Divisive cabbage a goldmine of nutrition<br />

Cabbage is absolutely<br />

packed with nutrients.<br />

If you have never fried or<br />

sautéed cabbage before,<br />

then you need to start.<br />

Here are a couple of<br />

quick and easy recipes<br />

Seriously good bacon<br />

fried cabbage<br />

4 servings<br />

Ingredients<br />

3 thick slices bacon, diced<br />

1kg white cabbage, core<br />

removed and chopped (10 cups)<br />

1 tbsp garlic, minced<br />

Pinch red pepper flakes<br />

¼ tsp sea salt or more to taste<br />

2 tsp Dijon mustard<br />

2 tsp apple cider vinegar<br />

Fresh ground black pepper<br />

Directions<br />

Add bacon, in one layer, to<br />

a large pan over medium heat.<br />

Cook, stirring occasionally until<br />

the fat renders and the bacon is<br />

crispy – 6-8min. Take the pan off<br />

of the heat, and then use a slotted<br />

spoon to transfer the bacon to a<br />

bowl and save for later.<br />

Remove all the bacon fat<br />

from the pan except for one<br />

tablespoon. Leave more or less,<br />

depending on your preference.<br />

One tablespoon tastes great, but<br />

doesn’t make the cabbage greasy.<br />

Place the pan back onto<br />

medium-high heat then add the<br />

cabbage, garlic, red pepper flakes,<br />

and the salt. It might seem like<br />

too much cabbage for the pan,<br />

but as it cooks, the cabbage will<br />

wilt down.<br />

Cook, occasionally stirring until<br />

the cabbage is tender and some<br />

of the cabbage begins to turn<br />

light brown – 10-15min. Stir in<br />

the mustard, apple cider vinegar,<br />

and the cooked bacon. Taste then<br />

adjust with more salt, pepper, and<br />

vinegar as needed.<br />

Lemon garlic<br />

fried cabbage<br />

4 servings<br />

Ingredients<br />

1kg white cabbage,<br />

core removed and<br />

shredded (10 cups)<br />

1½ tbsp extra-virgin olive oil<br />

1 tbsp garlic, minced<br />

Pinch crushed red pepper flakes<br />

½ tsp sea salt or more to taste<br />

½ a lemon, cut into wedges<br />

Directions<br />

Heat the olive oil in a large pan<br />

over medium-high heat. Add the<br />

cabbage, garlic, red pepper flakes<br />

and the salt. It might seem like<br />

too much cabbage for the pan, but<br />

as it cooks, the cabbage will wilt<br />

down.<br />

Cook, stirring occasionally until<br />

the cabbage is tender and some of<br />

the cabbage begins to turn a light<br />

brown – 10-15min.<br />

Squeeze the juice from two<br />

lemon wedges over the cabbage.<br />

Taste then adjust with more<br />

salt, pepper, and lemon juice as<br />

needed.<br />
