Chicken, Spinach<br />

and Barley Soup<br />

A healthy, easy soup for any day of the week<br />

Ingredients<br />

• 3 ½ cups chicken stock<br />

• 9 ½ ounces of boneless, skinless<br />

chicken breasts<br />

• 1 tablespoon canola oil<br />

• 3 tablespoons diced yellow onion<br />

• ¼ teaspoon minced garlic cloves<br />

• 3 tablespoons dry barley<br />

Directions<br />

1. Heat oil in a stock pot.<br />

2. Dice chicken into ¼” pieces.<br />

3. Brown chicken over medium-heat<br />

for 6-7 minutes.<br />

4 cups<br />

• ¼ teaspoon fresh chopped thyme<br />

• ¼ teaspoon fresh chopped oregano<br />

• 3 tablespoons freshly diced tomatoes<br />

• 1 small diced red potato<br />

• 3 tablespoons fresh spinach<br />

• 1 ¼ teaspoon kosher salt<br />

• 1 ¼ teaspoon black pepper<br />

4. Stir in onion, garlic, barley, thyme,<br />

oregano, tomatoes, potatoes and<br />

chicken stock.<br />

5. Bring to a boil over high heat.<br />

Carbohydrate: 10 g<br />

6. Reduce heat to simmer, stirring<br />

occasionally for 20-25 minutes.<br />

7. Stir in spinach and cook until<br />

spinach starts to wilt.<br />
