EDITOR'S
My experience of lockdown has been a positive one.
The opportunity to slow down and take time to do
those things that I don’t usually have the time or
headspace to do feels like letting out a natural sigh.
I feel like these few months are the closest we are
going to get to experiencing childhood again. Growing
up, I experienced life before the internet and it was a
great time. Reading books, crafting, trips to museums
and watching movies were some of the activities that
enriched daily life. But the technological development
of our modern age favours screen time over real time
and this has been a great loss to me. Having the
opportunity to question my routines and my habits;
the components which make up my life as I currently
know it, has allowed me to imagine a healthier, more
satisfying framework to follow. And it feels like
childhood!
Now I say this knowing full well that many people
have not had the same experience of lockdown.
Demanding jobs, homeschooling children and
financial struggles are only some of the challenges
households have been facing. But for some, stuck at
home on furlough, it has opened up the opportunity
to think and plot a new normal. What was it that I
was doing before that didn’t serve me? Delete and
insert something that makes me feel happy / brings
me joy. That idea I pushed to the back of my mind, is
it time to pull it out and explore its potential?
I hope you have found a fresh sense of purpose during
this period of isolation, something new or something
old which you had forgotten you loved.
In this issue, you will find plenty of ideas to bring you
purpose and pleasure!

HOMEMADE SOURDOUGH
Making bread has been one of the lockdown
trends that have gone viral. Brickhouse bakery
have come to the rescue with their step-by-step
guide to starting sourdough from scratch. And
the pay off - you can make crumpets with the
excess!

HOMEMADE OAT MILK
Now you can buy this from the shop however, making
it at home is approximately 5 times cheaper.
1 cup of oats to 4 cups of water + muslin cloth
Soak oats in water for 15-30 mins
Rinse the oats and blend with 4 cups of fresh water
Pass through a muslin cloth into a bottle using a
funnel. Store in the fridge for 2-3 days.

CACIO E PEPE WITH
FRESH PICI
This is my shortcut to making this
restaurant favourite in just 1 hour. The
sauce requires only 4 ingredients you are
sure to have in your fridge and you just
can't beat fresh pasta you've rolled with
your own hands.
INGREDIENTS
Serves 2
Prepare 45 minutes
Cook 15 minutes
200g type 00 flour or plain flour
2 eggs
50g Pecorino or parmesan
1 tsp Black pepper
3 tbsp Butter
1 cl0ve garlic
PASTA METHOD
Place the flour in a bowl and make a
well.
Drop the egg into the well and start to
mix using a fork, bringing in the flour
from the sides.
Add a teaspoon or two of water if the
mix is a little dry.
Let the dough rest for 30 mins.
Roll out the dough with a pasta maker or
a rolling pin until 0.5cm thick. cut into
strips 0.5cm wide and roll in your hands
from top to bottom until the strand
forms a thick spaguetti. There's your
bucatini. Now onto your sauce!
SAUCE METHOD
Put water on the boil for the pasta.
Finely grate the cheese and set aside.
When the water has reached a boil, throw in your pasta.
When the pasta is close to cooked, ladle out 2 cups of the
starchy cooking water and set aside.
Drain the pasta and start on the sauce.
To a medium frying pan, add the butter and garlic.
When the garlic has started to turn golden, add 1/2 of the
starchy water, cheese and black pepper and cook. Gradually
add the rest of the water until the cheese has melted.
Once the sauce is smooth and silky, toss in the pasta, stir to
coat and serve.

RECIPES
TRICOLORE
This is a summer favourite. It's so simple, it
only takes 10 minutes to prepare and uses
only a few, fresh ingredients. The vibrant
colours are sure to wet your appetite and
transport you to holidays in the Italian
Riviera.
INGREDIENTS
Serves 2
Prepare 10 minutes
2 ripe tomatoes
1 ball of mozzarella
1/2 ripe avocado
fresh basil leaves
capers (optional)
olive oil
balsamic vinegar
salt & pepper
METHOD
Wash and finely slice the tomatoes and the mozarella.
Cut the avocado in half, and remove the pit. Thinly slice the avocado half whilst
still in it's skin and scoop out the flesh in one go using a big spoon.
On a plate, begin to layer tomato, mozarella and avocado. It looks lovely if you
create a circle on the plate, or two rows on a nice wooden chopping board.
Drizzle some olive oil, balsamic vinegar and capers on the top. If you like garlic,
you can add half a clove of crushed garlic to the drizzle.
Season with salt & pepper and sprinkle with basil leaves.

