Lyttelton man caught up
in Covid hotel bus fiasco

HAVING ESCAPED the
turbulence of a Covid-ravaged
UK, Lyttleton man Kian
Malone expected his return
home to be less, not more,
traumatic.
But as one of a group of
returnees potentially exposed
to the virus while in MIQ, he
now faces a long wait in isolation
– and deteriorating mental
health.
Malone (right)flew back to
New Zealand on March 8, 2021
and entered managed isolation
at the Grand Mercure Auckland
hotel for what was, initially, a
routine stay. But, on the eve
of completing his mandatory
two-week stint, Malone was
told that his stay in quarantine
would have to be extended,
as he had been on the same
exercise bus as a Covid-positive
case earlier that day.
Because officials could not be
sure where exactly the infected
person sat on the exercise bus,
all passengers were deemed
close contacts and told they
must stay in isolation for longer.
Initially, Malone was told he
would have to remain in isolation
for a further “three to four
days” while further tests were
carried out.
“I was gutted,” Malone said.
“I was really looking forward
to going to a café or bar
and getting back to a sense of
normality after a year of hell in
England.”
To make matters worse,
however, Malone was then told
that the brief extension to his
stay would actually be stretched
out even further and that all
those on the exercise bus must
stay in isolation until at least
April 4, which for Malone was
28 days after he first arrived.
Bus journeys to off-site
exercise areas have also been
paused, and an investigation
has been launched into the offsite
exercise yards.
It was the realisation that
he faced a prolonged stay in
isolation that hit Malone the
hardest.
“I was crestfallen,” he said.
“My brain felt like it was
caving in.”
Malone’s four-week stay in
MIQ comes on top of a 10-
day isolation he underwent in
London to ensure he met the
strict criteria needed to fly.

A NEW community board made
up of coastal suburbs should
be created to help these areas
work together to address climate
change.
THat is the call from Spreydon-
Cashmere Community Board
chairwoman Karolin Potter and
Linwood-Central-Heathcote
Community Board member
Darrell Latham.
Potter thinks there should be a
board encapsulating the Coastal,
Burwood, Heathcote wards
and part of the Linwood Ward,
where sea level rise is a threat,
and will raise this with her board
as an option to recommend to
the city council.
Latham supports Potter and
raised the same idea as her about
six weeks ago with a city council
staff member.
He said the idea was not
considered an option by the staff
member at the time, but he will
now raise it again with his board
in the elected members exchange
section of its next meeting.
It comes as the city council
is seeking feedback on its
representation review to get rid of
the Linwood-Central-Heathcote
Community Board and divide it
into three altered boards.

Young surfers gearing up for the

COMING OFF a fantastic 2020
competitive surf season, the
young club members of Point
Surf Team are still taking to
the sea to practice their surfing
skills, getting ready for next
summer.
Point Surf Team is the local
board riders club in the Sumner
and Taylors Mistake area. There
are 35 members under the age
of 18, with 14 girls and 21 boys.
About 100 young surfers compete
competitively in Canterbury
overall.
Bay Harbour News chatted
with the young surfers earlier
this month hoping to get an
insight on what drew them to
surfing and what motivates them
to keep working on their craft.
For all of the young surfers, a
passion for the long board runs
in the family.
Said 10-year-old Kobe: “My
Dad is a surfer. He helped push
me on to the waves.”
Another 10-year-old, Bodhi,
first started surfing when he was
three. His mother’s surfer friend
took Bodhi out on the board
with him.
Bodhi’s father pitched in
to the story: “He scooped up

knowing, chucked him on his
board, paddled out and then

caught a wave.”
Said Jet, 8: “My dad’s a good
surfer and he pushed me on to
a wave when I was about 4. We
paddled out on his long board
and he caught a wave with me.”
Girls are also dominating the
Sumner surf scene.
The first time Amelie Clarke,
12, went surfing was at a competition.
Her parents both surf and
they decided to enter Amelie,
throwing her in the deep end.
Now older and still in love
with the sport, Amelie came
first in the under 12 category
of the Seventh Wave Women’s
Canterbury Championships held
in Sumner over the weekend of
March 6.
Tessa Langman, 12, started
surfing when she was seven, inspired
by her surfer father. After
entering her first competition,
she met Amelie and they have
been surfing pals since.
Langman said: “There are
more young men surfing at the
moment but a lot more girls are
getting well into it which is really
good.”
Poppy, 12, and Olive, 14, love
the social part of the competitions.
“It’s a lot fairer and there’s
a lot more female’s surfing now,”
they said.
Their father bought them
both surfboards when they were
three. Poppy came first in the
under 14 category of the women’s
champs.
The training the youth do is
vigorous, and it’s all on their
own volition.

