Warming casseroles<br />
to fend off winter<br />
With a week or<br />
two of winter still<br />
with us, this tangy<br />
tomato and lamb<br />
casserole would<br />
be a welcome<br />
dish on a cold<br />
day<br />
Lamb and tomato<br />
casserole<br />
Serves 3<br />
Ingredients<br />
3 lamb leg fillet or shoulder<br />
chops (browned)<br />
2 tbsp olive oil<br />
1 large onion<br />
1 400gm tomatoes (any<br />
flavour)<br />
1 lamb Oxo cube<br />
Cracked pepper to taste<br />
1 teaspoon sugar<br />
1 heaped teaspoon<br />
oregano<br />
40gm tasty cheese<br />
55gm breadcrumbs<br />
(wholemeal is best)<br />
27gm butter (melted)<br />
Directions<br />
Line ovenproof dish with<br />
2 thicknesses of non-stick<br />
tin foil.<br />
Place browned leg fillets/<br />
chops into dish, put onions<br />
over top of meat, then pour<br />
tomatoes/Oxo cube/peppercorns/sugar/oregano<br />
over onions, then<br />
cover with cheese/breadcrumbs/butter.<br />
Bake, uncovered, at 140<br />
deg C for 2½ hours.<br />
Steak stew<br />
Ingredients<br />
2 tablespoons olive oil<br />
Stews and casseroles make a hearty mid-winter<br />
meal.<br />
1kg sirloin steak, diced<br />
Salt and freshly ground<br />
black pepper, to taste<br />
1 medium onion, diced<br />
2 large carrots, peeled and<br />
diced<br />
2 celery ribs, diced<br />
3 cloves garlic, minced<br />
250gm mushrooms,<br />
halved<br />
3 tablespoons all-purpose<br />
flour<br />
2 tablespoons tomato<br />
paste<br />
1/2 cup dry red wine<br />
2 1/2 cups beef stock<br />
4 sprigs fresh thyme<br />
2 bay leaves<br />
1 large potato, peeled and<br />
cut in 1cm chunks<br />
2 tablespoons chopped<br />
fresh parsley leaves<br />
Directions<br />
Heat olive oil in a large<br />
fry pan on medium heat.<br />
Season steak with 1 teaspoon<br />
salt and 1/2 teaspoon<br />
pepper.<br />
Working in batches, add<br />
steak to the fry pan and<br />
cook, stirring occasionally,<br />
until evenly browned, about<br />
6-8min; set aside.<br />
Add onion, carrots and<br />
celery. Cook, stirring occasionally,<br />
until tender, about<br />
3-4min.<br />
Add garlic and mushrooms,<br />
and cook, stirring<br />
occasionally, until tender<br />
and browned, about<br />
3-4min.<br />
Whisk in flour and<br />
tomato paste until lightly<br />
browned, about 1 minute.<br />
Stir in wine, scraping any<br />
browned bits from the bottom<br />
of the fry pan.<br />
Stir in beef stock, thyme,<br />
bay leaves and steak. Bring<br />
to a boil; reduce heat and<br />
simmer until beef is very<br />
tender, about 30min.<br />
Stir in potato; simmer<br />
until potatoes are just tender<br />
and stew has thickened,<br />
about 20min.<br />
Remove and discard<br />
thyme sprigs and bay<br />
leaves. Stir in parsley;<br />
season with salt and pepper,<br />
to taste.<br />