NO CHURN COFFEE
GELATO
This has become a lockdown
favourite in my house. It only takes
10 minutes to prepare and uses only a
few, fresh ingredients. The vibrant
colours are sure to wet your appetite
and transport you to holidays in the
Italian Riviera.
INGREDIENTS
Serves 2
Prepare 10 minutes
2 tbsp instant coffee
60ml boiling water
1 tin of condensed milk
480ml double cream
Dark chocolate (optional)
METHOD

Add the coffee to the boiling water, mix until dissolved and allow to cool/
If you have an espresso machine, then brew 1 espresso shot.
Pour the double cream into a bowl and whisk it, using an electric whisk if
you have one, until stiff peaks form.
Add in the condensed milk and coffee and mix until combined.
If you want chocolate chips, then cut up some chocolate squares into
chunks or slithers and fold them in.
Place the mixture in a tupperware and put it in the freezer. Allow to set
overnight.
You could play around with other flavours and add cocoa for chocolate,
vanilla essence for vanilla, and so on, instead of coffee.

MALFATTI
Similar to a gnocchi, originating from
Northern Italy, Malfattis are stuffed with
ricotta, parmesan and spinach. They are
delicious served with a simple tomato
sauce and lashings of parmesan. Serve
with a crisp Gavi or Pecorino white wine.
INGREDIENTS
Serves 2
Prepare 30 minutes
250g bag baby spinach
25g of '00' flour
125g ricotta
1 egg
100g parmesan
100g semolina / polenta
nutmeg
50g butter
safe leaves
salt & pepper
QUALITY
For top Italian cooking, we recommend
investing in some quality ingredients.
Here is a list of essentials:
Olive Oil (Extra Virgin) Brands such
as Belazu. If you want to try
something different, go for young
olive oil.
Fresh Parmigiano or Pecorino
Tomato paste
'00' flour - this is essential for pasta
making
Burrata. This decadeent hybrid of
cream and mozzarella is perfect as
the centrepiece for a salad. It goes
excellently with fruit such as
nectarine, cured meats and fresh
basil.
METHOD
Steam the spinach until wilted then drain the excess water and
chop the spinach.
In a mixing bowl, mix together the flour and ricotta to a rough
breadcrumb consistency. Then stir in the beaten egg. 75g of the
parmesan, salt & pepper, nutmeg and spinach till all the
ingredients are well combined.
Using a wine glass, pop a teaspoon of polenta or semolina in and
then spoon a teaspoon of the malfatti mixture and drop it into
the glass. Swirl the glass around until the dumpling is well
coated in semolina and place on a well semolina-dusted tray.
To cook, bring a large saucepan of water to the boil, drop in the
malfatti, return to the boil and then reduce the heat and simmer
for about 3 minutes. You will know the malfatti are ready when
they rise to the surface.
The sauce is simple. Melt the butter and add the sage leaves.
When the butter starts to foam, reduce the heat and keep warm
until the malfattie are cooked. Or make your own tomato sauce!
To serve, plate the malfatti using a slotted spoon so the excess
liquid, drain and place 6 in each bowl, top with sage butter
sauce and the rest of the parmesan. Buon Appetito!