with their coaches on creating
goals they can work towards.
Most try and surf every day if
they can, showing boundless
enthusiasm for the sport.
“It could be wave counts, or
carves, and we work on these
throughout the sessions.”
Jack said: “Taylors has the best
waves in Christchurch with a
nice cove beach.”
Niwi Ututaonga, a volunteer
coach with Point Surf Team, said:
“These guys are really committed.
They are always out practicing
in the water and their results
in the competitions show it.”
Benji Lowen, 11, came first
in the under 14 category of the
Billabong Grom Series Competition
held in Whangamata in
February.
Jack Tyro, 14, came second in
the under 16 category.
“We’ve got quite good surfers
competing from Christchurch,
but we’ve got competition too,”
Jack said.
Bodhi’s first competition was
the Duke Festival of Surfing, held
out in the windy waves of New
Brighton beach over the second
week of March.
Prior to the competion, Bodhi
said: “I’m excited and a little
scared but I think I’ll give it a shot
and it’s not really about competition,
it’s about having fun.”
The young surfers all offered a
cool mature outlook when they
explained what they get out of
surfing.
Ryder Townshed, 10, said: “I
like being in the moment, all
the adrenaline and if you win,
you feel really stoked. If you don’t
win, you just feel really stoked for
the person who does win.”
“I love the feeling of being
in the water and having a little
challenge. It’s fun with friends
because it’s good company when
you’re on the waves,” he continued.
The best thing about surfing for
them all is the freedom it offers.
Said Kobe: “When you pop up,
you don’t always know exactly
what to do but you just do what
feels right.”
This idea was echoed by the
others.
“You’re so free. You feel like
you can do whatever you want!”
When the waves are big and
the skies are foggy, they get nervous.
Amelie is scared of sea creatures.
Tessa is scared of seaweed.
another is scared of stingrays.
But nothing keeps them from
loving the ocean and practicing
their surfing as much as they can.
They all say surfing offers them
too many fun experiences to
count.
‘I felt like I’m losing my mind’

“I will have been in isolation
for almost six weeks by the time
I’m due out.
“I’m desperate to re-integrate
back into society.”
“I can’t even remember the
last time I shook hands with
somebody or gave out a highfive.”
Malone, a primary school
teacher, said he had spoken to a
Ministry of Health nurse each
day about his mental health
situation. He said he had found
himself drinking every day to
offset the boredom and that his
sleeping patterns had changed
dramatically.
“I feel like I’m losing my
mind,” he said.
“I don’t get up in the mornings
anymore. The later I get up,
the better, as it feels as though a
third of my day is gone.”
In spite of a traumatic few
weeks, Malone had nothing but
praise for the Grand Mercure
Auckland hotel staff and was
grateful to be back home in New
Zealand having seen the chaos
that Covid had caused overseas.
“I’ve got to keep things in
perspective,” he said.
“I’m just looking forward to
getting out there into a
Covid-free society and being
able to hug family and friends
again.”

