Eats!
We would like to thank Cat’s
lovely dad, Pete for these recipes.
They are all tried and tested and
we have all enjoyed them here
at NG HQ, so we persuaded Pete
to share them with you.
The background to these very healthy
recipes is fascinating – here Pete tells us
how it all started;
In 1980 a small group of people from
Friends of the Earth decided to set up
the Dandelion Wholefood Cooperative
in Erdington, Birmingham, with a view to
raising awareness about food matters.
The underlying purpose behind Dandelion
was to encourage people to think about
where their food came from and how it
was produced – this was long before the
Fair Trade movement and our knowledge
about climate change.
As idealistic as Dandelion’s aims were back
in the 1980’s, its objectives are just as, and
perhaps even more relevant today.
Every week a free recipe leaflet was
produced for Dandelion’s customers. The
cheese pie and spicy chickpea burgers
were really popular and are perfect with
the salad recipes. The chickpea burger
recipe was born when one for chickpea
and potato stew was misread. However,
it was deemed so delicious that it was
incorporated into Dandelion’s repertoire.
They are lovely served with rice and red
cabbage fried with onion, caraway seeds
and vinegar – but just as good served in a
bun and/or with salad.