Whiskey Soda
Serves 1
Ingredients
1 lime cut into segments
1 shot of whiskey
1 handful of mint
1 tsp sugar + splash of water
Ice cubes
Soda water
1. Add the lime, mint leaves, sugar
and water to the cocktail shaker.
2. With the muddler, press the
lime and mint until all the juice
has been extracted. Then take out
the lime skins.
3. Add the whiskey & ice and
shake!
4. Pour into a nice chilled glass,
straining the liquid through the
shaker. Top up with soda water
and serve with a sprig of mint.
Appletini (No-Alcohol)
Serves 2
Ingredients
6-8 apples juiced or ready-made
juice
1 thumb of fresh ginger
juice of 1/2 lime
Ice cubes
Mint
Soda water
1. Wash and core the apples, peel
the ginger, the lime and wash the
mint leaves and get ready for
juicing.
2. Juice all the ingredients that you
just prepped making sure you stuff
the ginger and mint in the apples
to help them juice.
2. Pass your juice through a sieve so
you have a nice clear, crisp
consistency.
3. Add a slice of lime, ice and top
up with soda water!
Amaretto Sourz
Serves 1
Ingredients
1 orange cut into segments
1 shot of amaretto
1 handful of basil
1 tsp sugar + splash of water
1 egg white
Ice cubes
Soda water
1. Add the orange, basil leaves,
sugar and water to the cocktail
shaker.
2. With the muddler, press the
oranges and basil until all the juice
has been extracted. Then take out
the orange skins.
3. Add the egg white & ice and
shake!
4. Pour into a nice chilled glass,
straining the liquid through the
shaker. Top up with soda water
and a slice of frozen orange.

We are entering the Articles section of the Magazine. This section is usually in the centre of
a publication and contains the meatier pieces of writing, such as interviews, cover stories
and so on. As an Editor who has started writing content for my own magazine, content
which I hope is really enjoyable for you to read, I thought it was important to tell you a little
bit about myself. So I decided that it would be nice to write a story about my life so far, it's
many adventures, memorable moments and tough challenges.

Q. What was your design vision / inspiration
and how did you bring it to life?
R. My apartment was built in the 60s/70s and
when I bought it, the previous owner had
modernised it, stripping it of any real character. I
was keen to take it back to a mid-century style
interior, and this ultimately influenced my
approach to the design. I love mid-century and
Scandinavian design, and was inspired by the 'mad
men' era. For me it was really important that the
apartment be practical and liveable, yet
comfortable. I focused on a natural colour palette
(sisal carpet, oak dining table and chairs, mid
century sideboard in the bedroom) and then added
some colourful accent pieces, such as my grass
green velvet sofa and navy velvet bed.
Q. Where/How did you shop?
R. Being in my 20s, I was on a budget and
therefore had to be thrifty with my purchases and
design choices! I shopped from all sorts of
different stores, ranging from high-end
independent furniture dealers to high street
brands like Anthropologie, Habitat, Zara and
H&M Home (which I have a newfound love for).
It was quite time-consuming to shop this way
rather than ordering everything from one place,
however I really enjoyed the process of scouting
out the individual pieces. That was apart from one
experience I had, which I shall never forget -
designing my own bespoke sofa. I love the sofa
now that it is finally here, however the process of
designing it and having it made bespoke took
almost a year!!

Q. Did you find good tradesmen and builders
or was the work purely cosmetic?
R. The work was mostly cosmetic, as the previous
tenant had done a good job modernising the
bathrooms and kitchen (and as I mentioned, I am
in my 20s and therefore on a budget), however I
do have some wonderful builders who helped
with the more cosmetic things as well such as a
fresh coat of paint, new light fixtures etc.
Q. Was your design priority more aesthetic or
functional?
R. For me it was crucial that the final design be
both aesthetically striking while still being
functional - these are the foundations of
Scandinavian design. For example, I frequently
enjoy hosting large dinner parties therefore a long
table that could seat 10-14 people was essential.

A large, comfy sofa was also at the top of my list,
and I went for a green velvet one that would
better survive the test of time that a lighter colour.
The living room is designed around entertaining
and relaxing at home with friends, however there
really wasn't a suitable place for a TV without it
being an eyesore so I opted instead for a projector
screen instead, which is incredible for movie
night. I didn't want the projector to be a
permanent feature in the room, so instead I
installed a couple of hooks in the ceiling, and now
it's just a matter of hooking up the screen and
taking out the projector (both stored under the
sofa). So I have the perfect home cinema set up in
a matter of minutes with none of the
unattractiveness of a TV!