Life on the ocean wave suspended

lands, you must first lose sight of
the shore.’
“You have to take the risk to
have the adventure,” she said.
A year ago, Lyttelton residents
Shrewsbury and her husband
Stephen Prendergast, flew to
England where they brought
a yacht with the intention to
explore the world on a two-year
adventure leading them back
home again.
Unfortunately, Covid-19 took
the wind from their sails and
they are staying with Shrewsbury’s
sister in the United Kingdom.
Their first stop, France, is
not allowing people from the UK
into the country.
The idea for the grand adventure
was a collaboration between
the couple.
“I always had wanted to explore
the South Pacific. Prendergast
said he wanted to sail in the
Mediterranean,” she said.
“The idea to buy a boat in the
UK and then sail through those
places back to New Zealand,
grew and morphed quickly from
there.”
Both in their 50s, they decided
to sell up and make their dreams
a reality.
“I want to die with memories,
not dreams,” Shrewsbury said.
Cerulean, the boat they purchased
once they arrived in the
UK, is a 43ft MkIII Sea Stream,
designed specifically for blue
water – long distance -– sailing.
At first sight, they fell in love
with the design of it.
The boat was originally customised
by former BBC radio and
television reporter Peter Snow.
As a tall man, the boat was
designed with 6.7ft of headroom
– also perfect for Shrewsbury
and Prendergast who are 6ft and
over. Shrewsbury is in touch
with Snow today. The boat
was named after Snow and his
wife’s love of Lake Cerulean in
Canada.
The rough plan was to sail
around France, Spain and Portugal,
across the Atlantic, down to
the Caribbean, through Panama
to the Galapogas Islands, then
to explore around Tahiti and Fiji
and land on Kiwi shores.
“Unfortunately 2020 was not
the best time to do it but we’ve
just got to roll with the punches.”
The sailing couple have not
wasted their time though. In
May, they sailed around the
British Isles.
“Luckily, we had few disagreements
and really enjoyed each
other’s company. It was a good
tester for how we could cope,”
Shrewsbury said.
“It was wonderful sailing as
it was all new to us both. It was
also challenging with the new
currents and tides and all the
traffic to be aware of . . . there are
huge wind farms, navy ships and
we even saw a submarine.”
“Nothing compares to sailing
in New Zealand though.”
In October, they removed their
boat from the water and have
began to prepare it for when they
can depart.
The sailing dream has been a
lifetime in the making; boating
and the ocean being the great
passion of Shrewsbury’s life.
Shrewsbury was born in
Cambridge, England, “about the
furthest you can get from the
sea,” she said.
In spite of being surrounded
by rolling hills instead of crashing
waves, Shrewsbury started
sailing at the age of three and
sailed almost every weekend
during her childhood.
It was a family affair.
Sailing was something that her
father had always wanted to try,
and he rallied together his wife

and four daughters.
Her father believed “a family
that plays together stays together.”
Their weekends and holidays
were spent out in the ocean
where the family competed both
with each other and against each
other.
Said Shrewsbury: “I’ve been
sailing all my life.
“The connection you have and
the memories you create with
your family is something I feel
incredibly lucky to have shared.
We always have something to
agree on or talk about.”
While in Perth in 1987, watching
the America’s Cup, Shrewsbury
met her first husband, who
was a Kiwi.
At the end of the 1990s,
Shrewsbury and her family, including
her two young children,
settled in Lyttelton.
Prior to the move, Shrewsbury
had visited Lyttelton to see a
friend. As soon as she walked
down the main street, she knew
she wanted to make it her home.
“I felt a connection with the
place with has never ended.
There is a special vibe there
within the community,” she said.
Shrewsbury brought up her
family in the port and lived there
for the next 20 years.
She had numerous sailing adventures
during this time, joining
the Naval Point Yacht Club
and racing a 22ft trailer-sailer
every weekend.
It was the lifestyle and the sailing
environment which fuelled
Shrewsbury’s sailing passion.
“I love the challenge of sailing
and the freedom I feel when I am
on the water,” she said.
“I can let go of any pressure or
any stress. I feel myself relax.”
Lyttelton Harbour is a special
place for Shrewsbury. Almost
every time she went out she saw
dolphins.
After her first marriage split
up, Shrewsbury decided a change
was needed and she wanted to
discover new seas.
“I spent a lot of time with
my girlfriends sailing around
the fantastic bays of the Banks
Peninsula but I really wanted to
go somewhere different, where
I could continue to enjoy the
beauty New Zealand has to
offer,” she said.
“I had to follow my dreams.”
She moved her New Zealand-designed
Whiting 29 boat
to Auckland and then two years
later, she met Prendergast.
Prendergast had only been
sailing once before, but Shrewsbury
showed him the ropes. As
the lead sailor, Shrewsbury has
found it frustrating how she is
treated as a woman.
“It is unusual for the woman to
be a sailor where the man isn’t,”
she said.
“Lots of people, particularly
in the UK, find it difficult to
accept.”
In spite of leaving, Shrewsbury
still has a strong connection with
Lyttelton.
She said: “I love going back to
Lyttelton. I don’t feel like I have
ever left. A sense of belonging is
really hard to find but you could
find it there. I’m really proud to
have brought my children up
there.”
Shrewsbury and Prendergast
were married in 2020 on Banks
Peninsula.
“We are looking forward to
starting our journey back to New
Zealand.”
Shrewsbury said in their cabin,
they have a photo taken by a
friend of Mitre Peak in Fiordland.
“It’s a reminder of the land
we’re aiming for,” she said.

