients at her office in Mona Vale.<br />

Has food always been a<br />

passion?<br />

My love for raw plant-based deserts started about seven<br />

years ago when I was living in Wellington and decided<br />

to transition from eating a pescatarian diet (for most<br />

of my life) into eating a plant-based vegan diet. That is<br />

when I started experimenting with raw vegan desserts<br />

as I tried to make vegan versions of my favourite nonvegan<br />

foods. The first raw desert I made was a raw<br />

caramel slice followed by a blueberry cheesecake.<br />

When did you start selling your<br />

cakes?<br />

I have been selling raw cakes and slices for over a<br />

year now. I am a degree qualified nutritionist and I<br />

was making cakes for my clients as part of my private<br />

nutrition practice. Then I realised how much I really<br />

enjoyed making cakes and started selling them at the<br />

Christchurch Farmers’ Market. I love spending the<br />

whole day in the kitchen and I feel so grateful to be<br />

doing a job I love, which doesn’t make it a job at all.<br />

Why I love creating raw cakes?<br />

The purpose of making these raw treats was to create<br />

healthier versions of traditional cakes and slices. My<br />

product is for health-conscious people who appreciate<br />

high quality food. I am using mostly organic and fairtrade<br />

ingredients.<br />

Where are your desserts<br />

located?<br />

I am a member of the Riverside Collective. My cakes<br />

are available seven days a week at the Collective area.<br />

I attend Riccarton Market and supply a few cafes with<br />

my cakes. I also provide desserts to clients and the<br />

general public.<br />

What is your background?<br />

I am originally from the small European country of<br />

Latvia. I came to New Zealand 8 years ago on a holiday<br />

and fell in love with the beautiful country and people. I<br />

am now a New Zealand citizen and feel very fortunate<br />

to call this lovely country home.<br />