Q. What are your favourite things about your
new home?
What makes a house a home to you?
A. It's always warm!! I find that in homes in
England can be really cold and damp, but I'm
fortunate that my apartment is always warm and
the design makes it feel really homely and cosy.
It's the perfect place to chill out and entertain
friends.
Q. Do you think it's more important to have a
trendy look or a classic look that is timeless?
A. I think it completely depends on the property.
My apartment is probably more 'trendy' than
timeless, although it's based on a style from 50
years ago that is still pretty 'on trend' today, and it
suits the architecture of the block it is in. Having
said that, I do love classic style, and I think when
you are designing an interior you have to consider
what your main goals are for that particular
property.
Q. What did you learn from doing up your
home? Any challenges / best bits ?
A. The biggest challenge for me personally was
100% the sofa!! Fortunately it all worked out in
the end, however it was definitely a learning curve
and I realised how important it is to do your
research if you are going to have anything made
bespoke, so that you don't go with the wrong
designer or carpenter. I certainly also learned
about a lot of independent homeware design
brands and furniture boutiques who I had never
previously heard of! The best part is that although
it's technically 'finished', I still enjoy tweaking
things and adding new items of furniture or
smaller homeware items such as new candles or
dishes and so the joy continues! @rosimai

WHEN A LAWYER IS FORCED INTO EARLY RETIREMENT due to ill-health, what does he do?
He becomes a farmer. Peter Smith says he already knew, he'd decided a year before.
Peter tells his story...
When I retired from being a City solicitor living in
London in 2011, I wanted to do something completely
different. Much as I like London I wanted open green
spaces - bigger than Clapham Common.
However, it was not as difficult as I thought it might
be after my birthing experience . My choice of the
Shetland breed was crucial in this. They are
intelligent, hardy sheep who know what to do.
Watching Country file on Sunday evenings and not
looking forward to the Northern Line early next
morning had something to do with it. I also had fond
memories of time spent on a small farm in Dorset in
the 1960s, when we would walk down the lane
following their 20 or so cows for milking or loading
old fashioned small straw bales on to a farm trailer
with pitch forks.
I knew that I would become a farmer than a year
before I retired. That was plenty of time to read Mary
Castlell’s Starting with Sheep and - by far the most
important thing - deciding on the right breed of
Sheep. A one day course on lambing made me think
there was a bit more to it. Helping a working
shepherd lambing 1,300 pregnant ewes with 4 or 5 vet
students was alarming. It was clearly hard and heavy
work with a need to help many ewes deliver lambs.
After 170 or so lambs have been born on the farm
since 2011 we have still not needed to assist a birth
although one day I will have to intervene. In order to
learn the trade, I spent a lot of time with Shetland
breeders and friends near our farm, a shepherd called
Nigel and his wife Angela.
You never stop learning about sheep. You learn most
by watching them and by being patient. It used to be
impossible for us to get them through a gate without
a dog. They can run much faster than you can and in
different directions. Now I can open the gate and call
them in or I can walk through three fields and they
will follow.
What attracted me to the farm and it's surrounding
area was the chalk downland with its open pastures
and surrounding woodland. It is an Area of
Outstanding Natural Beauty.

We own five or six acres of a much larger ancient
woodland in a neighbouring valley that is designated
as a Site of Special Scientific Interest. It is a mix of
many types of tree including ash, hornbeam, oak, wild
cherry, field maple and much else. I am continually
finding more about the woods. Recently I identified
Whitebeam and Spindle trees. Door mice live in the
woods and there are many wild flowers.
We aim to farm ethically and environmentally. Many
farms plough up grassland and replant with a single
grass type every few years. We will never do that. Our
farm land is permanent pasture with a diversity of
grass types and wildflowers which we encourage.
We have planted five wild life hedges by hand to
promote biodiversity and provide increased shelter for
the sheep. These are dense rows of trees and hedging
plants a metre or so apart made up of 14 species of
native hedging.In time they will become impenetrable
to livestock.
The valley behind Peter's woodland
Hawthorn, hornbeam and field maple make up 50% or
more of the hedges with three species of wild rose and
other types providing a variety of flowers and berries
for pollinators and birds throughout the year. The
house is surrounded by lawn. A few years ago we left
three areas uncut until the autumn. To our surprise
pyramid orchids appeared from dormant seed in the
soil. Each year the number of orchids has increased and
we now have three species of orchid as well many other
wild flowers. The only introduced seeds are yellow
rattle which assists wild flowers to grow.
Bee keeping is a new venture for us. There is much to
learn and we are hoping for our first honey this year. It
is a thrill to see bees on flowers near the farm and think
that they may be ours. Developing our bee keeping and
planting more trees and hedging. I want this to be
seedlings from our fields and woods to maintain the
genetics. The rest will be promoting biodiversity
including spearing wild flowers seeds obtained within
walking distance of the farm.