Pupils get virtual visit of Scott Base and
SCOTT BASE’S oldest building,
a hut built by a Sir Edmund
Hillary-led team, visited Akaroa
Area School on Friday, in virtual
reality form.
Developed in partnership
with Auckland University of
Technology, the virtual reality
experience allows users to explore
Sir Edmund Hillary’s hut
in Antarctica. The experience
provides insight into how the
23 men of Sir Ed’s team lived
and worked in the world’s most
extreme environment more than
60 years ago.

VR tour inspires people to learn
more about Antarctica and the
nation’s most famous son.

so virtual reality is a fantastic
way to give people a glimpse of

Hillary’s hut was Scott Base’s
first building and was built by a
team led by Sir Ed to support the
Commonwealth Trans-Antarctic
Expedition and the International
Geophysical Year.
The trust cares for this hut and
four other historic expedition
bases in Antarctica. It conserved
Hillary’s Hut in time for Scott
Base’s 60th anniversary in 2017.
Users can tour the five rooms
of the building, viewing hundreds
of artefacts from the early
years of New Zealand’s Antarctic
programme.

the national tour.
The Antarctic Heritage
Trust is a New Zealand-based
not-for-profit with a vision of
inspiring explorers. A world
leader in cold-climate heritage
conservation, the trust cares for

by Antarctic explorers, including
Carsten Borchgrevink, Captain
Robert Falcon Scott, Sir Ernest
Shackleton and Sir Edmund
Hillary.
To date the trust has restored
and conserved Scott’s huts at
Cape Evans and Hut Point,
Shackleton’s hut at Cape Royds
and Hillary’s hut at Scott Base.

significant discoveries including
114-year-old whisky under Ernest
Shackleton’s hut, a notebook
from surgeon and photographer
George Murray Levick at Scott’s

a century-old fruitcake
and a 118-year-old watercolour
amongst artefacts from Antarctica’s
first buildings at Cape Adare.

New Linwood pool on track
for end of year opening
LINWOOD’S NEW pool
complex is starting to take shape.
The walls and roof of Te Pou
Toetoe: Linwood Pool have
gone up and contractors, Apollo
Projects Ltd, are now focusing
on constructing the inside of the
$22 million complex.
All the pools are in place and
the rooms are now being built.
There will be a multi-use 25m
lane pool, a deep-water manu/
splash pool, a family spa pool,
learn-to-swim pool, and a pool
for toddlers and water deck. It
will also have community meeting
rooms and a kitchen.
“Work on the facility is progressing
really well and we’re on
track to have it open later this
year,’’ city council head of recreation,
sports and events Nigel
Cox said.
“We’ve started recruiting
for team leaders for the facility
and will advertise for frontline
workers – lifeguards, fitness
instructors and customer service
people – in May and June.
“We’re taking bookings now.
Any groups that we haven’t
already spoken to who are
interested in booking space at Te
Pou Toetoe when it opens should
email the team to register their
interest. This will help us plan

It’s been a tough twelve months.
You know who you are. Every fourteen days,
and sometimes every seven, you have had nasal
swabs or throat swabs. Every day at work, you
have worn PPE and kept physical distancing.
You are the ones who have been at alert level 4
every single day.
You are the unsung heroes, who have
unloaded the ships at our ports, kept goods
on supermarket shelves and medical supplies
flowing. Without you, we wouldn’t have had
presents for Christmas, toys for our children’s
birthdays, or chocolate for Easter. Without
you, life would have been a whole lot harder.
Thank you for your part in
keeping New Zealand going.

COVID-19
vaccine
for border
workers
Over 230 frontline workers at
LPC have now had their first
dose of the COVID-19 Pfizer
vaccine.
LPC border workers including cargo
handlers, marine pilots, security and other
members of the team are some of the first
essential workers in New Zealand to get
vaccinated in the fight against COVID-19.
The vaccine provides another layer of
protection for our border workers, who
remain focused on physical distancing,
using PPE and masks and having increased
hygiene and cleaning measures.
Our border-facing staff are also
continuing to undergo weekly and
fortnightly COVID-19 testing, depending
on their role.
LPC foreman Robbie Winder, who had his
vaccination in the first week of clinics, says
he’s excited to be one of the first.
“I’m happy to play my part to keep COVID-19
out of the country. Getting the vaccine is really
to support the wellbeing of New Zealand.”
As part of Robbie’s role as a foreman, he is
a main point of contact for foreign crew on
vessels that visit the Port.
“Every time there is a vessel in Port, there is
a foreman on the ship, so I deal a lot with crew.
“It’s great to have the vaccine to know that
we are as safe as we can be out there and we
can get on with our job.”

As more doses are made available,
household contacts will also be eligible to
get the vaccine.
“I can’t wait for my whole family to get it.

The vaccine clinics are held on site and
run by Canterbury District Health Board
who work with Pegasus Health to provide
vaccination and testing clinics.
With a second dose required three weeks
after the initial shot, clinics will continue to
be held in the coming months to cover LPC’s
border-facing workforce.

supports
next step
The winner of LPC’s Director
scholarship, Charlotte Holt,
is excited about the new
opportunities that university
will bring.
The annual scholarship is awarded to the
child of an LPC employee who is going into
their first year at University of Canterbury.
In February, Charlotte started study for a
double degree in law and history.
The scholarship was established after the
Christchurch earthquakes in 2010 and 2011
to recognise the hard work and commitment
of LPC staff to keep operations running in
difficult and uncertain times.
What does your job involve?
As a skilled general hand, we are involved in
a wide range of jobs at LPC. I operate plant
including the sweeper truck and mobile
cranes. I am also a certified diver, so I work
at the Dry Dock when they are switching
vessels as well as around the wharves in
the inner harbour. We also relieve in Marine
when they are short staffed as a deckhand
for the launch vessels. There isn’t much we
can’t do!
What’s the most unique part of your role?
The variety of work is great. One day, I’ll be
working on a digger in the morning, in a
crane by lunchtime and in a punt in the
afternoon. It keeps the job exciting.
What challenges do you enjoy in
your job?
Things can change just like that. You can
get asked to drop your work and head to
a completely new job that needs urgently
doing.
What makes you proud to work at the Port?
You don’t realise how much comes through
the Port and how, without it, the rest of the
city wouldn’t be able to function. From fuel
to supplies, our job means that so many
other people around Canterbury can carry
on with theirs.
Who or what inspires you?
I am inspired by my workmates. We have
a good team here, and they make this a
great place to work.
Charlotte’s father Chris Holt has worked
at LPC since 2010 and is currently Scheduling
Manager for the Container Terminal.
“I’m extremely proud of Charlotte, she has
worked very hard in the past couple of years
and the scholarship provides a fantastic
opportunity,” says Chris.
“I’m really pleased she is going to the
University of Canterbury and is already
embracing uni culture with open arms.”
Charlotte says she is nervous and excited
about all the changes university will bring.
“I’m looking forward to meeting new
people, exploring the campus and learning
more about the things I am passionate about.
It’s scary, but it’s part of growing up.”
Charlotte’s decision to study law and
history came from a growing fascination
with the subjects throughout high school.
“I am definitely stronger at writing and
loved my legal and psychology, history,
classics and theology classes.
“I think New Zealand history is important
for everyone to learn as it helps shape our
future.”
The double degree will take about five
years, and after that, Charlotte wants to get
into social work and criminal justice.
“A law degree is very versatile, and it’s a
great base that can take me anywhere, but
at the moment, I would like to work with the
New Zealand prison system.”
Charlotte wants to thank LPC for the
scholarship and helping relieve the financial
pressure of university.
“This whole opportunity is a chance to
learn more about LPC, and I am so proud
of my dad for being part of the shipping
industry as an essential worker.
“After receiving the scholarship, [LPC CEO]
Roger told me I was a part of the LPC family,
and it’s great to know I have that support,
tackling my first year of university.”