beauty. With a very varied landscape from dense oak forest and babbling
brooks to heathland and birches, the common showcases the best of
nature in London.

When summer flourishes, so do the
blackberries on the brambles! Bring your
tupperware because you will likely pick
up a few kilos of berries along the lanes.
If they don't all end up in your belly,
you can make delicious jam once home.
Seeking water? Why not cool down by
the brook under the shade of the trees.
S P R I N G
Come spring, the ferns start to take over and the trees
leaves begin to form. New warmth makes way for
picnics by a fallen tree trunk with few interruptions
but a curious squirrel quickly warded off by a faithful
pooch. It's the one place I find dogs are at their
absolute best, the excitment so notable by the chases,
swims and friends they make.

The trees turn from green to
orange, then red as the autumn
leaves begin to fall. A few wet
days make for muddy walks in
wellies and hoods. The ferns turn
brown and dry as the sun begins
to set by teatime.
W I N T E R
Crisp sunlight bursts through the spindly
birches and lights up the dry, golden
grasses. It's probably my most favourite
time of the year to go! A bit of rain or
bitter cold might force you into the
nearby pub The Fox & Grape for a warm
cup of mulled wine or a roast on a
Sunday.

Let's tie dye! This month, I'll show you how to tie dye with natural
dye you've probably already got in your kitchen cupboard.
TURMERIC
Known for giving curries a rich golden colour,
turmeric has incredible dyeing properties. You'll need
3 tbsp of the stuff so go for the big packet you will
find in the world foods section of your local shop.
T-SHIRT
New or old, make sure it's had a good wash to remove
any dirt or starch from the fabric. This will ensure the
dye adhere better. Once you have had a go tye dyeing,
you could be more adventurous and try dyeing
underwear sets, pillowcases and other garments.
Once you get more confident with tie
dye, you can try other items of
clothings such as tracksuits, or bedlinen
and pillowcases or blankets. Make sure
the materials are natural, the won't take
as well to synthetic materials.

METHOD
Boil 1 litre of water in a kettle and add it to a pan with 1 tbsp of
turmeric. Let it cook on medium heat for 30 minutes.
Time to tie up your t-shirt. You can use elastic bands or string
for this. Decide which design you want. You can look up
different tying techniques online. An easy one is to twist and
scrunch in several places. This is what makes a sunburst effect!
Let it soak for 8-10 hours. The colour will intensify the longer
you leave it. But if you take it out too early, you'll find the colour
fades quickly as it dries. If you want a lighter look, leave for a
shorter time.
Rinse in cold water and ring out. Soak in 1 tbsp bicarb for 10
minutes to help the colour set. Rinse thoroughly.
Leave to dry. I would recommend only washing on low
temperature in case the colour runs onto light fabrics.

Sister to Brighton, Hove lies just West of the city centre.
With the same charm as Brighton but on a smaller scale,
the pebbly beach is quieter than it's well-known neighbour.

beach, head to Hove
instead. Situated just
next to it, you can still
have access to all the
fun but have more
space to breathe.

SAMPHIRE HOE, KENT
This beautiful cliff side beach is
located just along from a country park
which was built on the water to
encourage wildlife.
Parking - you can park on at the
Samphire Hoe Country Park

yurts, likelihood is the pool
and a market trip to Uzès
will be just enough to make
your holiday in Southern
France unforgettable. You