Later this year, LPC will be applying to
renew our resource consent for coal air dust
discharge. As part of this process, we installed
a live monitoring station in a Lyttelton
residential area near the Timeball in order to
monitor fine dust levels over the summer.
For additional insight, we also added four
more dust deposition stations. These are
essentially gauges that measure total dust
levels over a given time period. Two stations
have been situated in residential areas, and
two are located on the coastal edge of the coal
yard, where they will help us understand any
potential impacts on the marine environment.
What we’ve found so far
We’re pleased to let the community know
that data collected by the highly sensitive live
monitoring station has shown that all dust
levels, including coal dust, are sitting well
below the National Environmental Standards
for Air Quality for PM 10 and the proposed
standards for PM 2.5 . That’s good news for
human health as it shows that even very fine
particles are at low levels.
Our dust deposition stations have shown
that dust levels have remained below the
limits set by our existing resource consent.
While this is a positive result, we would
still like to hear from residents who might
be experiencing dust so that we can take
samples in order to identify the source.

for the protection of the many bird species
we can find there.
Healthy and thriving native plants are
equally important, for example. Let’s look
at a historically famous plant - the Cook’s
Scurvy Grass, or known by its Maori
name “Nau.”
One of the famous stories of Captain
James Cook was his ability to keep his
crew relatively healthy by feeding them
“greens” to ward off scurvy that killed so
many sailors at the time.
Captain Cook was renowned for his
leadership skills, and in particular for
sailing around the world without losing
a single man to scurvy, for which he won
the Copley Medal in 1776.
He understood that fresh food, and
in particular fresh greens, acted as an
anti-scorbutic in keeping away the scurvy
disease.
Captain Cook and many other earlier
sailors used to harvest huge amounts
of this plant from New Zealand coastal
areas.
But due to coastal development, introduced
plants and animals, this endemic
(only found in NZ) plant is now classed as
“threatened” and found only sporadically
throughout the country.
In fact, now such a concern for the
threat of its extinction, that the Department
of Conservation prepared a Threatened
Plant Recovery Plan in 1998.
By trialling the reintroduction of this
plant in a number of potentially suitable
areas it is hoped that it will re-establish
itself.
Now, why is the estuary trust so keen to
share this information?
Because we are so proud to be able to
share that this plant has been introduced
in the Charlesworth Wetland Reserve by
ESTUARY MATTERS
Fussy plant that has

DOC as a trial, hoping it will survive and
thrive here.
And guess what? It’s working. The few
introduced plants are doing well and is
spreading.
This fussy plant needs gravelled, open
coastal areas, no competition from introduced
weeds, and it needs to be occupied
regularly by seabirds who leave the plant
lots of guana, or bird poo, to feed on.
The restored Charlesworth Wetland
islands are now able to provide all this.

about its own identity
and style, we are seeing
less mention of the grape
varieties that produce it.
Two of today’s featured
wines have chosen interesting
grape combos, with the
Brennan example utilising
tempranillo and zinfandel
(they are the only winery
in Central Otago growing
this latter grape), while
the Helio is a tempranillo,
montepulciano and cabernet
franc blend.
What might otherwise be
a mouthful becomes simply
rose, and is all the better
for it.

Chicken pie will tempt the taste buds
Chicken and cider pie
Serves 6
Ingredients
2 tbsp oil
2 boneless skinless chicken
breasts, sliced or chopped into
small pieces
1 leek, sliced lengthwise then
finely chopped
1 medium apple, peeled, quartered
and sliced
1 carrot, peeled, sliced lengthwise
and cut in thin semi-circular
slices
2 tbsp plain flour
300ml apple cider
1 tsp chicken stock powder
½ tsp dried thyme or a few
sprigs of fresh thyme
a pinch of mixed herbs
salt and pepper to taste
1 x 400gm block or three sheets
frozen flaky or rough
puff pastry, defrosted
1 tbsp wholegrain mustard beaten
egg or a little milk to glaze
Directions
Preheat the oven to 210 deg C.
Grease a pie dish if using.
Heat one tablespoon of the oil
in a large frying pan and seal
the chicken in batches, stirring,
setting each batch aside once it is
sealed. Then add the remaining
oil to the pan and, when heated,
add the leek, sliced apple and
carrot, and cook gently until the
leek is softened.
Return the chicken and any
juices to the pan, then stir in the
flour, mixing well. Add the cider
a bit at a time, mixing it in with
a wooden spoon so the flour
doesn’t form lumps.
When all the cider is added,
sprinkle in the chicken stock and
herbs and stir in the mustard.
Simmer gently until the liquid
has almost evaporated, season
with salt and pepper and allow
to cool.
If using a pie dish, roll out
enough pastry to line the base.
Use the rolling pin to lift the pastry
and press it gently into the tin
with your fingers. Spoon in the
cooled filling. Roll the remaining
pastry to make a lid. Brush the
pastry edges with water, then
place the lid on top.
Use a sharp knife to neatly
trim the edges, then pinch, crimp
or use a fork to press all the way
around the edge to fuse the pastry
together. Use any trimmings
for decorations; a dab of water
will make them stick. Brush the
pie or pies with beaten egg or a
little milk.
Bake for 35-45min until golden
and crisp. This filling can also
be used for pasties or turnovers.
Hoisin pork belly
Serves 4
Ingredients
500-600gm boned pork belly
roast
1 tbsp canola oil
fresh flaky sea salt
2 tbsp hoisin sauce
1 tbsp lightly toasted sesame
seeds
Directions
Preheat oven to 220 deg C.
If using a traditional pork belly
roast, remove skin. While roast
is cooking, rub skin with oil and
grill to make crackling.
Trim any excess fat off roast, if
preferred.
Brush with oil and rub with sea
salt.
Cover with baking film. Place
pork in an oven pan.
Roast for 30min at 200 deg C
then reduce the temperature to
170 deg C and continue roasting
until cooked, about 30min. This
will depend on thickness. The
internal temperature should be 71
deg C. Cover and rest for 10min
before serving.
Brush pork with hoisin sauce
and sprinkle with sesame seeds.
Seared beef and couscous
salad
Serves 4
Ingredients
500gm beef fillet
1 tsp ginger
2 cloves crushed garlic
2 tsp brown sugar
1 tbsp oil
200g couscous
500ml chicken stock
1 red onion, sliced
½ red pepper, sliced
200gm pumpkin, sliced
½ tsp turmeric
1 tsp coriander
½ tsp cumin
2 tbsp olive oil
100gm beans, blanched
1 cup fresh herbs, chopped
roughly
Dressing
2 tbsp Lemon juice
2 tbsp sweet chilli sauce
2 tbsp olive oil
This chicken pie filling can also be made
into individual pies, pasties or turnovers. It’s
not too late in autumn to try a seared beef
and couscous salad.
Directions
Place the beef in a small bowl.
Add ginger, garlic, brown sugar
and 1 tablespoon oil. Combine
well and set aside for 20min or
until ready to cook.
Cook couscous in the
chicken stock following packet
instructions.
Heat oven to 180 deg C. Place
red onion, pepper, pumpkin,
turmeric, coriander, cumin and
paprika on an oven tray. Toss in
the 2 tablespoons of oil and bake
for 20min until slightly brown
and cooked through.
Heat a pan to a high heat and
sear beef on all sides and place in
the middle of the vegetables. This
will also take 20min. Remove and
rest for 10min.
In a large bowl, mix couscous
with dressing and gently add
vegetables.
Place on a platter. Slice beef and
arrange with the salad.
Smoked fish and kumara
hash cakes
Serves 8
Ingredients
2 tbsp butter
700g kumara
2 lemons
400gm smoked fish
4 spring onions
¼ cup fresh parsley
1 to dust flour
2cm oil
Directions
Peel and cut kumara into
chunks and cook in boiling salted
water until tender. Drain well
and coarsely mash with melted
butter and the juice of 1 lemon.
Set aside to cool.
Combine flaked fish with
kumara, finely chopped spring
onions and parsley. Season well
with salt and pepper. Form
mixture into eight patties. Dust
patties with flour.
Heat a nonstick frying pan
with a little oil and gently fry fish
cakes over a medium heat for
three to four minutes on each
side until golden brown. Serve
with lemon wedges.

Toyota Supra – return of a true icon
I KNOW MY son regrets selling
his Toyota Supra. You see, it
was a rare targa top model,
twin turbocharged and it had
had a manual transmission
conversion.
He still talks about that car
with much enthusiasm, and from
my time driving it I can recall it
was a ferocious, wild beast, hard
to tame but immense fun at the
same time.
It was one of the last Supras
Toyota made, until now.
Well, you could be forgiven
because the new Toyota Supra
isn’t entirely a Toyota, it’s been
developed in conjunction with
BMW and even gets a BMW
engine. What’s more, the sleek,
sporty, very desirable body shell
sits on a BMW Z4 platform and is
built in Graz, Austria.
I’m not knocking that concept,
and it’s not the first Toyota
collaboration that has been
successful, take its 86 sport
coupe, it was shared with Subaru
and has gone on to claim healthy
sales amongst a wide buyer
demographic.
The Supra, though, is
something else. It’s a car for those
who want a little more grunt in
their sports car purchase, and
being built under the influence
of Toyota’s vast manufacturing
machine you can guarantee
it’s going to last you for many
years to come and will be totally
reliable along the way.
Much like it was with my son’s
Supra, it was bullet-proof, no
matter how hard it was driven.
The newcomer is a touch of
class, its looks stunning, low, sleek
and sharp and is every inch the
desirable two-seater coupe you
would expect wearing that badge.
Under the skin there’s no
mistake it has a lot of BMW
input, the controls, displays
and materials are much the
same as you would find in other
models from the German brand.
Nevertheless, I’m hooked. It’s the
best of both worlds really.
The Supra lands here at
$98,990, and to me that’s a bit of a
sports car bargain, the evaluation
car was a limited edition high
spec variant that added an extra
$1000.
Buyers of the Supra will also
want performance, and I’m
pleased to report that the 3-litre
engine is true to the design of
the past. There are six-cylinders
boosted by a twin-scroll
turbocharging arrangement.
Toyota claims power outputs of
285kW and 500Nm, the torque
figure available all of the way
from 1800 to 5800rpm. If these
outputs look familiar, yes they
are the same as Z4 and the 340i
wagon that I evaluated in these
columns recently.
I recall saying that engine was
an absolute dynamo in terms
of strength, it is responsive and
constantly wanting to work hard.
The Supra will lunge from
a standstill to 100km/h in a
blistering 4.1sec, and will push
through a highway overtake
in 3.8sec (80-120km/h). These
are quick times and will satisfy
any driver who likes to feel the
urgency of a genuine sports
vehicle.
What’s more, the engine is
quiet and smooth, it howls a
little towards the redline but
that’s a traditional six-cylinder
characteristic, and a Supra buyer
would like to have the sound of
energy.
Drive is through an eight-speed
automatic gearbox, there are few
surprises there, quick, clean shifts
are on offer, and there are paddle
shifters if you want to change
manually.
Power is then channelled
rearwards, and the feel you get
from that is traditional, there’s
something about the push you
get from the rear wheels and, for
that matter, the Supra delivers a
forceful feel and sitting almost
above the rear axles all that
movement and feel is delivered to
the driver.

My time with the test car was
surprising given I did explore
high revolutions on many an
occasion, it went back to the
dealership showing 8.6l/100km
on the readout. For the record,
at 100km/h the engine is turning
over at just 1600rpm, merely
sipping fuel at the rate of just
5l/100km.
There’s nothing quite like
the feel of a turbocharged sixcylinder
engine, I’ve hung on to
my trusty old Toyota in the event
finances would allow that to
become a project whereby I could
afford to hook a turbo kit onto
that engine, it’s the same design as
my son’s old Supra.
I’ll never be able to afford
a new Supra, but I consider
myself privileged to have had
a week with the evaluation car,
it certainly is something very
refreshing and is a car you would
never tire of.
However, you may tire of the
attention you will receive, never
before have I been in a car that
has received so much comment
and adoring looks.
